Chicago, Il - Drink sales in bars and
restaurants are projected to grow modestly in 2015, according to Technomic's
expectations for the on-premise alcohol
industry. Conditions at major chain
restaurants that serve alcohol are slowly
improving, and greater consumer confidence will lead to a more positive trend
than seen in 2014.
Technomic's forecasts – released via
its now available BarTAB Report and its
Adult Beverage Insights Group – call for
consumer expenditures on alcohol away
from home to rise 2.7 percent next year,
a slightly greater increase than is expected for alcohol expenditures at retail.
"Conditions are improving, and with
lower gas prices and better consumer
confidence, we're continuing to see positive movement in consumer spending
away from home," states David Henkes,
Vice President at Technomic and director
of the firm's adult beverage practice.
"However, there's still a lot of lost ground
to make up relative to how the industry
was performing prior to the recession."
In looking at specific adult beverage
categories in on-premise channels,
Technomic finds the largest category –
beer -- challenged in terms of volume.
BarTAB Report outlines sales growth of
2.3% for beer in 2015, lower than the pro-
jections for wine and spirits.
"Craft beer, cider and imports are
generally doing well at the bar, but domestic beer, which accounts for nearly
half of on-premise beer sales, continues
to lose share," observes Eric Schmidt,
Director of Research at Technomic. Wine
is expected to achieve the highest sales
growth rate of the three adult beverage
categories, with spirits a close second.
Technomic's positive projection also
comes with a note of caution. Alcohol
sales will still lag broader restaurant and
bar sales, due to fairly flat volume.
"Dollar growth is driven largely by price
increases and gains in certain categories
such as craft beer and whiskeys including bourbon, Irish and single malt
Scotch," notes Henkes. "Bars and clubs,
the segment that generates two-fifths of
alcohol sales, is expected to underperform many other industry segments,
holding down overall growth expectations."
"We continue to stress to our clients
the importance of a strong adult beverage program – it drives customer satisfaction, and it's obviously a source of
incremental profitability," Henkes adds.

Wahlburgers continues expansion
with franchise deal in Florida
Boston, MA - Wahlburgers, a casual
burger restaurant founded by brothers
Mark, Donnie, and Paul Wahlberg and
subject of the popular A&E TV reality series announced multi-unit franchise
deals in Florida and New York, continuing its rapid expansion in North America.
Davgar Holdings Group, LLC will open
20 Wahlburgers throughout Florida over
the next several years, as New Yorkbased Big Apple Burgers prepares to
launch six restaurants in Manhattan and
one on Coney Island.
Since its 2011 debut in Hingham,
Mass., Wahlburgers has a total of 40
stores either open or under agreement.
A second location opened in Toronto
last month to great fanfare, and franchise agreements are secured in
Philadelphia and Las Vegas in addition
to Florida and New York. Two corporaterun Wahlburgers are slated to open in
the Greater Boston area in 2015.

Happy New Year to all. Let’s try and
make 2015 a profitable one and one of
the ways to do it is to “Think Outside
The Box” I pride myself on being outside the box and sometimes it’s lonely
out there, so I want some company.
During the last quarter of 2014 I was
watching an episode of Shark Tank that
I saved to my DVR. For those of you who
never watch it, you should. The shows’
format is to have business owners come
before a panel of celebrity billionaires,
”Sharks” and make their case for the
“Sharks” to invest in their company. The
“Sharks ask questions like how much
have you invested? Are you working at
the business full time? What were your
sales? How much does the product cost
to make? How much are you willing to
give up and how much they need the
“Sharks” to invest. After a period of back
and forth questions and answers the
“Sharks”, one by one give their opinion
of the investment opportunity and
make an offer to invest or “Go out.” Very
entertaining and educational.
Many times the companies looking
for funding are rejected for a multitude
of reasons including that they are too
early in their life cycle and don’t have all
of the pieces in place to represent a real
company or the valuation the owners
are putting on the worth of the company is too high based on sales.
Sometimes the reason is that the
“Sharks” just don’t get it. This was the
case when Steve Christian was on the
episode I was watching. His product to
stop tables from wobbling in a restaurant, Table Jack, was one. The Table Jack
is a brand new design to allow the
restaurant server, owner or anyone to
adjust the table base using their foot to
touch a lever that levels the base to the
floor. One by one the “Sharks” turned
Steve down as I screamed at the TV
screen. They obviously never had a
rocking table and had put a paper napkin under the base because nothing
else worked.

three restaurants he owned in Texas,
wobbling tables were a big problem, so
he went to his workshop and designed
the Table Jack system for restaurants.
After hearing the story and seeing the
demo of the product I immediately
went to the company website and
found the contact information. I called
Steve the next day.

