Creativity Shines With Menu of Nature Finds
DONNA’S DAY: CREATIVE FAMILY FUN

On a recent hike in the California redwood forest, I
came upon a charming scene right out of a storybook.
In front of me, 11-year-old Molly Hofer was busily
preparing a smorgasbord of imaginative dishes with a
creative dose of nature finds in every “recipe” for her
5-year-old twin brothers.
Molly doesn’t just stop and smell the wild roses
outside her grandparents’ cabin. She gathers them
and anything else that catches her fancy from the
forest floor (minus the poison oak) for her imaginative
culinary creations.
I perused her handwritten “Molly’s Forest Cafe”
menu offering “Mulch meatloaf sprinkled with
sawdust,” bark French fries and tempting “Clover
upside-down cakes.”
“My Danish-American grandmother had an old
aebleskiver pan, so I stirred up dried pine needles,
dirt and seeds with water from the creek, pressed the
mixture in the rounds and topped them with wild
clover,” she explained. They flip over nicely to look
like muffins after they set for two hours, she adds with
the confidence of an iron chef. And they are glutenfree.
“I’ll take two,” I said, as she politely offered me a cup
of mud tea.
The great outdoors provides a natural opportunity
to bask in beautiful scenery and breathe good-foryou fresh air. On your next outing to a beach, forest
or city park, encourage your kids to imagine all the
things they can do with the natural treasures they
find from the ground. They might be inspired to open
a restaurant like Molly’s, or enjoy one of these simple
ideas:
TOUCH AND FEEL GAME
Place finds such as pinecones, feathers and acorns
in different containers. Cover your eyes, feel an object
and guess what it is. Encourage kids to use adjectives
to describe how it feels.
FRAMES
Glue shells, seeds and pods on an outdated picture
frame, insert a new family photo or drawing and hang
on the wall.
COLLECTIONS
Kids of all ages like to collect things, whether they
are rocks, shells or colorful fall leaves. Count and
sort them by size and color, and display on a tray for
conversation starters when friends come by.
HAPPY OUTSIDE
Set up a table on your front porch or under a
backyard tree for an al fresco meal. Let the songs of
birds above and beauty all around entertain you.
Identify the specific names of the bird perched on the
branch above and the varieties of flowers growing in
the garden.

