In this issue, for the first time in Journeys we are featuring an
exchange destination. Puerto Vallarta in Mexico is a popular
destination, with several resorts to choose from through
Festiva’s exchange affiliations, and it’s easy to get to with
direct flights from many major airports in the U.S.

The design of the 440 is perfect for our stateroom vacations;
in fact it has won the Cruising World’s “Best Charter Boat of
the Year” upon its release a few years ago. Featuring a four
cabin layout, each with its own bathroom, our guests can
enjoy as much privacy as they desire.
It also offers the fly bridge design where our guests can enjoy
seating with the captain above the rear cockpit, offering a
great vantage point while under sail as well as additional
space in the rear cockpit for outdoor dining. With bench
seats and trampolines forward, while under sail guests have

Festiva Sailing Vacations has changed the sailing community

Resort
Renovations
In previous issues of Journeys, we gave you an overview of
scheduled and completed renovations and improvements
at several of our properties. We are happy to provide you
with an update of what has been completed, and what is
currently ongoing or scheduled as of February 2012.

Building 8 at Ellington at Wachesaw Plantation East began
renovations in January 2012.
A trium B each R esort & S pa
To date, 13 units at the Church Street Inn have been
completely renovated and two are currently undergoing
renovations. Additionally, we have installed free wireless
internet in the units and throughout the resort. All of the
windows and balcony doors facing Church and Market
Streets in the units have been replaced.
The Atrium Beach Resort & Spa has already seen several
necessary improvements, with more scheduled in the
coming months. The pool has been repaired and resurfaced,
and the generator has been repaired. A new roofing system
has been installed and the exterior of the entire building has
been re-painted. Remodeling of the first 28 units has been
completed.
Future improvements include completing the renovation
of all remaining units at the Inn over the next three years
and installation of HDTV service for all units at the resort
beginning in January 2012.
The remodeled units have new cabinets, granite counter
tops, stainless steel appliances, and new furniture and soft

How do I register online at the new members’ website?
Renovations have been completed in building 8 at Blue
Ridge Village Phase II.

If you have not already registered your account, please visit www.
festiva.trave/members and choose Need to Register? from the
options given in the upper right hand corner. Read and agree to
the guidelines provided and press Continue. This will bring you to
a page with fields that must be completed. The Membership Type
will be Festiva Member for weeks owners and Festiva Adventure
Club or Peppertree Vacation & Travel Club members, and Festiva
Voyages if you have purchased into the Voyages program. It is
important that you pick the correct membership type or you will
not be able to access your account. The password is structured to
ensure protection for members when logging into your account by
using both characters and numbers. Please follow the directions
accordingly, make note of the password you choose and keep it
in a safe place.
What if I have forgotten my password?
If you have misplaced your password or cannot recall what you
assigned as your password, there is an option to reset your
password at the login page of the members’ website. Visit www.
festiva.travel/members and choose Reset Your Password. A
box will appear and you will need to enter the e-mail address you
originally used to register your account. The system will send
an e-mail to this address with a temporary password to access
the account. Once you receive the temporary password you can
either copy and paste this new password into the box, or retype
it in the password field for logging in, making sure the characters
and letters appear exactly the same way as they do in the e-mail.
Once you log in, you can change the password back to one of

your choice by selecting Manage Profile and then Change your
Web Portal Password. If you continue to have problems logging
in we urge you to let us know by contacting the Festiva Member
Services department.
I have several accounts with Festiva. How can I merge them
all to one account so that I do not have to keep track of
multiple login information?
Members can merge multiple accounts directly from our secure
member site. After logging in with the information you wish to use
as your primary account, go to Manage Accounts and select
Add Additional Accounts and enter the appropriate Owner
Identification numbers and other information required. This will
allow you to login just once to access all of your Festiva accounts.
How can I use the members’ website?
Our recently improved website is a useful tool for all members. Not
only can you make payments and confirm existing reservations
or prior reservations, but you will also find other useful features
and informative pop-up windows to assist you with reservation
windows, points details, etc. Adventure Club members can
make reservations online and deeded week owners can request
reservations. Member News can be found here as well. Please
feel free to give us your feedback so we can ensure the best
quality member service, whether we are assisting you in person,
by phone or online.
What is Festiva Travel Services Trip Protection and what can
it do for me?
Trip Protection insures you for unforeseen events that may happen
before, during or after your confirmed vacation which may cause
the trip to be delayed or cancelled, or which otherwise interfere with
your travel. Festiva Travel Services Trip Protection covers a variety
of scenarios such as: baggage loss, trip delay, inclement weather
preventing you from traveling and more (See more information on
p. 15), Even if you have other means of insurance through your
credit card or primary medical insurance, these services often will
not cover you if you are outside of the country, state or provider’s
network, nor do they cover airline expenses. Trip cancellation
or interruption coverage are other items not typically covered by
other forms of insurance. Festiva Travel Services Trip Protection
is designed specifically for travel and caters to all of your needs,
even those that seem out of the ordinary. We strongly recommend
that you protect yourself and your family with this insurance as
many of our members have already benefitted from this option.
You can select the Trip Protection option on your maintenance fee
invoice, or purchase it at any time when you access your personal
account at www.festiva.travel/members.

