Change is good, and winemaking progression is even better. Well, it is with this attitude that we have decided to make a major change with our Estate Chardonnay program. What is it? Drum roll......We are now using a closure that is guaranteed to keep the wine in it’s freshest state - screw cap! “...we have decided to make a major change with our Estate Chardonnay program.” As many of you are very familiar with the profile of our Chardonnay being that of fresh citrus and green apple wrapped in just enough oak and cream to soften the bright natural acidity, this new approach will ensure that these characteristics remain intact with every bottle. In other words, this wine is perfect for using screw caps as it’s closure of choice. We are very excited about this direction, we hope you are too. So enjoy the new 2012 vintage, with a “twist”. 4 Riddling the Racks with Dave Hickey E Dave Hickey, Sparkling Winemaker ver since I was a little boy I’ve loved mechanical things. As a young child one of my biggest thrills was to tear something apart to see how it worked. When I was a teenager that obsession would turn to cars and then as an adult I was fascinated by all of the machines that it takes to run a winery. So, needless to say, I was very excited last year when I got the word: “Let’s buy a new machine to put screw caps on the Chardonnay”. “..a teenager..obesssion..to cars and then..all of the machines that it takes to run a winery.” Cool! Since I knew basically nothing about screw caps, the first thing I did was start surfing the web and calling various suppliers to see what I could learn. One of the first things I found out was that a screw cap is actually called an ROPP. That stands for “roll on pilfer proof ” - try saying that 10 times real fast. Before long we ordered our machine and by April it had made it across the ocean from Italy to us. A few days later we had completely rearranged our bottling line and had it installed. At that point I felt like a kid with a brand new toy! But this beauty is not a toy. It’s the right tool for finishing certain wines and first up is Laetitia Estate Chardonnay! 5 Pictured: Pump over machine in cellar handmade by Dave Hickey. 6 7 “..grapes get crushed, but so do the cellar guys.” A Wendell Cottle, CFO ll things about wine begin in the vineyard. There, many people are involved in pruning, cultivating, protecting against frost, irrigating, and always keeping a sharp eye on when to harvest the grapes. Harvest can be frantic; when the grapes are ready the vineyard crews have to work hard at all hours of the day to deliver the fruit to the cellar. At the cellar the word crush has two meanings. There grapes get crushed, but so to do the cellar guys. From about the beginning of September through mid-November the cellar guys are in constant motion. Forklifts lift, presses squeeze the juice from the grapes, tanks are filled, juice is fermented, and then, the juice begins to finally look a little like wine. Harvest and crush are like symphonies, except people and machines have to be orchestrated carefully so that only top-quality wines will be produced. After crush, ageing happens. Here, the winemakers’ art takes center stage. Selection, blending, racking, filtering all have to happen in just the right way. Our wines have a clean, high quality taste all the time, and it is due to the attention to detail of the cellar guys. Then there is bottling and finally the wine club selections are put together, the wines are delivered to the tasting room or our shipping fulfillment location, and packing is done. Then, the wine is ready for you. Sounds easy, but it isn’t. All the above took at least a year and a half, usually more. We are proud of what we put in our bottles; our best efforts are in each one of them. Featured Employee: Franco Lastreto W hat we love about Franco is not only his vast knowledge of American, Chilean and Italian wines, but the cultural flare he brings to the tasting room. Franco was born and raised in Santiago, Chile, so naturally, wine was in his blood from the start. As a result of his Italian family roots, he attended an Italian elementary school where he became fluent in the language, making him trilingual, adding to his language bank of English and Spanish. He earned his Bachelor’s in Advertising & Marketing at the Universidad del Pacífico in Santiago, and began work at a Chilean winery where he further developed his passion for wine. In 2008, he moved to his wife Erin’s hometown of Arroyo Grande, to realize their dream of designing and building their own home, which they completed in 2011. In June of 2009, Franco