VARIETY
We love variety. Nature shows us how beautiful
and surprising variety is. 365 different chocolates
are produced in our chocolate manufacture in
Riegersburg (Styria, Austria). One chocolate for
each day of the year. From way-out to classic. We
celebrate individual taste with extravagant varieties
such as ”Artificial Fertiliser“, ”Wine Duo - right and
left“ and hit creations such as ”Coffee Toffee“ and
”Black & White“.
QUALITY
According to an international chocolate test, Zotter
ranks amongst the best chocolatiers in the world.
Our small manufacture, which was once provisionally set up in my parents‘ stable, has grown into
a centre of competence for chocolate. We create
our chocolates in-house, bean-to-bar, and employ a
team of 160 dedicated employees.
CREATIVITY
By now, our hand-scooped chocolates enjoy cult
status. At Zotter, everything is possible: cheese
chocolate, fish chocolate, mass wine and incense
chocolate and now the refreshing ”Verjuice - Green
Grapes” creation. Each year, lots of new varieties

turns a simple wrapper into art.
SUSTAINABILITY
We produce everything in organic and fair-trade quality
because we care about what happens to the people and the
environment. We deliberately work with small farmers,
visit our cocoa farmers and also invite them to our manufacture. Because quality begins with the raw material
and cultivation on-site and depends on good cooperation.
Aside from organic and fair-trade, we are now also EMAS
certified. This certification specifically focuses on the environmental protection of the entire company, which has
been rated as exemplary.
THE FAMILY BUSINESS – MADE IN AUSTRIA
We have opened a second Choco Shop Theatre in Shanghai and export our chocolates, together with the ”environmental idea”, to China, to get the 23 million inhabitants of the booming metropolis excited about organic
and fairly traded chocolates from Austria. Our daughter
Julia (27) runs the ”world of experience”, that is by now a
very popular place.
THE IDEAS OF THIS SEASON
We open up the season with the ArtFertiliser chocolate,
a fusion of chocolate and art. And we’ve approached the
classics a little and gave them a Zotter-like twist: such
as “Coffee Toffee”, “Liquorice de luxe” and “Chocolate
Mint”. Furthermore, there are lots of sweet gift chocolates
such as “Stress Stopper”, “For Little Heroes”, “Sorry” and
many more.
WHEN ART AND
ARTISANRY
MEET AND MELT
Sugar reduction is an important trend, which is why
we have reinvented our white chocolate; with less sugar
and lots more milk. The idea to reduce sugar led to the
creation of three more new chocolate varieties: “Verjuice
Green Grapes”, Labooko “Cheeky Fruits” and Labooko
“Apple & Sea Buckthorn with Vanilla”, which have a
refreshingly sour taste. They introduce an entirely new
chocolate-eating experience, chocolaty-melting and, at
the same time, refreshingly sour with a smooth finish.
“Cheeky Fruits” is our first vegan fruit chocolate and,
while nibbling, one can feel the small fruit pieces that
crackle in the chocolate. We have also added the crackling
effect to the two dark Labookos “Cacao Nature with
Muscovado Sugar Crackers” and “Dark Cuvée with small
Nibs” because it’s just so great when it crackles while the
chocolate melts. The new Balleros are now also available
with crunchy fruit and brittle. In addition to that, we are

using a new technique to cut and shape the little nibbling
pieces - entirely without glazing agents and fruit powder.
We start the cake offensive with the Sim Bim cakes in a
glass, which can be served directly at the table or given
away as presents and stored for a year. For all baking
fans we also finally offer Zotter chocolate icing in a glass
and the long announced new cookbook: Bits of Paper
with innovative cake and dessert recipes and exciting
decorations around the topic of chocolate.

And not to forget the new Mitzi Blue, a colourful fruit
cocktail with crunchy fruit flakes, which I have dedicated
to my mum. Because it gives me great joy when she sits
on the bench in front of our manufacture every day and
enjoys the chocolate hubbub with her 85 years of age.

THE FILLED CHOCOLATE WONDERS
THE ORIGINAL
Hand-scooped is a mixture of inventiveness and manual
work. The Hand-scooped Chocolates are filled chocolates.
The fillings are spread on in layers on long tracks. During
this process, up to 6 different layers are combined and
coated all around with chocolate. By combining different
ingredients such as coffee and toffee, something new is
created all the time - ideally a flavour explosion.
Thanks to the wonderful compositions of taste and their
unique design the Hand-scooped Chocolates have turned
into a cult.

50 cents of each chocolate that is sold go to Zotter’s
relief fund, which provides aid quickly and unbureaucratically, such as in Bolivia, where we support the
children emergency relief project “School Gardens”.
Community gardens are planted in schools and kindergartens to provide for children between the ages
of 2 and 16 who live in the barren Bolivian uplands in
bitter poverty and simply don’t get enough food. With
the aid of this project, children can now harvest their
own fresh vegetables from the garden, bake bread and
get at least one warm, healthy meal a day.

Whole coffee beans from our roasting house for all
those who love freshly ground coffee.
Arabica coffee beans from the Mexican and Colombian
highlands open up the flavour spectrum of coffee. A bit
of Indian Robusta ensures the coffee crema in this blend.
Certainly our coffee is also of organic and fair-trade
quality. We buy it from very small coffee cooperatives
in Mexico, Colombia and India. In our in-house coffee
roasting house, we roast the coffee beans very slowly at
a low temperature.
