Member Profile john and nancy quicke “Loving Lost Star” John and Nancy Quicke broke ground on their lot in Lost Star in December 2008, and moved into their home two years later. Their house is built in a Tuscan Desert style with great transcendent down-valley view’s from nearly every room. John, who was always a fan of Arizona, was sold on their lot by the views. “No where in Scottsdale can you get the views you get at Desert Mountain. At 3,200 feet, our home has fantastic views of the city lights, mountains, Pinnacle Peak…everything.” On her first visit, Nancy was immediately attracted to Desert Mountain, but a little concerned it might be a purely golf-driven community. “While I love golf, it was not my sole basis for picking a second home.” But after her next visit to Desert Mountain with a non-golfing girlfriend, Nancy discovered the vast array of things to do besides golf, namely hiking, biking, the Sonoran Club and spa as well as club activities and the wonderful restaurants. “I love the trails. They are a great addition to Desert Mountain. For both guests and family, the trails really are an experience everyone can enjoy,” Nancy said. “I try to run twice a week as well, which is another thing that is so great about living here. Aside from Arizona’s perfect sunny weather, there is nothing like being able to walk out your door and hit the paths for a run. In addition to the scenery, the feeling of safety and freedom is fantastic.” Married for twenty-five years John and Nancy split their time between Chappaqua, New York and Desert Mountain. With extended family from both sides in St. Louis, the Quickes also visit there regularly. “We will forever be St. Louis Cardinals fans,” John says. “If you can’t find us at Desert Mountain in October, likely we’re in St. Louis at the World Series.” John is an Operating Partner with the NY based firm Steel continued page 5 Partners Holdings LLC. Brewer Excellence in Club Management Award winner for 2012. He was nominated by Desert Mountain Board President Paul Wutz and the Board of Directors. This annual, national award, sponsored by the McMahon Group and Club & Resort Business magazine, recognizes private club general managers, managers and chief operating officers who have exhibited outstanding skills in managing their club. The James H. Brewer Award is for private clubs with 600 or more full-privilege members. Winners were selected by an award selection committee comprised of the candidates’ peers in the private club industry. The committee evaluated several criteria that included facility and golf improvements, dining and golf/recreation programs, employee training and incentives, innovative management programs, customer satisfaction, communications and promotions, entertainment and social activities, membership development, cost controls/budgeting, and other initiatives that were developed and managed by the candidate. “I am so proud, on many levels, to win this award,” said Bob, who only learned that he was nominated when he was given the news that he had won the top prize on December 21. “It is an honor to be so respected among my peers. But I also take pride in the fact that I am the third generation of family who has had a successful career in the club industry.” A representative from McMahon Group and Club & Resort Business will be onsite at Desert Mountain to present the award. Bob and other Excellence in Club Management Award recipients from across the country will also be recognized at a special reception and dinner during the 2013 Club Manager’s Association of America World Conference in San Diego in February. But what does it really mean to live and to work at Desert Mountain? Atmosphere of Excellence Desert Mountain’s recent recognition by Club Leaders Forum as a Platinum Club of America means that we are ranked the top private club in Arizona and among the top 10 in the nation. While this is one of the ultimate testaments to Desert Mountain’s high level of service and global appeal, it also serves as a reminder that we must “walk the walk if we talk the talk” in order to increase Member loyalty and to remain among the finest private clubs in the world. To the Desert Mountain team of employees, this means taking the responsibility for providing superior service and outstanding amenities in an atmosphere of excellence. All employees of the Club are guided by six core values to help them achieve this goal— Integrity, Teamwork, Spirit to Serve, Financial Responsibility, Innovate and have Fun— from the people who maintain pristine conditions on the golf courses to those who perform the hundreds of small details that contribute to the Club’s success on a daily basis. Because this year is an operational year and because excellence begins at the top, Desert Mountain managers are taking it another step by following Franklin Covey’s “4 Disciplines of Execution.” 