Who would have believed it? One of the world’s most famous institutions is opening to the public; two
major hotels are opening in Paris, one with the accent on exoticism, the other on the history of France;
two top chefs are opening their restaurants in Paris and shaking up the world of gastronomy; and finally, a
mythical name in French lifestyle unveils its newly refurbished historic address. In short, a fantastic autumn
in Paris!
Culture //
Visit to the unique United Nations, in Paris
Whilst most people start their tour of Paris with a visit to the Eiffel Tower, or the Louvre Museum, some tourists
look for more unusual ideas … Now they will be able to satisfy their curiosity with a visit to Unesco (United
Nations Educational, Scientific and Cultural Organization). A great way to imagine slipping into the skin of a
diplomat in the General Conference room! The visitor will learn a lot about this institution, its missions and
emblematic projects, as well as its rich heritage. The 260 works of art on show testify to the artistic diversity of
the 195 member countries and make Unesco a veritable museum: Calder, Erró, Giacometti, Goya, Le Corbusier,
Mondrian, Moore, Picasso, Vasarely, Vélasquez, etc.
The guided tours last from 40 minutes to 1hr30 and are adapted to the profile of the visitors (groups or individuals) and are an opportunity to discover a trilingual exhibition and two temporary exhibitions, all in a contemporary building and rare Japanese garden in Paris.

Huatian Chinagora Hotel: another world on the edge of Paris
Chinagora, a legendary building a few steps from Porte de Bercy, has gained a new lease of life. Taken over by
the Chinese group Huatian, this hotel complex at the junction of the Seine and the Marne has been refurbished
with the aim of making it a highly-luxurious and refined venue in Chinese style.
The initial architectural challenge of its construction was taken up by a Chinese architect, Liang Kunhao, who
took his inspiration from the Forbidden City in Peking, 20 years ago. The resulting work comprises five gigantic
buildings with a surface area of 44,000 m2 and a central garden of 200 m2 in the style of traditional Chinese
gardens. In the heart of Chinagora is a luxury nine-floor hotel with guest rooms in pure contemporary style,
with a view of either the Marne or the interior garden; a gastronomic Chinese restaurant as well as seminar and
wedding rooms. The rather out-of-date rococo decor and gaudy colours of the 90s has been replaced by marble,
and a purist style of cream and brown shades in the hotel’s 187 guest rooms. Attention to detail includes the
replacement of signs such as ‘Do not disturb’ by automatic buttons.
A veritable haven of peace for the leisure tourist or private and professional events.

Chateau life at Chantilly
Formerly a place of relaxation for the princes of France, the Auberge du Jeu de Paume has just opened in Chantilly in a historical and prestigious setting. Only 45 minutes from the capital and 20 minutes from the airport of
Paris – Charles-de-Gaulle, it is an invitation to enjoy history and luxury. The Auberge du Jeu de Paume is situated
in the centre of this town with its rich past, symbolized by the chateau, the grand stables and the racecourse. It
seeks to strike a balance between heritage and modernity.
The 67 guestrooms plus 25 suites are luxuriously decorated showing the essence of French expertise and sophistication: Toiles de Jouy and Louis XV-style furniture in solid oak and Italian marble with all contemporary comfort
and pure lines.
Guests can choose from two restaurants. The Table du Connétable is a gastronomic restaurant. The decor includes
parquet flooring in a chevron pattern with superb rugs, all in beige and burgundy colours. The sophisticated
cuisine blends traditional flavours with creative touches and the young chef Arnaud Faye works from a kitchen
opening onto the dining room enabling clients to admire the work of the team as they enjoy their meal. There is
also a wonderful view through the large windows onto the gardens of the chateau. The brasserie of the Winter
Garden, opening onto the patio serves more simple and convivial meals using local and seasonal produce. The
interior decor, with its ‘Galeries des Singeries’, makes reference to the work of Christophe Huet that can be seen
at the chateau.
For relaxation, there is also the spa, of Moorish inspiration with coloured mosaics … the perfect place to end or
begin a day of cultural visits.
Business travellers have an upscale conference centre with five rooms equipped with the latest technology.

