Turmeric (Haldi) Haldi or turmeric is a plant that is ground into a deep orange-yellow powder, commonly used as a spice in curries and other South Asian & Middle Eastern cuisine, for dyeing, and to impart colour to mustard condiments. Its active ingredient is curcumin and it has a distinctly earthy, slightly bitter, slightly hot peppery flavour and a mustardy smell. Turmeric grows wild in the forests of South and Southeast Asia. It is one of the key ingredients in many Asian dishes. Indian traditional medicine, called Ayurveda, has recommended turmeric in food for its potential medicinal value, which is a topic of active research. Turmeric makes a poor fabric dye, as it is not very light fast. It is used in Pujas to make a form of Lord Ganesha. Ganesha, the remover of obstacles, is invoked at the beginning of almost any ceremony and a form of Ganesha for this purpose is made by mixing turmeric with water and forming it into a cone-like shape. India is the world's largest producer, consumer and exporter of chilli pepper. Chilli pepper pods, which are berries, are used fresh or dried. Chillies are dried to preserve them for long periods of time. They may also be dried by pickling. Dried chillies are often ground into powders, although many Mexican dishes use the entire chilli. Dried whole chillies may be reconstituted before grinding to a paste. The chipotle is the smoked, dried, ripe jalapeño. Availability: Powdered spice 100g / 50g Coriander (Dhaniya) Coriander, also known as cilantro, Chinese parsley or dhania, is an annual herb, which is a favourite constituent in cuisines the world over. Coriander, like many spices, contains antioxidants, which can delay or prevent the spoilage of food seasoned with this spice. A study found both the leaves and seeds to contain antioxidants, but the leaves were found to have a stronger effect. Chemicals derived from coriander leaves were found to have antibacterial activity against Salmonella Choleraesuis, and this activity was found to be caused in part by these chemicals acting as non-ionic surfactants. Coriander has been used as a folk medicine for the relief of anxiety and insomnia. Coriander seeds are used in traditional Indian medicine as a diuretic by boiling equal amounts of coriander seeds and cumin seeds; then cooling and consuming the resulting liquid. In holistic and traditional medicine, it is used as a carminative and as a digestive aid. Coriander has been documented as a traditional treatment for Type 2 diabetes. A study on mice found coriander extract had both insulin-releasing and insulin-like activity. Coriander seeds were found in a study on rats to have a significant hypolipidaemic effect, resulting in lowering of levels of total cholesterol and triglycerides, and increasing levels of high-density lipoprotein. This effect appeared to be caused by increasing synthesis of bile by the liver and increasing the breakdown of cholesterol into other compounds. Saunf is sourced from Unjha, Gujarat Availability: Whole spice 100g / 50g Fenugreek Seed (Methi) Fenugreek seed, an ancient spice with a slightly bitter taste, is small, hard, yellowish-brown, smooth and oblong-shaped. The fresh tender green leaves of the fenugreek plant, called methi or menthi, have a bitter-sweet flavour and are used as a regular green vegetable in Indian cuisine like dal and vegetables. Fenugreek seeds can be sprouted, have a slight pungent-sweet flavour and used to prepare salads. The dried form of fenugreek leaves, called kasoorimethi, is a popular spice used to enhance the flavour of Indian dishes. It is cultivated in India, Russia, Egypt, Yugoslavia, Poland, Germany, the Netherlands, China, Japan, Argentina, Spain, Bulgaria, Hungary, and Portugal for its legal pharmaceutical use. It is cultivated in temperate and sub-tropical region and requires a well drained, highly fertile, light black cotton soil having a good percentage of fine sand. This species is native to the Northeast of Brazil but is spread throughout the South American continent. Isabgol absorbs water and expands to provide an increase in bulk and moisture content of stool. This encourages normal peristalsis and bowel mobility. Isabgol is a soluble fibre, which is different from the insoluble fibres that are found in wheat bran and cellulose. Insoluble fibres can provide a laxative effect, but may have no effect on cholesterol.
