Tender Chicken, Sweet and Spicy Dressed
Greens + Cheese Pom-Poms

–Medium oven proof sauté pan
–Tongs
–Chef ’s knife
–Medium mixing bowl
–Measuring spoons
–Small mixing bowl

1. Preheat oven to 350°F.
cheese to a small mixing bowl. Finely
chop the cilantro and stir into the goat
cheese. Form mixture into 8 equal-sized
balls. Roll balls in the pecans.
From your home pantry:
–Kosher or flake sea salt
–Freshly ground black pepper
–Olive oil
–Water
What you need:
–10 ounces chicken tenders
–.4 ounce jalapeno and cilantro
mixture
–.25 ounce diced shallots
–.9 ounce strawberry preserves
–9g (2 teaspoons) red wine vinegar
–3 ounces goat cheese
–1.25 ounces pecan pieces
–2 ounces baby arugula
Wine Pairings
A classic wine pairing for this dish would
be a Sauvignon Blanc. If it ain’t “blanc”
don’t fix it.
Beer Pairings
A Belgian wheat beer is where it’s at with
this meal.
2. Cook the Chicken: Liberally salt and
pepper the chicken. In a medium ovenproof sauté pan over medium-high heat,
add 1 teaspoon olive oil. Add chicken and
cook until browned on the under side.
Turn chicken and place pan in the oven
to cook until juices run clear (about 12
minutes). Remove from oven and set aside.
5. Warm Goat Cheese Pom-Poms: In a
medium sauté pan over medium-high
heat, add 2 teaspoons olive oil. When
hot, add the goat cheese balls and cook
for 20 seconds until just warmed (not
melting). Carefully remove to a plate
using a small spoon.
To Serve: Toss the greens into the
dressing and serve alongside chicken
with goat cheese pom-poms on top.
Drizzle any leftover dressing over the
chicken if you dare.

3. Make the Dressing: Separate the
jalapeno from the cilantro. Set cilantro
aside. Finely chop the jalapeno and
shallots and add to a medium mixing
bowl (if you like less heat, use less
jalapeno). Add the strawberry preserves,
vinegar, 2 teaspoons olive oil and 2
teaspoons water. Whisk together with a
fork. Salt and pepper to taste. Set aside.
