your great island life
Made in Hawaii

A new year calls for the perfect time to
explore and try new things the island
has to offer.
I
f you’re a foodie or just love to eat, make room for these
local favorites that we can’t get enough of. If you’re new
to the island and haven’t tried them, make it top on
your list this year to try out these food favorites that make
Hawaii so unique.
Head out and make it an adventure to try one,
or all, of our favorite foods you’ll only find in
Hawaii. You’ll find many variations from
Waikiki to the North Shore, but wherever
you end up, they all embrace the taste of
Hawaii that you can’t find anywhere else
but on the islands.
saimin, a local comfort food—when you don’t know
what you feel like eating, there’s always saimin.
Loco Moco
Favorite plate lunch option for locals. It is white rice topped
with a hamburger patty and a fried egg drizzled with brown
gravy. Many restaurants on the island like to put their own
spin on this classic dish, so why not give it a try the
next time you see it on a menu.
Malasadas
A soft, warm and fluffy round doughnut
coated in sugar. It is a Portuguese-style
doughnut without a hole that can be eaten
plain or filled with custard, chocolate or
haupia. The most famous on the island is
Leonard’s Bakery.
Spam Musubi
The most popular snack in Hawaii. You can
eat it for breakfast, after lunch or even a late
night snack. It is made of a slice of marinated
cooked Spam on top of white rice, wrapped together
with nori (dried seaweed).
Portuguese Sausage Eggs and Rice
A breakfast staple here on the island. You could say it’s
the bacon of Hawaii. You can easily find this item at every
breakfast restaurant on the island. It’s such a popular item
it’s on the breakfast menu at McDonald’s in Hawaii. You
can also find this at the snack bars in the bowling centers
and in restaurants on base that serve breakfast.
spam musubi, the most popular snack in hawaii—
convenient to eat any time of day or night.
shave ice, the iconic original dessert made in
hawaii—a favorite for children and adults alike.
Poke Bowl
A must when visiting or living in Hawaii. A variety of poke
to choose from on top of a bowl of rice is as appetizing as it
sounds. Found in local supermarkets and specialty shops,
try one today. If you like sushi, the poke bowl is right up
your alley.
Saimin
A local comfort food. A simple hot bowl of saimin consists
of broth and noodles garnished with fish cake and green
onions. Popular in many restaurants and coffee shops
around the island, it’s not a surprise that you can easily
make this dish at home! Try one today at the Kau Kau
Korner snack bar inside the Hickam Bowling Center.
Shave Ice
Just as iconic as the Spam musubi, the original dessert made
in Hawaii. A heaping mound of soft and fluffy ice drizzled
with a colorful rainbow of flavors makes this a favorite for
children and adults alike. It’s easy to find a shave ice store
at every corner market here on the islands.
When in Hawaii, eat what locals eat!

