Shropshire Blue is a blue cheese made from pasteurized cows' milk and uses vegetable
rennet. It has been described as a cross between Stilton and Cheshire. Penicillin roqueforti
produces the veining. The cheese has a deep orange-brown, natural rind and is matured for a
period of 10-12 weeks with a fat content of about 34 per cent. It is a firm cheese with a sharp,
strong flavour and a slightly tangy aroma. It is slightly sour but sharper than Stilton and
generally creamier.

traditional skills and techniques employed in the Marshwood Vale and West Country for
generations. They are committed to producing high quality, consistent cheeses which has
resulted in Denhay Cheddar winning many top cheese awards. Their herd is made up of 100%
Friesian Holstein cows (approx 1000 head), used for the high protein quality of their milk. The
Dorset Drum Cheddar is their specialty cheddar cheese, it is matured for up to nine months,
resulting in a smooth, creamy, medium strength cheddar.

This is one of the only traditional Cheddars still made in Devon. It is made from selected
summer or autumn milk and matured for 24 months. It has distinctive grassy flavours on the
cloth with a creamy texture. The ageing process develops an intense lingering full-rounded
flavour that is not too acidic, but definitely has bite. The origin of the name cheddar comes
from its manufacturing process, cheddaring is when the curds are cut and turned over and
over to release as much of the whey as possible. The remaining particles are smooth and silky.

Pedro Ximénez sweet and sour vinegar is pressed
from the rich late-harvest Pedro Ximénez grapes
grown in south of Spain. This exceptional “Gran
Reserva” vinegar is aged in American oak barrels.
Use to add a rich, fruity flavour to all dressings
and marinades. To create a fruity sauce, deglaze
skillet of sautéed shrimp, scallops or beef and
whisk in a dollop of crème fraîche.
