Please let us know which minyan and seder you prefer to attend. 7 SEDER PREFERENCES We know how important it is to have a wonderful family Seder experience and would like to help orchestrate the perfect one for your family. We would be delighted to set up your Seder table in the manner you prefer. Please fill out the attached detailed form and let us know if there is anything else we can do to please everyone. Joint Seders will take place in the hotel’s ballrooms. We have a host of private Seder options for a more intimate option. CHILDREN’S PRIZE PROGRAM We all know Pesach is about our children but sometimes we focus so much on getting through the Hagadah and the seuda itself that we relegate child engagement to the Ma Nishtana and Afikomen. In an effort to get your children more involved and excited we have developed a fabulous optional program. We will provide you with a list of age appropriate questions (and answers) to ask your family during the Seder. We will also give you Monopoly-style dollars to give each child as they answer questions correctly. After the 2 nights each child can use their dollars towards the “purchase” of a full stock of prizes. You can choose to have your own private store of prizes for your family or let them come to our “general” store. We’ll have prizes available for children age 2 – 12. We suggest you purchase $50 worth of “Seder Dollars” per child which will cost you US$25. PRIVATE SEDERS For a more intimate Seder experience you may elect to have a private Seder with your family in a private dining room. If you would like a private dining room and don’t already have one confirmed please contact Jon Arbisfeld at 212-335-0828. We would be delighted to tailor your private Seder: PLATING: Our standard Seder service is a la cart where guests can order off of a premium menu for dinner. Alternatively, we can arrange to serve your family as follows: Family Style – we will serve individual appetizers and soup and put a selection of all entrees in the center of your family table just like home. Buffet - we will serve individual appetizers and soup and put a selection of all entrees on a buffet table in your private dining room. OTHER PREFERENCES: If you have any other preferences whether it is the type of haggadah or the vintage of wine, please let us know. 8 RECREATIONAL ACTIVITIES A spen is known for being the Rocky Mountain playground of the rich and famous, but this authentic mountain town goes far beyond glitz and glam. The Dry Bar will be an oasis to unwind, sip on a cup of coffee or champagne, and relax with fellow ladies. The salon will also be staffed with wig specialists for those who need wigs styled. As you can imagine, there will be heavy demand for the salon in the hours preceding the 2 holidays and Shabbat. Thus, we strongly suggest you book your salon treatments in advance to avoid disappointment. Cancelation Policy: If you regrettably need to cancel, please allow 48-hour notice to avoid cancellation fee. All changes or no-shows within 48 hours will be charged to the individual at one hundred percent (100%). 26 DINING 27 As you know, Prime Passover’s approach to dining is unique in that we are offering over six on site dining venues throughout your stay in addition to “remote” lunch restaurants on Chol Hamoed. In addition to a traditional ballroom space three a la cart restaurants will be open every evening for dinner, by reservation only, with open seating for lunch. We’ve also carefully planned meals to avoid repetitious settings and take advantage of the beautiful outdoors as much as possible. As restaurants will surely be popular we strongly recommend advanced reservations. Also please note that while normally restaurants cannot accommodate more than 10 per table we will be able to make certain exceptions with a pre-set menu. Larger parties, however, will be best served in the main ballroom which will offer open seating. Also note that on evenings that are not holidays or Shabbat our main ballroom will have open seating and feature entertainment at approximately 10:00pm. In addition to dining tables, we will also have theater style seating for those dining in other restaurants that want to attend a performance after dinner. A separate Viennese dessert buffet will be set up by the ballroom for your convenience. SUPERVISION All culinary preparations are under strict rabbinic supervision by Rabbi Rabbi Mendel Mintz in accordance with the more stringent Ashkenazic custom. Every meal will offer a selection of gebrokts and non-gebrokts in addition to a vegetarian and healthy option. 28 THE CHEF 29 CHEF DAVID VIVIANO Rumor has it that Chef David Viviano’s first sentence was “Momma makes the pasta.” This Italian toddler made his parents proud with that remark. I guess he was destined to become a chef. Viviano joined the St. Regis Aspen team as Executive Chef in June 2013. He began his career there by opening Trecento Quindici Decano – a casual Italian restaurant with a menu inspired by Viviano’s heritage. Prior to Aspen, Viviano was Executive Chef at the Westin Phoenix Downtown, which he opened in March 2011. He relocated from Detroit’s Westin Book Cadillac where he was Executive Sous Chef to assume the reins of downtown Phoenix’s first luxury hotel and AAA Four Diamond award winner. While earning a Bachelor of Arts in Journalism from Miami University in Oxford, Ohio, Viviano honed his craft at a local Italian restaurant. His love of cooking began at his family table and kitchen where he explains that “What’s for dinner?” was the first question of the day. He has fond memories of feasting on his Sicilian grandmother’s veal scaloppini, barbecuing over hot coals with his father, and hand rolling meatballs with his mother. What followed was an impressive succession of positions with high-end restaurants/hotels from California to Michigan and Arizona. While at the Jardinière in San Francisco, the restaurant received rave reviews from the San Francisco Chronicle and a James Beard Award nomination. In Detroit, at the age of 25 Viviano was given his first Executive Chef post at the fine dining restaurant Shiraz. In addition, he worked at the Ritz-Carlton and MGM Grand, both AAA Four Diamond Award winners. Throughout his career Viviano has been on the opening team for two hotels, two restaurants and one casino. As Executive Chef of The St. Regis Aspen, Viviano’s responsibilities run the gamut from the administrative to the creative to cooking side by side with his team. His favorite realm, however, is mentoring his staff and working closely with culinary students to develop new talent. As a true believer in karma and that what goes around, comes around, Viviano enthusiastically responds to requests from community and local charities. The American Liver Foundation, The Phoenix Art Museum, The Phoenix Children’s Museum, The Desert Botanical Garden, Celebración Artística de las Américas and Share Our Strength are just some of the organizations he has assisted in the past. In addition, Viviano regularly supported The Community Kitchen - a life skills and food service training program for those with barriers to employment. Students gain the skills to get jobs offering livable wages, benefits, and opportunities for advancement through hands-on food service training as well as classroom studies. Viviano is excited to identify charitable organizations within Aspen and help support the local community. Recently Viviano has also been able to explore his other passion of writing. He was a monthly contributor for Food and Flourish magazine and Ciao Bella blog 30 SPA MENU 31 REMEDE SPA MENU REMÈDE SPA Remède Spa is committed to creating an exceptional experience for each guest.