Stuffing Perks Up Bland Cuts of Meat

Here’s an easy way to add flavor
and flair to a boneless, skinless
chicken breast: stuff it! Flavorboosters like chopped, sauteed
vegetables, herbs, cheeses or spices
can turn a lean, bland cut of meat
from pork to beef into something
special.
During the Roman Empire,
recipes for stuffing chicken, rabbit,
pork and dormouse were common.
Stuffing in the Middle Ages was
known as “farce,” from the Latin
“farcire” (and the French “farcir”)
meaning “to stuff.” In the 13th
century, lighthearted French farcirs
or farce plays were “stuffed”
in between lengthy religious
productions to keep the audience
from being bored. “Forcemeat” and
“farce” also were common terms
referring to a spiced, chopped meat
mixture, still in use when referring
to sausage.
In 1538, the word “stuffing”
first appeared in English print,
but this uninspired term did not
appeal to the Victorian upper
class. After 1880, “stuffing” also
became known as “dressing.”
Today, “stuffing” is the term most
often used in the South and Eastern
parts of the United States. Stuffing,
or dressing, is a seasoned mix of
vegetables, starches and eggs that
are cooked within the body cavity
of an animal. Vegetables also are
hollowed out and stuffed. When
it’s served as a side dish during
the Thanksgiving holiday, stuffing
often is referred to as dressing.
My recipe for Roasted Red Pepper
Stuffed Chicken Breasts uses a
savory blend of bell peppers, herbs,
spices, cheeses and lemon to add
a burst of flavor to lean chicken
breast.
ROASTED RED PEPPER
STUFFED CHICKEN BREASTS
4 chicken breasts, skinless,
boneless, raw (about 6 ounces each)
2 tablespoons Italian seasoning
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
4 ounces regular or low-fat cream
cheese
1 medium lemon, juice and zest
1 jar roasted red bell peppers,
packed in oil, reserve oil
8 slices Thin Provolone cheese
4 teaspoons ground flax seed
1/2 cup breadcrumbs (whole
wheat or Panko)
Cooking oil
1. Heat oven to 350 F.
2. Spray a glass baking dish with
the cooking oil. Place the chicken
breast on half of a large sheet of
plastic wrap on a cutting board.
Fold the plastic wrap over the
chicken. Using a meat mallet (or
a heavy-bottomed skillet), flatten
the breast to about 1/4 inch thick.
Remove the plastic. Season chicken
on both sides with 1 tablespoon
of the Italian seasoning, and 1/2
teaspoon of the salt and black
pepper, and the cayenne pepper.
3. Mix the cream cheese with the
remaining 1/2 teaspoon of the salt
and pepper. Remove the zest from
the lemon and mix it into the cream
cheese. Squeeze the lemon juice into
a small bowl. Mix in the reserved
oil from the roasted red bell pepper
(or use 3 tablespoons of olive oil)
and set it aside.
4. Spread the cream cheese
mixture across the inside of the
breast. Layer two slices of the
provolone, then the roasted red
pepper. Beginning at the smallest
end, roll the breast up, tucking
in the peppers as needed. Roll
the chicken in the lemon and oil
mixture.
5. Mix together the remaining 1
tablespoon of Italian seasoning,
the ground flax seeds and the
breadcrumbs. Sprinkle the chicken
with the breadcrumb mixture. Place
the chicken roll, seam side down, in
the baking dish. No toothpicks are
needed. Repeat the layering and
rolling process with the remaining
chicken.
6. Drizzle any remaining lemon
and oil over the chicken to help it
brown and crisp on top. Bake until
chicken is cooked through (about
25 to 30 minutes) and no pink flesh
remains. Makes 4 servings.

Helping in Disasters -- What to Donate?

there are calling for assistance in caring
for pets that were lost or abandoned
when residents fled their homes. I want
to help, but I feel a little insulted
that many charities are just
asking for money up
front. I’m sure I could
collect pet food
or blankets for
these shelters
and mail them
to the area.

and TV spots asking for
money to help shelter animals can be
annoying, there are some very good
reasons why cold hard cash is often the
best option -- particularly in large-scale
disasters.
First, shelters in a disaster area -and national organizations like the
American Humane Association or
the Humane Society that pledge to
help -- need specific items, they need
them in big quantities, and they need
them yesterday. They don’t have
time to sort through random donated
items to find a few usable things. (For
example, shelters don’t use clumping
cat litter because it’s a health issue for
kittens.) With cash donations, these
organizations can buy exactly what they
need and get it delivered quickly.
Now, local shelters in
your area may be OK
with donated goods
like old blankets,
newspapers,
unopened pet
food and new
toys.
It’s
important
to
check
with them
first
-visit
their
website for a
list of needs,
and follow up
with a phone call
to confirm their list

like Charity Navigator before donating
money, and then decide how you
would like to help -- either nationally, or

throughout. Drain shrimp; rinse with
running cold water to cool and drain
again. Place shrimp in large serving
bowl.
2. In 10-inch skillet, heat 3/4-inch water
to boiling over high heat. Add beans and
2 teaspoons salt; heat to boiling. Reduce
heat to medium; cook, uncovered, about
5 minutes or until beans are tender-crisp.
Drain beans; rinse under running cold
water to cool and drain again. Place
beans, tomatoes and cucumbers in bowl
with shrimp.
3. Prepare dressing: From lemon,
grate 1/2 teaspoon peel and squeeze 3
tablespoons juice. In small bowl, with
wire whisk or fork, combine lemon
peel, lemon juice, olive oil, shallot,
oregano, mustard, sugar, pepper and 3/4
teaspoon salt. Toss dressing with shrimp
and vegetables in bowl. Sprinkle with
feta cheese. Makes 4 main-dish servings.

