Santa Maria style tri-tip that is slow cooked with our housemade au jus & onions

This is a traditional Texas chili…NO BEANS! Angus tri-tip cooked two separate ways. Some is oak roasted &
cubed, some is braised for about 5 hours. Winning local cook-offs since Brian created this recipe in 2010, our
chili most recently took 1st Place for People’s Choice at the World Food Championships in Las Vegas, NV
