Migration of cocoa butter fat to the exterior 3. Main cause: temperature fluctuations 4. The storage temperature of chocolate is very important. Temperatures of 18°C/65°F should be respected. 5. Fatbloom doesn’t affect the taste, but the shiny glow is fading. 4. What is “sugar bloom”? 1. A humidity shock or “whitening” 2. Migration of sugar from the filling to the outside 3. Main cause: humidity level too high 4. The storage standards are very demanding; constant temperature and permanent control of humidity levels. Max 55% 5. Sugar bloom does not affect the taste. 5.