Winter Park
Hip meets swanky in this part of town with art, shopping and good eats
Of the many neighborhoods to explore
in the Orlando and Central Florida
area, Winter Park is one that should
not be missed. Just 40 minutes north
of Celebration World, plan to spend at
least a half day in this area.
As the first centrally planned
community in Florida, Winter Park
seems to have it all within a few wellmaintained blocks. Museums, parks,
colleges, churches, civic buildings, a
train station, a boat launch and plenty
of retail and dining establishments
line the streets. There are several
museums worth visiting, including
the Charles Hosmer Morse Museum
of American Art, which houses the
largest collection of Tiffany glass, and
the Cornell Fine Arts Museum. One
museum that is a delightful bargain is
the Albin Polasek Museum & Sculpture
Gardens.
Albin Polasek (1979 – 1965) was a
Czech sculptor who came to America
in his early 20s and quickly made his
mark through his art. He retired to
Winter Park at age 71 and designed
and built his home on scenic Lake
In 1961, four years prior to his death,
Polasek and his wife set up the Albin
Polasek Foundation to share his life’s
works with the public. Since then
the galleries, chapel and gardens
have been open as a museum. The
residence was opened to the public in
1988. Albin Polasek created more than
four hundred works during his career,
two hundred of which are currently on
museum property.
If you’re looking for breakfast, a light
lunch or a really good pastry and
coffee, head to Croissant Gourmet on
Morse Street near the intersection of
Park Ave.
Francois, the older of two French
brothers who own the bakery, pursued
his passion for the art of pastry making
from the age of 16. At 23, he moved
to Paris to open a bakery with the help
of his younger brother Philippe, and
after opening two successful Parisian
bakeries, they were lured by the
sunshine and beaches of Florida and
decided to share their love of pastry in
Winter Park.
The small museum gallery, just a
few feet away from the home, hosts
rotating exhibits which are listed on
their website. The admission costs a
nominal fee of $5.
Once you’ve browsed the current
exhibit, step out the back door of
the museum and into the beautifully
landscaped garden with a gorgeous
lake view. There are 50 sculptures
displayed throughout the three-acre
garden which dates back to 1949,
when Polasek first moved to the
property.
The colorful garden provides a
dramatic backdrop to the sculptures,
by Polasek and other 20th Century
artists. When the weather is ideal
both the beautiful setting and strong
sense of peace brought on by the
surroundings encourage you to slow
down and enjoy the scenery.
Docent-led tours of the historic
home and chapel are included with
admission. You’ll see even more of
Polasek’s sculptures as well as the
beautiful interior of the home where the
artist lived, worked and worshipped in
the last part of his life. For an enhanced

and exploring the area, there are plenty
of eateries to choose from. Many have
a lovely view of the park and some
offer outdoor seating. Whatever your
palate desires, you’ll have your pick.
American gastropubs, Cuban cafes,
French bakeries, Spanish tapas,
Turkish cuisine and authentic Thai food
are all there to tempt your taste buds.

and historic Central Park on the other.
Whether you are window shopping,
splurging on something special or
on a mission for a bargain, this is a
shopper’s paradise. Everything from
clothing and jewelry to pet boutiques
and home décor can be found within
just a few blocks.
If you have time, it’s well worth it to
catch an hour-long Scenic Boat Tour
of three of Winter Park’s lakes. Tours
leave on the hour, and the dock is on
Morse Boulevard at Lake Osceola.
Since its opening in 2008, locals and
visitors alike have raved about the
brothers’ delectable fare, with a variety
of bread, sandwiches and pastries
baked fresh daily. The customers are
a mix of students working on laptops,
locals from the neighborhood stopping
in to pick up their pre-ordered baguette
and have a chat with one of the jovial
owners, and visitors drawn in by the
warm scent of baked goods wafting out
of the front door.

Jalousie fill one side of the case, and
the other side is full of dessert pastries
that are too tempting to pass by without
trying just one thing. Or a few things.
Take your pick of several flavors of
éclairs, tarts and flan, or go for crème
brulee, classic napoleon or chocolate
mousse royal. One eye-catching pastry
is fittingly called “Wonderful Chocolate,”
and it lives up to its name. While it
looks like a rich chocolate cupcake, it
is actually layers of light, airy meringue
dusted with cocoa powder and topped
with chocolate pieces.
The “other” food menu features typical
bakery fare, like croissant breakfast
sandwiches, salads and traditional
French fare like specialty quiche,
Croque Monsieurs and Croque
Madames. They make their turkey
sandwich a cut above typical by adding
tart apples and creamy Brie cheese.
This friendly and cozy spot is a great
place to grab lunch and a coffee and
satisfy your sweet tooth after checking
out the swanky shops of Park Avenue.
Upon entering, you’re greeted by
a mesmerizing display case full of
pastries. A child exclaims “Holy Moly!”
when he walks in the door with his
mother, expressing exactly what the

