In 2012, Frito-Lay announced a multi-year initiative to validate
products as gluten free and then label qualified products on
packaging. We developed a rigorous gluten protocol for testing
our ingredients and finished products with input from the Food
Allergy Research and Resource Program (FARRP) and CDF. FritoLay is using an analytical test called test called R-Biopharm
RIDASCREEN Gliaden/Gluten assay to test our ingredients and
finished products to ensure they do not exceed 20 parts per
million (ppm) of gluten before making a “gluten free” claim. This
is the level set forth by the FDA in its Proposed Rule for Gluten
Free Labeling. We chose this test because it is recommended by
FARRP and has been performance tested by the Association of
Official Analytical Chemists (AOAC) Research Institute.
Since many of our chips start with simple ingredients such as
corn or potatoes, many of Frito-Lay’s products have always been
made without gluten. So we are not removing gluten from our
products, rather, we are analytically testing our ingredients and
finished products to ensure that gluten levels do not exceed
20 parts per million.
Our consumers with celiac disease and gluten intolerances have
told us it is helpful when they shop to see a gluten free indication
on product packaging. So, we have started adding a gluten free
claim to our bags, where appropriate, in the form of a “GF” icon
and/or a statement on the back of the bag, depending on the
product and bag size.