Gastronomy //
Pierre Sang in Oberkampf: young and inventive cooking
Pierre Sang Boyer, finalist in the Top Chef TV series, opened his first restaurant this year in the popular and
lively rue Oberkampf. No menu here: the cooking depends on seasonal products and the mood of the young
French chef of Korean origins. His cooking, he says, has enabled him ‘to weave links between the two cultures
and seeks to be the expression of a certain humanism. In this way it is the reflection of a world that is a mix
of flavours, traditions, cultures and colours’. And the venue is similar: open kitchen, unadorned spare style,
modular spaces, etc. On the lower ground floor, a wine cellar hosts 20 or so people in a more cosy atmosphere
and may be privatized. Three options are offered at lunchtime: two, three or four dishes. In the evening, a six
course menu is served, with pairing of food and wine. The cooking is creative and gourmet with dishes like the
Madagascar gambas in kadaif with a sweet and savoury sauce; pig’s cheek, cream of sweetcorn, onions and
pink beetroot; or even the already famous sweet couscous made with semolina rice pudding-style, seasonal
fruit and martini/mint granitas. Finally, on Sunday evening, the restaurant offers a unique buffet meal, prepared
by Pierre Sang.

La Dame de Pic plays her hand of flavours
Restaurant proprietor Anne-Sophie Pic, who hails from Valence on the banks of the Rhône and who is the only
woman to have been awarded three Michelin stars in France, has opened her first restaurant in Paris, on rue du
Louvre. Here the focus is on flavours, refinement and sharing. To embark on this adventure, Anne-Sophie Pic
called on the talents of perfume maker and tester at Takasago, Philippe Bousseton, with whom she worked on
the harmony of perfumes and flavours. Three menus are offered for this first menu which will change every two

months: ‘Vanille ambrée’, ‘Iode et fleurs’ and ‘Sous-bois et épices’. A more simple lunch menu is also served.
As for the setting, the immaculate white kitchen, visible from outside and from the dining room, is simple and
inviting. The tables are laid out next to each other, while at the same time respecting a certain privacy and, on
the wall, wall lamps illuminate paintings of flowers in leather appliqué, which gives the place a sophisticated,
almost theatrical touch.

Mythical Lalique
Opened in 1935, the Lalique shop in rue Royale has just had a makeover. The Lalique house is part of France’s
most prestigious heritage; its glass and crystal creations have been part of the collections of the Musée des Arts
décoratifs since 1895. Renowned for its creativity in lifestyle, Lalique, a pioneer of the Belle époque, was one
of the leading initiators of the art nouveau and art deco movements. A jeweller, before being a glass maker, the
founder René Lalique also fitted out the dining room of the liner Normandie, as well as the train of the luxurious
Orient Express; he also decorated hotels and even churches!
Today, the shop in rue Royale presents five different collections: decorative items, interior design, jewellery, art
and perfumes. Reissues of original creations as well as contemporary creations have found their place in an
extended space where there is a play of light on the black granite floor and white walls. The emblematic pieces,
in particular the bottles of perfume, as well as the jewellery and high-end jewellery are majestically presented
in all their timeless and precious beauty.

Paris on a cheese board. The capital of gastronomy is also the capital of cheese. With numerous
addresses in Paris, visitors can discover the extraordinary variety of flavours and textures of this French
speciality. Restaurants, wine bars, cheese shops and specialists in gourmet tours: a quick round up of
places to get to know.
Cheese restaurants and wine bars … //
Several restaurants and wine bars put the emphasis on cheese and the ways in which it can be cooked
with set menus or à la carte. In the Marais, Pain, vin, fromage has the look of a mountain chalet with its
exposed stone and beams, and cow bells hung here and there. Accompanied by some three types of bread
(with sesame seeds, poppy seeds or plain), some 50 cheeses are served in recipes such as fondue, raclette,
tartiflette, and toasted open sandwiches. Opened by a former professor of philosophy, Fil’O fromage is a
mix of caterer, wine cellar and restaurant. Upstairs, you can enjoy plates of charcuterie and cheese (from
the Alsace, the Aveyron, and the Basque country), aligot, hot casseroles with ewe’s cheese from Corsica or
goat’s cheese with fig to the sound of jazz. Another concept: the Salon du fromage Hisada, named after its
creator, a Japanese master cheese maker trained in France. With a shop on the ground floor, and a restaurant upstairs, with uncluttered spare design, it offers a buffet of excellent cheeses, cheese boards, fondue,
raclette and cheese toasties. L’Ambassade d’Auvergne, a Parisian symbol of the culinary traditions of the
region for more than forty years, is recommended for its amazing aligot, served with a Parlan sausage or
with breast of duck, below the hams hanging from the ceiling of this rustic inn. Fans of Italian cheese will
opt for Mmmozza, a place devoted to mozzarella in all its forms (bufflonne or cow, burrata, fior di latte,
smoked, etc.). It can be enjoyed along with charcuterie and Italian wines or other cheese specialities, like
the ewe’s cheese with black truffle, to vary the pleasure. At L’Écluse, cheese occupies a choice place on
the menu. Located in the Latin Quarter, this wine bar has a terrace with a wonderful view of Notre-Dame.
Difficult to choose between the Roquefort with a spoon, the thérondels (tomme de montagne) accompanied
with radishes, the Estaing with its quince paste or a cheeseboard for two with two glasses of different
wines. Nicolas a leading wine merchant in the city has opened three wine bars, including one in a former
wine store house in the picturesque Bercy Village with its paved streets. Visitors can taste a variety of
seasonal cheeses either in the lovely stone-walled room or outside on the terrace.