Day Six: Today will be our day in the hustle and bustle of downtown
Cancun. After breakfast, we hoist the sails and head for Punta Nizuc.
Located in the heart of the hotel zone of Cancun, Punta Nizuc sits atop
some of the Caribbean’s best snorkeling. We give you the opportunity to
explore Chitales reef which offers abundant sea life. Or if you prefer, you
may explore the hotels and shops of the beach as here you’ll have every
amenity at your fingertips: rent a jet ski, take a ride on a parasail or people
watch on Cancun’s hottest beach!
Like many others, when we think of sailing in the Caribbean,
we think of the British Virgin Islands; the place where we
have fond memories of Jimmy Buffet, Foxy and the Soggy
Dollar Bar. So when we planned to explore the Western
Caribbean this time, we were not quite sure what to expect.
Sure, we’ve heard of the popularity of Cancun and honestly,
we weren’t interested in that scene at all. In fact the reason
we go sailing is to escape that scene and experience the
islands, the waters and of course the sailing. But the intrigue
of seeing new cruising grounds got us to give it a try … after
all, we’re just as adventurous as the next couple.
When we arrived that afternoon at Hacienda Del Mar
Marina we were greeted by our crew, Captain Polamon and
Chef Eduardo. Expecting to see a man and woman team,
we were a bit surprised but we soon realized that these two
guys were unique. These guys were locals and that meant
they knew just about anything you could care to know about
the waters, the area’s history and the unique islands we
were about to visit. Immediately, they not only gave us a
sense that they were there to take care of us with incredible
service and local fare evident in Eduardo’s ceviche; but
also that this trip was going to be an insiders’ view of what
many other people didn’t realize: this is a great place to sail.
The interesting thing about sailing off the eastern coast of
the Yucatan Peninsula is that not many sailors do this. In
fact during our trip we saw only a handful of other sailing
catamarans and most of these were operators who offer
day sails from the mainland over to Isla Mujeres, “Island of
the Ladies,” for an afternoon of snorkeling and lounging on
the beaches of this popular island only eight miles from the
coast of Cancun.
After a week on the water exploring the islands of Isla
Mujeres, Isla Contoy and other beautiful beaches that
no others venture to, we are truly believers. We had the
opportunity to see ocean life that we had never before seen
and as far as sailing, these are some of the most incredible
sailing grounds we’ve experienced. We’re looking forward
to going back again.
I still can’t understand why there aren’t more sailors in this
area … but that’s okay … it will be our little secret.

After a day on the beach at Cancun we sail back to our home base at
Marina Hacienda Del Mar. Freshen up and then after dinner at the dock
we’ll arrange for transportation to take you to the center of town for an
exciting evening of nightlife that will bring your week in paradise to a close.

Each of our guests receives a survey upon their return home from vacation
with us. We ask them to take a few minutes and provide us feedback on their
trip which we use to help us make the necessary changes to provide the
best vacation experience possible. Below are some of the comments we’ve
received so far this year from our new Western Caribbean destination.
W estern C ancun S ample I tinerary
Day One: During this two-hour sail to Isla Mujeres, we stop for a quick
dip and some snorkeling before we arrive at Villa Vera Marina. Here we
hop on a golf cart for a tour of the island, stopping to take in the sights
of downtown followed by lunch back on the catamaran. After lunch we
explore the beaches of Isla Mujeres and we pull up anchor and circle over
to the eastern coast. Sailing south along the beach, we anchor just off
shore to spend the afternoon enjoying the coastal surf.
Day Two: We awake to the smell of fresh coffee and enjoy a delicious
breakfast prior to our sail to the island of Contoy. We break up this fourhour sail with a stop at Coco Reef for some amazing snorkeling. Upon
arrival into Contoy, our crew prepares lunch while they provide an overview
of the island’s attractions.
Contoy is home to the national park and sanctuary that makes this stop
a bird-lovers’ delight. About 800 meters wide and 7 km long, the island’s
dense foliage provides ideal shelter for more than 100 species of birds.
The park’s visitors center provides plenty of background on the island’s
habitat. You may want to explore the 27-meter-high observation tower
or walk along one of the two interpretive trails and enjoy the day in this
natural reserve. Afterwards we meet back at the catamaran for a fantastic
dinner and cocktails as we end the evening with spectacular star gazing.
Day Three: Today we sail around to the ocean side of Contoy. Here we’ll
enjoy some fishing in hopes of securing a ‘catch of the day.’ After lunch
we invite you to relax on the beach or snorkel just off the coast where you
may encounter a wide variety of sea life including manta rays. These waters
are also a popular location for whale shark viewing. One of the largest living
fish species, the whale shark is a gentle giant and poses no danger to
snorkelers and divers. They do provide a spectacular photo opportunity and
can be a definite highlight of the day’s activities.
Captain and mate were both outstanding! Palemon was always friendly
and had safety as his #1 priority. I had never had better food than what
Eduardo prepared for us; they were a great combination. Thank you for an
outstanding vacation and taking care of us all week.

Day Four: After breakfast, we set sail for Boca Iglesias. Here we’ll view the
ruins of a 16th century Spanish Colonial Church, where in 1523 Francisco
Montejo Jr. led an expedition ashore and was attacked by the local Maya.
To reach the ruins will be a day of adventure, but prior to our arrival we stop
to snorkel in search of octopus and lobster. After lunch on board we start
our journey to the Church.
This was by far the best holiday we’ve ever had. Outstanding!

To reach the abandoned site of Boca Iglesias we navigate through the
mangroves and walk through a dense jungle. During the hike, keep your
eyes to the trees for glimpses of local spider monkeys. Following our
excursion we return to the yacht for a relaxing dinner and cocktails and set
sail for our anchorage for the evening just off the pristine white beaches of
Isla Blanca.
Day Five: After a morning enjoying the spectacular waters of Isla Blanca,
we’ll sail back to the southern end of Isla Mujeres. Here we’ll visit a
Tourtugranjia (turtle farm) and you can see hundreds of turtles in the
various stages of life. After lunch we head back out for a day of sailing to
Playa Norte. The relaxing uncrowded beach will be where we spend most
of the day. Playa Norte is one of the region’s most spectacular beaches with
crystal blue and shallow calm waters. We dinghy in a cooler of cervezas
and enjoy the sun and sand prior to a night out with dinner in town.
This trip was fantastic because the captain and mate were the best! The
food was comparable to many fine restaurants in major cities, the itinerary
was flawless and we were very happy with how our wishes were honored.

