Turmeric (Haldi)
Haldi or turmeric is a plant that is ground into a deep orange-yellow powder,
commonly used as a spice in curries and other South Asian & Middle Eastern
cuisine, for dyeing, and to impart colour to mustard condiments. Its active
ingredient is curcumin and it has a distinctly earthy, slightly bitter, slightly hot
peppery flavour and a mustardy smell.
Turmeric grows wild in the forests of South and Southeast Asia. It is one of
the key ingredients in many Asian dishes. Indian traditional medicine, called
Ayurveda, has recommended turmeric in food for its potential medicinal value,
which is a topic of active research. Turmeric makes a poor fabric dye, as it
is not very light fast. It is used in Pujas to make a form of Lord Ganesha.
Ganesha, the remover of obstacles, is invoked at the beginning of almost any
ceremony and a form of Ganesha for this purpose is made by mixing turmeric
with water and forming it into a cone-like shape. Haldi doodh (turmeric milk)
is warm milk mixed with some turmeric powder. It is commonly used in India
as a home remedy when someone is suffering from fever. Turmeric paste is
often used in India as an antiseptic in open wounds, while chun-holud (turmeric
with slaked lime) is used as a home remedy to stop bleeding. It is also used
as a de-tanning agent in India.

Red Chilli (Mirchi)
The chilli pepper (also chile pepper) is the fruit of plants from the genus
Capsicum, members of the nightshade family. India is the world's largest
producer, consumer and exporter of chilli pepper.
Chilli pepper pods, which are berries, are used fresh or dried. Chillies are dried
to preserve them for long periods of time. They may also be dried by pickling.
Dried chillies are often ground into powders, although many Mexican dishes
use the entire chilli. Dried whole chillies may be reconstituted before grinding
to a paste. The chipotle is the smoked, dried, ripe jalapeño. Capsaicin is a safe
and effective topical analgesic agent in the management of arthritis pain,
herpes zoster-related pain, diabetic neuropathy, post mastectomy pain, and
headaches.

Coriander (Dhaniya)
Coriander, also known as cilantro, Chinese parsley or dhania, is an annual
herb, which is a favourite constituent in cuisines the world over.
Coriander, like many spices, contains antioxidants, which can delay or prevent
the spoilage of food seasoned with this spice. A study found both the leaves
and seeds to contain antioxidants, but the leaves were found to have a stronger
effect. Chemicals derived from coriander leaves were found to have antibacterial
activity against Salmonella Choleraesuis, and this activity was found to be
caused in part by these chemicals acting as non-ionic surfactants. Coriander
has been used as a folk medicine for the relief of anxiety and insomnia.
Coriander seeds are used in traditional Indian medicine as a diuretic by boiling
equal amounts of coriander seeds and cumin seeds; then cooling and
consuming the resulting liquid. In holistic and traditional medicine, it is used
as a carminative and as a digestive aid. Coriander has been documented as
a traditional treatment for Type 2 diabetes. A study on mice found coriander
extract had both insulin-releasing and insulin-like activity. Coriander seeds
were found in a study on rats to have a significant hypolipidaemic effect,
resulting in lowering of levels of total cholesterol and triglycerides, and
increasing levels of high-density lipoprotein. This effect appeared to be caused
by increasing synthesis of bile by the liver and increasing the breakdown of
cholesterol into other compounds.

Cumin (Jeera)
Jeera(cumin) belongs to the parsley family. Cumin has been used in cooking
since ancient times. It is grown in abundance in India and is used in most
Indian cuisines. It adds flavour to rice, vegetables, and a wide range of savoury
dishes. It is a key constituent of garam masala/hot ground spices.
One of the best spices to prevent and relieve flatulence, cumin seed helps to
increase breast milk and is beneficial to the heart and uterus. Cumin is an
aromatic, astringent herb that benefits the digestive system and acts as a
stimulant to the sexual organs. Cumin is a general tonic for the whole digestive
system; it is used in the treatment of flatulence and bloating, reducing intestinal
gas and relaxing the gut as a whole.

Black Pepper (Kali Mirch)
Pepper is native to South and Southeast Asia and has been known to Indian
cooking since at least 2 BC.
Like many eastern spices, pepper was historically both a seasoning and a
medicine. Long pepper, being stronger, was often the preferred medication
but both were used. Black Pepper is believed to cure illnesses like constipation,
diarrhoea, earache, gangrene, heart disease, hernia, hoarseness, indigestion,
insect bites, insomnia, joint pain, liver problems, lung disease, oral abscesses,
sunburn, tooth decay, and toothaches.