Introducing
By Reid Tokeshi
IRONS table + tavern is coming to the
Navy-Marine Golf Course, and the
operators are promising that this
new dining spot will not only
offer
delicious
food,
it
will fill a niche that has
been underserved.
“We don’t necessarily want
to be the ‘best’ restaurant,
whatever that means in people’s minds,” says managing
partner Ed Wary. “The goal is
to be the favorite restaurant.”
When someone asks where’s a good
place to eat, Wary wants IRONS to be
the first thing that pops into your head.
“No trans-fats or GMO’s, local first,
organic, all-natural, hormone free,
whenever possible. Emphasis on
sustainability, from scratch, smoked
in-house cooking.”
“We’re committed to that, so you’ll
see it,” says Wary. “We won’t rub it in
your face, but that’s what will be on
our menu.”
As Wary envisions it, IRONS will be a
nice but comfortable place where diners can go for everything from a romantic dinner to promotion parties and other special occasions. “We just thought
the military community deserves to
have a nice restaurant that they can be
proud of.”
When a new restaurant opens, the question first
and foremost is about the food. In that respect,
IRONS will be at a level higher than other establishments in the area. As Wary puts it, you won’t
be getting “freezer to fryer” types of food here.
For years, the food was always the
focus for restaurants – following
trends, changing recipes – while the bar stayed
the same. Wary says that it’s changed recently,
and customers can look forward to the same
attention to detail in this area.
Rather than using premade mixes, IRONS will
make their own syrups and juices. Don’t be
surprised if you see grapefruit or orange juice
being freshly squeezed behind the bar.
“You’ll see fresh fruit behind the bar, you’ll see
herbs. It’s not getting fancy or frou frou, it’s
getting real, focusing the same attention to the
natural, creative ingredients at the bar as you do
with the food,” says Wary.
Not to worry, however, if you just want to relax
with a beverage after a round of golf or after work.
You will still be comfortable at IRONS.
The focus of the menu will be on
the quality of the items, not the
quantity offered. Unlike the large
chain restaurants, the menu won’t
be multiple pages with dozens of
choices. What diners will get are
quality ingredients.
“The chicken is not going to
be treated with chemicals or
hormones. The prime beef will
be dried, smoked and finished
in-house. We’ll cut our own
steaks. We’re going to have that
kind of focus,” says Wary.
That focus is highlighted in
the motto on the menu:
Continued on next page.
The décor has been a point of
emphasis visually, while the
playlist is being chosen to match
the venue. Smell isn’t just limited
to the food, as aromatic accents are
being looked at.
Even the way things feel will be
important. “The weight of the
silverware makes a difference,
it tells you about quality.
The tablecloths, napkins, everything
should have a retro feel, because
those were the days when food
was true,” says Wary.
Continued from previous page.
From the beginning, Wary said they wanted to
create a place that was really nice, where the military community would be proud to take someone
for a special occasion. As a disabled combat veteran himself, Wary believes there should be a little
different level of respect given.
For example, one thing you won’t likely see is the
buffet line. “I’ve had enough military experience
to know that military people stand in line half of
their lives,” says Wary.
When training the staff, Wary is emphasizing the
exclusivity of their customer base. “Our service
has to be appropriate. There is a certain amount
of respect that needs to go into taking care of
our customer.”
As a long-time restaurateur in Hawaii, Wary says
it was important for him to assure the base that
they are good operators.
“I’m the old-school guy, I know what I’m doing and
you can trust me. My word is my bond. So that’s
how we’ve always operated.”
So what can diners expect when they sit down at
IRONS? The sensation will be one that stimulates
all five senses, not just taste.
Before IRONS was conceived,
Wary’s group researched the
surrounding area, and found that
in general, the emphasis for everything
was price. As a result, patrons don’t have
the option of upper-end concepts. IRONS will
fill that void.
“I think we’re going to be a couple steps above
in terms of offerings and service,” says Wary.
“If time’s not a factor, this is going to be the
place to dine. If you have guests from the
mainland, this is where you want to take them.”
Customers have been waiting over a year for a
new restaurant to open at the course, and Wary
believes the wait will be worth it.
“We do want everybody to know that we are
professionals and take pride in doing what
we do. Where it was and where it’s going to be
is huge. We want people to have the confidence
to know that this is a place we plan on making
them proud of. A lot of that is based just on our
reputation. We wouldn’t have it any other way.”
A soft opening of IRONS table + tavern is scheduled for January
18. An official grand opening will take place some time later.

‘kaukau’ at the
Kau Kau Korner
by Justin Hirai
K
aukau is the Hawaiian pidgin slang
word meaning “food” or “to eat,” and
delicious kaukau can be found at
the Kau Kau Korner, located here at Joint
Base Pearl Harbor-Hickam in the Hickam
Bowling Center.
VARIETY The Kau Kau Korner offers a
wide variety of foods, such as Caesar salads,
roast beef sandwiches, cheeseburgers,
French fries, pizza, Wing Dings, popcorn
chicken, chili, frozen yogurt, fried chicken
and more.
PLATE LUNCH Many people in Hawaii
love to eat a plate lunch. Available
throughout Hawaii at restaurants, takeout counters and lunch wagons, it usually
consists of a main protein, rice, and either
macaroni salad or a tossed green salad.
Some of the plate lunches you can order at
the Kau Kau Korner are mochiko chicken,
beef fried steak, teriyaki beef, chicken
katsu and kalbi ribs.
BENTO Another local favorite would be
a bento, which is a Japanese lunch box
that contains of a variety of food items.
These can commonly be found throughout
Hawaii but don’t always consist of authentic
Japanese food. The Kau Kau Korner offers
two types of local-style bentos: the regular
bento (shown above) with rice, Spam, fried
chicken and teriyaki beef, or the super
bento, which includes the same items plus
Portuguese sausage.
The Kau Kau Korner has something for
everyone at reasonable prices, so be sure
to stop by and get some delicious kaukau!
They also have daily specials each month.
You can find their specials and regular menu
online at www.greatlifehawaii.com. Hours
of operation are listed in the adjacent Food
