Recipe: Black Bean Brazilian Stew
Ingredients:
2 teaspoons vegetable oil
1 small onion, chopped
50g chorizo sausage, chopped
75g cooked ham, cut into cubes or slices
1 clove of garlic, chopped
3 medium (approx. 450g) sweet potatoes
peeled and cut into cubes
½ a large red pepper, cut into cubes
(seeds removed)
1 400g tin of chopped peeled tomatoes with juice
½ a small hot green chilli pepper, finely
chopped (seeds removed if a mild stew
is preferred)
1 400g tin of black beans, drained
½ a mango, peeled, stone removed and
cut into cubes
2 tablespoon of fresh coriander, chopped
Pinch of salt
Preparation:
Heat the vegetable oil in a medium sized pot
over a medium heat. Add the onions and stir-fry
them for about 2 minutes or until they are soft.
Add the chorizo, ham and garlic and cook for
about 2 to 3 minutes. Mix in the sweet potatoes,
red pepper, tomatoes with juice and green chilli
pepper. Add approx. ½ cup of water (120 ml) and
bring all to a boil. When boiling reduce the heat
to low, cover the pan with a lid and simmer for
about 15 minutes more until the sweet potatoes
are tender.
Stir the black beans into the pot, and cook
uncovered until the beans are heated through.
Add some more water (approx. ¼ cup or 60 ml)
if the mixture seems too dry or thick. Stir in
the mango and fresh coriander. Taste and add
salt if needed.
