No ugly ducklings here
In fact, the little lovelies form the
backbone of Steve Nelson’s farm
located northwest of Luverne

As you drive by the Steve Nelson farm northwest of Luverne it
looks like most of the farms in the area. There is a red barn standing
prominently in the farmyard along with a number of other outbuildings
designed for livestock production. But instead of hogs or cattle, geese
and ducks are being raised here.
What you have found is the Nelson Game Farm— “Home of Minnesota
Mallards.”
“This is a different kind of lifestyle than what you see around the
neighborhood, typically it is cattle, grain and hogs,” said Nelson.
Nelson said he has been raising mallard ducks for 20 years or longer.
“It gets to be you don’t keep track after awhile,” he noted. In fact, he has
been raising ducks since he was 13 years old.
“We are a licensed hatchery,” Nelson said. “In order to get licensed all
of the breeders (ducks) need to be blood-tested. Then if they pass you
can be licensed.”
When a game farm is licensed there are regulatory things that need to
be done each week including cleaning and disinfecting. Another important aspect of this unique business is that Nelson, after each hatch,

This hatchery fluff or debris is tested for four or five different diseases
including avian influenza, typhoid and salmonella.
“It is something we have to do to be in the business,” he said of the
regulations. “It takes a lot of work and time but that is what we are in it
for. I still like it better than the alternative.”

sure the ducks and geese are flourishing.
Before he started the game farm Nelson raised
ducks as a hobby but at this point it is a far cry from
those days.
“We raise in the neighborhood of between 20,000
to 25,000 mallard ducks a year,” said Nelson, “they all
go to AKC field test and hunt trials throughout the
country. They are mainly used for dog training.”
As to how he went from raising ducks as a hobby
to raising them as a business, Nelson explained that
he had a couple of friends who were training dogs at
the Sioux Valley Retriever Club near Hartford, S.D. He
said his friends stopped by one day and were wondering if he could raise about 500 mallards for them
for use in their club trial and for people to use.
“I told them I could do that and told them to send
out the people in charge,” said Nelson, “Then I went
to the first monthly meeting and they wanted to
know why I thought I could do that for them. I told
them I have raised ducks for quite a few years and
have never had the opportunity to do anything like
this.”
That first year, and for a couple of more years
after that, Nelson raised 500 ducks. Then other clubs
began to call him.
“The next thing you know we were doing 2,500,
then over 6,000 and then the next thing we were
raising 10,000,” Nelson said. “My banker asked me if
I had a cutoff point and I said I would like to get to
16,000. I told him I thought that would be interesting.
Well, we went right past 16,000 so fast we didn’t get a
chance to slow down, it’s in the 20’s now.”
He said it has always been a good business but

Nelson said he uses commercial feed and grain.
With high corn prices that made the feed more
expensive thus hiking the cost of raising the ducks.
Steve’s son, Brennan, commented that the ducks
are sent almost anywhere in the United States.
The first hatch of the year was completed just last
week and Nelson said the first hatch is generally the
smallest.
“We generally hatch out around 1,300 a week after
the first hatching,” he said.
Nelson said that right now they have 540-550 hens
and 150 drakes, noting that this is a good mix to produce eggs.
“The hens will lay for three months and right now
we are averaging about 320-325 eggs a day,” he said.
“But there will be hens that will be starting and some
quitting so you can probably get five months out of
them before they decide to take a rest.”
The hens lay one egg a day and will generally lay
over a hundred eggs before they decide to take a
rest.
Once the eggs are collected they are washed by
hand, placed in trays of 30 and then are stacked and
left to set in a room at 50 degrees for a week before
they are put in the incubator.
“We set roughly 2,000 eggs a week,” Nelson said,
“It is a four-week system.”
They have two incubators. One holds 9,000 eggs
and the other 2,000.
“For the first hatch we usually start by using the
smaller incubator,” Nelson said. “Then as we get