Steve answered the phone and I related to him how much I liked his product and that the “Sharks” had gotten it
wrong. We had a great conversation
and we said we would talk again. We
did. This time we discussed Sales and
Marketing for Table Jack and I was able
to help Steve find the right people for
what he needed. Getting his story and
his product out to restaurants in our
reading area is what we do. We have already send out an Eblast to over 13,000
restaurant owners and anticipate doing
some print ads in the pages of Today’s
Restaurant in the upcoming months.
If Steve wasn’t thinking “Outside the
Box” he never would have designed
Table Jack and never would have applied for his appearance on Shark Tank
and if I wasn’t waiting for him “Outside
the Box” we never would have spoken
etc. Don’t limit yourself to your comfort
zone, it is too confining. Go “Outside
the Box” to meet the forward, progressive and modern thinkers and walk the
path of success.

Uncle Maddio's Pizza Joint has announced an agreement to develop
three restaurants for Ocala and

Transitioning from a restaurant
manager to a restaurant server

In an effort to make it easier for anyone else considering this transition, here
are a few thoughts to keep in mind.
You just became a child again. If not
a child, at least a teenager. So many
things that you felt quite capable of regulating on your own, are now subject to
a policy. There are cell phone policies,
uniform policies, tardiness policies, and
a myriad of other rules you are now subject to. Many of these were previously
subject to your discretion. Now you must
follow them along with every other
member of the staff. These policies will
often times seem stupid. Rest assured
that the staff you managed felt the same
way when you were enforcing them.
No one wants to hear what you know.
Remember that server who always
seemed to have advice on how you could
do your job better when you were a manager? Didn’t you frequently want to
strangle them? Now that you are a server,
don’t be that person. If your manager
wants your opinion they will ask for it.

Choose your peers. By merit of the
fact that you have been a manager, you
are probably a bit older than most of
your fellow restaurant servers. This may
lead you to feel you have more in common with the restaurant’s managers than
the serving staff. It is important to remember though that your fellow servers
are who you need to count on in a jam.
Find some common ground and integrate with your fellow servers.
Take it in stride. You will find many
reasons to question your decision. While
I would never minimize the challenges of
management, you will find serving more
challenging than you remember. In hindsight we all fondly recall how great of a
server we were. In reality, tables will still
put you in the weeds. Guests will still demean you. Managers will enforce ridiculous rules that you disagree with. At the
end of the day, this is the path you chose.
Don’t focus on the negatives. Instead, appreciate the positives and leave work behind you when you walk out the door.
Karma has a strange way of rearing it’s
head when you make this transition.
Chances are you will make the transition
to restaurant management again one day
even if it is not in this industry. This is
where grace comes into play. You may
one day have a staff of employees just like
you. Extend grace to your new managers
and coworkers because one day you will
want it extended to you. Lord knows
when you make this transition you will
need plenty. Karma will see to that.

Transitioning from a restaurant manager to a restaurant server was one of the
more surreal experiences of my career. I
knew in advance it would take time to
acclimate to my new role, but did not
quite know what to expect. As a manager
I felt that I was missing out on a great
deal of the guest interaction that made
me enjoy working in the restaurant industry. As a server I discovered that could
leave the restaurant behind at the end of
my shift and had an amazing thing called
“a life.” I also discovered that guest interaction wasn’t always as lovely as I remembered it to be.
Recently, I have seen a couple of good
friends make this same transition. I did
what in could to prepare them, but their
experiences still were remarkably close
to what I encountered. We have all had a
good laugh at the karmic retribution we
suffered being subject to policies we
once enforced. While everyone is glad
they made the switch, the adjustment
period is filled with challenges.

restaurateur. Calvo is the owner of the
highly acclaimed Chef Adrianne's
Vineyard Restaurant and Wine Bar in

Flavor Live. Calvo has authored two

also the founder of the Make it Count
Foundation. In an intimate interview,
Calvo talks about success, business,
and adaptation.
Stunning and witty, the statuesque
30-year-old culinary icon is not shy to
share her point of view on success. Over
a tall cup of coffee at an infamous local
chain, Calvo states that she attributes
her success to staying focused, making
wise choices – most of the time (giggles)
- and staying the course. "There's ten
million distractions, and things that
can pull you away from your dreams
and goals, it takes so much willpower to
say no to those things. In the end, you
have to know that if it doesn't propel
you forward, it's actually holding you
back," says Calvo.
Wise beyond her years, we asked her
what she would advise today's college
business majors on opening their own
businesses on their own dollars, and
her answer was just as clever as she is:
"You have to have a lot of faith, and be
prepared to sweat a lot. I didn't have an
investor's wallet to run to when things
were tight in the beginning. I could only
count on my vision and pray to God
every day to give me the strength to see
it through. If you want to open your
own business, do it, but make sure you
are ready to undertake a risk that will
consume you completely."
It is known across the country that
no business was spared through the
economy crash of 2008-2012, yet
Calvo's 60-seater in suburbia, also
known as the middle of nowhere,
managed to survive the economic fallout of the decade – we could not help
but ask her how? Any secrets? "I had

