Recipe - Lincourt Vineyards
Greetings
Greetings from the Sta. Rita Hills,
We’re getting ready for another fantastic
vintage here at Lincourt. Since working
as the Assistant Winemaker for Leslie
Renaud for the past three vintages, I am
excited to continue crafting these elegant,
sculpted wines from our estate vineyards
in the coveted Sta. Rita Hills and Santa
Ynez Valley, now as Winemaker. I’ve
been working in the industry for the
past 11 years and am pleased to have the
opportunity to work with fruit from
these great vineyards.
This fall, I am really looking forward to
calling the picks at harvest. I love walking
the vineyards and have been monitoring the maturation process leading up to harvest. We pull
grape samples from our vineyard blocks to analyze the brix (sugar levels), pH, TA (titratable
acidity), flavors and cluster maturation in order to determine when to pick. At this point in
the process, all the ground work has been laid and we are simply waiting for the clusters to
become physiologically mature, ripening to their upmost potential. Starting with a great fruit
source on superior vineyards is the most critical precursor to making great wines. For the
2014 vintage, the vines are looking well-balanced and disease pressure has been low, which is
great for wine quality.

Pepper Roasted Leg of Lamb
Pair with Lincourt 2012 Sta. Rita Hills Syrah
Serves 8 - 10 People
Ingredients
7 lb. leg of lamb
3 cloves of garlic
1 T extra-virgin olive oil
coarse salt
ground black pepper
sprig of fresh rosemary and thyme
Directions
Preheat oven to 450°F. Slice 2–3 garlic cloves. Using small paring knife, cut 1-inch-deep,
1/2-inch-long slits all over lamb, inserting a piece of sliced garlic in each slit as you go.
Next, rub the lamb with 1 T of extra-virgin olive oil, the coarse salt and freshly ground black
pepper. Place the lamb in a heavy roasting pan, thick side up, and roast in the oven for about
30 minutes. This will ensure a nicely browned crust on the meat. Reduce heat to 325°F and
continue roasting an additional 30 to 40 minutes until internal temperature reads 130°F for
medium rare.
Garnish with a sprig of fresh rosemary and thyme. Serve with Lincourt 2012 Sta. Rita Hills
Syrah, and your favorite side dish. Enjoy!
Included in your shipment are two wines from the abundant 2012 vintage: the 2012 Zoula
Nunn Chardonnay from Sta. Rita Hills and the 2012 Syrah from Sta. Rita Hills. The 2012
vintage was exceptional to say the least. A pleasantly mild spring and summer with little rain,
and no frost allowed the grapes to ripen evenly. Our Zoula Nunn Chardonnay, named
after proprietor Bill Foley’s mother, is a rich and concentrated wine that pairs well with an
assortment of artisanal cheeses. The 2012 Syrah is a perfect expression of a cool-climate
Syrah, featuring a balanced structure and juicy flavors of muted clove, white pepper, dried
cranberry and fennel seed. Pair this beauty with grilled meats. Have a wonderful fall and we
look forward to seeing you at Lincourt!