“During hatching it gets to be long hours,” he said.
“The eggs need to be turned five times a day. Plus you
also need to keep checking on things. It gets to be
some long hours but we enjoy doing it.”
Once the ducklings hatch they are then moved
over to a pen in another building.
“We take them out of the hatcher and toe clip
them so they are legal,” said Nelson.
Toe clipping is when the back toe on the left foot is
clipped off. This is done to show that they have been
raised in captivity and don’t come from the wild.
Nelson explained that with the toe clipped the ducks
are then able to go anywhere in the United States
without anyone questioning where they came from.
The ducklings stay in the first room for a week.
This room is kept at 80 degrees and wood chips are
used for bedding. They are then moved to the next
room, and so on until at about six weeks of age they
begin to go outside.
Once the ducks are moved out of the first room,
straw is used for their bedding.
There also are heaters to help keep the ducklings
warm. Nelson said the heaters are run by a thermocoupler unit so if the electricity goes out they still
have heat.
“People say you can’t hatch ducks this far north.
That it will never work because you can’t keep them
warm enough,” Nelson said, “but that is why in this
building where the new ducks start out the ceiling is
low.”
He explained that their survivability rate is about
99 percent and they know people who will take 2,000
birds and lose 500.
“We give them vitamins and electrolytes for three
or four days and then put them on the automatic
waterers,” he said.
The ducklings are started out with a 24 percent
protein ration for three weeks and then go to a pelleted 18 percent ration until they leave the farm. He
noted they usually leave around 16 weeks of age.
“It’s fun to watch the ducklings—they are pretty
lively,” he said. “They grow so fast. They double their
size every week. You really notice it when you look at
the different batches.”
While looking at the pen of new ducklings, he
said, “I call them my black carpet,” referring to the
color of the ducklings and how they gather together
to help stay warm.
He commented that he talks to the ducks when
he comes into the room. “You become the mother
imprint that they don’t have natural.”
As he was looking at the ducklings he commented
that he doesn’t think there is anything cuter than the
baby ducklings.
“I’ve seen baby pheasants, turkeys and chickens
and they don’t come anywhere near comparing to
these guys,” Nelson said.
The entire family helps out on the game farm
including some hired help.
Besides raising mallard ducks, Nelson also raises
geese.
“I’ve had Canadian geese since 1972,” he said.
“Besides Canadian geese I have about 100 Snows and
Blues, a couple of Barheads and a couple of White
Fronts.”
He said they used to sell the geese to everyone
who wanted to order them. “We did that for 25 years,
we had fun doing it,”
The geese were sent to every state including
Hawaii. They’ve been transported to Italy and there
were a bunch of them that were in a movie where the
geese follow a plane. Nelson noted that it wasn’t “Fly
Away Home” but instead a movie that was done in
New York.
Not to be outdone, some of his ducks have also
been in a movie where they could be seen flying off
of a golf course in a scene from the movie.
“It’s more interesting, more self-interesting,” said
Nelson. “We’ve enjoyed doing it all these years. I was
13 years old when I started raising ducks and it is
something I’ve always enjoyed doing.”

After years of learning what it
took to raise and sell cattle and
chickens that were grown on
grass, all of it was taken away in
an instant.
Hundreds of chickens blew
away in a twister that also mangled dozens of cattle and wiped an
entire farmstead — house, shop,
barn and silos — right off their
foundations.
It took everything but the grass,
the family and the passion for what
they do from Dan and Terese Hall
of rural Butterfield on Aug. 1, 2006.
And now they are back in business.
“We pretty much had a conversation in the middle of the yard
three days later, ‘What do you want
to do?’” Dan recalled.
The answer was more of what
they had been doing since 1986,
when economic conditions pushed
them into the grass-fed business.
“In the ‘80s, that was pretty well
our salvation at the end of the tun-

