ITALIAN RESTAURANTS IN THE WORLD
Quality and variety: those are the keywords that best represent the culinary tradition of Italy. Thinking
about Italian cuisine, the first thing which comes to our mind is that food is not just food. Dining
“Italian Style” is way more than merely eating: the uniqueness and freshness of all the ingredients
cooked according to the traditional recipes, handed down generation by generation, makes eating and
drinking a cultural experience.
Italian cooks rely chiefly on the quality of the ingredients rather than on elaborate preparation,
making every dish a combination of different genuine flavors.
Because Italian cuisine is a real tribute to our cultural heritage, in order to protect its importance and
spread the culture of slow food all over the world, the China Italy Chamber of Commerce (CICC)
rewarded all those restaurants which are an exceptional example of the versatility and quality of both
Italian cuisine and hospitality.
The “Italian Hospitality Seal” is a certification of quality, promoted by Unioncamere with the administrative support of the National Institute for Tourism Research (IS.NA.R.T.), and in collaboration with 5
Ministries (Foreign Affairs, Cultural Heritage, Economic Development, Tourism and Agriculture), given
every year to those Italian restaurants in Shanghai, Beijing and Guangzhou, that respect the Italian
traditional recipes using only “Made in Italy products”. The project is realized thanks to the collaboration of the Italian Chambers of Commerce Abroad (CCIE) and is now at its 4th edition.
The main goals of “Italian Hospitality Seal” are:
- Promote the tradition of Italian food products along with the culture of wine;
- Support those Italian Restaurants abroad that guarantee high quality standards;
- Create a network of certified restaurants easily identifiable by consumers through the “Q” label.
In order to be eligible for the quality certification, restaurant must satisfy the following criteria:
1. Menù;
2. Welcoming of the Clientele;
3. Wine List;
4. Use of Extra Virgin Olive Oil;
5. Experience and Expertise of the Chef (who must be Italian).
In short, the value of the Italian Hospitality Seal lies in the guarantee – in the eyes of the foreign
consumers – of finding a restaurant where to enjoy the Italian cuisine, thus feel the atmosphere of the
“Bel Paese”, in its own backyard.

Italian Delicacies – Act II
我完全不懂意大利语,在亚平宁半岛既没有亲戚,也
没有贸易伙伴,做梦也不会想到,今生去的最多的国
家竟然是意大利——而且第一次踏上这片被地中海三
面环绕、阳光灿烂的土地,就深爱上了这个伟大国家
的历史、文化、风光和她的美食。
I do not understand any Italian, I do not have neither relatives nor trading partners in the Apennine
peninsula…not even in my dreams, I would have imagined the Country I would have visited the most
times in my life will have been ITALY. Yet, since the first time I stepped into its land, surrounded by the
Mediterranean Sea on three sides and kissed by a bright sunlight, I felt deeply in love because of its
history, culture, scenery and delicacies.
谈到意大利美食,人们的第一印象往往是健康。
以意大利为代表的地中海饮食结构极具地域特色(当然,还有西班牙、希腊和摩洛哥),已被联
合国教科文组织列入世界非物质文化遗产名录,那里的居民日常主要食用鱼、谷物、蔬菜、水果、
坚果和橄榄油,适量喝红酒,少吃肉和奶制品,故而极少罹患心脏病、糖尿病、老年痴呆症、中风。
难得的是,这种健康美食与美味并不矛盾——在意大利南部,把番茄干、洋蓟、茄子、西葫芦之
类的蔬菜用橄榄油、大蒜、胡椒和香草(有时还要加醋)腌渍,入味而口感奇特,既保持甚至浓
缩了蔬菜本身的香味,又爽口开胃,越吃越香,即便是中国人,久而久之也能上瘾。不像一些标
榜“健康”的“美食”,装腔作势——例如我平生讨厌的各色生菜沙拉者流,既不适口,又难果腹,
根本就是喂兔子的。
意大利菜的另一个特点就是质朴、简约而美味。
Talking about Italian food, people's first thought is usually “healthy food”.
Indeed, Italian food is representative for the so called Mediterranean diet along with other countries
bordering the Mediterranean Sea (such as Spain, Greece and Morocco). The Mediterranean diet has
been included in the UNESCO World Intangible Cultural Heritage. Local people main food are fish,
grains, vegetables, fruits, nuts and olive oil, suitable amount of red wine, meat and dairy products in
small quantities. Thanks to this mix, they rarely suffer from heart disease, diabetes, Alzheimer's
disease and stroke.
Healthy food is rarely tasty. That is absolutely not the case in Italy! In southern Italy, local people make
sun-dried tomatoes, artichokes, eggplants, zucchini and other kind of vegetables pickled with olive oil,
garlic, pepper and herbs (sometimes they also add some vinegar): vegetables maintain their freshness
and flavor, and their smell is exalted. It’s not only tasty but also appetizing, and even Chinese people
will be addicted to it as time passes. It is really different from some other “delicacies” advertised as
"healthy food", such as that colored lettuce salad, neither bad nor palatable, that I consider staple
food for rabbits.
Additionally, Italian cuisine is plain, simple and delicious.

