Russia, China, Taiwan, Korea, Cambodia, Laos dan Thailand.
Selain pameran, FHM2013 juga menganjurkan pertandingan
kulinari peringkat antarabangsa, iaitu Culinaire Malaysia 2013.
Pertandingan ini terbuka kepada semua hotel, institusi pengajian,
universiti dan juga kolej yang menawarkan bidang perhotelan
dan masakan. Pelbagai kategori pertandingan kulinari dan
gastronomi dipertandingkan antaranya, cold display, patisserie,
pastry cup challenge, artistic, butchery skill, hot cooking, team
challenge, F&B gold opulence service dan lain-lain lagi.
F
ood & Hotel Malaysia (FHM2013) adalah ekspo
yang melibatkan pameran makanan dan minuman
antarabangsa, hotel, restoran, katering, peralatan
perkhidmatan makanan, pembekal, perkhidmatan, teknologi
dan seminar berkaitan bidang perhotelan dan catering
untuk kali ke 12. Expo dua tahun sekali ini telah diadakan di
Kuala Lumpur Convention Center bermula pada 17 hingga
20 September 2013, dan disertai oleh hotel, restoran,
UiTMT Culinary Team juga tidak ketinggalan menghantar
sebanyak 7 penyertaan yang melibatkan pelbagai kategori
pertandingan. Keseluruhannya, daripada 7 penyertaan
tersebut, UiTMT Culinary Team telah meraih 4 Gangsa dan 2
Diploma. Kejayaan pelajar dan pensyarah ini dijadikan sebagai
satu pembakar semangat bagi Fakulti Pengurusan Hotel dan
Pelancongan untuk menaikkan lagi nama UiTMT di peringkat
tertinggi.

D
’Hoteliers Glam Rock Night telah diadakan dengan
jayanya pada 31 Ogos 2013 bertempat di Dewan
Aspirasi UiTM Terengganu Kampus Dungun. Program ini
melibatkan semua pelajar semester 4 Diploma Pengurusan
Hotel, Diploma Pengurusan Perkhidmatan Makanan, Diploma
Pengurusan Pelancongan sebagai penganjur utama dibantu
oleh pelajar semester 2 Diploma Pengurusan Hotel dan
pelajar semester 3 Diploma Seni Kulinari. Program ini juga
dihadiri oleh pelajar dan pensyarah dari Fakulti Pengurusan
Hotel dan Pelancongan. Turut hadir tetamu VVIP Prof.
Madya Abdul Samad B. Nawi (Rektor UiTM) , En. Azahari
B.Abdul Aziz (Timb. Rektor HEP), En. Mushaireen B. Musa
(Koordinator Fakulti bagi pelajar Ijazah), Pn. Norazlina Bt
Rahmat (Kordinator Fakulti bagi pelajar Diploma) dan En.
Arma Mohd Faizal B. Abu Bakar (Penasihat Kelab D’Hoteliers).
Matlamat utama program ini berlangsung adalah untuk
meraikan pelajar semester 5 yang bakal menjalani latihan
praktikal pada semester 6 dan merapatkan hubungan
silaturrahim antara pelajar dan pensyarah. Antara slot
yang diadakan sepanjang program ialah persembahan dari
pihak penganjur, persembahan dari pelajar semester 1 dan
anugerah pelajar cemerlang. Keseluruhannya, program yang
berdurasi tiga jam (8.00 – 11.00 pm) ini memberi kepuasan hati
kepada kedua-dua belah pihak iaitu penganjur dan peserta.