Sustainability tops trends
on “What’s Hot” survey
Environmental sustainability, sustainable seafood and food-waste reduction are among the top trends at
restaurants in 2015, according to the
National Restaurant Association’s annual
What’s Hot culinary forecast.
The NRA, as it does every year, surveyed approximately 1,300 professional
chefs – all members of the American
Culinary Federation – to determine the
industry’s hottest trends, and in 2015
sustainability is going to be center of the
plate, the respondents said.
“We’ve been seeing strong trends toward sustainability in the food space for
several years now and that’s going to
continue to grow,” said Annika Stensson,
the NRA's senior manager of research
communications. “Chefs and restaurateurs are realizing the benefits and cost
savings that conservation and foodwaste reduction bring, in addition to
doing what’s good for the environment.”
Among the survey’s top 20 trends, environmental sustainability came in third,
sustainable seafood eighth and food
waste reduction/management ninth.
Food waste reduction and management
also ranks as a new top trend for 2015,
while environmental sustainability and
sustainable seafood retained their status
as steady, top food trends for the sixth
consecutive year.
“Managing food waste is gaining momentum right now as wholesale food
costs are, again, on the rise and a top
challenge cited by operators,” Stensson
said. “This year alone, food prices have
risen more than 5 percent, so minimizing waste and maximizing ingredient
yield is top of mind for the industry.”

patrons suspected as addicts. The final
aspect of the employee handbook on this
should express a commitment by all employees to preserve the necessary shared
communications regarding suspected
addicted patrons as protected confidential information. For those who commercially serve alcohol, an "once of
prevention" will "serve" them well.

serve alcohol BEWARE, there are dangers
lurking in a legal mine field which owners often ignore. Those dangers are the liabilities historically referred to as “Dram
Shop Actions” in tort law.
Florida both being a conservative
and a tourism dependent state, have
caused our legislators to make these
suits very difficult …but not impossible. To bring such an action a plaintiff,
all too often a surviving family member, must prove that the bar or restaurant employees violated F.S. §768.125.
That is to say, that the bar is liable for
the damages caused by the serving of
alcohol to someone they know (or
should know) is habitually addicted to
alcohol or drugs. In such cases the
damages can be horrific with devastating financial effects to the bar or
restaurant as well as to the injured parties or their survivors.
As any business with more than five
(5) employees should have an employee
handbook, it only makes sense for bars
and restaurants which serve alcohol to
include in their handbook the provisions
of F.S. §768.125. How one determines if a
customer is an “addict” as opposed to a

Further, chefs and restaurateurs recognize more customers are incorporating sustainability practices into their
daily lives and want to extend that into
the food space as well particularly when
dining out.
“Diners want to learn as much as possible about what they’re eating,” said Jeff
Clark, director of the NRA’s Conserve sustainability program. “They want to know
why something tastes a certain way, how
a farmer planted it and how far it traveled
to get to a restaurant. Chefs and operators
know this and are embracing it. They understand their guests are seeking foods
that are good for them, flavorful, and
minimally impact the environment.”
Stensson added that NRA research
found 55 percent of consumers are more
likely to choose restaurants that serve
food grown or raised in an environmentally friendly way. She said that number
is expected to grow.
The survey also found 42 percent of
respondents thought environmental
sustainability would be the hottest menu
trend 10 years from now.