for shopping or browsing, and several
restaurants and cafes to choose from.
The area is just as enchanting after
dark as it is in daylight, so an afterdinner stroll is a delightful option.
Extravagant entertainment and allyou-can eat buffets may be par for the
course in the Orlando area; however,
if you are looking for something a little
more low-key and unique, there are a
few treasures to be found. At Imperium
Food & Wine Market in Celebration
you are sure to find delicious food, a
first-class wine list and a comfortable
atmosphere with friendly service.
The small town of Celebration is just
three miles from Celebration World
Resort. The town center is so clean
and quaint it feels almost like the set
of a movie. Street parking is relatively
easy to find, just take note that you’re
not parking in a spot designated for
electric cars only (unless, of course,
you have an electric car).
The area is easily walkable. From
Celebration Avenue, head down Water
Street and you’ll be greeted with a
lovely lake view. From here you can go

Imperium Food & Wine came highly
recommended on the popular review
site Yelp.com, and it lived up to its
reputation. While there is clearly a
regular local crowd, first-timers and
tourists are warmly welcomed as if
they are old friends. There is sidewalk
seating as well as a patio in the back,
but if there is a chill in the air then sit
inside where the atmosphere is both
sophisticated and cozy.
On a Thursday night, you might dine
while a local musician plays live
acoustic guitar as your background
music, adding a new dimension to the
ambiance. Sports fans need not worry;
the flat screen above the bar (which
also has seating) will likely be showing
whatever big game is on at the time,
though it will be muted so it doesn’t
interfere with the music.
The young and friendly staff is
attentive without being overbearing
from start to finish. The menu is mostly
light café fare with appetizers, paninis,
flatbreads, wraps and salads inspired
by a mix of Asian, Italian and American
cuisine.
If you are getting an appetizer, the Ahi
Tuna Tartare with avocado, chow mein
noodles, ponzu and sweet chili aioli is
a surefire winner. It is rather large, so
plan to share. The crunchy noodles
are a perfect match with the creamy
avocado and soft tuna, and the ponzu
and chili aioli bring the dish together
delightfully.

flavor profile in your entree, Buddha’s
Chicken Salad is a favorite with field

this is definitely a salad worthy of an

about perfect, topped with just a dab of

from grapes frozen while still on the
vine, is a tasty accompaniment to sip
with the pie.
The wine menu is extensive yet not
intimidating, and with a wide range

enjoy whether you are on a budget
or want to splurge. The staff is happy

industry by chance in 1991. When interviewing for a front
office manager position, the general manager asked Robert
what his career goal was. Robert’s answer to the general

has been in management positions at vacation ownership
resorts ever since, quickly achieving his goal.
If you want the Orlando area experience without outrageous
crowds, Robert advises coming in January (after the New
Year) through mid-February; in April (after spring break)
through mid-May; and in mid-September through just before
Thanksgiving. In other words, there is not much of a slow
season, but if you avoid major holidays, school breaks and
major sporting events like the Orange Bowl, Citrus Bowl or
Daytona 500, then the crowds are typically lighter.
Since 2007, Robert has been general manager at CWR,
and will likely be there for the long term. When asked what
his career goal is now that he’s long since fulfilled his goal
of becoming a general manger, his answer was geared
towards the resort and its owners and guests.
“Ultimately, I’d like to become a regional manager with
Festiva so that I can grow with the company. First, I want to
focus on improving this resort for our owners and guests to
provide them with an enhanced product so that they return
year after year,” Robert said.
With a very diverse owner base of more than 11,000 from
throughout the United States, Mexico, Europe and South
America, Robert is able to use his understanding of other
cultures from a lifetime of traveling as well as his love for
working with people every day.

Robert Fisher, General Manager at Celebration World
Resort (CWR), has been around the world. Coming from
a military family and serving in the military himself, he
traveled and lived everywhere from Colorado and Virginia
to Germany, Indonesia and Greece. After the military, his
career in the hospitality industry sent him from Virginia to
Arizona and finally to Florida, where he has been for nearly
14 years managing vacation ownership resorts.

side of the promenade gift shops, boutiques, art galleries
and high-end label stores keep the selective shopper
content while outside on the boardwalk licensed vendors

clothes. For the most authentic items and the chance to
barter for great deals pay a visit to the colorful Isla Rio Cuale
market. Easily accessible from the Malecon footbridge, the
flea market is located on a small shaded island on the Cuale
River and offers everything under the sun.
Los Arcos Amphitheatre: Located at the southern tip of the
Malecon, the amphitheatre is one of the most iconic symbols
of Puerto Vallarta and a great place to watch the sunset as
crowds gather in the plaza. Each night clowns, acrobats and
magicians perform while the sound of a live Mariachi band
echoes through the alleys. For a truly authentic experience
stop by the amphitheatre at 7 p.m. on Sundays to watch the
Xiutla Folkloric Ballet perform a variety of traditional dances
under the starlit sky.

Long before the mouse ears became the
international symbol for Central Florida in the early
1970s, there were roadside attractions that drew
tourists to places throughout the Sunshine State
as early as the late 1800s. The state’s tourism
industry started booming in the 20s, and by 1950
it outranked citrus production as the number one
industry. Many of the roadside attractions of the
earlier days are gone, replaced by parking lots
or high rises, and some of them might as well be
gone as they have not aged well over the years.
However, you can still find some of Florida’s oldest
attractions that have endured and are alive and
well, and better than ever. One such attraction,
Gatorland, is only a few minutes from Celebration
World Resort. The “Alligator Capital of the World”
opened in 1949 and is still privately owned by the
family of its founder. If you think this might be a
quick-stop attraction that you can knock off your
list in an hour or two, think again. To really see
and appreciate everything Gatorland has to offer,
plan to spend at least a half day there.

