He has a degree in Preservation of Cultural Heritage from the University of Naples, Suor Orsola Benincasa and a specialized Degree in "Restoration, Diagnostics and Conservation of Works of Art " from the Institute for Restoration in the Palace of Caserta, implemented by Istituto Universitario Suor Orsola Benincasa in Naples. He also participated in an advanced training course in “Enhancement of the Cultural Heritage Landscape and Environmental Archaeology”, sponsored by the Ministry of Scientific Research and the University and the City of Pompei. JON ..Jon’s passions for cooking and hospitality and melding them with his appreciation of all things Italian. The plan began to take shape on a flight to Italy in July 2004, following a casual suggestion to Jon from a fellow traveller who was from Naples that he ought to open a pizzeria in Chicago. On that trip, Jon began to talk about the pizzeria idea to his many Italian friends in Rodi Garganico (Rodiani). He was encouraged to go west for “true” pizza, to Naples — said to be the birthplace of pizza. As that summer drew to a close, Jon was determined to bring the essence of the Italian markets, the street life, and the abundance of Italy right back to Chicago.Within months of his return home, Jon began the first of many travels to Naples. There he was warmly and lovingly received by Italians who understood his desire to master the art of this simple yet profound food. (If you read Italian, see Ciro Leone’s ode to “A Pizza.”) There he studied and became certified as a “Pizzaiuolo”, or pizza maker. In the afternoon we move to the Virgilian Park where you can take a free stroll and a breathtaking panorama which unfolds all passages of history before your very eyes… while those following Domenic can enjoy a visit around the archaeological site of PAUSILYPON and the grotto of Seiano. back to BB free evening Sixth day “The flegrean fields” The Phlegrean Fields (from the Greek word meaning “burning” ) is an enormous crater extending to the west of the bay of Naples from the hill of Posillipo to Cuma , embracing the islands of Nisida , Procida , Vivara and Ischia brekfast Morning : departure for Cuma : guided tour with Domenic to the archaeological sight . The birth of the wine culture in Italy" visit and lunch at a famous wine farm Afternoon : la solfatara free evening South itinerary “Cilento coast and Paestum“ A scenery of great contrasts , of incomparable beauty. Cilento enchants with its vertiginous cliffs that drop into the crystalline sea, its spotless beaches ,its small medieval villages which cling to the hills and its luminous scenery of ancestral nature .the Cilento coast begins at Paestum and ends at Sapri , offering an vast range of seaside activities. Seventh day breakfast Morning : transfer to Palinuro stop off at Battipaglia /Paestum and Paestum-remains guided tour with Domenic . A chat on : "from magna grecia to mozzarella cheese" Lunch at a famous wine farm ,wine testing with mozzarella and many other traditional tastings Night : arrival at the B&B , a paradisiac oasis.. you can either choose a free evening or join Domenic for a dinner at the Med Farine Club for a glorious pizza .