Traditional alpine dishes such as fondues, raclettes, tartiflettes and other melted cheese specialities are firm
favourites and there are lots of places in Paris that serve them. Les Montagnards has created a typical Savoy
region atmosphere (red and white decor, old skis and sledges on the walls), in which to enjoy delicious fondues
with three or four cheeses, raclettes, a hot box of mont d’or, or platters of four cheeses and crudités accompanied by a dish of melted cheese. Le Chalet savoyard has a warm and contemporary setting a mix of wood
and metal decor. The menu has a large selection of regional dishes and house specialities: fondues with four
cheeses (cumin, goat’s cheese and honey, Roquefort and nuts, etc.), raclettes (unpasteurized milk, morbier,
goat’s cheese, etc.), tartiflettes (smoked salmon, cèpes, etc.), croziflette, carpaccio à la tome, beef kebabs with
melted cheese, etc. At the Fondus de la Raclette, the omnipresence of wood and snowshoes on the walls plunge
clients into the atmosphere of a mountain chalet. It is a relaxing place to enjoy three-cheese fondues, raclettes
(several sizes) or hefty slices of bread with various toppings. La Grolle de Montmartre transports its clients to a
rustic alpine inn with stone walls, checked tablecloths and jam preserving pans hanging from the ceiling. On the
menu, typically regional dishes: fondue, raclette and reblochonnade. Finally, another great address is the Bistrot
du boursier. It features a solid wood bar and large tables and serves copious fondues and raclettes.

The cream of master cheese sellers and ‘affineurs’
(cheese ripeners) //
Paris is full of master cheese sellers who refine selected regionally produced cheeses with care. Established in
Paris in 1909, Androuet has played an important role in introducing the traditions and expertise of French cheese
making to Parisians. This renowned cheese house, which today has six shops, offers more than 200 types of
cheese, as well as a large selection of European specialities (gruyère, manchego, stilton, etc.). Another Parisian
institution of international renown is cheese shop Marie-Anne Cantin, opened in 1950 by her father. It buys
cheeses from local producers then refines the cheeses in its own cellar for 15 days for goat’s cheeses, and for
up to two years for comté. It also organizes bespoke tasting sessions. Equally reputed, Quatrehomme has been
supplying the best restaurants with cheeses since 1953. The first woman to have been voted Meilleur ouvrier de
France in the category for cheese, Marie Quatrehomme offers more than 200 products with great character, from
the most popular (camembert, roquefort, etc.) to the more unusual like the old comté aged for 4 years or the
100-day goat’s cheese. Cheese is also a woman’s business in the small shop Chez Virginie in Montmartre of Virginie Boularouah, daughter and granddaughter of cheese sellers and cheese ripeners. Connaisseurs come here
for its hundred or so flavoursome cheeses, often original or rare like the Savoy goat’s cheeses, the blue cheese
of Aravis or the blue cheese of Termignon. Another ‘star’ of French cheese is Nicole Barthélémy who has a shop
in the heart of the 7th arrondissement of Paris. Behind a pretty facade are some of the finest farm cheeses from
the best local areas, aged with care: the saint-nectaire has a good earthy taste and the renowned fontainebleau
cheeses are the glory of the cheese house. Aux Bons Fromages has been run by the same family for generations
and delights its clientele with a rigorous selection of perfectly aged cheeses from different regions, including
fine cheeses from the Auvergne (fourmes, salers, cantal, etc.) and specialities from the Savoy region (reblochon,
abundance, etc.). Another local address with a great reputation is La Fromagerie de Paris, run by Éric Lefebvre,
Meilleur ouvrier de France, and his wife Patricia. In this tiny place, some 200 cheeses are artfully aged and are
displayed close together, even overlapping, among which a succulent camembert, extraordinary goat’s cheeses
and a large choice of English blue cheeses. Another meilleur ouvrier de France, Laurent Dubois presents the classic palette of French regional cheeses, as well as less well-known and harder to find cheeses that are favourites
of his such as tarentais, stichilton or the old gruyère de chalet. Not forgetting his own creations that he makes
by playing with colours, textures and flavours: brie with figs, mont d’or with fresh truffle from Périgord, nougat
of old Gouda with pistachios, etc.