Upon entering through the giant gaping alligator
mouth (fun for a photo), you’ll see basically
what you might expect: walkways suspended
over ponds with platforms covered with sunning
alligators. Lots of alligators. Literally piles of
alligators. The smaller alligators may even have a
few turtle friends, and the turtles will often rest on
top of their alligator buddies. After the initial shock
of seeing so many ancient-looking reptiles in one
small space, take some time to get your bearings
and study the provided map.
Most of the non-alligator attractions are located
near the entrance of the park. The snake display,
exotic birds and petting zoo won’t take you long
to see, and are somewhat educational as they
mostly focus on animals native to the area. If
you’re not squeamish, you can purchase “gator
grub” (raw hot dogs) to toss to the hungry beasts.

You will most likely see Great Egrets standing on
top of alligators floating in the water, or you may
be fortunate enough to see an Anhinga or “Snake
Bird” catch its lunch by spearing a small fish with
its beak and tossing it up to catch in its mouth.
If you want to take a break from the crowd, head
to the edge of the park where a wide wooden
boardwalk winds through the shady and quiet
swamp walk. Posted signs describe the plants and
animals that call the swamp home. Back in the
park, a paved path takes you by several different
areas with alligators and crocodiles from different
regions around the world, each with its own story.
From movie stars to dog eaters to former NYC
sewer residents, the alligators here have as varied
backgrounds as the visitors on any given day.
There are a few extras that will extend your time
at Gatorland if you so choose. The Gatorland
Express Train will take you throughout the park for
a different point of view, but it’s more worthwhile
to walk the path to be sure you don’t miss
anything. For an extra cost, you can enhance your
experience with a zip line tour of the park. This will

decide to skip one of the shows and explore the

to yourself. It’s truly a peaceful experience in
nature, with stunning photo opportunities as well.
While you’re in Orlando, take the time to step
away from the mega-sized modern theme parks
and visit Gatorland. You won’t regret it!

Lime Pie

If the Key lime pie you’re used to is green, then
it’s not real Key lime pie. Authentic Key lime pie,
as any Floridian will tell you, is more of a lightyellow. This pie originated in Key West and is
ubiquitous throughout Florida. It is delicious
and simple to make at home or while you’re
on vacation. This recipe is adapted from the
Gourmet Sleuth’s website.
Ingredients
Traditional key lime pie was not cooked. Today,
you’ll find some variations that call for cooking,
and some that do not. The star ingredient, Key
limes, can be difficult to find outside of Florida.
Acceptable substitutes are Persian limes or
bottled Key lime juice that you can take home as Instructions

fluffy texture. Serve as a garnish on the pie.

flavors. With Banderas Bay at its doorstep, Puerto
Vallarta’s cuisine is influenced by the bounty of fresh
seafood pulled from the Pacific each day. In this
seafood-happy city one dish stands alone: ceviche.
A popular dish throughout Central and South
America, ceviche is a citrus-marinated seafood salad
prepared in a variety of ways that can often include
fish, shrimp, squid, octopus and scallops along with
onions, chilies and tomatoes. Perfect for sunny
days, the refreshing cold salad uses the acidity from
lemon and lime juice to “cook” the seafood to tender
perfection, and best of all ceviche is easy to make

Place the shrimp in a glass baking pan and cover
with the citrus juice. Let the shrimp marinated for
10-15 minutes until they are opaque.
Mix in the tomatoes, onion, cucumber, garlic
and cilantro with the shrimp, then cover and
refrigerate for one hour.

Worcestershire sauce, cocktail sauce, hot sauce
and then add salt and pepper to taste.
Scoop into a chilled tumbler or bowl and garnish
with cilantro, avocado and tortilla chips.

Just 15 minutes south of Celebration World, you’ll find
yourself in Polk City, driving on a quiet two-lane road
through orange and lemon groves interrupted by green
fields of grazing cattle. This is a Florida of another time. You
might really think you’ve gone back in time when you see
a WWII-era Fieseler Fi-156 Storch flying overhead. But it’s
likely that you’re catching a flight demonstration at Fantasy
of Flight, an off-the-radar attraction that is well worth the
visit when you’re in the Orlando area.
Fantasy of Flight features a collection of more than 40 rare
vintage aircraft dating all the way from the earliest days of
flight through the 1950s. Many of these planes have been
restored back to flying condition, and some of them, like
the Storch, are used in daily flight demonstrations. The artdeco facility features three hangars, event space, special
exhibits, restoration areas, an immersion experience and a
hands-on Fun With Flight area for children.
This attraction is much more than just an airplane museum.
Kermit Weeks, lifelong aviation enthusiast, opened Fantasy
of Flight in 1995 after years of acquiring and restoring
vintage aircraft. Along with the fascinating aircraft, the
unique tours, presentations and displays also appeal to a
wide range of interests.
The schedule changes daily, so it’s a good idea to call ahead
and ask about the schedule for the day to be sure you do
not miss a flight demonstration or restoration tour. The flight
demonstration is educational as well as entertaining, and
you’ll get to see the plane up close and ask the pilot any
questions you may have after he lands. The restoration tour
allows you to see the painstaking process of bringing the
life back into old and often damaged planes.
One of two special exhibits currently on display is A
Passionate Pursuit, a multi-media tribute to the Women
Airforce Service Pilots (WASP) honoring this spirited
squadron who left their homes and families at the height of
the World War II to serve as the first American women to fly
for the U.S. Military.
The other exhibit not to be missed is They Dared to Fly,
which features the courage of the Tuskegee Airmen, who
overcame extreme odds with dignity, honor and valor.
Their compelling story is brought to life in this multi-media
exhibit featuring interviews with the original airmen and
complemented by a meticulously restored P51C Mustang.
The Tuskegee Airmen are the subject of Red Tails, a
recently-released film.