4DX is a process to help us improve how we do business with the overriding goal of increasing Member loyalty while improving productivity and financial sustainability. Our Director of Club Operations Christophe Hermine, who has spent his career at some of the best hotels and resorts right here in the Valley, has added another dimension to the food and beverage training for his managers, chefs and front of house staff by introducing the CLUB CARE Concept. CLUB CARE sets the bar for the standard of service all Members should anticipate and expect at a club the caliber of Desert Mountain. The CARE acronym stands for Courtesy, Awareness and Responsiveness while providing an Enjoyable experience. Some of the initiatives of the CLUB CARE program include the anticipation of members’ needs, providing consistency, exceeding Member expectations, and creating an experience that encourages and elevates Member loyalty. Both 4DX and CLUB CARE represent our blueprints for building a stronger team as we continue to enhance the atmosphere of excellence at Desert Mountain through remarkable service, increased productivity and financial sustainability. The Art of Being a Member While membership at Desert Mountain has its privileges, it also comes with the responsibility to promote an atmosphere of excellence. I’d like to share with you some observations on the responsibilities of belonging to a private club from the National Clubs Association, Club Managers Association of America and Private Club Services: • Work with your senior management team to resolve issues. They are trained, qualified and knowledgeable on changing legislation, food and beverage issues, and the day-to-day maintenance and upkeep of multi-million-dollar facilities and operations. • Keep up to date on communications regarding operational issues and initiatives, Board elections, town halls and in general, all Club correspondence. Understand the Club’s mission statement and strategic plan and allow the staff to manage within these guidelines. • Register and/or update your email address. Email is the Club’s primary means of communicating with Members in an efficient and cost-effective manner. • Don’t allow the complaining of others to influence your view of how the Club serves you, your family and your guests. Express your complaints and suggestions directly to senior management. • You are part of the Club family. Overcome the temptation to air the dirty laundry or focus only on negative experiences. Remember, w w w. d e s e rt m o u n ta i n . c o m rumors can become urban legend which, when repeated outside the gates, can damage our image and adversely affect property and membership values. • Never take it upon yourself to discipline an employee. Report inappropriate behavior to senior management. • Support responsible and justifiable increases in annual fees and dues. Maintaining our physical plant, financial sustainability, capital improvement and brand quality are the cornerstones of any successful enterprise. • Make membership replenishment a way of life. No business can be successful without a dynamic marketing, public relations and sales effort. Your referral is key to our success. • Support open and honest communications from the Board and Senior Management on issues affecting the general membership. We all share in the responsibility that comes with living and working at Desert Mountain. Together we can continue our legacy of excellence for the next 25 years. A formal dedication ceremony, to which all Members will be invited, is planned in early 2013 pending confirmation of key dates. Christophe Hermine, Director of Club Operations Happy New Year to all of you, and thank you for allowing me to be part of the Desert Mountain family. I am very excited to be back in the Valley and working for such a prestigious Club. As the New Year begins I am writing this article after being at the Club for a few weeks, please allow me to give you an update on some initiatives we have been working on. The wine lists in each restaurant have been updated to portray the same price for each bottle and to be consistent throughout the Mountain. After analyzing the wine sales, it was interesting to see that 65% of the wines consumed are bottles priced between $80 and $100. Our new Desert Mountain House Wine, in every clubhouse, is Kenwood Vineyards, Yulupa, California and the varietals are Chardonnay, Pinot Noir, Merlot, Cabernet Sauvignon and Sparkling, each priced at $7 by the glass. All liquor prices have also been updated to reflect price consistencies. We welcome three new chefs to our Desert Mountain Family: Sarah Turgel – Chef de Cuisine, Constantino’s Sarah comes to us from Tuscany, the Italian restaurant at the JW Marriott Desert Ridge Resort, where she has been chef de cuisine responsible for menu development, scheduling and staffing, food and wine pairing and other duties for the past three years. Prior to her years at JW Marriott, she was the chef de partie at Il Terrazzo Restaurant and the lead cook 1 at Mary Elaine’s, both at The Phoenician. Sarah got her culinary start in San Francisco at restaurants such as Michael Mina, Fifth Floor Restaurant and Puccini and Pinetti. She has a bachelor’s degree from University of California at Davis and is a graduate of the California Culinary Academy in San Francisco. Once she arrives at Desert Mountain, Sarah plans to add her own personal touch to the menus at Constantino’s. We are thrilled to have her with us and we invite you to stop in and say hello. Zach Johnson – Sous Chef, Constantino’s Zach has been cooking and working in the food industry since he was in his teens. He started his career at the five diamond-rated Phoenician Resort and Spa where he worked in several kitchens and with Chef Victor Casanova at Il Terrazzo Restaurant. He developed his distinctive cooking style at Binkley’s Restaurant in Cave Creek and at Chef Kevin Binkley’s bistro restaurant, Café Bink. He also was sous chef at Nellie Cashman’s at the Westin Kierland Resort and Spa in Scottsdale and assisted in revamping the restaurant with Chef Eric Strong. Zach graduated from Le Cordon Bleu in Scottsdale. Christopher Brugman – Sous Chef, Apache Restaurant Christopher grew up in Southern California where he developed his ‘farm to table” approach to cooking. Classically