Feel Good Corfu
Unfortunately there has been a lot of
'bad' press about Greece in the recent
weeks so I thought I would try to
redress the balance a little. Some of
this includes my thoughts but I have
also asked gazette readers, residents
and visitors to Corfu what they love
about Corfu too.
Corfu has so much to love and so
much to offer, far too much to cover it
all in this article but I will try to give
an essence of what is so special and
unique about this beautiful island
with the help of some gazette readers.
There is never ever an excuse to be
bored in Corfu – the list of 'things to
do' and places to see is endless.
Whether you are a resident or a
visitor, filling your time both summer
and winter is easy to do. Of course,
relaxing and enjoying 'being' can take
as much or as little time as you please

You can take the frenetic approach if
you wish and partake in every event
going, but you will sure need a
holiday after that!
The choice on Corfu is immense,
whether you have a preference for
village life, town life, beach life or
mountain life, Corfu has it all. Music
or silence? Take your pick. Corfu is
well known for the enormity of the
diverse musical talent here and one
part of this is the brass bands that
can regularly be heard both in Corfu
town and the villages. Summer
brings the festival season with many
different celebrations, both religious
and cultural. Dancing and
celebrating life, young and old alike.
The nature of Corfu is rich and
diverse – the Durrell foundation runs
a week’s course once a year
encompassing much information for
those who want to take an in-depth
look. In the winter there are weekly
walking groups visiting different
parts of the island and you have the
chance to go off the beaten track and
explore areas you have never
ventured to before. The walks are
often followed by a late leisurely
lunch in local eateries enjoying
Greek specialities and the odd glass
of wine or beer. For keen walkers
there is the Corfu Trail and many
visitors also enjoy exploring the
island by bicycle or jeep safari.
Boating is another activity, much
centred around the large marina at
Gouvia but also in the resorts too.
Whether you want to explore the
coastline on a day trip, a yacht or a
small motor boat, or partake in
water-sports, Corfu has it all.

Corfu Villages by Steve Ford

When the Venetians ruled Corfu
they repopulated the villages
with people from the mainland to
work the land. The origin of the
name Benitses is shown in
documents from the period of the
Angevins, before the Venetian
Benitses village - Μπενίτσες

was the main reason for the area’s
importance over the centuries.
Later, the name Penitisai changed
over the years into Penitsai and
finally into the current Benitses.
The church of Saint Marina is the
oldest here and is celebrated on the
16th and 17th July. The festival of
Saint John, which has children
leaping over a
fire on June
22nd, is
locally called
Lampatines. A
third festival
is the
“Celebration
of the
Sardine”, in
recognition of
the fishing
heritage of the
village, which
takes place
around the
first ten days
of August. In
1982 a
cultural
society was set up to preserve the
traditional customs of the village
and organises events, celebrations
and festivals which include music
and folklore dancing. During the
month of June the annual Achillion
race takes place. Starting from the
school in Kinopiastes there is a race
of 10,000 metres and one of 21,000
metres (half marathon). The athletes
come from clubs from all over
Greece and Italy to participate and
the route takes them through
Gastouri, the mountain hills, and
finishes in Benitses.

Chasing the Chill Out Factor
I’m doing my best to deal with the
heat and humidity that have had the
thermometers shimmering recently.

My cat sets a good example on how
to cope with great heat, in spite of
having to wear a tabby-patterned
but some of it is
just too 'busy' for
temperatures

I have my own list
of ‘cool’ titles for
a tall glass dripping with
condensation, a Mojito, or a tall
glass of that Greek summer classic,
coffee frappe. I make my own, but all
of Corfu's bars serve these cool
drinks, plus some you may never
have heard of. Take it easy though –
great heat and an excess of alcohol
do not mix.

Phew! All this mental effort calls
for a cold drink and the choice is
between a perfect gin and tonic, in

the island.
Young humans, however, seem to
find the heat a massive turn on, and
Corfu’s beaches and clubs
throb with bare, tanned bodies
and pulsating music with 24hour displays of plumage and
agility and whatnot that rival
anything the animal world
can come up with.
I envy their energy and
stamina. I had it once too.
Now, however, I tend to cool
down with my feet up and a
good book, actual or kindle.
All the magazines and
newspapers have lists of
suggested summer reading,

means they can be eaten cold or

cool at home in great heat. It might
have worked if you lived at Downton
Abbey with scores of servants at your
beck and call. Other tips I have
followed have resulted in me typing
this article wearing a wet tee-shirt
with my feet under the desk, in a
bowl of cold water.

Spanakopita
Ingredients
1 bunch baby spinach chopped
1 pack of frozen spinach well drained
on paper towel(You want it
really dry)
150g / 5oz feta cheese (Greek is great) , 250g / 8oz ricotta cheese
25g / 1oz grated Parmesan (optional)
1 onion diced , 1 bunch green shallots (optional)
A handful chopped Parsley, 2 garlic cloves minced.
2 eggs, lightly beaten, 3 tablespoons
melted butter & olive oil mixed

extremely positive meeting with The Red Cross today, dealing
with the purchase to the value of 631€ for two manikins,1 adult
and 1 baby, plus accessories for the purpose of respiratory
training.
A training course can be set up for The 100+ Club members
subject to interest, the course is for 25 hours training and the cost
is 50€ per person. Included with this course you will achieve a
‘Life Saving’ qualification certificate credited to you for 3 years.
The Red Cross are dealing with more and more cases every week
on the Island. They appreciate your help in any way, including
donating good condition clean clothes, food parcels, baby
nappies. Please contact us for the address.

Cooking Directions
Gently fry diced onion, garlic & shallots if using in extra oil until soft
Toss in spinach & cook gently for 5 mins

2.00pm come along and dine with us, finger buffet 6€ per head or

Set aside.
In a separate bowl mix ricotta, crumbled feta & Parmesan
Add beaten eggs
Fold in cooled spinach mixture.
Set aside while you assemble the pastry.
Spray a 9 inch x 13 inch (20cm x (30cm) lasagne dish or similar with the
oil or grease
Lay 2 sheets of filo lengthwise, lightly brush with the melted butter/oil

Lay 2 more sheets cross wise allowing the excess to hang over the dish
Continue until the base is covered with at least 8 sheets of filo, brushing
lightly with the oil/butter mix between every second layer.
Pile cooled spinach/cheese mix onto the filo & evenly smooth it out to
cover the base.
Continue layering the filo until you have around 8 layers on top again
brushing the oil mix every second layer.
Finish with a length wise pastry layer & then roll the pastry edges into
the dish so it forms an edge, gently score the top layer of pastry
into squares but careful not to cut thru the layers & into the filling.
Spray lightly with oil & into the oven at 180°C for 40 mins
Let it sit for 5 mins before you slice it…
