In July I had the opportunity to
travel to Latrobe, PA. During this
trip I not only met Arnold Palmer
and played his home course, I also
had the opportunity to meet the
Board Presidents from all of the
APGM private clubs throughout
the United States. Needless to say,
it was a memorable experience.
While there are numerous differences between the APGM clubs,
one thing stands out in common:
All of the clubs are in many ways
better since APGM became
involved. Driving this improvement
is the initiative of club members
who take ownership of their clubs.
We are in the infancy stages of
making this happen at Eldorado.
We have changed the role of the
Board of Governors. We have created a Membership Committee. I
will be recommending at our next
Board meeting that we create a
Social Committee to work with
Club staff to define and
oversee all non-association events.
I ask each of you to take a different
view of Eldorado. Look at it as
“YOUR CLUB”. Get involved.
Eldorado is already one of the better country clubs in North Texas.
Together we can make it one of the
premier clubs in Texas!

Richard Steltzner established his first Stags Leap District
vineyards in 1965 while concurrently engaging in vineyard management. Steltzner Vineyards’ first commercial
release was in 1977, and the Steltzner Family established
their own modest facility in 1983, with a 3,000 case
capacity in the Stags Leap District.
In 1989, Dick and Christine Steltzner began the expansion of their winery with a 710 foot underground storage tunnel, which has allowed increased volume as well
as enhancing the quality and characteristics of wine storage. In 1992, the expansion was completed with a
Mediterranean style structure providing a new laboratory, special event room, offices, and reception area for
winery visitors. It is topped with a 3-story observation
clock tower providing a bird’s eye view of the Steltzner
Vineyards and surrounding Stags Leap area.

Thank you to all of those members that
have taken the time to sponsor a friend, coworker or neighbor for membership. To
date we have received 230 referrals and are
net 30 golf members towards our goal of 100 to trigger the Member
Partnership Fund. During the week of August 9th you will have a
great opportunity to showcase your club to your friends, neighbors
and co-workers through our Free Guest Week! From Tuesday,
August 9th through Sunday, August 14th all Full and Limited Golf
Members can bring up to 3 guests per day at no charge! Limited Golf
members will have weekday access while Full Golf Members will
have week day and weekend access. In order for your guests to play
for free, the member must register their guests with the Golf Pro Shop.
In addition each guest will be responsible for the appropriate cart fee.
I hope that all of our golf members take advantage of this great
opportunity.

Vegetable Salad with
Balsamic reduction and
extra virgin Olive Oil.
Yields 6 Salads
2 Cups Balsamic vinegar
1/2 cup honey
1/2 cup extra virgin olive
oil
24 ounces mixed greens
1 zucchini
1 yellow squash
2 tomatoes
1 red onion
1 bunch asparagus
1 cup toasted pine nuts
1/2 cup Asiago cheese

Method:
In a small pot combine
balsamic and honey and
reduce over medium low
heat until thickened
enough to coat the back
of a soup spoon. Then let
it chill to room temperature. Cut the vegetables
into lengthwise pieces
except the onions and
tomato cut them into
rounds. Salt and pepper
and drizzle with oil. Cook
on a hot grill for 1 minute
on each side, then
remove and let sit at
room temperature. After
the vegetables have
cooled, be creative and
cut them into different
shapes and pieces.
For plating, get 6 chilled
salad plates. Take the
mixed greens and position them on each plate
by making a nest in the
center. Arrange the vegetables around the
greens evenly, then drizzle the balsamic reduction over the entire dish
with a spoon generously.
Then do the same with
the oil and pine nuts. The
salad is now ready to be
served.

on Thursday, September 29th with the first round of matches and will
end with an Awards Gala on Saturday, October 1st. The Team Entry

Improvements, improvements, improvements. Since
Palmer Golf has taken over,
it has been a steady flow of
improvements to the golf
course. I hope everyone has
been able to see and enjoy
the things we have done. If
you haven’t been out in a
while, you should come out
and take notice.
We have built new water coolers and sand stations.
We tried to match as closely as possible the stone used
to build the clubhouse. The bridge on # 17 has been
repaired and is much quieter. I know there are homeowners enjoying the peace and quiet. We are in the
process of leveling and repairing broken sprinklers in
the fairways. This will make a big difference in the
amount of dry spots we see this time of year. Finally,
we installed a fertigation unit that allows fertilizer to
run through the sprinkler heads. In my opinion, this
has been the single biggest difference maker in the
quality of the course this year,
All of these projects have been on my mind for several
years now and thanks to Palmer Golf we are finally
seeing things happen. I also hear a rumor that when
we hit “trigger” Smitty will finally get his new sand
traps. All it takes is referrals, Jim.
Last but certainly not least, we all need to thank Mr.
Huff for allowing us to use water from his home to
keep #5 green alive while we tried to fix a leak.

