A wealth of tasty
local foods
The many different food items produced in the HautSaint-François are now even more accessible to the
general public in local markets and grocery stores, and
available through delivery/pick-up services as well as
directly on the farm. Tender cuts of meat, fresh fruits
and cheeses, every type of maple product imaginable,
herbal teas, desserts and other treats, and fresh quality
vegetables: our region has these and many more.
Creating wealth through a thriving local economy
Food processing provides 14% of all jobs in the
manufacturing sector. This is one of the most
important sectors in the Quebec economy, next
to transportation equipment, chemical products
and metallurgy.
International recognition
Quebec has witnessed significant growth in its exports,
which increased by 49% between 1998 and 2004.
Pork, milk-fed veal, fine cheeses, maple products,
cranberries and fruit juices are among the products that
have put Quebec on the map as a choice producer in
the food and beverage industry. The most significant
of these is still the pork industry, with exports valued
at $859.3 million.
Purchasing locally grown products means:
• fresh and healthy food for the local population
• improving availability and access to local products
• encouraging local producers
• supporting the Quebec economy
• reduced dependence on world markets
• helping reduce greenhouse gas emissions
due to food transportation.

Tips to help you and your family
eat more fruits
and vegetables
• Make it a habit to include a fruit
or a vegetable in your breakfast
every day: for example, add a
banana or some strawberries to
your bowl of cereal, or a tomato
on the side with your eggs
• Serve vegetable soups, salads or
raw vegetables (with or without
dip) as appetizers
• Half of your main dish should
be made up of vegetables, fruits
or both
• Keep fruits and vegetables handy
at work, at home and even in your
car: cut up veggies, fresh or dried
fruits, etc.

• Prepare veggies 3 or 4 days
in advance and store them
in an airtight container or bag
• Serve fruit as appetizers, snacks
and desserts
• Add fruit to your recipes: blueberry
muffins, date squares, chicken
with cranberries, spare ribs with
apples, ham with pineapple
• Choose real fruit juices, and
avoid beverages or punch. Some
beverages contain only 25% real
juice and are sweetened with
sugar and artificial colour.

Meat
from our region’s farms
In the Haut-Saint-François, we have
access to a wide variety of meats and
even fish: lamb, venison, chicken,
eggs, goose, boar, beef, veal, guinea
fowl, pork, deli meats and sausages,
duck, rabbit, quail, and more.
When you eat locally produced meat,
you can find out how it’s raised. Most
farms in our area use natural methods
of raising animals (as opposed
to intensive means of production).
Healthy diets, fresh air and space
to move around all contribute to
producing lean, high quality meat.
Tips for reducing fat
Remove the skin from the chicken
and the visible fat from the meat.
A cut of beef with visible fat contains
twice as much saturated fat. That
adds up to 100 extra calories per
100 g portion of meat.
Brown the meat in a small amount
of oil or in a non-stick pan, or cook
under the oven grill.

EVERY WEEK
• Omega-3 fatty acids are
healthy for the heart and
are vital in children’s diets
• Fish is rich in vitamin A, which
is important for healthy vision
• Fish provides muscle tone and
vitality due to its concentration
in phosphorus and vitamins B
and D
• Vitamins E and B are effective
in helping cope with stress
• Cell aging is prevented by
the adequate amounts of selenium, a powerful antioxidant

Storing cheese
after purchase
Whole cheeses should be stored in
their original wrapping. All others
should ideally be double-wrapped
in wax paper and aluminum.
Plastic wraps should be avoided
because they prevent the cheese
from “breathing” and cause the
outer layer as well as the cheese
itself to deteriorate. Firm cheeses
can be wrapped in a sheet of
aluminum foil.
Make sure the wrapping sticks to
the cheese so that it doesn’t dry out.
Don’t remove the outer layer of the
cheese, because it’s a protective
layer that preserves the aroma,
and anyways, it’s usually edible!
Once your cheese has been properly
wrapped, you can place it in an
airtight plastic container.
Cheese should be removed from
the fridge one hour prior to a meal
to serve it at room temperature for
best taste results.
To make sure that everyone can
taste all the flavour of a good
cheese, both the outer and inner
layers should be included in
each cut.

vitamins and active antioxidants.
Quebec is the world’s primary
exporter of maple products. We
export maple products to more
than fifty countries!
758 companies produce maple
syrup in the Estrie region, with
more than six million trees on tap.
In your recipes, you can replace
the sugar with an equal quantity of
maple syrup. For each cup of syrup
you use, reduce the amount of liquid
in the recipe (milk, water, juice) by
approximately a quarter of a cup.

I am very proud to once again
represent agricultural producers
and processors in this second
edition of the Directory of
Agri-Food Products in the
Haut-Saint-François MRC.
In my opinion, being an
agricultural food producer is
a very important occupation,
because we are feeding the
world of people around us,
offering fresh and high-quality
products, and adapting our cultural practices in
the quest to protect the environment for future
generations. We need to make the right choices
today as consumers if we want to conserve
our lifestyles and continue to produce healthy
food. This is why it is vital to encourage local
agriculture and make connections with the
farmers and producers in our midst. Let’s make
it a habit to purchase more local products,
visit farmers’ and public markets, or purchase
directly from the farm. This is a winning recipe
for our common future.
