Hi, MSC newsletter readers! Our Fish of the Month (FOM) for February is
the Sheepshead. MSC member, Jim Romerill, submitted the following
recipe which can be made with Sheepshead or any other flaky white fish:
Puerto Rican Fish Stew
1 lb. flaky white fish cut into 1-¼ ” pieces
2 tbsp. EVOO
1 medium onion
4 cloves garlic
1 14oz. can diced tomatoes
1 pepper (poblano, green chilies, jalapenos or use the diced tomatoes with
chilies)
3 tbsp. to ¼ cup fresh cilantro
2 tbsp. stuffed olives
1 tsp. oregano
¼ to ½ cup water
Heat oil in pan over medium heat. Add diced onions, cook until soft. Add diced garlic.
Cook for 1 minute. Add all other ingredients except fish, cover and simmer 30 minutes.
Add fish and cook another 15 minutes. Serve with crusty bread or rolls.
Hints: For a more flavorful stew, refrigerate the stew, except for the fish, overnight.
Heat the mixture to a simmer the next day, then add the fish. This recipe also works
with shrimp, mussels, etc. Jim and his wife Linda add a small can of sweet corn to the
stew. He says, “It’s optional, but seems to add some “body” to the recipe.”
According to www.gameandfishmag.com: Sheepshead hang around structure such as
pilings, rock jetties and piers and are fond of crustaceans. The fish have chopper-like
teeth and are often seen chomping on barnacles to get at the meat inside. For that
reason, they can be “chummed” up. Sheepshead pros take along a shovel to scrape
barnacles off structure to put food and scent in the water, which often causes a
sheepshead stampede! Fishing is done vertically, very close to the structure. This
means you have to be quick on the hookset so you can pull the fish away from the
barnacle-covered structure. A 6-pound sheepshead will put a strain on your wrist if
you’re not prepared. The meat of a sheepshead is often served as imitation crabmeat.
Cut off any red meat from the filets and cook it in crab boil for a few minutes (until
flaky). Then cool the meat and substitute it in dishes that call for crabmeat.
News Flash! You may win a cap with our MSC logo. Just submit a recipe, tried and
true, and your story along with it. When you get selected and published, you get the
hat compliments of your MSC Board of Directors. Ready to submit? Contact Kim.
Plans are actively in the works for a Ladies’ Fishing Event. We are looking for
interested fisherwomen – experienced and not – and guys to captain boats. Plans are
for a relaxed day of fun and education. Our list of interested parties is growing; please
add yourself to it! Contact me, or Bobbie Ordija [email protected], or Marion
Marciniak [email protected].
I’d love to hear from you. Feel free to contribute to my Korner, thanks! KK

Kayak Fishing in Hell's Gate by Vic Ordija
On a cloudy and breezy January 9th, eight kayakers ventured out to fish Hell's Gate; a
meandering channel that connects Goodland Bay and Lighter Bay. A cold front had just
passed through and while some light showers were expected, none materialized.
The bite was expected to be slow, but the group was surprised with some good fishing
activity. Several small Snook and Seatrout, two Redfish, an 18” Black Drum and lots of
Mangrove Snappers were caught.
George Stein registered a nice 18 inch Spotted Seatrout and Ron Linn recorded a 16
inch Snook making their catch eligible to possibly receive at the end of the year, a high
quality shirt monogrammed with the Marco Sportfishing Club logo.
While George had a good fishing result, he experienced a bit of a mishap and
capsized his kayak while trying to retrieve his fly-rod which had become entangled in
some mangrove trees. Fortunately he was able to recover with no loss of equipment or
injury other than being bit cold as the water temperature was below 70 degrees.
The kayakers ended the day with refreshments at the quaint Little Bar in Goodland.
