Directory of AGRI-FOOD Products in the Haut-Saint-François MRC This initiative has been made possible through funding from Canada Economic Development. A wealth of tasty local foods The many different food items produced in the HautSaint-François are now even more accessible to the general public in local markets and grocery stores, and available through delivery/pick-up services as well as directly on the farm. Tender cuts of meat, fresh fruits and cheeses, every type of maple product imaginable, herbal teas, desserts and other treats, and fresh quality vegetables: our region has these and many more. Creating wealth through a thriving local economy Food processing provides 14% of all jobs in the manufacturing sector. This is one of the most important sectors in the Quebec economy, next to transportation equipment, chemical products and metallurgy. International recognition Quebec has witnessed significant growth in its exports, which increased by 49% between 1998 and 2004. Pork, milk-fed veal, fine cheeses, maple products, cranberries and fruit juices are among the products that have put Quebec on the map as a choice producer in the food and beverage industry. The most significant of these is still the pork industry, with exports valued at $859.3 million. Purchasing locally grown products means: • fresh and healthy food for the local population • improving availability and access to local products • encouraging local producers • supporting the Quebec economy • reduced dependence on world markets • helping reduce greenhouse gas emissions due to food transportation. Source: Portail Québec 3 BERRIES AND VEGETABLES Tips to help you and your family eat more fruits and vegetables • Make it a habit to include a fruit or a vegetable in your breakfast every day: for example, add a banana or some strawberries to your bowl of cereal, or a tomato on the side with your eggs • Serve vegetable soups, salads or raw vegetables (with or without dip) as appetizers • Half of your main dish should be made up of vegetables, fruits or both • Keep fruits and vegetables handy at work, at home and even in your car: cut up veggies, fresh or dried fruits, etc. 4 • Prepare veggies 3 or 4 days in advance and store them in an airtight container or bag • Serve fruit as appetizers, snacks and desserts • Add fruit to your recipes: blueberry muffins, date squares, chicken with cranberries, spare ribs with apples, ham with pineapple • Choose real fruit juices, and avoid beverages or punch. Some beverages contain only 25% real juice and are sweetened with sugar and artificial colour. When you eat locally produced meat, you can find out how it’s raised. Most farms in our area use natural methods of raising animals (as opposed to intensive means of production). Healthy diets, fresh air and space to move around all contribute to producing lean, high quality meat. Tips for reducing fat Remove the skin from the chicken and the visible fat from the meat. A cut of beef with visible fat contains twice as much saturated fat. That adds up to 100 extra calories per 100 g portion of meat. Brown the meat in a small amount of oil or in a non-stick pan, or cook under the oven grill. CONSUME AT LEAST TWO PORTIONS OF FISH EVERY WEEK • Omega-3 fatty acids are healthy for the heart and are vital in children’s diets • Fish is rich in vitamin A, which is important for healthy vision • Fish provides muscle tone and vitality due to its concentration in phosphorus and vitamins B and D • Vitamins E and B are effective in helping cope with stress • Cell aging is prevented by the adequate amounts of selenium, a powerful antioxidant 7 Bergerie CloDel 188, chemin Hooker, Dudswell (Bishopton) [email protected] Owners: Sylvie De Lafontaine and Réjean Cloutier Point of sale: on site 819.884.1117 Product: lamb Bergerie Malvibois and Newport 1344, Route 210, Cookshire-Eaton Owner: Marie-Antoine Roy Point of sale: place your order by phone 819.889.2729 Product: lamb, whole carcass only Boucherie Éric Vachon inc. 15, chemin Clifton Est, St-Isidore-de-Clifton Owners: Éric Vachon and Annie Blouin Point of sale: on site 819.889.1331 Products: wholesale and retail sale of veal, beef, pork, chicken: cuts prepared by request. All others should ideally be double-wrapped in wax paper and aluminum. Plastic wraps should be avoided because they prevent the cheese from “breathing” and cause the outer layer as well as the cheese itself to deteriorate. Firm cheeses can be wrapped in a sheet of aluminum foil. Make sure the wrapping sticks to the cheese so that it doesn’t dry out. Don’t remove the outer layer of the cheese, because it’s a protective layer that preserves the aroma, and anyways, it’s usually edible! Once your cheese has been properly wrapped, you can place it in an airtight plastic container. Cheese should be removed from