For a little extra fun and excitement, you can experience
the 40-foot high Wing Walk Air ropes course and zip line,
or you can create memories to last a lifetime with a hot air
balloon ride or a biplane ride. There are also special events
that happen throughout the year, so be sure to check the
website prior to your vacation.
You’ll most likely find that you’ve spent much more time at
Fantasy of Flight than you originally planned, so if you find
yourself hungry the Compass Rose Diner in the museum
offers a short-order menu with a variety of sandwiches,
soups and salads. The nostalgic decor of the diner reflects
the same characteristics of stylish diners associated with
airports during the 1930s and early 1940s.
So enjoy the drive away from the crowds, and plan to spend
at least half a day at the Fantasy of Flight experience.
Whether or not you are already a fan of aviation, military or
aircraft history, you will surely leave Fantasy of Flight with
an enhanced appreciation for the history of the aircraft and
the people who flew them.
Only three miles from the heart of Puerto Vallarta, yet
seemingly a world away, Canopy River is an excursion
unlike any other and as the old idiom goes, “getting there is
half the fun.” An open-air bus transports adventure seekers
through the colorful neighborhoods of the city along a
cobblestone road that slowly erodes into dirt riddled with
large rocks and boulders. As houses give way to palm trees
and thick jungle vegetation, the bus ascends high into the
majestic Sierra Madre Mountains, providing unforgettable
panoramic views of the city and Banderas Bay.

After a 30 minute ride to the top of Cuale Mountain guests
are greeted by a slew of smiling tour guides all waiting to
assist with safety gear and harnesses. Once suited up and
debriefed on the “do’s and don’ts” of the tour, the adventure
begins as one by one guests are sent soaring 90 feet above
the gorge before disappearing in the treetops across the
river. With adrenaline pumping and the initial thrill of the first
ride across the gorge still fresh, the tour proceeds to the
next platform, where as expected the height and distance
increases.
Within moments you find yourself flying more than 600
feet above the canyon floor at speeds up to 50 mph, and
in every direction nothing but blue skies and lush forestcovered mountain tops, leaving the question to be asked,
which is better, the pure rush of adrenaline or the majestic
views? Of course the answer is as clear as the azure sky
above, neither would be the same without the other.
As the tour continues and the thrills increase the guides
take the time to educate the group on the native trees, fauna
and wildlife that all play an integral role in the surrounding
environment.
After covering more than two miles on 12 zip-lines the tour
concludes at the bottom of the mountain, next the cool

Giving Back
Festiva Hospitality Group is proud to announce that our 8th
Annual Holiday Charity Auction, held Dec. 8, at Festiva’s
headquarters in Asheville, was a huge success. Festiva
employees once again worked together to donate more than
250 items, and raised a record-breaking total of $17,950.
All proceeds from Festiva’s auction went to the AshevilleBuncombe Community Christian Ministries (ABCCM) to
benefit the children of families that are struggling as so many
are during this holiday season. In the 2011 holiday season,
the ABCCM focused on helping military families in the area.
As in past years, Festiva matched the $17,950 raised by
employees and put that into the Festiva Charitable Fund,
a flexible endowment fund managed by the Community
Foundation of Western North Carolina.
“We’re so thrilled that we can help more families than
ever this year,” said Sabrina Green, Festiva’s Contracts
Supervisor and head of the auction committee. “This
event is always heartwarming as it shows how willing our
employees are to help those in need, and we are blessed
that we can do so while the economy is difficult for many.”
Festiva would like to extend sincere gratitude to several
area businesses who contributed to our auction with
their generous donations including: Pepsi Co., Asheville
Choral Society, Mona Lisa Food Products, The Star Group
Company, Commercial Concepts, Asheville Furniture
Showcase, Bouchon, Cloud Surfer Web Consultant
Services, Coca-Cola and Budweiser.
This year, some donated items were selected to be part of
a silent auction or raffle and were displayed two days prior
to the live auction. These items brought in more than $700
before the live auction began.
As a result of the auction, Festiva sponsored 11 families
and purchased $10,000 in other toys for ABCCM. With new
families signing up each month that have never needed
assistance before, the ABCCM needs help from the
community more than ever this year. Festiva employees
also shopped for the families and toys and delivered
everything to the charity on December 15.

Festiva’s Auction Committee, which includes employees
from nearly every department in our corporate office, begins
planning the event in October of each year. Employees in
the corporate office donate the items which include gift
baskets, hand-crafted items, gourmet or homemade foods,
gift certificates and many other items donated by both
individuals and local businesses.
Festiva employees’ families are often invited to the auction,
as are others who donate items. Several employees from
various Festiva resorts and other offices also participate by
donating items or attending the auction. Festiva’s Senior
Vice President of Sales Rich Hartnett and Regional Sales
Director Michael Stacey travel from South Carolina to
showcase their sales talents as auctioneers for the event.
Since 2004, Festiva’s Holiday Auction has raised a grand
total of more than $81,000 from employee donations alone,
and the company has matched that amount in donations
or for the Festiva Charitable Fund. We estimate that the
auction has helped more than 200 families over the
years. We are incredibly proud and honored to have such
dedicated and generous employees.
Core Values
When you hear someone in Festiva’s Member Services
Department talking to “Ma,” it’s likely not because it is
‘bring your parent to work’ day. File Clerk Alisa Dean has
earned this nickname among her co-workers for a number
of reasons.