Mouthwatering

F
ood photography does not come to me naturally.
Attending the food styling class for the first time, I
feel really de motivated. With almost zero knowledge in
photography and lack of familiarity in using a DSLR camera,
I feel left out and unsure how to handle this new challenge.
My friends and sibling begin to encourage me to take
pictures regularly. During the weekend, we hang out for a
photo taking sessions. Not only it enhances my skills, it also
helps me in getting used in handling the camera. This boost
my confidence and I started to fall in love with photography
especially with anything related to food. I also discover that
food photography is not just about taking mouthwatering
photo but also emphasized on the food styling and
presentation. As days grow by, I become passionate about
food photography. I found that I started to photographed
food in my kitchen. I become more observant and begin to
use ingredients and tools inside my kitchen as my subjects
and props. It also helps that I can spend hours positioning,
rearranging and styling my subjects without the glare from
others. I have all the time in the world to keep reshooting
my subject until I am satisfied with my photo. Hours drilling
myself taking the shoots helps make me more confident.
Today, I always carry my camera around so that I do not
miss out on capturing interesting images of food, the moods
and their scenery. I am far from considering myself as an
expert but I know I have improved a lot. It is something
that I do not learn overnight. The passion for beautiful and
mouthwatering images continues. I have since appreciated
that, photos can tell you a story and it is no easy job trying
to do it successfully. I have learned many interesting things
along my journey. I become familiar in choosing the right
props, lighting, colors and plates to get mouthwatering
images. I understand that it can be a bit tricky trying to make
the food that you are trying to photograph look beautiful.
Often, the surrounding is not at the best conditions for your
subject. However, with some simple steps, you will be able
to produce a better looking food images that will make you
proud of yourself. Here are five useful tips for newbie who
want to improve their food photography skills.
1. Use fresh ingredients
A fresh ingredient is essential in avoiding the tiniest flaws
from showing up. If you intend to do a macro shot, you will need
to hide any wrinkles, bruises or damages from showing up in
your images. Since you will be photographing the subject really
close, starting your shoot with fresh ingredients will become
crucial in your food styling preparation. Not only it make your
subject looks flawless, it will also help in minimizing unnecessary
touch up on your images later on in the process.
2. Ensure sufficient light possible
A good lighting is important in capturing the mood of your
settings and environment. To capture good image, start by
having a good lighting set up. Sometimes, you will need extra
light source to help achieve the brightness that you want. Of
course, you can always use curve lighting in your photo editor
software during the post processing of the images but it is
always best to have good natural light to start with.
I find the best time to take pictures is early or late in the day. I
try to avoid bright sunlight because it can create the shadow. If
time is not on your end, you can eliminate the shadows by using
your flash. It helps to lighten the image background and create
that airy feels that makes the food really stand out.
3. Use readily available materials as your props
When you are starting out, you might not have your own props
collection. Do not worry, you can always improvise and make
use of any readily available materials at home as your props.
You do not necessarily need to spend to style your food for
your photo shoot.
You can make use of the raw ingredients, cutlery and dishes
as props. What important is to avoid using plates with too
much design. Plain white or black plates are preferable as it
enhances the food images and make the subject the focus
of the shoot. Personally, I find food images look better on a
white background. So, I will always opt for white plates, cups or
saucers when preparing the food for the shoot.
4. Fill up most of the frame with the food
If the food or subject only takes up a quarter of the entire frame,
then you have wasted the space. It makes people wonder what
you actually want to focus in your image. You need to ensure
that your subject fills the entire frame but be careful not to
capture too close to the subject because you want people to
see the whole parts of it.
5. Different camera angle
Be creative and try different angle view when capturing your
subject. You may directly focus on the food itself, tilt it or shoot
the edge of the plate or table to show it in a different way.
Sometimes, you need to crop the picture to hide unnecessary
things that disturb your photo.
In this limited space, I am only able to summarize some tips to
help you improve your food images. I hope it does not deter
you from trying out and be creative in your food styling so that
you can create beautiful food images. Bear in mind, I am not
a foodstylist and started as an amateur in food photography.
It is amazing how much knowledge you can gain after several
trial and error. Experiment and be creative with your settings
and you will soon be able to create mouthwatering images that
you’ll be proud off.

Local cuisine as the
Arm of Tourism
Destination Marketing

ecently, destination planners and marketers in many
countries have shown high interest in the role of local
cuisine in the tourism experience. This effect can be
seen in the integration of a particular local cuisine into a
destination’s tourist market. The Global Report on Food
Tourism published by the World Tourism Organization in
2012 states that cuisine is a crucial aspect in influencing
the total quality of a holiday experience. Food-related
activities and campaigns (i.e., Taste of Thailand
and Fabulous Food 1Malaysia) are now becoming a
phenomenon within SouthEast Asian region and act as
a direct marketing channel in promoting local cuisine. In
fact, the idea of positioning a specific local cuisine creates
a message of unique identity. In viewing this, from the
philosophy of marketing within the tourism industry, it
helps to develop a distinctive local cuisine image as part
of destination branding. As a result, it could be useful in adding
to the mix of existing competitive advantage which are being
deployed to market a place as an attractive tourist destination.
In Malaysia context, cuisine is reflecting the theme of being
a “multicultural” country. This term has bring the country
popularity with an image of a broad ethnic groups that forms
a unique pattern of daily life. It is also strongly associated with
food consumption and cuisine creation. In effort of integrating
Malaysian cuisine as part of destination marketing strategy,
the term multiculturalism is symbolized by a wide range of food
and the “mixture of various ingredients into one bowl”. Color,
ingredient cutting, and simplicity are some of the elements
in food presentation, which also link to the country’s theme.
The viability characteristics of local cuisine become exclusive
with culinary demonstration and additional decoration that
emphasizes cultural values. All of these stimulants bring a “sense
of place” to people even though in reality they are enjoying the
meal somewhere else, perhaps in Sydney, Australia. In other
words, opportunity to sample the local cuisine of the country is
not merely for the sake of “telling” the unique identity by “selling”
the right food. Indeed, people’s appreciation and enjoyment
that come together during and after experiencing local cuisine
are the reflection of the aforementioned uniqueness of the
cuisine.
JOINING CANCER SUPPORT GROUP