A walk in Paris can also be an opportunity to discover France’s rich cheese heritage. This is just what Paris
Sweet Paris invites clients to do: enjoy strolling around and discovering the capital from a cultural and gourmet point of view. sellers, patisserie shops, etc.). Cheese is also on the menu at 4 Roues sous 1 parapluie which offers its
clients the possibility of discovering the pairing of regional cheeses and wine at the restaurant La Truffière
(5th) or L’Écluse. Fans of contemporary design will go to Design à Paris, whose itineraries show the city’s
designer spots. The tour includes a visit to the Milk Factory (11th), an art gallery where culinary designers
exhibit their works, all milk-based products, including cheese. Finally, to know everything about the cheese
specialities of different countries, why not go on a course … to La Belle École, a master cheese seller presents 10 different cheeses, how they are made, the art of serving them and pairing them with wine. You can

Art nouveau style at the Eiffel Seine

Le Barock, the new venue of the Pearl group
After the Sens, Palais Maillot, Palace Élysée l’Élysée Lounge and the Salon 105, the Pearl Group continues
to expand its network of venues around the Champs-Élysées. Le Barock comprising three large fully modular
spaces topped by a large glass roof is available for full or partial private hire in the week and is transformed
into a club (the Noire Platine), at the weekend. The different volumes, linked by a majestic staircase, are

The Campana brothers revamp a suite at the Lutetia
Inaugurated in September with the support of the Brazilian Embassy, the new suite at the Lutetia, in Paris, is
simply called ‘Fernando & Humberto’. The two icons of Brazilian design had always dreamed of designing one
of the luxury guest rooms of this timeless hotel on the Left Bank. Recognized for their astonishing work on
taking artisanal objects out of their framework of meaning and their ability to break the aesthetic codes of the
20th century, the two designers have played on contrasts with this contemporary suite set in a classic environment. The hotel furniture has been given shades of brown and green to emphasize the cosy atmosphere
of the room. The carpet, which extends to the bed head, was created especially for the occasion, bringing a
touch of refinement and elegance. The motifs designed by the two artists are repeated on the cushions that

A taste of nomad at Fashion Week
Every autumn, Paris Fashion Week has the whole city buzzing. Fashion shows follow on one after the other and

As the hotel ‘Montmartre mon amour’ has just opened, ParisNews takes an
interest in Franco-Lebanese renowned ‘atmospherist’ Sandrine Alouf, who is
behind several Parisian hotels. An encounter with this remarkable individual
and a look at an unusual profession.
Can you tell us where you are from and briefly how you became acquainted with Paris?
S.A.: I have a particular historical connection with Paris as one of my grandmother’s was born here. My maternal
grandmother considered herself French but she lived in Belgium. She was very fond of France and even used
to get out the French flag every Bastille Day, which in fact annoyed my grandfather … This extraordinary grandmother who brought me up was someone of importance: a decorator, the first female pupil at an art school,
first woman teacher … My father, of Lebanese origin and my Belgian mother, both graphic designers were also
her pupils. She only dreamed of one thing: that I should go to Paris; already when I was still very young, she
would talk to me about the merits of this city. She was always therefore encouraging me to leave – not that I
needed much encouragement!
Your career path has been an unusual one!
S.A.: I studied art history in Belgium and I ran a museum there. Then, I felt as though I had had enough … I
changed direction and country because of a set of extraordinary circumstances: one day travelling by Thalys to
Paris, a guitar landed on my head. The guitar belonged to a journalist at Inrockuptibles, who was going to work
at Nova, and who, quite embarrassed, offered to do an article about my profession (I was a curator at the time
in a museum for the foundation for architecture in Brussels). We immediately got on very well together and I
then met the director of Nova, who offered me a job. I therefore abandoned everything to come to Paris, but
when I arrived, he had forgotten about the offer he had made! A great moment of solitude … my new start in
Paris had started badly! That was on 1 October 2000.
I had no wish to go back but did not know what to do … Fortunately, my life has been filled with amazing
encounters. Many wonderful people, such as the former Managing Director of the Paris Convention and Visitors
Bureau, Christian Mantéi, who became one of my kind sponsors. Thanks to him, I went to work on a project, the
Universal Exhibition in Seine-Saint-Denis planned for 2004; unfortunately 6 months later, the project fell through
and I found myself again with nothing. The abandonment of the project nevertheless entitled me to compensation that enabled me to create my own company ‘Label Go Libanaise’, a nod to my Belgian-Lebanese origins.
I treated myself to a trip to China, taking with me a camera. In Shanghai, I bought a Chinese bicycle and I
explored. I had somewhere to stay and every day I widened my circle to explore further afield. I took photos of
the city, which at the time was very dirty, photos of grime: for me that looked monster. On my return, I wanted
to thank all the people who had helped me in Paris, and I made a ‘monster cheque book’, which I had wrapped
up by my cheese seller! I sent it to all my contacts. After that, I received calls from shops that wanted to sell
my books including the famous Colette concept store. Then, some advertising agencies contacted me because
they wanted to know what type of photos I took.
Do you have any training in photography? How did things happen?
S.A.: I am totally self-taught and before that I was not especially into taking photographs. You should know
however that I hate the passing of time and therefore I never wear a watch. But as I am very sentimental, poetic

