the MAIN WINERY @ GRAVE del FRIULI
POINTS OF STRENGHT:

- 300 HECTARS of Vineyards (100 Prosecco). We use only grapes coming from our estates
!
!
-MODERN STRUCTURE, ENVIRONMENTALLY FRIENDLY
Every row of vine is irrigated through a single pipe that is also used
for the fertilization. In this way we do not want to waste extra
fertilizer. Moreover to fertilize the vines’ walls, we use some
modern machinery “shower” shaped that close the walls spraying
the fertilizer only where needed.

GRAVE DEL FRIULI
CHARACTERISTICS OF THE TERROIR:
!
- “GRAVE” means gravelly, the terroir is
characterized by the presence of STONES
!
- The SOIL is FLAT with a low altitude above
sea level
CHARACTERISTICS OF THE WINES:
!
- A good MINERALITY thanks to the presence of stones in the
soil
!
- A rich BOUQUET thanks to the sun rays that are kept by the
stones during the day and passed to the fruits during the night.
A 24 hours warmth means natural sugar into the grapes that
comes out when we smell the wine
!
- FRUITY, FRESH and easy to drink
SPARKLING WINES
POINTS OF STRENGHT:
- Grapes coming from ESTATE’S VINEYARDS. The majority of the
Proseccos present in the U.S.A. are private labels made by bottlers.
!
- The GRAVE Area has a lower production per hectar compared to
the Treviso area where the 90% of the Proseccos comes from. This
makes our Prosecco richer in BODY, TEXTURE and PERSISTENCE of
taste.
!
- FINE and PERSISTENT PERLAGE
!

FERMENTATION AND FROTHING:
- CHARMAT METHOD, still wine put in closed autoclaves with yeasts
that create the natural bubbles until the pressure of 6 bars
!
- Before the labelling, instead of passing the condensed bottles
under warm air blowers that ruin the quality, we take off the
bottles manually from the system and we put them for a couple of
days in some dark rooms. When the bottles are dry we re put them
over the system for the labelling
!

- EASY to DRINK. Low alcohol content and strong bouquet

- the PINOT GRIGIO has a little part of COLLIO Grapes to
increase the structure

WHITE WINES:
- Fermentation and Refinement in STAINLESS TANKS
!
RED WINES:
- Maceration and Fermentation in STAINLESS TANKS
- Refinement in 60 HL Slavonian BARRELS for 12 months to
preser ve the freshness and the typical fruit sensation of
the grapes, using very soft wood tannins

POINTS OF STRENGHT:

- 45 HECTARS of Vineyards
- COLLIO is famous as the D.O.C. area where THE BEST ITALIAN WHITE WINES are produced, hilly and
pretty high above sea level
- The PONCA is the name of the soil of Collio. A Marl made by Calcium and Limestone is full of minerality
and gives a unique sapidity, salinity and minerality to the Collio wines
- Incredible PRICE vs competitors of the D.O.C. Collio and most of the times a superior quality
- HARVEST made MANUALLY because of the deep position of the vineyards and the narrow space
bet ween the vines
VIGNETI SANT’HELENA the VINEYARDS @ COLLIO
WHITE WINES:
- COLD MACERATION with the skins for 9/11 hours
- REFINEMENT on fine lees for 6 months in STAINLESS tanks
RED WINES:
- COLD MACERATION with the skins in stainless tanks
- REFINEMENT in 30hl and 60 hl for 12 months in Slavonian BARRELS to
give soft tannins

THE PROJECT:
- Fantinel’s BOUTIQUE WINERY. Production of BIG
WINES using simple indigenous grapes from Friuli
!
- In all these wines there is at least a % of
APPASSIMENTO, we dry the grapes onto some
racks inside our drying room or under the sun
!
- The project was born thanks to the Hungarian
TIBOR GAL, former winemaker of ORNELLAIA

- UNIQUE WINES from Friuli

- REFOSCO, alternative to an AMARONE and less
expensive
!
- ECLISSE, incredibly SWEET BOUQUET but DRY PALATE
sauvignon blanc

- PICOLIT and RAMANDOLO, SWEET wines but well
balanced with ACIDITY

- 20 to 30% APPASSIMENTO
- COLD MACERATION WITH THE SKINS
- REFINEMENT IN STAINLESS TANKS

- MACERATION AND FERMENTATION IN FRENCH

- REFINEMENT IN AMERICAN AND FRENCH
BARRIQUES
RAMANDOLO D.O.C.G:
- RAMANDOLO is a hill, first obstacle for the sea wind going
towards north. Characterized by frequent presence of RAIN and
HAIL. The only way to produce a well structured wine was to DRY
the GRAPES of the VERDUZZO Ramandolo
!

PICOLIT D.O.C.G.:
- Grape with a GENETIC DESEASE. The grape misses the 30%/40%
of the berries
