The Root's Poached Michigan Apple Salad

The Root restaurant and bar is now open in White Lake, Mich.
Located at 340 Town Center Blvd., the eatery specializes in seasonal cuisine showcasing the
many resources Michigan has to offer.

Dressing:
1 tbsp roasted garlic
1 tbsp honey
2 tsp dijon mustard
1 oz. apple cider vinegar (2 tbsp = 1 oz.)
14/ cup Spiler's Hard Cider
1/4 cup olive oil
1 tsp fresh chopped parsley
Salt and pepper to taste
Mix all ingredients (except oil) together and then slowly wish in oil.
Salad:
Freshly chopped greens (any blend)
Bacon bits
Blue cheese (Root uses Saga blue cheese)
Red onion
Marcona almonds
Poached apples
How to poach apples:
Peel several locally grown apples.
1 bottle Riesling
1/4 cup sugar
4 sprigs thyme
1 vanilla bean
pinch salt, pepper
Boil down the Riesling with sugar, vanilla, thyme and salt and pepper. Turn off heat and pour