nel, it looked like to us. Our costs
were just going completely crazy,
like they are now, and we had no
control over it,” he said.
So the family got into raising
sheep with a herd of 50 — and
soon faced their first obstacle.
“Our shearer said we’d never
keep them in,” Dan said.
For the Halls, that was a challenge, and the experience of fencing them in led to a business that
has carried them ever since.
Raising the sheep was a learning experience, and it prepared
them to later move on to grazing
calves.
Eventually they started sending a steak or chicken home with
people, and it very seldom failed to
draw attention, Terese said.
“People said, ‘My god, we can’t
believe how it tastes,’” she said of
their earlier years raising tender,
high-butterfat meat from Jersey
cows.
“It’s not something you jump
over to in one night and make a
living on,” Dan added, “but it’s
something people are interested
in — where their food comes from
and what it’s been through before
they got it.”
The Halls never imagined their
cattle — those that made it out
alive — would have to go through
the trauma of a tornado. And they
never imagined themselves being
so close to starting over.
“It’s been quite a process since
then. I wouldn’t want to have to do
it again,” Dan said.
Leaning on their fencing business and focusing on the futures
of their four sons, who each
shared shop space doing motor
work, welding and hydraulics, the
Halls spent their insurance money
to build the bare shell of a new
shop that could fit everything they
would need to do business. The
rest they finished themselves, and
they’re still waiting to rebuild the
house.
“It was probably harder on
my sons than on me and my wife
because a lot of stuff that got
wrecked was stuff they had just
built,” Dan said.
Before the tornado, the Halls
had been selling approximately 20
head of cattle a year — not quite
strictly grass-fed but pretty close,
he said.
They have since bounced back
to a mostly grass-fed herd of 70,
eight of which are being finished
on the grass.
“We’re basically back in the
beef business,” he said.
This past year they got the freezers needed to return to chickens as

well, raising and selling most of

to. They are still working on getting
their customer base back.
“I have a list of people waiting, and we’re waiting too,” Terese
said.
The chickens hit the pasture
after their first three weeks inside
and then they’re on their own.
“We don’t even touch them,”
Dan said. “They get loaded onto
a livestock trailer and away they
go. My wife wants to process them
ourselves but that’s a whole ‘nother

And time is what is needed
for grass-fed cattle to again the
weight that will get them finished.
Dan said he’d like to get to the
point of finishing 50 a year but he
may not get there in the next four
years. In the meantime, some of
the cattle will be sold as pre-finished stockers.
Others, particularly 20-some
heifers that are the right genetics
for grass-fed beef, will become the
Halls’ future.
“That’s where our herd is going
to get built from,” Dan said. “The
cattle, that’s my retirement plan.
That’s what grazing is all about,
doing what God intended, what
they want to do. … If you like to do
it, it really isn’t work.”
The direction of the market
for grass-fed beef and chicken is
promising too.
“The market is growing. I don’t
know what this economic turmoil
will do to it, but it’s growing,” Dan
said.
Since the tornado, the Halls are
no strangers to the challenge of
eating healthy food. With limited
options, their diet is just emerging
from probably its worst stretch in
decades, Terese said.
“It’s hard, when you’ve raised
your own healthy meat,” she said.
Getting into the business is
equally — or more — challenging.
“It takes a long-term arrangement with people who want to
believe in what you’re doing. You
can’t do this by yourself,” Dan
said. “You can’t just buy $5,000to $6,000-an-acre land to make it
happen. It’s a long-term thing.”

takes time.
“That’s what’s difficult about
the grass-finishing business, to get
something that’s long-term,” he

said. “… To finish an animal, you
have to have high-quality grass. If
you hit a dry spell, you can’t just
throw out some corn.”
One key the Halls have learned
is to own your own genetic line
of cattle. Another key is to stand
outside the box, Terese said.
“We don’t have all the answers,
by far, but it’s a fun learning experience,” Dan added.
If you can find a piece of grass
you can be on for a long time, put
your cattle on just one half and
then rotate them once they graze
it down, Terese said.
“Then you’ll start to see different grasses come up because
of the saliva of the cows. The next
year you’ll divide it in four,” she
said.
The learning experience sometimes applies to the cattle too.
“All cattle knew how to graze,
but they don’t always know how to
now,” she said.
Depending on where you get
your cows from, it could be an
adjustment at first, but they do relearn to graze, she said.
“If you grew beef cows for four
years, you’d know what you were
doing after that,” Dan said.

