PATA NEGRA
Pata Negra (’black hoof’) is made of Spanish Iberian black pigs. The curing process takes at least twelve months.
The Pata Negra ham is famous for its exclusivity; in the past farmers have been known to paint hoofs black as an
opportunity to increase the product’s market value… Such practices have almost disappeared thanks to more thorough inspections. Experts in this complicated matter now judge the ham by three standards: its origin, race and how
it’s been fed.
CARL VON LINNÉ
Swedish Carl von Linné is famous
for his work in Taxonomy, the science of identifying, naming and
classifying organisms. He’d love
it here as there is a cottage named
after him, as is our signature drink!