trained in French and California cuisine, he is influenced by the flavor profiles of Southeast Asia and Provencal, France. Christopher has trained in many award-winning restaurants in Los Angeles, most notably with the three Michelin Star Chef Gordon Ramsay at the London Hotel in Beverly Hills, and most recently as Chef de Partie under the helm of Michelin Star Chef David LeFevre at James Beard-nominated MB Post. Christopher has a bachelor’s degree in Business-Marketing from the University of Southern California and the Grand Diplome from Le Cordon Bleu Culinary Academy in Hollywood. We came up with a new approach with the Apache menu and decided to use Allen Brothers as our main prime beef supplier. When it comes to USDA Prime Beef, as well as the highest grade Choice, they are believed to be the best on the market. The All Natural beef has been eliminated. The filet mignon prices were reduced by 30% and each main course is now accompanied with a starch and larger amount of fresh vegetables. The bread selection has been upgraded with fabulous cranberry-pecan bread, dense and flavorful rosemary bread and we have kept the pretzel rolls for all our Midwestern members. Constantino’s menu has been revamped from best years past selections and toward simpler Italian fare. As of now, it has been very well received by a large majority of the membership. The bread selection and presentation, continued on page 8 3 Education Scholarships Offered to Employees Keli Greenberg, Executive Director of Human Resources The Desert Mountain Community Foundation (DMCF) has established a scholarship fund that will be available to employees of both Desert Mountain and CCMC (the professional staff at the HOA) that are full-time at Desert Mountain as well as their families. The DMCF is proposing this because they believe that providing scholarships to DM employees will be an incentive for employees to continue at DM and they recognize that the cost of education at all levels is out of the reach of most employees and their families. The scholarships will be awarded based on predetermined criteria such as at least one year of employment, employee in good standing, demonstrated financial need and attending school in the United States. The DMCF is currently soliciting the Desert Mountain Community to support this worthwhile endeavor by their donation of tax deductible funds. The Scholarship Fund will be administered by the Arizona Community Foundation (ACF). Employees will be able to complete an application online through ACF beginning January 2013 so that employees or their family members can receive a scholarship for classes beginning in the fall of 2013. Tuition will be paid directly to the school/institution on the recipient’s behalf. The added advantage for the applicants is they will learn about and be able to apply for the over seventy other scholarships that ACF manages. Employees will be notified of this tremendous opportunity via a personalized letter from the Human Resources Department. Many employees have already expressed their delight and gratitude that this benefit is being offered by DMCF. The generosity of our membership, as demonstrated in the Holiday Fund, is overwhelmingly and incredibly gracious. Golf course operations are no different; they are based on good agronomic plans. So it only follows that Club operations at Desert Mountain are following a Strategic Plan. The Desert Mountain Board and Leadership Team developed this plan for 2012-2017 and published it for the membership. Each department has a set of initiatives that contribute to the execution of the plan for the club. Initiative 1E is to “bring high profile professional and amateur golf tournaments to Desert Mountain”. And so, we hosted the Schwab Cup last fall. The main initiative for the agronomy department is 1B which is to “maximize golf course conditions and appearances”. This can mean a lot of things. It can be as simple as normal maintenance such as our list of Priority 1 tasks that are done daily, all the way to major projects or capital improvements and everything in between. We focus on Priority 1 tasks through the Four Disciplines of Execution. This program involves our staff in accountability for the quality of their work. We also conduct major projects and improvements according to our initiative in the Strategic Plan. This year, several projects have been completed that contribute to the Strategic Plan and add value to the golf courses. The lake on Renegade #4 has been renovated with the installation of a new shoreline. This project will enhance the aesthetics of the golf hole; however, it is also important to stabilize the shoreline as this lake serves to irrigate Renegade and to transfer water to Apache. A new cart path was installed on Apache #1 which now completes holes 1 through 4 with all new paths. On Cochise, a new tee was installed on #4, fairway bunkers were re-contoured or repositioned to make them more challenging and all walk paths were defined to create the easiest access from tee to green and green to tee. New bridges were installed on #10 and #13 and new concrete steps on #4 and #10. These improvements will benefit our members enjoyment of the course. In December 2012, Jack Nicklaus came to Desert Mountain for the 25th Anniversary celebration. He also met with the Board of Directors and the Management Team to begin the development of a master plan for golf. We toured Outlaw and Renegade to review and discuss important issues. Mr. Nicklaus’ ideas on how to make Outlaw enjoyable for more golfers, focued on the basics of the TEE IT