began his work at Laetitia as a Tasting Room Attendant, and was soon promoted to full-time employment. In 2011, he became our ‘Tasting Room Supervisor’, where his job entails maintaining the tasting room wine inventory and ensuring the room runs smoothly. What Franco enjoys most about working at Laetitia is interacting with customers and working in a fun, friendly environment. Currently, he has been enjoying Reserve du Domaine Pinot Noir, La Coupelle Pinot Noir and NADIA Trio. When he isn’t drinking wine, he enjoys mountain biking, playing drums and spending time with his family. Franco and his wife are also anticipating the arrival of their second child this fall! 10 Club Non-Vintage Laetitia Brut Cuvée A classic blend of Chardonnay, Pinot Noir and Pinot Blanc, each varietal contributes its own special character to the finished cuvée. The result is a wine that is perfectly celebratory, crisp and suggestive, as only a sparking wine can be. Warm biscuit dough, ripe apricots and summer cherries all show themselves in this irresistible sparkling wine. Retail $22.00 Club $15.40 2010 Laetitia Brut de Noirs A culmination of the estate’s finest Pinot Noir clones shows notes of roasted coffee and vanilla custard in this rich bubble. Secondary flavors of orange peel and dried currant coexist with a hint of wafer for a creamy, pleasing finish. Retail $28.00 Club $19.60 2010 Laetitia Brut de Blancs Zesty lemongrass and ripe grapefruit notes awaken the palate for a sparkler full of fresh minerality and vivacious spunk. Chardonnay and Pinot Blanc blend together harmoniously in this Brut de Blancs, finishing with tea leaf and brioche nuances. Retail $28.00 Club $19.60 2008 Laetitia Cuvée M White peach and shortbread notes greet the palate, supple in character and accented by the slightest hint of toasted hazelnut. This Pinot Noir and Chardonnay blend, which is slightly dominated by Pinot Noir is alive with crisp acid and shows secondary nuances of white blossoms and crème fraîche. Retail $35.00 Club $24.50 11 2011 Laetitia Clone 777 Pinot Noir Another Dijon clone, 777 is a deep, extracted wine showing notes of tobacco leaf, allspice and blackberry jam. This wine is medium in body and superbly balanced. Try with boeuf bourguignon or gamey meats. Retail $32.00 Club $22.40 2011 Laetitia Clone 113 Pinot Noir Clone 113 originates from the Dijon region of France and when combined with the cool climate and rocky clay loam soils of Laetitia Vineyards it displays vibrant aromatics, notes of ripe strawberry, light spice and refined tannins. Retail $32.00 Club $22.40 2011 Laetitia Reserve du Domaine Pinot Noir With each vintage the Laetitia Reserve du Domaine Pinot Noir is marked by its elegant red berries and rich earthiness. The 2011 vintage is distinct in its abundance of vine-ripened boysenberry and smoked truffle aromas. On the palate it displays firm structure and supple grip to pair perfectly with succulent veal or fresh ratatouille. Retail $40.00 Club $28.00 2011 Laetitia Black Label Pinot Noir Every year when we harvest our 400+ acres of Pinot Noir, there are small lots of fruit that stand out amongst their fellow crop. These selections are taken aside and fermented alone to capture the essence of naturally superior fruit. The lots turn out one to two barrels of amazingly well balanced, structured, deep Pinot Noir. When it greets the palate, it comes to life with rich notes of toasted wheat, dusty berry and refreshing chalky minerality. As it glides across the palate, this wine finishes with delectable pecan and raspberry mousse flavors. Multilayered notes of hard lemon candy, wet river rock and hazelnut sweet cream weave throughout this estate bottling, finishing with notes of spicy anise. Try with prosciutto wrapped melon! Retail $35.00 Club $24.50 13 Club 2011 Laetitia Estate Pinot Noir Subtle, dark fruit aromas offer a perfumed nose of wild raspberry and black cherry cobbler that yield to a dark and mysterious palate with bittersweet cocoa, tobacco and Asian spice prominence. Pair with grilled pork tenderloin with cherry salsa or creamy Brie-style cheeses. Retail $25.00 Club $17.50 2011 NADIA Cabernet Sauvignon This focused and supple Bordeaux blend of Cabernet Sauvignon, Cabernet Franc and Merlot unveils aromas of velvety currant and plum entwined with hints of juniper berry and a touch of orange peel. Opulent in mouth feel, this wine boasts sound acidity, firm tannins and a whisper of sweet oak giving this wine a soft but lasting finish. Retail $22.00 Club $15.40 2010 NADIA White A beautiful gold in color and a tempting nose of lime rind, toasted macadamia nut and fresh crème, the NADIA White is a sumptuous blend of Viognier, Grenache Blanc and Roussanne. On the palate this wine displays notes of honeyed stone fruit and the slightest hint of ginger. Retail $30.00 Club $21.00 2011 NADIA Grenache Blanc At first glance one notices the beautiful lemon chiffon color and the intoxicating nose of macadamia nut and lime blossom. On the palate, notes of key lime pie with toasted graham cracker crust are interlaced with bright strands of fresh acidity and hints of refreshing wet river rock. No reservations required, date is subject to harvest, check website for updates. 