Ingredients:!
2!med!onion,!chopped!
2!med!carrot,!chopped!
2!stalk!celery,!chopped!
1!clove!garlic,!chopped!
2!t.!safflower!oil!
10!cups!water!
2!T.!Better!Than!Bouillon!!
Vegetable!Base!

2!t.!oregano!
1!bunch!cilantro,!chopping!!
stems!separate!from!leaves!
1!28/oz!can!diced!tomato!
1T!diced!jalapeno!(opt)!
6!corn!tortillas!
2!t.!safflower!oil!
2!T!lime!juice!
2!c!grated!cheese!(opt)!
Instructions:!
1. In!a!stock!pot,!sauté!chopped!onion,!carrot!and!celery!for!10!minutes!in!2!
t.!safflower!oil.!Add!garlic!and!cook!5!more!minutes.!!
2. Add!water,!vegetable!bouillon!base,!salt,!pepper,!oregano,!chopped!
cilantro!stems,!chicken!breast,!tomatoes!and!jalapeno.!Adjust!the!
amount!of!jalapenos!to!taste!(1!tsp.!for!mild,!1/2!Tbsp.!for!spicy.)!!
3. Cook!for!30!minutes!on!low!boil!until!chicken!is!done.!
4. Remove!chicken.!Let!cool!while!you!prepare!the!tortillas.!Debone!
chicken!and!return!to!pot.!!
5. To!prepare!tortilla!strips,!stack!the!tortillas!and!cut!in!half.!Cut!each!half!
into!½”!strips.!Heat!1!t!safflower!oil!in!pan!and!add!half!of!the!strips.!
Sautee!until!toasty!and!starting!to!brown.!Repeat!for!other!half!of!strips.!
Add!half!of!the!toasted!tortilla!strips!to!the!soup!pot.!
6. Stir!lime!juice!into!to!soup.!!
7. Serve!soup!with!chopped!cilantro!leaves,!a!few!tortilla!strips!and!grated!
cheese!sprinkled!on!top.!

4/6!hours.!Finish!as!instructed!in!step!4/7,!turning!crock!pot!back!on!Low!in!
