Haymaking Season in the Swiss Alps
Hay-milk is called, not without reason, as the most
original milk. For so close to nature and traditional
milk is made otherwise.
The production of hay-milk is the original form of milk
production . For centuries, the feeding of dairy cows
occurs adapted to the rhythm of the seasons: in
summer, our farmers drive the cows to pasture or the
cows come for their summer vacation on the
mountain pastures. The meadows are mowed, the
grass is dried and stored hay in barns thus obtained
for the cold season. The hay farming also has a
positive effect on nature. For mowing and grazing
promotes the rich biodiversity .

Feta, Broccoli & Walnut Tart
INGREDIENTS
1 cup FAGE Total 2% Greek Yogurt
10-in frozen savory t art shell
2 cups milk
6 eggs
2 pinches nutmeg
}'2 tsp chopped parsley
1 cup cooked broccoli, roughly chopped
1 cup feta cheese, finely diced
1 cup walnuts, chopped
Pepper to taste
METHOD
Bake the tart case, without filling. Combine the FAGE Total 2%
Classic, milk, eggs, nutmeg and parsley in a large mixing bowl to
make the custard. Whisk together and season to taste . In the baked
tart case, place the broccoli and diced feta equally over the base.
Pour the yogurt mi x over until the case is full and sprinkle the
walnuts on top. Bake for 25 to 35 minutes in oven (400 degrees F).
When golden brown turn out and cool on wire rack.

measurement of the width across its hinge or the thickness of the clam.
• We use no antibiotics, steroids, or other feed additives. Our shellfish are raised in ocean-flushed ofthe lower

Andy and Mateo Kehler started Jasper Hill Farm in 2003 - the genesis of their effort to find meaningful work in a
place they love. Their connection to the Northeast Kingdom of Vermont evo lved from generatio ns of their family
visiting and living in Greensboro - a sleepy village on the edge of sparkling, secl uded Caspian Lake.
By offering a collection of professionally aged and marketed cheeses, Ce llars at Jasper Hill allows its producers to
focus on the most important aspects of their trade - quality milk production and cheesemaking technique . This

Alpha Tolman by Jasper Hill Farm
Named for a turn of the century philanthropic dairy farmer in
Greensboro, Alpha Tolman is a burly Alpine-style cheese made at our
satellite production facility in the Food Venture Center. Upon arrival
at the Cellars the wheels are washed to cultivate a robust, rosy
orange rind and to cata lyze the development of funky, meaty, and
savory flavors that become more compact as the cheese ages in its
own vault.

John Fiscalini's dream to create great cheese from his farm's milk started many
years ago. After visiting Lionza, Switzerland in 1999, a small town in the Swiss
Alps where his family originated, his cheese making plan came together. John
made the decision to continue the Fiscalini family tradition in the United States.
Bandage Wrapped Cheddar - Bound in cheesecloth to promote mold growth, and hand-turned daily for the first two months.
It is firm yet crumbly with a nutty, slightly smoky taste.
San Joaquin Gold - This cheese has a natural, thin rind with a tawny buttery color. Crunchy protein crystals abound in this
cheese. Mildly sweet and mellow when young, it develops a darker golden hue and nuttier flavor over time. Its flesh is firm and
granular with an aroma of toasted nuts and browned butter. It has pleasant acidity and salt balance with a deep lasting flavor
and lovely sweetness.
Lionza - Lionza has a thin, naturally hard rind, a sem i-soft springy texture, a sweet milky ca ramel-like flavor, and an enchanting
aroma.
Smoked Cheddar - the Smoked Cheddar is smoked with cherry wood from neighboring farms, which gives it the color, aroma,
and flavor of smoked cheddar in addition to the hearty, nutty flavo rs of the traditional Fi scalini Cheddar.
Habanero Cheddar - The Habanero Cheddar combines the nutty, hearty flavor of our aged cheddar with the spice of all natural
Habanero peppers. It has no rind, and is creamy white with firm crumbly flesh .
Hopscotch - This gold medal cheddar is made by soaking cheese curds in an award winning dark Scotch Ale from Devil's Canyon
Brewing Company in Belmont, CA. The cheddar has a unique flavor that intensifies with age.
Purple Moon - Aged 10 months, Purple Moon Cheddar is soaked in award winning California North Coast Cabernet Sauvignon,
which makes this distinctive cheese purple on the outside and creamy on the in side.

BelGioioso Cheese has been specializing in all-natural, award-winning Italian
cheeses for over 30 years. Our Wisconsin based company consists of seven
state-of-the-art manufacturing facilities located in the areas surrounding
Denmark and Pulaski, Wisconsin.
Each plant specializes in a specific cheese that is produced there daily by the same cheesemakers. All
BelGioioso cheeses are crafted using only the freshest Wisconsin cow's milk. The cheeses are manufactured,
aged, finished, packaged and shipped solely from our facilities, giving us full quality control of the products
from start to finish.
Parm esan Breaded Chicke n Breast
Dire ctions :
1/2 cup BelGioioso Parmesan, grated
1/4 cup d ry bread crumbs
1 tsp. oregano
1 tsp. parsley flakes
1/4 tsp. paprika
1/4 tsp. salt
1/4 tsp. grou nd black pepper
2 lbs. boneless, skinless chicken breast halves
2 Tbsp. butter, melted
Heat oven to 400F. Mix BelGioioso Parmesan,
brea d crumbs, oregano, parsley, paprika, sa lt
and pepper. Dip chicken in butter, coat w it h
cheese mixture. Place in 10"x15" baki ng pan
sprayed with coo ki ng spray. Bake for 20-25
min utes or until cooked t hro ugh. Serves 6.

Ezra's Feta is creamy and smooth with a very authentic
flavor. Unlike the traditional style feta which is very
crumbly and in many cases sold as crumbled Feta,
EZRA'S Feta is sold as chunks, sliced cubes that can be
used in salads, sandwiches, pizza, pasta, baking, cooking
and many other options. EZRA'S Feta is also avilable as a
lite Feta with only 1.Sg of fat per oz, but with all of the
flavors and creaminess like the original.
EZRA'S Feta is sold in a "Stay Fresh Cup" with brine to
maintain freshness and flavors. The cheese is kept in a
small basket in the brine that can be lifted and hung on
top of the cup, out of the brine for convernient use.
When finished enjoying the Feta you can lower it back
into the brine to maintain freshness at all times.

All of Zingerman's cheeses are made from the best local milk. They use Calder
Dairy in Carleton, Ml and the Schneider Family Organic Dairy in Westphalia,
Ml for cow's milk and goat's milk from various small farmers in their region.
All of the cheeses are hand-ladled to preserve the delicate characteristics of
the curd and they use uncommonly-long sets to draw out a full, complex
flavor and a low-heat, long pasteurization to maintain that flavor.

The mighty Copper River is one of the swiftest and most rugged rivers in
Alaska. Every May, around the 15th, the first salmon of the season return
to the rivers and streams of Alaska with the Copper River being one of
the first. King, Sockeye, and Silver salmon embark on their long journeys
up the 'Copper to spawn and lay their eggs. As salmon start their
journey up the river and prepare to spawn, their feeding habits diminish.
Because the Copper River is so swift, they must store extra fat and oils in
order to survive the long trip. This high fat and oil content is why Copper