Kali
This sweet little lady is Kali. She is a small basset mix of around 4 years old.
Kali was recently returned to Heartland. Kali is a nice laid back girl who really
just wants to be by your side. Kali does well with other dogs and cats. She
does OK with older kids but doesn’t care for small children in her space. Kali
is housebroken and does well in the home. She does not like to be crated but
there is really no need for a crate anyways. Kali does have seizures but they are
controlled by a daily medication.
Kali is spayed, up to date on vaccinations, heartworm tested negative and
microchipped. Her adoption fee is $200.

Mr. Winkle
Two year old Mr. Winkle comes to us from a local shelter. We were asked to
assist with him due to a cyst on his eye and some issues with his skin. They
thought he may possibly need an eye removal, hence his name Mr. Winkle!
Some meds cleared it up though so he didn’t lose his eye after all! Wink may
have some allergies, although his fur has come back in nicely. He has just a spot
or two that get a bit of irritation sometimes.
“Wink” has made himself at home at his foster house. He does fine around cats,
dogs and kids and should settle very easily into a new home.

Q: I was really into this show on PBS called “Indian
Summers,” which takes place in India in the early
1900s. Will it be back for another season? -- Gigi R., via

A: Masterpiece will continue the story of love, death
and unbridled ambition set in British India’s exotic
summer capital in the 1930s. Starring Julie Walters,
Henry Lloyd-Hughes, Nikesh Patel and Jemima
West, “Indian Summers” returns for its second season
with 10 new episodes starting Sept. 11 at 10 p.m. and
running through Nov. 20. (The show will be preempted on Oct. 9 by the presidential debate.) New cast
members include Art Malik, Rachel Griffiths, Blake
Ritson and James Fleet. Each episode will be available
to view online at pbs.org/masterpiece beginning the
day after broadcast for a limited time.

Q: Since Donald Trump is running for president, I
just assumed that “Celebrity Apprentice” had been
canceled, but my wife says it hasn’t. Can you give me
the scoop? Surely he can’t do this TV show and run for

A: You are correct: Donald can’t do both at the same
time, which is why he quit the NBC series when he
threw his hat into the political ring (although NBC
maintains that it cut ties with him first). However,
your wife also is correct: “Celebrity Apprentice” will
be back -- with a new host. Keeping with the celebrity/
politician theme, it would seem, the Governator,
Arnold Schwarzenegger, has signed on to host a
revamped version of the show.
Celebrity guests for the Arnold era include: Laila Ali,
Brooke Burke-Charvet, Eric Dickerson, Boy George,
Matt Iseman, Carrie Keagan, Carson Kressley, Lisa
Leslie, Jon Lovitz, Vince Neil, Nicole “Snooki” Polizzi,
Kyle Richards, Chael Sonnen, Porsha Williams, Ricky
Williams and Carnie Wilson. And, like Donald, Arnold
will have his own set of advisers, including Warren
Buffett, Tyra Banks, Jessica Alba and Los Angeles
Clippers owner and former Microsoft executive
Steve Ballmer, who each will bring a unique business

Readers: I promised I’d update you on any
“Nashville” news, and I have some good stuff to tell
you. Season five will premiere Thursday, Jan. 5, at
9 p.m. EST on CMT with a two-hour premiere. This
season will consist of 22 episodes, with each available
on Hulu for streaming the day after it airs. All cast
members, with the exception of Will Chase (Luke
Wheeler) and Aubrey Peeples (Layla Grant), will be
returning. However, as of this writing, Connie Britton,
who plays country matriarch Rayna James, has signed
on to only 10 of the 22 episodes, with rumors swirling
that this will be her final season. But we can rest
assured that Juliette Barnes did not die in a fiery plane
crash, a la Patsy Cline, since Hayden Panitierre has
signed on for all 22 episodes, along with the rest of the
cast.
