Protected Areas
Frontignan sits between two major
nature reserves: the Gardiole hills, to
the north, and the lakes.
The Palavasian lakes, lying between
Sète and Montpellier, are a designated
wetland, internationally recognized
in October 2008, following France’s
signature of the Ramsar convention
in 1986.
International recognition acknowledges
the investment made by local authorities in the preservation of these sensitive nature areas with their exceptional fauna and flora. In France, 25 sites
have obtained this label together with
more than 1,400 world sites.

rivers, peat lands... And then there
is World Wetlands Day, celebrated
on 2 February, the anniversary of the
Wetlands Convention, known as the
Ramsar Convention, after the Iranian
city where it was signed on 2 February
1971.

Muscats
OUR NATURAL SWEET WINE
The traditional Muscat is a sweet wine
that tastes of figs and candied citrus
fruits. It is an excellent wine for an
aperitif or as an accompaniment for
foie gras, marbled cheese, melon or
strawberries.
Serve at 7° or 8°.
DRY MUSCAT
A dry white wine made from grapes
on 3 year-old vines and picked early
in the season. It has a lovely aroma
and is less sweet while keeping the
Muscat taste. It can be served with
all types of seafood: fish, shellfish,
or tielles, but also with asparagus
and white meats.
Serve very cold as an aperitif
at 9° to 10°.
LIQUEUR WINE
Very rich and smooth, with a long finish,
it tastes of candied orange and honey.
Ideal for chocolate desserts, fruit
salads, etc.
Serve at 8°.
EAU DE VIE DE MARC
Through distilling, all the bitterness
usually found in marc is removed and
the wine becomes smooth and sweet
with a fine strong taste.

Muscat Recipes
Source Frontignan muscat
Upside-down apple tart with Muscat de Frontignan
Ingrédients : Short crust pastry. ½ kg of pippin apples, peeled
Dessertand quartered. Butter. Sugar. 200 ml of Muscat de Frontignan.
Grease a shallow pie dish with butter. Sprinkle with sugar.
Heat the Muscat de Frontignan in a small saucepan until it can be set alight.
In a fry pan, apply a match to the apple quarters in the Muscat Frontignan.
Fill the pie dish with the flambée apple quarters. Sprinkle with melted butter
and sugar, cover with the pastry rolled out to a thickness of 3 mm..
Place in the oven and cook for 30 minutes. Check that the apples are cooked:
they should be golden and slightly caramelized.
To serve, turn the tart over onto a serving dish so that the apples are uppermost. Can be eaten cold or hot.
Monkfish cooked in coriander and Muscat de Frontignan
Ingredients for 4 persons: 180 g. of monkfish per person.
ury 8 large washed lettuce leaves. 40 g. of chopped fennel.

2 small ripe tomatoes, blanched. Chopped peel of 1 orange. 3 tbsp.
of Muscat de Frontignan. 150 g. fresh butter. A few leaves of fresh coriander.
Season the monkfish with salt, pepper and crushed coriander seeds.
In a non-stick fry pan, cook the fish in 50 g. of melted butter for 2 minutes
on each side. Once cooked, wrap them in aluminium foil.
In the cooking butter, fry the fennel gently (8 minutes), add the tomatoes
(2 minutes) and the orange peel. Add the Muscat de Frontignan.
Bring to the boil and add 100 g. butter and crushed pepper.
Lightly season the lettuce leaves and roll them up. Place them on warm
plates. Add the juices from the fish pan to the sauce.
Bring to the boil and pour over the fish.
Decorate with a few leaves of fresh coriander.

My historic holiday
There are places that inspire emotional reactions,
a town founded back in Roman times.
Wandering around the narrow
streets of Frontignan’s old
town, you can easily imagine
its history. From the
Gallo-Roman era to the Kings
of Aragon, Frontignan is proud
its glorious past with
its ramparts and fortifications,
ancient façades and stone
buildings... The Frontignan
Museum, located in the 17th
century Chapelle des Pénitents
Blancs, gives you an opportunity to learn about the town’s
history from prehistoric times
to the present.
St Paul’s Church is the town’s
other jewel. Classified as
a Historic Monument, it was
built as part of the town’s
ramparts out of limestone
extracted from the nearby
Gardiole during the 12th
to 14th centuries.
Inside you can see a painted
beam showing scenes
of chivalrous tournaments
and the jeu de mail.
All this gives Frontignan
its unique character, its
profound Mediterraneanness,

Since 1974, the Chapelle des Pénitents
Blancs (1642) is home to the Museum
now recognized as a “Musée de
France”. The Museum has a very varied

have been donated by the local population or deposited by institutions such as
the State or the Catholic Church.
The collection contains works of art,
prehistoric relics from the La Coste
cemetery, objects found in underwater
archaeology, and a series of objects
and furniture linked to our local identity: the famous Muscat de Frontignan
and Languedoc jousts, collections of
fauna from the Languedoc coastal area.
It regularly organizes temporary exhibitions for artists or on the town’s history.

The Thau country is scattered with towns and villa

throw from Frontignan,
there are the towns of
Balaruc-le-Vieux, Balarucles-Bains, Gigean, Marseillan,
Mireval, Vic-la-Gardiole and of
course Sète, which is a must.
Balaruc-le-Vieux is an old
medieval town, with its
‘circulade’ road system.
Balaruc-les-Bains, the second
largest spa town in France
and the only one located
on the southern coast. Gigean
is a dynamic town, 85% of its
territory is covered by natural
landscape. Set between the
Lake of Thau and the Mediterranean, Marseillan has
a privileged position. Mireval
is a true Southern village with

guarantees a special
welcome adapted to
the needs of handicapped persons. The
logo is posted at the entrance to sites,
buildings, and tourist sites as well as
on all our documentation ensuring that
the handicapped have adequate and
objective information on their access
regardless of handicap (mobile, visual,
hearing, mental) thanks to 4 pictograms.
