Paletas de Yogurt con Moras
(Yogurt Ice Pops with Berries)
Ingredients:
1 lemon
½ cup water
½ cup sugar
1 ½ cups plain unsweetened
Greek-style yogurt
2 tablespoons honey
2 cups fresh berries of your
choice
Directions:
1. Rinse the lemon, then peel it. (This recipe
uses only the peel, so save the lemon for
different use.) Combine the water and sugar in a
small saucepan. Cook over medium-high heat
stirring, until the mixture comes to a boil and the
sugar has dissolved. Add the lemon peel, lower
the heat, and simmer for 5 minutes. Let cool to
room temperature. Strain the syrup through a
fine-mesh sieve, then refrigerate until chilled.
2. Add the yogurt and honey to the chilled syrup
and stir until thoroughly combined. Put a bit of
the yogurt mixture into each of the molds, to a
height of about ¾ inch. Freeze until the mixture
begins to set, about 40 minutes.
3. If the berries are big cut the min half. Divide
the berries among the molds, then pour in the
remaining yogurt mixture, dividing it evenly
among the molds.
4. If using conventional molds, snap on the lid
and freeze until solid, 3-4 hours. If using glasses
or other unconventional molds, freeze until the
pops are beginning to set (45 minutes – 1 hour),
then insert the sticks and freeze until solid 3-4
hours.

LKB has a policy that: ‘This office is committed to a workplace where everyone is safe and is
treated with courtesy, dignity and respect. Swearing, shouting, threats or violence will not be tolerated.’
BC has a new Anti-Bullying Legislation. Effective July 1st, 2012, Worksafe BC will be accepting claims for mental
distress based on workplace bullying and harassment.
Bullying means aggressive, abusive, or hostile conduct, humiliation, intimidation, or threats which could be considered be
a reasonable person to create a negative impact on any Personnel, or produce an environment detrimental to work for any
Personnel.
Chief & council passed a Bullying Policy at their April 10, 2012 council meeting.

ki’su’k kyukyit! Summer is over and it’s back to school for our children, grandchildren and
great grandchildren. Time to reacquaint with old friends and make new ones! As for the berry
pickers, there may still be some spots where huckleberries are still ripening. Others have
already checked certain areas for ‘ayut. Fall is certainly upon us!
My granddaughter Jenni (suqsuq) received her diploma for the Aboriginal Support Worker
Program she took on-line for the past few years. She has been my inspiration ever since she was
diagnosed with XP when she was eighteen months old. Whenever I go on a “pity trip”, all I
have to do is think about Suqsuq and how she has not let her condition prevent her from
planning her future. Traveling to Calgary for all of her younger years at least twice a year to
see the specialists was certainly not only worrisome, but tiresome as well.
Suqsuq graduated from High School in 2012. She often talked about traveling. When she was
younger, she mentioned England. Then it was Japan. A few years ago, both her and her mom
went to California by train to a XP Conference. Recently, she told me she would like to go on
another trip, unsure of where, but nonetheless, via train.
I have come to know Suqsuq as a very strong minded, and strong willed young woman! She is
very passionate about her work, and especially working with students at Yaqan Nukiy. To hear
her refer to them as “My Kids” is very touching and this warms me “lots” inside.
By the way, Suqsuq and her cat Mojito both moved in with me last December. I really enjoy her
company. She loves Mojito and pampers her with toys and nutritious treats. During her studies,
she would often stay up late to make sure she met her deadlines. Doing research has certainly
enhanced her learning. If I need to know about psychology, healthy foods, and health ailments,
all I have to do is ask Suqsuq and she is quick to answer. If she is unsure, she would let you
know, but you can bet she would check it out for herself.
Yes, even though Suqsuq could not enjoy the outdoors due to her skin being allergic to the sun,
she did not let this stop her from finishing high school nor from receiving a diploma. I’m sure
there were many times she was exhausted from the trips to Calgary and the many surgeries she
had to go through, but her endurance and with the support she had from her mother, her
siblings, other family members and going for sessions with her therapist, she is indeed an
“inspiration” and with this, my message is “don’t let anything stand in the way in fulfilling
your dreams and aspirations.”
And to you, Suqsuq, you have certainly brought happiness to our home. Aging can sometimes
bring loneliness and moments of sadness. Sharing stories about my experiences with you has
brought me inner peace and for this I am so grateful!