and emotional, I nevertheless need to mark out my life. I therefore take photos of the sky, every time that I
have strong emotions, whether they are happy ones or not. As a result of this I have 7,000 photos of clouds …
My grandmother, who died at this time, left me a letter which said ‘on Earth as in heaven I will always be there’.
I wanted to tell her that heaven was below, so that she would be with me. I wanted in a way to put heaven
below – you see, everything that I do is linked to my past! I therefore decided to write to the RATP to suggest a
project on clouds in the metro — in a very naïve way, which is quite a Belgian way of behaving! For six months,
I called the same person at the same time on the same day and finally I got a response. It so happened that it
was the Year of Brazil in France and that the RATP were looking for partners to decorate an RER station on the
theme of ecology. The project was to be totally self-financing and I had three weeks to find the necessary financial backing. Luckily, as I had been a curator in a museum, looking for funding was not beyond me. I knocked
at several doors, at government ministries and private sponsors. I then thought about calling Air France, who
the same day offered to fund all my expenses and provide an advertising poster.
Once again it is an incredible story because for several reasons the project did not take off. There was a press
conference which was cancelled and everything fell through though I had prepared a press file in the shape of
an air bubble, badges with my photos of clouds, etc. Everything had therefore been cancelled but my file had
been sent off and I was contacted by ELLE magazine, interested in my badges! I was offered coverage in the
weekly and I put a handful of badges in a shop that I knew, Facteur Céleste, simply to have a bit of visibility.
So successful was it that I had to replenish the badges for more than two years! They were sold in numerous
shops including the famous Colette store.
There were many responses to these: people sent me photos of clouds to complete my collection, a petition
gathered 300 signatures for the clouds to be displayed in the Metro at Barbès where air was needed, rather
than in the RER Luxembourg as initially planned … A professor at the Sorbonne stopped in front of each cloud
and wrote a poem, he sent me all the poems – unfortunately I never succeeded in finding him.
One day, someone offered to buy some of my cloud photos to decorate a hotel reception; I replied that I dreamed more of sleeping in a cloud in a state of weightlessness: that is how I decorated One by the Five.
That is how everything began and how I had my first experience in hotel decoration. But I am not an interior
decorator! I realized that in France, one likes to put people in boxes, I have therefore created my own box: I
am an ‘atmospherist’.
Since your first collaboration in 2008 in the hotel world, how have you focussed your activities?
S.A.: I still take photos, publish books, make atmospheric objects and of course I have created hotels with
atmosphere … After One by the Five, I worked in Paris for the Apostrophe hotel and for Sublim Eiffel. Monmartre
mon amour is my fifth hotel.
Where do your ideas come from and what influences are you sensitive to for the decorations of the the hotels
that you have worked on?
S.A.: I take inspiration from my travels, reading, looking at what is around me, hunting out second-hand objects,
opening different doors … in short by being very curious, on the lookout for anything poetical and magical.
Is Paris such a source of inspiration?
S.A.: I love Paris and I never tire of loving it … I am like a foreigner – which I am – in this City of Light. Unlike in
Brussels, where I was always looking down at my feet so as not to trip over the badly designed pavements, in
Paris I look up to admire the city and see the sky. Paris inspires me and I love creating atmospheres in hotels
that transport guests into a different Paris.
Do you have any projects planned?
S.A.: Yes, a very fine project in Nice for the Groupe Maranatha group (to which Montmartre mon amour belongs)
and a project for a hotel in the 17th arrondissement, near to Parc Monceau ... wonderful new stories to tell.

What are your favourite places in Paris?
S.A.: The Palais-Royal is my garden! I love the 2nd arrondissement and so I’ve set up my studio there. I also love
to spend fleeting moments at the Louvre Museum, to eat sushi around rue Sainte-Anne, and go to Galignani
bookshop. Paris is so full of amazing little shops that it is impossible to mention them all!