Fennel Seed (Saunf)
Saunf (also called Fennel or Aniseeds) are the dried seeds of the Fennel plant.
Roughly 4-8 mm in length and looking like a grooved or ridged grain of rice,
Saunf comes in colours ranging from bright to pale green and tan and has a
licorice-like taste - sweeter and slightly less pungent and intense than licorice.
Fennel Seeds are highly aromatic and belong to the celery family.
It’s well known to aid in digestive disorders and excessive gastric problems.
Often used to freshen up breath, it is used today in many dishes in India.

Fenugreek Seed (Methi)
Fenugreek seed, an ancient spice with a slightly bitter taste, is small, hard,
yellowish-brown, smooth and oblong-shaped. The fresh tender green leaves
of the fenugreek plant, called methi or menthi, have a bitter-sweet flavour and
are used as a regular green vegetable in Indian cuisine like dal and vegetables.
Fenugreek seeds can be sprouted, have a slight pungent-sweet flavour and
used to prepare salads. The dried form of fenugreek leaves, called “kasoorimethi”,
is a popular spice used to enhance the flavour of Indian dishes.
Medical research shows that fenugreek seed lowers blood cholesterol and
blood sugar levels.It was also known to cure constipation, as a powerful
expectorant, and is used as a herbal infusion to break up respiratory congestion.
Fenugreek seeds are an important constituent of an ancient ayurvedic cure
for dandruff. Fenugreek seed paste can be used as a face pack also, helping
to tone the skin and cure acne.

Poppy Seed (Posta Dana)
The centre of origin of Poppy is the Western Mediterranean region of Europe.
It is cultivated in India, Russia, Egypt, Yugoslavia, Poland, Germany, the
Netherlands, China, Japan, Argentina, Spain, Bulgaria, Hungary, and Portugal
for its legal pharmaceutical use. It is cultivated in temperate and sub-tropical
region and requires a well drained, highly fertile, light black cotton soil having
a good percentage of fine sand. In India it is a licensed crop since the latex
of the mature fruit are collected for the production of opium, a narcotic
substance.
Poppy seed (KhasKhas) is used as a food and as a source of fatty oil. It is
widely used for culinary purposes. Because of its highly nutritive nature it is
used in breads, cakes, cookies, pastries, curries, sweets and confectionary.
Its seeds are demulcent and are used against constipation. The capsules are
used as a sedative against irritant coughing and sleeplessness in the form of
syrup or extract.

Bishop’s Weed (Ajwain)
Ajwain is an erect, minutely pubescent, branched annual herb with grooved
stems. The leaves are rather distant, 2-3-pinnately divided in narrow linear
segments. The mericarps, which are the components of the fruit, are
compressed, with distinct ridges and a single seed. This is what used as the
spice Ajwain in cooking. It is rich in fibre, minerals, vitamins, anti-oxidants
and health benefiting essential oils like thymol.
Ajwain is traditionally known as a relief to digestive problems.

Mustard Seed (Sarson)
Tiny, mustard seeds have an interesting bite and they contribute to the exotic
flavour and aroma of Indian food. Once you add mustard seeds to your spice
cabinet, the word “spicy” will take on a whole new meaning. Mustard adds
a spicy, aromatic rustic taste and fragrance to your meals. Mustard seeds are
from the mustard plant, which is a cruciferous vegetable related to broccoli,
Brussels sprouts and cabbage.
Mustard Seeds’ hot and spicy flavours enhance cuisines across the world.
Whole Mustard Seeds may be used in pickling or in boiling vegetables such
as cabbage or sauerkraut. Red Mustard Seeds are an important flavouring in
Indian dishes. The seeds are fried in hot ghee or oil till they pop, sputter and
turn grey releasing their nutty, pungent flavour. They are usually fried with
other fresh or dried spices like cumin, asafoetida, chillies and turmeric before
they are added to other Indian food like dals, curries or vegetable dishes.
Mustard not only stimulates the appetite by increasing salivation by up to
eight times, it also has digestive, laxative, antiseptic, and circulative stimulant
properties.