ave you heard about MAKNA or KanWork? MAKNA
(National Cancer Council) and KanWork (‘Persatuan
Kanser Network Selangor dan Wilayah Persekutuan’)
are some examples of cancer support group running
outreach activities to assist those living or affected by
cancer. The main objectives of these non-profitable
organizations are to provide support and information for
people diagnosed with cancer, people undergoing or has
undergone treatment options and those who are taking
care of cancer-diagnosed family member or friend. For
MAKNA, they highlighted that ‘Human spirit can achieve
what it set out to do when the will is able’ as their motto.
Thus, they mobilize resources in order to provide curative,
preventive and support services to cancer patients and
their families as well as high-risk groups and the public.
aims to support young cancer survivors wishing to further their
studies.
I am a member of KanWork since year 2011 and joined after my
mother passed away. I volunteered to be part of the team as
I would like to extend services helping the needy after looking
at how terrible and painful my mother’s conditions. Currently,
I assist them in administrative and support service activities.
Financial contributions are most welcomed to ensure continuous
activities of this group. To any of you, who would like to donate,
don’t worry as tax exemption will be given. Joining fees are only
RM30 per year. Fund raising charity events will be held regularly
among community to raise sufficient funds.
In Malaysia, it is estimated that one in every seven Malaysian
males and one in every six Malaysian females are at risk of
developing cancer in their lifetime (MAKNA, 2013). The statistic
also showed that 45,000 Malaysians are diagnosed with cancer
every year. In fact, cancer is the second leading cause of death
after heart disease in our country. It’s frightening, right? While
the odds of surviving cancer are only one in every four cases.
Let us together support any future activities conducted by
these organizations. It doesn’t necessarily be monetary aids.
Just remember that our little contributions do give people
affected by cancer a renewed hope in life. Al-Fatihah to my
beloved mother, may you rest in peace!
There are many activities organized by this support group
for cancer patients. For instance, they normally have
a sharing session for those who wish to talk, share and
support each other. Education programs will be conducted
to educate, promote and create awareness of healthy
lifestyles. They also have ward visits where members will
come and visit cancer patients prior to or after their surgery
at the hospital. On top of that, they also have home visits
where members will visit patients recuperating at home. In
addition, they also have recreational and social activities
where members will meet during weekends for Qigong, Wai
Ta Qung and Aerobics sessions. Social functions liked ‘Hari References:

ulau Perhentian merupakan salah satu lokasi penting dalam peta pelancongan negeri Terengganu. Terletak di daerah
Besut, pelancong boleh menaiki bot dari jeti Kuala Besut yang mengambil masa hanya kira-kira 30-40 minit untuk sampai
ke pulau yang terbahagi kepada Perhentian Besar dan Perhentian Kecil.
Pengunjung mempunyai pelbagai pilihan penginapan yang hampir kesemuanya menyediakan pakej lengkap iaitu bot,
penginapan, makan dan aktiviti snorkeling. Namun begitu, bagi yang gemarkan aktiviti perkhemahan atau menginginkan
pengalaman berbeza, mereka boleh memilih untuk menginap di satu-satunya tapak perkhemahan yang terdapat di sini iaitu
Teluk KK.
Teluk KK terletak di Pulau Perhentian Besar. Lokasinya sangat strategik di mana teluk ini berada di tengah-tengah antara
Taman Laut (marine park) dan lokasi ikan paus (shark point).
Pengunjung akan dapat merasai pengalaman yang berbeza dengan hamparan lautan yang membiru dan amat mendamaikan
mata. Teluk ini sangat sesuai untuk aktiviti mandi manda kerana airnya yang cetek dan pesisir pantai yang sangat landai.
Oleh itu, kanak-kanak boleh mandi dengan pengawasan yang sangat minimum daripada orang dewasa. Pengunjung adalah
bebas untuk membawa sendiri peralatan dan bahan-bahan memasak atau boleh makan di kafe yang tersedia. Selain itu,
pengunjung boleh berjalan kaki ke Taman Laut bagi aktiviti snorkeling melalui denai yang tersedia.
Aktiviti lain yang boleh dilakukan adalah snorkeling di mana pengunjung boleh melakukannya sendiri di sekitar teluk atau
menyertai trip yang akan membawa pengunjung ke beberapa tempat penting seperti melihat batu karang, melihat penyu
dan ikan paus. Bagi aktiviti ini, susunan awal boleh dilakukan melalui agen pelancongan atau pengusaha aktiviti pelancongan
yang ada di jeti Kuala Besut.