17 Pictured: Summertime at Laetitia Vineyard. 18 Santa Barbara Highlands Vineyard Update: If you’ve ever taken the 166 inland towards Bakersfield you may have unknowingly passed by the eclectic, alluring part of the world otherwise known as “Ventucopa”, home to our second vineyard. There isn’t a lot to this small town, known mostly for it’s pistachio farms, small restaurants and scattered farm houses. What one doesn’t realize at first glance, is the stunning beauty found in this land of chiseled mountains and quiet grace. Pass by Sage Brush Annie’s Steakhouse on the left, and The Place on the right and you have reached the little piece of heaven we call, “Santa Barbara Highlands Vineyard.” While Laetitia Vineyard is in the ideal growing site for varieties like Pinot Noir and Chardonnay, Santa Barbara Highlands ripens those varieties that Laetitia cannot. Bordeaux and Rhone varieties like Cabernet Sauvignon, Grenache, Syrah and Sauvignon Blanc thrive at this vineyard, due to its many hours of warm daytime temperatures. Through the growing season this year, we are experimenting with different management practices that could benefit the grapevines and fruit quality at Highlands. Because of its high elevation, we receive a different kind of sunlight than we experience at Laetitia. At SBHV, we receive more sunlight, with a high proportion of UV light, which has been shown to positively affect color, tannin, and acid concentrations. So, we are looking at new ways for the vine to harness this energy. In August, we will start harvesting some of the early season varieties and by September and October we will finish harvest with our late season varieties like Merlot and Cabernet Sauvignon. Next time you are on your way East, veer to the right and take a look at the charming town of Ventucopa. 19 Pictured: View of SBHV from the South Mesa. 20 Cooking with Tex-Mex Wontons Tex-Mex Wontons Ingredients • ½ lb. ground beef • 1/4 cup chopped onion • 2 tablespoons chopped green pepper • ½ 15 oz. can refried beans • 1/4 cup shredded cheddar cheese • 1 tablespoon ketchup • 1½ teaspoon chili powder • 1/4 teaspoon ground cumin • 4 dozen wonton skins • Oil or shortening for frying • Taco sauce or Picante Directions Filling: In a skillet cook ground meat, onion and pepper until meat is brown and vegetables are tender. Drain off fat. Stir in beans, cheese, ketchup, chili powder and cumin in meat mixture. Mix well. Place a wonton skin with one point toward you. Spoon a generous teaspoon of meat mixture onto center of skin. Fold bottom point of skin over filling; tuck point under filling. Fold side corners over forming an envelope shape. Roll up toward remaining corner; moisten point and press to seal. Fry, a few at a time in deep hot fat, about 1 minute per side. Use a slotted spoon to remove won ton. Drain, serve warm with taco sauce or Picante.(Makes 48) Dave Terry, Laetitia Viticulturist 21 LAETITIA Basque Salada Ingredients • 2 bunches of fresh, cleaned spinach • 2 blood oranges, peeled & sectioned • 2 vine-ripe tomatoes, chopped into large pieces • 1 cup bleu cheese, crumbled • ½ cup glazed walnuts • 1 cup fresh raspberries • 3 tablespoons raspberry vinaigrette • 2 hard-boiled eggs Raspberry Vinaigrette Ingredients • 1 cup red wine vinegar • 2 teaspoons Dijon mustard • 2 teaspoons shallots, chopped fine • 1 large garlic clove, chopped fine • 2 teaspoons fresh parsley, chopped very fine • 1 teaspoon fresh basil, chopped very fine • 1 teaspoon capers (optional) • 1 dash Worcestershire sauce • 2 cups extra virgin olive oil • 2 cups canola oil Directions Tear the spinach and line the 4 individual servings with it. Add the tomato pieces, walnuts, raspberries and bleu cheese crumbles. Garnish with orange sections, egg quarters, and sprinkle with raspberry vinaigrette. [May add baked & skinless chicken breast slices for a full meal] Directions: Mix all the ingredients, except the oils. Combine the oils and juice, then blend with all other ingredients. Store in refrigerator until needed.