living by the creed

Former FFA member and chapter advisor Jason Brockshus not only
knows the FFA Creed by heart — he’s living it.
And spreading its message by his actions.
The first paragraph of the FFA Creed reads as follows:
“I believe in the future of agriculture, with a faith born not of words
but of deed — achievements won by the present and past generations
of agriculturists; in the promise of better days through better ways, even
as the better things we now enjoy have come to us from the struggle of
former years.”
The rural Ocheyedan, Iowa, dairy farmer and chairman of the Osceola
County, Iowa, Ag Extension Council believes deeply in the future of
the agriculture industry, works hard for his living and appreciates the
hard work of his father and grandfather in helping to build his family’s
operation into what it is today.
Brockshus and his family run 350 head of dairy cows on their 400acre farm just south of the Minnesota line. Involved in the operation are
Brockshus, his wife and four teenage boys; siblings; his folks; and even
his grandmother, who still lives on the farm.
A crew of seven family members and seven non-family employees
milk three times per day, sanitize tubes three times per day and calve
nearly daily.
“We raise all our own heifers,” Brockshus said, “and calve nearly all
year round, averaging about one a day.”
The family has artificially inseminated its herd for nearly a halfcentury and, with its calving rotation, maintains an annual herd growth
rate of about 10 percent.
To cope with that steady growth, Brockshus and his family have
modified and added facilities over the years, including two modifications
since he joined the operation full time in 2000.
The Iowa State University graduate was schooled in dairy science
and ag education and taught high school agriculture for a few years after
college.
He was called back to the farm, but didn’t give up his passion for
teaching others about the industry he loves. As an industry leader
and promoter and head of the Osceola County Ag Extension Council,
Brockshus speaks often to groups about the dairy industry and
agriculture in general.
“Agriculture has lots of opportunity,” he said. “Sure, there’s lots of
risk in the production end, but that’s just the thing for some people.
Take the dairy industry for example. All our inputs for the entire year
are purchased before the fall. That really puts our operation in a tough
cash-flow position. Then, our only chance at recouping those single-

The Minnesota Department of Agriculture (MDA)
is now accepting applications for the 2007-08 organic
certification cost share program. Organic farmers and
processors can receive a partial rebate for the cost of
organic certification and must apply by February 28,
2009.
MDA Organic and Diversification Specialist Meg
Moynihan says unlike conventional operations,
organic growers and processors who sell more than
$5,000 of organic agricultural products are legally
required to annually retain an accredited third-party
certifier at their own expense.
“This certification assures consumers that organic
products are really and truly organic, and that they
are produced in compliance with federal organic
regulations,” said Moynihan.
Depending on the farm or business size, the cost
of certification can range from hundreds to thousands
of dollars per year, according to Moynihan.
Certified operations
are
eligible for
reimbursement of 75 percent of certification-related
costs that they incurred during the period between
October 1, 2007 and September 30, 2008 up to a
maximum of $750. Costs incurred after September
30, 2008 are not eligible for the ‘07-‘08 cost share
rebate, but will be reimbursed through a subsequent
program.
To qualify, applicants must be certified by a
USDA-accredited organic certifying agency. They
must submit an MDA application form, proof of
certification during the qualifying period, and copies
of billing statements from their certifier that itemize
the costs incurred. Additional information is detailed
in the program guidelines. All applications must
be postmarked by February 28, 2009. Incomplete
applications cannot be processed.
The MDA has already mailed application packets
to more than 800 certified organic operations. Any
certified organic farmer or processor who did not
receive a packet can obtain the necessary materials
on the MDA’s web site www.mda.state.mn.us/food/
organic or by calling Moynihan at 651-201-6616.

Despite the risks, agriculture — both production agriculture and other facets of the industry — is a very
rewarding occupation and lifestyle, Brockshus said.
“There are huge opportunities in agriculture,” he said. “Lots of opportunities and lots of potential.”
And constant change too, he said, which keeps it exciting.
“It’s something; all the rules of thumb that used to work just don’t anymore,” he said. “And that fact can
be a challenge, especially in a family-farm-type operation where you have to deal with and work through
generational differences.”
But he said he wouldn’t give up his current lifestyle of dairy operation management and ag outreach for
anything.
“It’s really all about helping to build a good family for a good community with good churches and good
schools,” he said. “A good quality of life for me and my family — that’s what we’re working toward. I’m really
enjoying what I do and I hope to make a little money in the process.”
A noble, yet familiar sentiment, especially for those who know the last two paragraphs of the FFA Creed
by heart, as Brockshus does: “I believe in … the life abundant and enough honest wealth to help make it so
— for others as well as myself; in less need for charity and more of it when needed; in being happy myself
and playing square with those whose happiness depends upon me. I believe that American agriculture can
and will hold true to the best traditions of our national life and that I can exert an influence in my home and
community which will stand solid for my part in that inspiring task.”