FORWARD program which is partnered by the PGA and the USGA. This program makes golf more enjoyable by placing golfers on the right tee for their game. On some holes, this would mean the addition of strategically placed tees that allow golfers to negotiate existing bunkers or desert areas. With this approach, the same features can be left in place to challenge the professional or low handicap amateur. When touring Renegade, the discussion focused on ideas about future renovation projects and the impact of desert washes through the golf course. It was apparent to everyone that the greatest golfer of all time is also a skilled golf course designer and his input and guidance will be critical as future plans for golf at Desert Mountain are developed. w w w. d e s e rt m o u n ta i n . c o m invests in businesses around the United States and John assists these companies in operating matters or runs them himself depending on what the situation requires. While working full time leaves less time than he’d like for golf, John tries to hit the Sonoran Clubhouse regularly for workouts. Also on the board of Rowan Companies, Inc, a U.K.based offshore drilling company, John travels to London five times a year. He and Nancy always manage to squeeze in some sightseeing and theater. One of their favorite vacations spots is Italy in September. John’s adult son, Scott, is married. He and his wife Krista have two boys. John’s daughter Megan’s recent engagement was celebrated by the family at their favorite Desert Mountain restaurant, Constantino’s. “We got the whole family together to celebrate,” Nancy said. “We were in the private dining room in Constantino’s. It was intimate and lovely.” Nancy and John have two sons together, Clayton 22, a recent Criminal Justice graduate from St. Louis University and Nathan 21 a senior at the Farmers School of Business at Miami University in Ohio. While their boys were born in St. Louis, they were raised in New York. Their parents instilled in them a love for golf and they both enjoy playing the courses at Desert Mountain. Growing up, both boys worked at their home club, Whippoorwill County Club, as caddies and bag attendants. A close-knit family, the Quickes enjoy taking family golf trips with their two sons. They’ve played as a foursome at Pinehurst, Whistling Straights and Bandon Dunes. Upon Nathan’s graduation, they will be planning a golf trip to Pebble Beach. John jokes, “We always get them to go when we go somewhere nice that involves golf.” Nancy is a volunteer extraordinaire. A former president of the Northern Westchester Junior League, she is currently involved in their sustainer group. While her boys were in school she was heavily involved with every aspect of their education from the P.T.A. to super hockeyfootball booster. Nancy also shares her time with the Catholic Church and her home country club, Whipporwill, where she was previously a member of the Membership Committee. This year, she’s the Boutique Chair for Desert Mountain’s C.A.R.E. tournament. “C.A.R.E. has been a great way to get involved and meet people at Desert Mountain and it’s an admirable cause. It’s of limited duration, so the fact that I’m gone for six months doesn’t hamper my ability to participate.” The Quickes love being at Desert Mountain. Their grandsons, Mason, 8, and Connor, 6, agree and have declared John and Nancy’s home “the number one vacation spot.” The boys visit at Christmas (Nancy and John can’t resist heating the pool for them), spring break and an annual special week in June where they get their grandparents all to themselves. It supports us throughout our entire lives, allowing us to stand up, bend forward and back, reach side to side, and rotate right and left. Unfortunately, the lumbar portion takes the most abuse, as it supports the majority of our body weight. It is made up of the lower five vertebrae (L1-5), which line up to give the low back a slight inward curve. Intervertebral discs separate the vertebrae, and normally work like shock absorbers to protect the spine against the daily pull of gravity, as well as during strenuous activities such as jumping, running and lifting. Low back issues become much more prevalent as we age. After all, the more years we’ve been around, the longer our lumbar spines have had to hold us up. It’s no wonder that the largest percentage of low back complaints come from those 40 and older. Symptoms like “my back feels tight”, “it hurts to bend”, or “I have numbness and tingling down the back of my leg” can be the result of any number of conditions such as stenosis, spondylolisthesis, osteoarthritis, sciatica or degenerative disc disease. Pilates could be the perfect prescription if you’re experiencing low back pain. Pilates instructors cannot legally diagnose or treat specific injuries or illnesses because it’s not within our scope of practice. However, we can observe movement patterns, assess alignment, posture and stability and provide exercise programs for improving not only core strength but overall well-being. I came away with the following: • Over the years Desert Mountain CARE has donated three million dollars plus to the research arm of the Mayo Clinic. The research has been devoted to breast and prostate cancer. We are the seed money they need to get projects up and running. Because of us they have been able to apply for bigger grants and then bring this research to clinical trials. Cancers including bladder and kidney are also benefitting from this work. • The two teams of researchers are beyond grateful to us. You could feel it. Their gratitude was genuine