Coconut Curry Shrimp Ingredients: 1 tbsp 1 medium 3 cloves 3 tbsp 1 tsp 1 tsp 1-2 tbsp 1 medium 1 medium 1 lb 2 tbsp 1/4 cup Extra virgin coconut oil Onion, chopped Garlic, minced Ginger root, minced Cumin, ground Garam masala Curry powder Red pepper, chopped Tomato, diced Jumbo shrimp, peeled, deveined Lemon juice Cilantro, chopped Salt and pepper, to taste Directions: 1. In a pan, heat coconut oil over medium heat. 2. Add onion and stir until tender, about 5 minutes. 3. Stir in garlic, ginger root, cumin, garam masala and curry. Cook for one minute. 4. Add red pepper and tomato. Cook and stir for 2 minutes. 5. Add shrimp and cook for 3-4 minutes until the shrimp is pink and cooked. 6. Stir in lemon juice, cilantro, salt and pepper to taste.