Dining trends to
watch for in 2015
The restaurant industry is in the
midst of shifts across the board, due in
large part to customers’ evolving demands. As an example, more consumers
are flocking to fast casual or quick service
restaurants as opposed to formal, sit
down dinners. This trend doesn’t seem to
be short lived, as data from Restaurants
Canada suggests that by 2015, fast casual
sales are anticipated to begin surpassing
sales at full service restaurants – a trend
that will continue through 2018.
While 2014 introduced many new
restaurant industry changes, 2015 is
promising even bigger adaptions in the
way we interact with restaurants. Below
are a few main dining trends to watch
out for next year:
restaurants have grown about 11 percent
since 2013.
Though fast casual and quick service
restaurants tend to be a bit pricier than
the average fast food joint, a steadily decreasing unemployment rate – in turn
leading to an increase in disposable income – has contributed to the growth of
fast casual dining options. They also are
a great value in terms of the quality of the
meal for the price.
Another aspect of fast casual dining
that attracts consumers is implied by the
name – it provides a faster, quicker, more
casual dining experience. Nearly half of
Americans have 30 minutes or less for
their lunch break each day, according to
a study by OfficeTeam, so a high-quality
meal in a short period of time is becoming more important than ever.

The National Restaurant Association
found that over one-third of consumers
are "more likely to use technology-related options in restaurants now than
they did just two years ago." With customers becoming increasingly comfortable using technology in restaurants,
many full service and quick service
restaurants have started adopting mobile apps and/or tablet ordering in some
capacity, either strictly for takeout and
delivery or to support the complete dining out experience from menu browsing
to tableside bill paying. Expect this to become mainstream in 2015.
While these “diner-facing” technologies largely support patrons, restaurant
employees are also recognizing their benefits. Wait staff can tables turn faster, according to a study by Baum + Whiteman,
and focus more on the diner experience.
Mobile technology can also intelligently
suggest additional appetizers, drinks and
desserts throughout the entire meal. In
our experience, we’ve seen that 40 percent of diners order a beverage when it is
suggested while ordering on a mobile application. Though these items may seem
small, they can add up and have a significant impact on the final bill, which
equals a larger tip for staff.
The FDA first issued menu labeling
proposals in 2011, requiring chain
restaurants and other food establishments to provide patrons with nutritional information. Fast casual
restaurants are required to post suggested daily caloric intake on their menu
boards, but all restaurants must provide
nutrient information if asked.
While diners may not think to ask for
this additional nutrient information,
mobile applications and tablets can
make this information readily available
to consumers. By providing calories, allergens and more electronically, restaurants can also easily make changes or
additions without having to reprint
their entire menu.
While the restaurant industry is currently on the cusp of changes in the way
diners interact with and eat at restaurants, 2015 is sure to be the tipping point
for many of the above trends.
Restaurants should start planning their
strategies now in order to cater to these
new diner demands, otherwise they risk
falling behind in an already saturated
and extremely competitive market.

released their 2015 Commercial
Foodservice Market Forecast; a member-sourced report compiling intelligence from the leading sales and
marketing agencies in foodservice
equipment industry in the United
States and Canada.
MAFSI Reps are forecasting healthy
growth of +4.1% for 2015, over
2014.Growth is expected across all regions of North America and all product
segments (equipment, supplies, tabletop, and furnishings) including
MAFSI's recent addition of new equipment sub-categories (primary cooking
equipment, refrigeration and ice machines, storage and handling equipment, food preparation equipment,
serving equipment, warewashing and
sanitation equipment, and ventilation).
Geographically, overall sales for
2015 vs. 2014, the Northeast is forecasted at +4.1%, Midwest at +4.6%,
South at +4.0%, West at +4.8% and
Canada at +3.4%.
By major product category for North
America, Reps forecast Equipment at
+4.1%, Supplies at +4.7%, Tabletop at
+4.3%, and Furnishings at +3.1%.
By equipment sub-categories, Reps

Though the numbers are beginning to dampen, this forecast predicts
another year of continued growth
since the “The Great Foodservice
Recession.” Through reps’ continued
efforts to move the market with increased quoting and a steady foodservice design consultant pipeline; 2015
continues to indicate another strong
marketyear for the commercial foodservice industry.
The MAFSI Commercial Foodservice Market Forecast remains congruent with the overall state of the US
economy. Though 2015 is poised to be
better than 2014, it likely won’t be better
by much. Overall GPD is forecasted at
+4.1%, (with our forecast mirroring at
+4.1%.) Fortunately, due to domestic
crude oil production, prices are now
less than $75 a barrel. This translates to
an annual savings of $500 per family,
and hopefully a few more trips to
restaurants. Labor remains strong with
the unemployment rate finally reduced
to pre-recession levels. Auto sales are
healthy, as is the housing market, and
consumer confidence. The outlook in
Canada strikes a similar cord, with the
economy like the US predicted to outpace most of the G7.
In contrast to this positive outlook,
expect continued conflict among policymakers in 2015 as a result of the recent congressional shift in power. With
the stock market hitting all-time highs,
Japan in a recession, Europe stalling,
and China slowing down, many commodity prices are falling, and we may
be approaching a tipping point after