and sincere. They gave time to thank us personally. • In this political climate there are concerns that research funds are going to dry up. Private donations will become more important for these teams. Good question…especially if you are a new member or someone who spends only a few weeks a year at Desert Mountain. Here is who we are and what we do! We are a 10 member board from Desert Mountain dedicated to raising money to help “drop out” kids get back into high school, hopefully receive their diploma and maybe going on to higher education. We started 9 years ago helping raise funds to build the Desert Foothills YMCA facility in Cave Creek. We raised $750,000 for that effort. After the opening of the YMCA in 2010 our focus shifted solely to Education. As we know, Arizona’s high school dropout rate is alarmingly high. So we have concentrated on 3 specific YMCA educational programs which we now support throughout the Phoenix and Scottsdale area that offer these programs. These programs are iLearn, Y Achievers and Las Artes de Maricopa. By supporting these programs we may be keeping these teens off the streets and perhaps out of juvenile detention. If they complete the rigorous Y programs they will receive their high Upscale Singers Present April Show The Upscale Singers present their ninth annual spring dinner show on Friday, April 5 at Desert Mountain. “A Grand Night for Singing” features your favorite songs by Gershwin, Rodgers, Sondheim and The Beatles - songs from the Jazz Age to the British Invasion! The evening starts at 5:30 p.m. with cocktails in the Sunset Terrace, followed by dinner and show. The $75 ticket includes wine, tax and gratuity. The Upscale Singers also offer their annual raffle, with prizes ranging from golf clubs to elegant dinners. Currently we have three kids in higher education programs. There is nothing quite like the feeling of helping a young person find hope as they see that success is achievable. Member Bev Hogshire and 30 friends in her Friday ladies golf group had several special reasons to celebrate November 9 after their round on Renegade. It was Bev’s 80th birthday and she shot a 43 on the front nine. Bev and her husband, Jim, have been Desert Mountain members since 1986. “Bev sent a note to the group thanking us for still playing with her,” said Bonnie Carroll, a friend who is also in the Friday golf group. “Actually, it’s the other way around. We should thank her for playing with us…she is our inspiration! Andrew Bieber Wins Second Straight Golf Championship For a second consecutive year, Andrew Bieber, son of members Eric and Edie Bieber, has won the individual Division III Ohio State golf championship. The event was held at NorthStar Golf Club in Sunbury, Ohio, last October. Andrew is a senior at Gilmour Academy, the only school to have an individual champion for four years straight. He shot a 73 during the opening round and a weekend-low 1-under 71 during the final round. He was seven strokes better than the runners-up and had three birdies, two bogeys and parred seven of the last eight holes. According to Gilmour Golf Coach Anne Caja, along with his win, Andrew is one of only 14 players to win back-to-back state championship titles, which places him in the company of Jack Nicklaus and PGA Tour player and fellow Ohioan Ben Curtis. With this win, he also set the record for lowest individual score for the championship. Following graduation from Gilmour, Andrew will attend Duke University. Winning Vanderbilt Linebacker a Desert Mountain Member Robby Barbieri, son of Desert Mountain members Robert and Kathryn Barbieri, and his fellow Vanderbilt Commodores teammates capped off their recordsetting 2012 football season by winning the Franklin American Mortgage Music City Bowl December. 31 in Nashville. It was the team’s ninth win of the season, the most wins since the Commodores finished 9-1 in 1915. The team finished out the 2012 season 9-4. The 38-24 victory over North Carolina State was the team’s second bowl win, having defeated Boston College in 2008. The 38 points is the most in bowl history for Vanderbilt. The Desert Mountain Fishing Club has had an active start to the season. In late November, the club’s first fishing outing was held at Bartlett Lake under the direction of professional guide, Gary Senft, who also had been the featured guest speaker at our November meeting. It was a beautiful day with members catching good size largemouth bass in various lake locations. At our December 2012 meeting, Jacqui Prince-Hartwig, Manager of Bass Pro Shops’ White River Fly Shop, demonstrated her exceptional fly rod casting techniques and provided hands-on instruction to a dozen of our club’s fly-fishing enthusiasts. Everyone walked away more proficient and certainly more knowledgeable about flyfishing tactics and skills. The remainder of the club’s season which ends May 31, will highlight another outing as well as welcoming some of the best anglers in the state who will provide expert guidance in knot-tying, water and boat safety, selecting the correct tackle for the season, and related fishing advice. The club meets the second Thursday of each month from October to May from 4-6 p.m. at the Sonoran Clubhouse. Refreshments are served and admission is free to all members, family guests and outside guests regardless of age, gender or level of angling experence. Dredge in flour, sear in olive oil. Add butter and thyme and flip. Finish cooking. Sautee spinach in oil with shallot, garlic, salt and pepper. Plate spinach and put chicken on top. Pour demi-glace over the top of the chicken.