the fridge one hour prior to a meal to serve it at room temperature for best taste results. To make sure that everyone can taste all the flavour of a good cheese, both the outer and inner layers should be included in each cut. 11 MAPLE PRODUCTS Caitya du Caprice Caprin 1023, Route 210, Sawyerville [email protected] www.caitya.com Owners: Marypascal Beauregard and Francis Landry Points of sale: on site and at www.atrst-isidoredeclifton.com 819.889.2958 Products: artisanal goat cheeses Fromagerie DuMatin 4676, Route 112, Ascot Corner [email protected] www.fromageriedumatin.com Owner: Christian Béland Point of sale: on site 819.820.0220 Products: cheddar cheese Fromagerie P’tit Plaisir 503, rue de la Carrière, Weedon (St-Gérard) Owner: Céline Grenier Point of sale: on site 819.877.3210 Products: fresh cheese made daily, whey, salt-free cheese, curd cheese, cheese blocks Some great ideas A naturally sweet product for using goat cheese • add to hot pasta with a smidgen of oil • served hot, garnished with pesto, tapenade or vegetable confit • as an accompaniment to salad • crumbled over homemade pizza • as a side dish with meat • melted over a baguette in the oven • small slices rolled with prosciutto • stuffed in cherry tomatoes Canada’s maple syrup stands out from other sweet products due to its unique taste, natural composition (no added colours or other ingredients), vitamins and active antioxidants. We export maple products to more than fifty countries! 758 companies produce maple syrup in the Estrie region, with more than six million trees on tap. In your recipes, you can replace the sugar with an equal quantity of maple syrup. For each cup of syrup you use, reduce the amount of liquid in the recipe (milk, water, juice) by approximately a quarter of a cup. recipe ___________ ____________________ e cereal __ __ __ __ s __ bar __ a __ nol __ gra __ typ spi kri__ ___________ ____________ __ple __e__ __Ma 250 ml__ric __e__ 12 ____ ses ____________________ ml maple butte __ds __e__see __am ____ __0__ml __25 ____r_____________ 80 ds ____________________ see __ er __ ow __ fl __ sun __ __ ml __ 5 __ 12 __ n _________________ , be __________ 1 egg ____ __ate ____ ______ __ __ __ __ s __ sin __ rai __ __ ml __ 5 __ _________ __________ __12 ____________________ __ ed __ dic __ , __ ots __ ric __ ap __ ed __ dri __ __ _ __________ __5__ml __12 ____________________ ____________________ xture into the__res __ the __ of t __ __ _ __ __ __ __ __ __ __ __ __ mi________ ______ the__egg ur __ Po__ ____ er.________ eth__ tog__ ts __ ien__ red ing h dis dry __ ex the __ pyr all __ _ a x __ __ Mi _ ase __ 1. __ __ Gre 5.__ x.__ mi__ ________ ________ ter__and bat__ ____ the________ nd__ ter. but__ ____ bat_ter __Ble __3. the__ma ____ Me ____ __ple 2.__ rin __d__the rga __rea __lt__ ma __Sp or __e. __ tter __ bu __ h ________ wit__ __ ter. __ but __ ple __ ma __ __ the __ into m __ ts for __ ien to __ dow it__ dry__ing ss__ __________ pre__ __n_________ __red and __ the__dis ____ in __ __h__ bow __t______ all ____hea a sm __l and in __ __ __ egg __ the the oven at _ at __ in Be __ ce 4. __ Pla __ 6. __ bar ____ ct pa ____________________ com __s. . __ __ ter __ __ bat the __ of __ e __ som __ __ ing mi_n. add ile __ y wh __________ for__12 htl__ ____ bak it slig __-15 ____ ºF)__and __e__ ____ 0__ __ (35 ____ ºC __ 0 __ 18 __ __ __ __ __ __ ________ ______________ ____________________ ____________________ OTHER PRODUCTS Cap aux Sources 2147, Route 112, Weedon Owner: Gaétan Bouchard Point of sale: on site 819.877.2571 Product: maple syrup Le Chalet des Érables 323, chemin Smith, Cookshire-Eaton Owners: Jean Paquette and Lise Plante Point of sale: on site, by appointment 819.875.5315 Products: maple syrup and a wide range of maple products Érablière Landry, Les Entreprises J.M.N.J. In my opinion, being an agricultural food producer is a very important occupation, because we are feeding the world of people around us, offering fresh and high-quality products, and adapting our cultural practices in the quest to protect the environment for future generations. We need to make the right choices today as consumers if we want to conserve our lifestyles and continue to produce healthy food. This is why it is vital to encourage local agriculture and make connections with the farmers and producers in our midst. Let’s make it a habit to purchase more local products, visit farmers’ and public markets, or purchase directly from the farm. This is a winning recipe for our common future. Sylviane Bégin, agricultural producer Ferme La Paysanne President of the Syndicat de la relève agricole de l’Estrie This directory promotes producers who registered on a free and voluntary basis. 16 The Haut-Saint-François SADC’s mission is to promote and support local economic development throughout the area.