Conserve energy in
hog barns this winter

With cold weather underway and increased heating costs, energy conservation is key in minimizing
the cost of raising pigs. Substantial savings can be
realized by evaluating and investing in ventilation,
heating, lighting and equipment improvements.
In a typical swine barn, 85 to 90 percent of the
heat loss is associated with ventilation. Providing too
little or too much air exchange can be costly. Animals
lose heat to their environment, but observing the pigs
will determine comfortable level—pigs lying on their
sides and slightly touching each other is desired.
Many barns are maintained too hot. Overheating
a 1000-head nursery by 4 degrees increases heating
costs by 50 percent or greater. Keep temperatures
slightly cool to stimulate feed intake in growing pigs.
Avoid temperature swings (10 degrees or more) and
drafts to maintain animal comfort and health.
Consider adding insulation to barns if they are
poorly insulated. Concrete sidewalls should be insulated, reducing heat loss and keeping barns dryer due
to less condensation.
Ensure inlets are set properly and air is not leaking from other sources. Curtains that are not properly
adjusted don’t provide adequate overlap when closed
and can over-ventilate barns.
Heaters and exhaust fans need to be set correctly
with each other and temperature sensors correctly
located to ensure pig comfort while minimizing heat
loss. Provide enough heater offset (1.5 degrees) to
prevent overshooting desired temperatures, but not
so tight that exhaust fans kick in and run in conjunction with heaters.
Oversized heaters are less efficient than properly sized ones, and can also overshoot temperature
goals. Ensure fans are properly sized and the appropriate motor curve is set in the controller. Different
fans have different efficiency ratings, and some utility companies offer rebates for use of more efficient
fans in barns.
Supplemental heat is required for young pigs or
piglets. Using hovers and space heating, while maintaining overall room temperature at a lower level, is
much more efficient, and in the case of farrowing
barns it also keeps sows from getting overheated. Use
of lamp and mat controls to provide variable output
allows creep temperature to be managed while saving energy.
Evaluate energy costs and opportunities to increase energy efficiencies to reduce production costs

announces two additions to the 2009 Minnesota Organic Conference to be held at the St. Cloud Civic
Center January 16-17, 2009.
A free mini-film festival featuring Good Food: a
Collection of Short Films about Food and Sustainability has been added Friday evening, January 16.
From singing peanuts to teenage tomato-growers,
these films will make you laugh and think, and inspire you to take action for a healthy, sustainable,
and delicious future. The film starts at 8:00 p.m., and
members of the general public may attend this event
free of charge.
On Saturday, January 17, Wisconsin large animal
veterinarian Guy Jodarski will offer a breakout session called Stop the Whoozing and the Losing – Keeping Young Stock Alive and Healthy the Organic Way.
“We want this conference to provide basic, introductory-level information for new or prospective
organic farmers, and advanced information for experienced producers,” said MDA Organic and Diversification Specialist Meg Moynihan. Speakers include
16 certified organic farmers, as well as agency staff,
industry experts, and university researchers and extension educators, she added.
Some of the more than 30 breakout sessions on
the conference agenda include: How to Start a CSA,
Small Scale and Inexpensive Methane Digester Designs for Any Size Farm, Direct Marketing Meat, Transitioning to Organic Production, Dry Bean Production and Marketing, and Outwitting Weeds – What
you Need to Know.

referendum set for January 8-9 at Ag Expo
Minnesota corn growers will have the opportunity to vote in a January 8-9, 2009, referendum on a
proposal by the Minnesota Corn Research and Promotion Council to change the corn check-off from
the present rate of a half-cent per bushel to 1 cent per
bushel.
The referendum will be January 8th, from 10 a.m.
to 3 p.m., and January 9th, from 9 a.m. to 2 p.m. at
Jackpot Junction Hotel and Casino in Morton, during
the Minnesota Ag Expo 2009.