in the smallest decisions and actions. She is leading by
example with Festiva’s Core Value #4: We will consider

“We would be lost without her. She is always willing to help

beyond with everything she does. She is a hard worker and
I cannot imagine what we would do without her,” said Leslie
Jarrell, Member Services’ assistant floor supervisor.
Alisa’s “Ma”-like personality is reflected in the Core Value
that means the most to her. #1: We treat others as we
would like to be treated. She is never hesitant to offer
help or assistance to anyone, even if she is under no
obligation to do so. She notes that she has seen this core
value demonstrated at Festiva before.
Alisa’s five year anniversary with Festiva is right around
the corner, and she continues to approach her job with a
fresh outlook, constantly looking for ways to improve her
processes to save time, while coming up with new ideas to
streamline her tasks and methods. She embodies Festiva’s
Core Value #5 on a daily basis: We will be better today
than yesterday.
“I felt an immediate sense of belonging at Festiva. The
company and its employees never hesitate to give support
in a time of need,” Alisa said.
The title of File Clerk does not encompass all of Alisa’s
responsibilities and their impact on the company. She
communicates with our Sales Contracts offices to transfer
all contracts electronically for access by corporate
departments. She receives copies of guests’ comment cards
from all of our resorts and scans them into our electronic
system. She handles mailing reservation confirmations,
contracts and any other documents members request. She
keeps a record of any returned mail, and files all documents
received in member services. She is also in charge of
ordering office supplies for the department.
Alisa is known for finding ways to save money both within
her daily duties, and beyond them. A seemingly small act
such as making note pads for staff out of scratch paper
that someone else would have thrown away speaks
directly to Festiva’s Core Value #3 - We will be financially
responsible – and also to the purpose of Festiva’s
Employee Stock Ownership Plan (ESOP).
Core Value #2 was not forgotten by the colleagues and
supervisors who nominated Alisa for this article. “For the
value ‘Do it because it’s right,’ she doesn’t know any
other way, said Caleb.
Many people who work in the resort and travel industry
have a personal love for travel, and Alisa is no exception.
Traveling to Russia, Poland, England and other parts of
Europe for a job that involved hiring international staff for a
summer camp ignited Alisa’s travel bug and it has stuck with
her ever since. With plans to eventually visit all of Festiva’s
properties either for vacation or to help train resort staff
on the scanning system, Alisa’s ideal Festiva destination
would be Cuernava, Mexico – The City of Eternal Spring.
We can all take a little motherly advice from Alisa as one
of her mantras is, “Live, laugh and love and dance to your
own music.”
Alisa was nominated by her peers and supervisors to be featured in this
issue of Journeys because of the way she demonstrates Festiva’s core

of all documents so they are immediately accessible to all
necessary departments, which will improve service for our
members, decrease waste and save money.
While her job may be somewhat routine and often under
the radar, Alisa approaches each day understanding how
important it is that she complete her tasks efficiently and

visitors’ center throughout the gardens
are well-marked with signs identifying
the plant species.
Just when you think you’ve seen it
all in Central Florida, the Bok Tower
Gardens in Lake Wales just 45
minutes south of Celebration World
Resort gives you a whole new reason
to visit the area.
The National Historic Landmark’s
namesake, Edward Bok, made his
mark as a writer, winning a Pulitzer
Prize and, in the late 1800s, lead The
Ladies’ Home Journal magazine to
become one of the most successful
and influential publications in America
and the first magazine in the world to
have one million subscribers.
Take your time meandering through the
well-shaded trails, and feel free to stop
and rest on one of many benches that
allow you to soak in the natural beauty.
Grassy areas throughout the gardens
are perfect for a picnic, or just lying on
your back and gazing at the trees. In
the tucked-away wildlife observation
area called “Window by the Pond” you
can observe birds, reptiles, butterflies
and native species in their natural
habitat without disturbing them.
Make your way from the visitors’
center to the Pinewood Estate, a 20room Mediterranean style mansion
built in the 1930s. Feel free to walk
around the landscaped orange trees
and grounds of the house, and you can
also purchase tickets for self-guided
tours at the visitors’ center.
The main feature of this attraction is
Bok Tower itself. Bok commissioned
the tower to be built in 1927 as the
crown jewel of his beloved gardens.
The architect he commissioned drew
inspiration mainly from the Gothic
towers and churches of Bok’s native
Europe, but with characteristics of the
Florida landscape.
has become one of the Malecon’s
most recognizable sculptures. At 19
Barquet was sent to Canada by his
parents after falling into a forbidden
love affair with a young 16-year-old
named Nelly. After 27 years of no
contact and a failed marriage each,
the two had a chance encounter and
before long found themselves sitting
on the Malecon having a conversation
and being nostalgic about the love that
might have been. Needless to say the
rest is history as the two were married
and Barquet created the sculpture in
the same location as the nostalgic
conversation that rekindled a lost love.
The beautiful grounds at the base of
the tower feel like an amalgamation of
the deep south and old-world Europe.
Live Oak trees and Spanish moss
provide shade from the sun, and the
lush green grass and singing birds put
you in touch with nature.
The most surprising and breathtaking
aspect is the view. Florida does not
necessarily conjure up thoughts of
hills and views as the majority of the
state is very, very flat but here, you are
elevated enough to get an expansive
view of the surrounding citrus groves.
Benches are strategically placed so
you can sit and drink it in, or you can
take advantage of the soft grass and
gentle slopes for a stunning sunset.
Head to Bok Tower Gardens when the
weather is nice, and spend the day
enjoying the tranquil scenery.
This successful author lived near one
of the highest hills in Florida, at 298
feet above sea level. He fell in love
with this spot of land, and wanted to
preserve the area as a bird sanctuary.
Bok had easy access to famous
landscape architect Frederick Law
Olmsted, Jr. Olmsted was most known
for his wildlife conservation efforts and
headed several well-known projects
including Washington D.C.’s National
Mall, Jefferson Memorial, the White
House grounds, and Rock Creek Park.