Hole-In-One
On July 2, 2005, Mark Womack had
a hole-in-one on hole #7. There to
witness was Jim Smith, Wendall
Seaman, and Craig Davison.
On July 10, 2005, Paul Sumrow had
a hole-in-one on hole #16. There
to witness was Mark Downey, Eric
Liepins and George Riddle.
August is going to be a great month to do something different. This month we are going to have
a free guest week. Most of you have seen the
great improvements that we have been able to
do like tree trimming and the stone work around
the cart path, plus new golf carts. These
improvements are all results of the new membership drive here at the club. From August 9th
through August 14th you can bring a guest out
to play for free, cart not included. All we ask is
that you register your guest in the golf shop by
filling out the guest card. The Junior Club
Championship will be held on August 9th and
begin at 5:00pm. Call the golf shop to sign up
or for more information. Thursday, August 25th
the EWGA Solheim Cup will be held at Eldorado.
I need the help of all golfers to please remember
to bring your golf cart back to the staging area
after you play. When the golf carts are left in the
parking lot, there is a chance one may get
stolen.
August 6th and 7th will be the our annual Parent
Child tournament; this is a great event the format is alternate shot and the children will play
different tees based
on their age. The different groups will be
Mother- Daughter,
Mother-Son, FatherDaughter, and FatherSon, so be sure to get
signed up for this
event.
The next MGA event
will be on August the 13th. This event will be
the Club Championship Tune up and the start
time will be an 8:30 shotgun.
The Drink & Drive will be August 19th this event
will be a 6:00 PM shotgun.
The Guys & Dolls will be played on August 21st
with a 2-person shamble and start with a
1:30pm shotgun.
August 22nd will be another Member
Appreciation Day, remember this event will be a
$15.00 charge for the member and $25.00 for
the guest and this includes lunch.
The senior club Championship will be held
August 27th & 28th; this event is open to all
golfing members’ 50 years of age or older. The
format is 18 holes of individual medal play each
day with winners in both gross and net.
Don’t forget the LEGG group will be playing
every Tuesday night this month starting at 6:00
PM, if you would like to play please call the golf
shop.

Eldorado Ladies Association
The Eldorado Ladies Association will kick off the 2005-06 year with a Coffee on August 16th from 10 to 11:30 a.m. at the home of
Ann Younger, 5921 Bridgepoint Drive (Stonebridge). This is a great opportunity for new member introductions and for all members
to become better acquainted. The Eldorado Ladies Association meets at the Club on the first Tuesday of each month for lunch (11:30)
and an entertaining program. Membership is open to all women of McKinney.

We have built new water coolers and sand stations.
We tried to match as closely as possible the stone used
to build the clubhouse. The bridge on # 17 has been
repaired and is much quieter. I know there are homeowners enjoying the peace and quiet. We are in the
process of leveling and repairing broken sprinklers in
the fairways. This will make a big difference in the
amount of dry spots we see this time of year. Finally,
we installed a fertigation unit that allows fertilizer to
run through the sprinkler heads. In my opinion, this
has been the single biggest difference maker in the
quality of the course this year,
All of these projects have been on my mind for several
years now and thanks to Palmer Golf we are finally
seeing things happen. I also hear a rumor that when
we hit “trigger” Smitty will finally get his new sand
traps. All it takes is referrals, Jim.
Last but certainly not least, we all need to thank Mr.
Huff for allowing us to use water from his home to
keep #5 green alive while we tried to fix a leak.