Will you ask any Italian chef which is the best food in Italy, the answer without exception, will be
"Mum’s kitchen”. When mothers cook for their children, they never focus on costs, profits, dish
ornaments etc.; they are just concerned about good taste and they pursuit with love and dedication.
This is the essence of their cuisine. Such a food experience starts in childhood, deeply remains in
memories and lasts forever: this is the reason why “Mum’s kitchen” is unforgettable and moving.
Every country in the world has a "Mum’s kitchen," but only the Italian people can truly explain it.

The pizza I eat in Naples is this kind of delicious: the recipe is quite simple – on the dough toppings are
Mozzarella cheese, tomato, and basil leaves. Pizza is served freshly baked, when hot is soft, dough is
thin and toppings are rich. Actually you will say the taste is not so special, but it’s wonderful in your
mouth thanks to the blend of the flour, cheese, tomato, basil mixed together with the crusty dough.
意大利菜还是所有西餐里最适合中国人口味的——和它相比,西班牙菜太粗糙,德国菜太单调,
法国菜太雕琢,国人到了欧洲,如果顿顿吃西餐的话,碰到意餐心理上多少还有点亲近感。
Italian cuisine is the most suitable Western food for Chinese people. Compared to it, Spanish food is
too rough, German cuisine is too monotonous, French one is too elaborate. When Chinese people
travel to Europe and they have to eat Western food every day, Italian cuisine seems the most familiar
choice for them.
这里且不说品种繁多的面条、米饭以及米兰牛膝之类的炖菜,单说牛排。牛排是西餐的大菜,多
数国人却难以适应——太熟则嚼不动,太嫩则可见血水,无论如何难以下咽。佛罗伦萨牛排则不
同,一块的份量至少1公斤以上,炭烤以后盛以大盘,焦香四溢;现场切割成宽条,喜欢熟一点
的取周边,生一点的取中间;撒上海盐、黑胡椒,外焦里嫩,熟的部分不像普通牛排呈棕色,而
是灰白色,生的部分色泽粉红,不流血水;生的鲜嫩甜美,熟的越嚼越香,各有妙处。我在佛罗
伦萨第一次遭遇此味,纵情大嚼,连呼过瘾,许为“世界三大牛排”之一。

I don’t mention the wide variety of noodles, and Milan style Ossobuco paired with risotto; I just talk
about the steak. Steak is a main course in Western menu, and most of the Chinese people find it
difficult to eat: well done is difficult to chew, rare is bloody, anyway they cook it, it is hard to swallow!
Florentine steak is anyway a totally different experience: the weight of one steak is at least 1 kg or
more, it is cooked on the charcoal and served in large dishes cut into long strips. If your choice is “well
done” you shall take the sides; if your choice is “rare” you shall take the middle; in both cases you can
sprinkle some sea salt and black pepper. The steak is well cooked outside and rare inside. Unlike other
ordinary steaks, the sides are not brown but greyish, the middle part is pink but not bloody; the rare
steak is fresh and tender, and the cooked one is fragrant and chewing. The first time I ate it I was in
Florence. I was excited and satisfied. It’s really one of “the world's top three steaks.”

Introducing the Owner-Chef
After finish the studies at Guglielmo Marconi
catering school in Camogli, I started to work
and got trained in Italy in management and
kitchen area.
In 1996 I moved to London where I spent 10
years of my career working as sommelier and
manager in companies such as Sir Terence
Conran, A to Z and more.
In 2001 I opened my own restaurant where I
started to cook as professional for 5 years.
2006 is the year of the move to China
managing L’Isola Restaurant for my brother
Roberto.
In 2010 is started my own business as LMPLUS,
and opened 4 restaurants as owner chef and
sommelier position.

10 Corso Como Restaurant opens on the top floor of China's first 10 Corso
Como concept destination on Nanjing Road. It will be a stopping-off point
during a day of exploration and cultural investigation among the gallery,

Enzo Carbone’s interest in cooking rose from within his family who owed a
famed Trattoria in Naples, Italy and by the tender age of 14 he was already
well versed in traditional, family-style Italian cooking and decided to make
his career as a chef.
His career aspirations were formalized through an apprenticeship at the
eminent “Circolo della Stampa” restaurant in Napoli. It was here where he

Roberto Bernasconi, founder and chef. Deep

Italian kitchen. Born in Bari, Roberto got his degree at
Faculty of Law but, thanks to his nannies, he was
taught about the secrets of the traditional Puglia and
South of Italy cuisine. Based in China since 2006, he

Roberto Cimmino has been appointed as Chef de
Cuisine, Prego of the Westin Guangzhou on 17th
October 2013 With Great interest and passion in
food and cooking, Roberto started his career in the
kithcne since more then 10 years ago. He has been
working at restaurants and hotels in different cities
such as Rome, California, Shenzhen, Suzhou and
Shanghai, from which he enriched working
experience and managment skills.
Fabrizio was born in Sicily, with a lovely passion
for cooking. He considers his grandmother and
mother as his first master chefs in his culinary
path. He started his working career in a traditional trattoria in his hometown Messina, and then
his passion brought him around the world. After
being in Spain, Australia, England, Canada and
Switzerland, working and learning the traditional cooking techniques of every country, he
decided to move to China, and bring is knowledge and creative cousine in a place where Italian
cuisine is still to be discovered.