Tapioca (Sabudana)
Sabudana (also known as Tapioca) is a starch extracted from Manioc. This
species is native to the Northeast of Brazil but is spread throughout the South
American continent. The plant was spread by Portuguese and Spanish explorers
to most of the West Indies, Africa and Asia, including the Philippines and
Taiwan, and is now cultivated worldwide. Tapioca pearls make up a common
ingredient of many Indian dishes across India. It comes in two variants –
Sabudana Bada Dana and Sabudana Moti Dana.
Sabudana is full of starch or carbohydrates and is great for a quick boost of
energy, hence often being served in India for breaking fasts during religious
festivals. Sago gruel is also great when you're sick because it gives you quick
energy and is easy to digest. According to Indian medicine, sago and rice
have a cooling effect on the system; hence sago gruel is given if you have
excess bile (caused by excess body heat) too.

Psyllium Husk (Isabgol)
Isabgol, also known as Psyllium Husk, is a natural vegetable product which
is retrieved from Isabgol seeds by milling process. It is the upper coating of
Plantago Ovata, which is purified by sieving and winnowing and mostly comes
from India. It is truly a wonderful product with myriad of benefits and no
known side effects.
Isabgol absorbs water and expands to provide an increase in bulk and moisture
content of stool. This encourages normal peristalsis and bowel mobility.
Isabgol is a soluble fibre, which is different from the insoluble fibres that are
found in wheat bran and cellulose. Insoluble fibres can provide a laxative
effect, but may have no effect on cholesterol. Isabgol on the other hand works
by forming a thin layer on the intestines and then preventing the absorption
of the cholesterol into the arteries, and excreting it in stool and hence producing
moderate but significant improvement in blood levels and of cholesterol.
Isabgol cleans the gastro intestinal tract of toxins by forming a bulk that
promotes evacuation of the bowels. This also removes indigestion, intestinal
obstruction and flatulence, thus removing lethargy and providing a feeling of
well being. Isabgol is also used in piles, fissures and fistulas to bring down
the burning sensation after defecation. It also helps to prevent strain during
defecation in those who are suffering from cardiovascular diseases, hernia
and pregnancy.

Black Cumin (Kala Jeera)
A spice that’s popular in North Indian cuisine, Kala Jeera is used to flavour
food, especially rice dishes, with a distinct rich and nutty taste. This spice is
also known as black cumin (Bunium persicum). Like its regular cousin, Kala
Jeera belongs to the parsley family. A native to Central Asia and Northern
India, the plant has been used in cooking for centuries.
The dark brown, crescent-shaped seeds are used to spice up pickles and to
flavour curries, soups, stews, rice dishes and various baked goods. The
essential oil extracted from the seeds is used to enhance the flavour of
condiments and sauces. Ayurveda, India's system of traditional healing
depends heavily on the seeds and oil of the plant. It’s traditionally used over
topical wounds, boils and other skin conditions because it’s thought to be
antibacterial. Mansfeld's World Database of Agricultural and Horticultural
Crops mentions that the seeds and essential oils are considered effective tools
to resolve gastrointestinal problems and increase the flow of urine.

Five Spices (Panch Foran)
Panch Foran literally means “five spices.” It is a blend of spices commonly
used in Eastern India and Bangladesh and comprises the following seeds:
Jeera, Mustard, Methi, Kala Jeera and Saunf.
Panch Foran can be used to prepare anything that caters to your crave for
spicy food. Panch Foran is useful as a marinating agent, added to Indian
stews, sprinkled on vegetables, or used for pickling vegetables. It is also a
delicious addition to any “carb-like” foods. For instance, breads like naan and
others. It adds a wonderful depth and flavour to any dish it is added to.An
essentially Eastern Indian cuisine will be embellished with the ideal blend of

Kasuri Methi is an ancient spice especially used in pickles. Kasturi Methi is the dried leaf of the fenugreek
plant. The dried leaves are used as an herb. The taste is bitter but addictive. This herb is used as a spice

Masala Papad
Punjabi Masala Papad
Masala Papad is a thin, sun dried cracker mostly made with lentils. The dough is prepared with grains,
oil and salt, which is then rolled out to super fine thin sheets and left in the sun to dry. Add spices like
cumin, black pepper, chilli or asafoetida to give flavour and enjoy the papad.
Punjabi Masala Papad is a unique Indian snack dish, based on the Punjabi cuisine. The crispy papad can