Thompson offers an in-depth look into
the stories and rich history of each of
the pieces. Thompson, Puerto Vallarta
local of more than 30 years and owner
of one of the city’s most respected
galleries, Galeria Pacifico, hosts the
free tour every Tuesday at 9:30 a.m.
from mid-November to mid-April.
“The
Millennium”
by

Lidice, 2001: The first sculpture on
the north end of the Malecon, “The
Millennium” is Lidice’s interpretation
of the evolution of life and mankind’s
struggle for hope. At the base a DNA
double helix and a dividing cell stretch
skyward, transforming into a frog,
octopus and lizard before giving way
to Charlemagne, king of the Francs in
the 8th and 9th centuries. At the top of
the spiral a female figure with a dove in
her outstretched hands grasps for the
sky, signifying hope as life evolves.
The two-hour walking tour meets in front
of Hotel Rosita at “The Millennium,”
where sculptor Mathis Lidice gives a
15-minute explanation of his famed
“La Nostalgia” by Ramiz Barquet,
1984: Created by one of the city’s
most heralded artists, “La Nostalgia”
is the product of great love story and
“In Search of Reason” by Sergio
Bustmante, 1999: Featuring his
famous triangular-headed figures,
Bustamante’s surrealistic “In Search
of Reason” is perhaps the most playful
of the sculptures and without a doubt
one of the most photographed. At the
base a quirky figure reaches skyward
toward two children that have climbed
a ladder in attempt to reach the sky,
and just like the two children most
people can’t help but climb up the
ladder for a fun photo.

surprisingly moist and delicious. The servers were just as
attentive and friendly as any you would expect in a highly
rated restaurant. But, you really don’t go to a large-scale
dinner theater production just for the food, do you?
The performance as a whole is very good. The costumes
are dramatic, the performers are enthusiastic and
entertaining and the training and performance of the horses
is spectacular. The story line takes the audience around the
world, prompting costume changes for both performers and
horses, with plenty of variety and showmanship.
Somewhere in between the famous theme parks of Orlando
and the lesser-known (though just as good if not better)
attractions in the area are dinner theaters with large-scale
production and entertainment for the whole family. These
options range from pirates to knights to horses to mobsters,
and we chose to feature Arabian Nights, where a romantic
tale unfolds with spectacular acrobats and performances
by both humans and equines.
You’re instructed to arrive about an hour before the show
starts. Pre-show entertainment includes a belly dancer on
a small stage and a small appetizer buffet. There is also
a gift shop, a bar and a few artist booths to browse while
waiting for the doors to open. If you are not a fan of waiting
in a large crowd of people, it would be safe to arrive closer
to show time when the doors first open.
If you spend the extra money for a VIP pass (with several
levels available) then you will be given prime seating and
access to the backstage/stable area where you can see
the horses in their stalls, speak with the performers and
pet a horse or two. It may not be worth the extra money for
everyone, but it is a good option for horse lovers and kids.
If you have any experience with horses, you will see right
away that these are well cared for, very healthy and simply
beautiful creatures.
The most entertaining chapter may be when gypsy acrobats
perform feats like standing on a galloping horse and doing a
back-flip, landing upright on the back of another horse who
was following close behind. This and several other stunts
will bring you to the edge of your seat, and the colorful and
flowing costumes add to the festive atmosphere.
After the big finale, the stars and their trusty steeds are kind
enough to stay and take photos with and answer questions
for audience members. While there are about a dozen
performers, there are more than 60 horses used throughout
the show, and those horses who have worked hard and
have been relieved of their saddles are let into the arena at
the end. This is a delightful opportunity to see the horses in
a more natural state as they get playful and enjoy rolling in
the sawdust.
If you or anyone in your family is a horse-lover, this show
is recommended. It’s also a great experience for children.
If this particular show is not for you, there are several other
dinner shows to choose from in the area to suit a variety of
tastes, and if it is not something you’ve done before, you
should definitely experience it at least once.
Watch myths, legends and cultures of Mexico’s
ancient civilizations come to life on stage as the
contemporary dance crew, adorned in colorful
costumes, performs acrobatic maneuvers to the

typically recommended for families with children 6 years
or younger.

In the distance the flickering glow of torches
slowly appears on a secluded beach while the
sound of haunting flutes and pulsating drums fill
the air. Once on shore a torch-lit path lined with
palm trees follows the aroma of the grill to the
seaside dining area.
If you do have children, the attentive staff offers parents a
breather with a few kids’ games in the arena while everyone
arrives and finds their seats. Once the VIP area closes and
the kids’ games are over, the show is getting ready to begin.
You may not expect much from the food when it is served to
an audience of 600, but the Chef’s Selection – slow-cooked
pot roast with puff pastry – is far from disappointing. The
white chocolate cake with raspberry filling for dessert was