On July 2, 2005, Mark Womack had
a hole-in-one on hole #7. There to
witness was Jim Smith, Wendall
Seaman, and Craig Davison.
On July 10, 2005, Paul Sumrow had
a hole-in-one on hole #16. There
to witness was Mark Downey, Eric
Liepins and George Riddle.
August is going to be a great month to do something different. This month we are going to have
a free guest week. Most of you have seen the
great improvements that we have been able to
do like tree trimming and the stone work around
the cart path, plus new golf carts. These
improvements are all results of the new membership drive here at the club. From August 9th
through August 14th you can bring a guest out
to play for free, cart not included. All we ask is
that you register your guest in the golf shop by
filling out the guest card. The Junior Club
Championship will be held on August 9th and
begin at 5:00pm. Call the golf shop to sign up
or for more information. Thursday, August 25th
the EWGA Solheim Cup will be held at Eldorado.
I need the help of all golfers to please remember
to bring your golf cart back to the staging area
after you play. When the golf carts are left in the
parking lot, there is a chance one may get
stolen.
August 6th and 7th will be the our annual Parent
Child tournament; this is a great event the format is alternate shot and the children will play
different tees based
on their age. The different groups will be
Mother- Daughter,
Mother-Son, FatherDaughter, and FatherSon, so be sure to get
signed up for this
event.

The Eldorado Ladies Association will kick off the 2005-06 year with a Coffee on August
16th from 10 to 11:30 a.m. at the home of Ann Younger, 5921 Bridgepoint Drive
(Stonebridge). This is a great opportunity for new member introductions and for all
members to become better acquainted. The Eldorado Ladies Association meets at the
Club on the first Tuesday of each month for lunch (11:30) and an entertaining program. Membership is open to all women of McKinney.

Thank you to all of those members that

net 30 golf members towards our goal of 100 to trigger the Member
Partnership Fund. During the week of August 9th you will have a
great opportunity to showcase your club to your friends, neighbors
and co-workers through our Free Guest Week! From Tuesday,
August 9th through Sunday, August 14th all Full and Limited Golf
Members can bring up to 3 guests per day at no charge! Limited Golf
members will have weekday access while Full Golf Members will

Yields 6 Salads
2 Cups Balsamic vinegar
1/2 cup honey
1/2 cup extra virgin olive
oil
24 ounces mixed greens
1 zucchini
1 yellow squash
2 tomatoes
1 red onion
1 bunch asparagus
1 cup toasted pine nuts
1/2 cup Asiago cheese

Method:
In a small pot combine
balsamic and honey and
reduce over medium low
heat until thickened
enough to coat the back
of a soup spoon. Then let
it chill to room temperature. Cut the vegetables
into lengthwise pieces
except the onions and
tomato cut them into
rounds. Salt and pepper
and drizzle with oil. Cook
on a hot grill for 1 minute
on each side, then
remove and let sit at
room temperature. After
the vegetables have
cooled, be creative and
cut them into different
shapes and pieces.
For plating, get 6 chilled
salad plates. Take the
mixed greens and position them on each plate
by making a nest in the
center. Arrange the vegetables around the
greens evenly, then drizzle the balsamic reduction over the entire dish
with a spoon generously.
Then do the same with
the oil and pine nuts. The
salad is now ready to be
served.

In July I had the opportunity to
travel to Latrobe, PA. During this
trip I not only met Arnold Palmer
and played his home course, I also
had the opportunity to meet the
Board Presidents from all of the
APGM private clubs throughout
the United States. Needless to say,
it was a memorable experience.
While there are numerous differences between the APGM clubs,
one thing stands out in common:
All of the clubs are in many ways
better since APGM became
involved. Driving this improvement
is the initiative of club members
who take ownership of their clubs.
We are in the infancy stages of
making this happen at Eldorado.
We have changed the role of the
Board of Governors. We have created a Membership Committee. I
will be recommending at our next
Board meeting that we create a
Social Committee to work with
Club staff to define and
oversee all non-association events.
I ask each of you to take a different
view of Eldorado. Look at it as
“YOUR CLUB”. Get involved.
Eldorado is already one of the better country clubs in North Texas.
Together we can make it one of the
premier clubs in Texas!

Richard Steltzner established his first Stags Leap District
vineyards in 1965 while concurrently engaging in vineyard management. Steltzner Vineyards’ first commercial
release was in 1977, and the Steltzner Family established
their own modest facility in 1983, with a 3,000 case
capacity in the Stags Leap District.
In 1989, Dick and Christine Steltzner began the expansion of their winery with a 710 foot underground storage tunnel, which has allowed increased volume as well
as enhancing the quality and characteristics of wine storage. In 1992, the expansion was completed with a
Mediterranean style structure providing a new laboratory, special event room, offices, and reception area for
winery visitors. It is topped with a 3-story observation
clock tower providing a bird’s eye view of the Steltzner
Vineyards and surrounding Stags Leap area.