Homestay in Malaysia
The number of homestays in Malaysia has increased tremendously over the recent years. It started in early 1970s when
a local lady by the name of Mak Long took in long staying ‘drifters’/hippies within her humble kampong house (Amran,
1997). During this time, most of the pioneers’ homestay were located along the coastal areas and with breakfast,
dinner and accommodation provided the experience leads to a very much authentic rural experience. In late 1980s,
another dimension of homestay concept was introduced through youth exchange program (Yahaya & Abdul Rasid,
2004:66). Young Japanese students stayed with their adopted families and participated in communal activities related
to a bucolic way of life. They interacted, gain knowledge, and experienced the life style and culture of the host family and
local community. Since then, the homestay program has been used by the Ministry of Agriculture as a mechanism for
rural development (MOCAT, 1995).
Do you know the meaning of homestay?
1.
“Private homes in which unused rooms are rented for
the purposes of supplementing income and meeting
people” (Lanier and Berman; 1993:15).
2. “…where tourist stay with the host’s family and
experience the everyday way of life of the family in
both a direct and indirect manner” (MOCAT, 1995).

6. After being issued a license, the home owners have
to attend a basic training course that is conducted by
the Institute for Rural Advancement (INFRA) under
the Ministry of Rural & Regional Development.

What makes homestay different between
nations/ countries?
The term “homestay” might be understood differently in
different countries. For example, in:

Australia, Germany and New Zealand: Particularly
associated with farmhouse accommodation (Davis
and Turner, 1992; Oppermann, 1997).
Can I participate as a host?
In order to regulate the homestay program, Ministry of
Tourism (MOTOUR) will only issue a license if the house
owner abides to the following criteria:

Easy access from the main road.
2. Adequate facilities for guests such as separate
bedroom and proper toilet.
3. No history of criminal record.
4. Not suffering from communicable diseases.

They always seek for a ‘surprised’ element – something that
has different in look and feel from the usual branded hotel.
A boutique hotel or also known as design hotel or lifestyle hotel
is the new emerging concept that suits the surprised element of
what the travelers are craving for. The definition of a boutique
hotel varies, but somehow or rather must meet this set of criteria
agreed upon by the majority:
1. Architecture and design
The first key element to attract the niche customer
of this kind of hotels is the uniqueness of style, ambiance and
decoration of a boutique hotel that set them apart from the
normal hotels.
2. Service
The main reason of why boutique hotels do not possess
more than 150 rooms is because the personal experience with
the members of the hotel staff is a major priority.
3. Target Market
Boutique hotels are generally targeted to satisfy the
needs of the customers who are usually adults, with mid to
upper-income averages strata.

rom the truly traditional definition of a lodging
accommodation for travelers; to another level of
expectation, the evolution of hotel offerings is well
documented in time log. It is like the fancy dress donned
by Madonna in the 70’s to the exorbitant apparel of Lady
Gaga in the recent phenomenon; hotels are like a fashion
trend; keep changing. The expectation is more than
simply comfort and convenience for travelers nowadays.
b) Boutique hotels in resort destinations
Exotic and intimate elements offered by boutique hotels in
resort destination provide guests a chance to explore the
domestic atmosphere without ignoring the component of luxury.
In fact, it is more fashionable if the location requires an arduous
journey. Exotic amenities are the primary attraction of the resort
destinations such as traditional spas, art and painting sessions
or out-door activities that connects guest to the nature.
Most guests choose boutique hotels as it is fashionable, not
because of the facilities offered. In this regard, boutique hotels
are being marketed in a manner where the experience and the
image are sold, rather than the product itself.
Boutique hotels bring certain benefits in terms of operations and
profitability. Besides strong customer demand, the economics
are favorable for operators. Boutique hotel operators require
neither franchise fee to become part of a larger chain nor
facilities such as restaurants and ballrooms/meeting spaces;
however, these amenities, when custom to a boutique style, it
could bring significant profit to the hotel revenue.
Innovative and creative ideas are essential for the hotel industry
to engage in greater degree of customization. The industry
could expect further and rigorous product innovation in order to
stay relevant and prepare for guests from all over the world who
have specific cultural needs.

If you think about it, the beach is probably the most
relaxing place that you can go on planet Earth. Beaches
all over the world never fail to attract large numbers of
