The Horseshoe Restaurant Wine List Compiled by Mark Slaney
The Horseshoe Restaurant
Wine List
Compiled by Mark Slaney
Spring 2015
The list starts with wines that we offer by
the glass. These are not the least
expensive wines on the list; they are
simply wines I would be pleased to drink
by the glass, they are wines I like and
some of the growers I know personally.
The wine list is arranged by grape
varieties and all the white varieties are
listed first and the reds come second. At
the end of the list is a selection of halves
and dessert wines.
Some wines on our list are amongst
those that I have selected for inclusion in
my book “Tasting Notes”. Published in
paperback, copies are available from the
Horseshoe, Amazon or from selected
independent bookshops.
I have been buying wine commercially for over thirty years and I find it as
enjoyable now as when I first started. In the last couple of years I’ve been to
Portugal tasting twice and to Italy once. I am always on the lookout for
something different and I find it exciting to come across a grape variety that’s
new to me.
The wine list for 2015 has been expanded again, perhaps a dozen wines have
been dropped but something over fifty have been added. I am finding myself
increasingly drawn to wines made at high altitude, wines made bio-dynamically
or organically, wines made from truly old vines and wines made with local
grape varieties and wines by wine-makers who are content to plough their own
furrow.

January 2015.
Below: Domaine de Trevallon which I first tried in the 1980’s and remains one of my favourites.
WHITE HOUSE SELECTION
The Great Escape, Chardonnay. 2012.
Thistledown, Eden Valley, Australia. 12%
Thistledown is a partnership between three wine-makers, two of whom are Master’s of Wine. This
chardonnay is made from cool climate grown fruit and has an alcohol level of just 12.5 and more
akin to a white Burgundy rather than a typical Australian chardonnay. The wine has good acidity and
very clean fruit and oak ageing has been limited so that the finished wine has an elegant balance.
Chenin Blanc. Raats Family Vineyard Old Vines. 2012
Stellenbosch, South Africa. 13.5%
89 points by Robert Parker from Wine Advocate (October 2013). “Best Chenin Blanc in the World”
by wine writer Matthew Jukes. 90 points in Wine Spectator (July 2013) What more can I can say
except that I tasted it and selected it for our list before Messrs Parker and Jukes, which gives a
certain satisfaction. I invariably drink this wine at home with friends with food – it has a depth of
flavour and minerality which makes me feel I’m drinking something far, far more expensive and it
never fails to impress friends who appreciate fine wines.
Sauvignon de Touraine. Domaine Patrick Vauvy.2013
Loire. France. 12.5%
Sancerre style sauvignon blanc from a fourth generation family vineyard at Noyers sur Cher which is
to the west of Sancerre and in the heart of the Loire valley. This wine has the typical gooseberry
nose you expect from a Sancerre but a tad less leanness and a generous splash of soft fruit that
echoes the New Zealand sauvignons.
Lignum. Alibet i Noya. 2012
Penedes, Spain. 13%
Made from organically grown sauvignon blanc and chardonnay grapes planted in calcareous soil at
300 metres above sea level in the Costers de l’Ordal. 3 months fermentation on the lees adds
richness and body to this delicious wine which has a lovely lemony and green apple character.
Mas Oliveras Rosé 2013
Catalunya, Spain. 12.5%
A full bodied rosé medium dry with ripe raspberry fruit from hand harvested 100% cabernet
sauvignon vines from an estate not that far from Barcelona.

RED HOUSE SELECTION
Cabernet Sauvignon 2012
Domaine de Saissac. Pays d’Oc. 13.5%
Elegant, claret style cabernet with a hint of autumn hedgerows on the nose and soft cassis fruit on
the palate.
La Multa Old Vine Garnacha 2012
El Escocés Volante. Calatayud, Spain. 14.5%
This lovingly hand crafted wine produced by Scottish Wine- maker Norrel Robertson shows what
seductively warm and spicy wine can come from this wine making region where very old bush vines
yield low parcels of grapes of great concentration that show the unique terroir of this wild and rocky
landscape.
Le Fruit Defendu. Cinsault. 2013.
Domaine Magellan, Languedoc. (Organic) 12.5%
This estate is owned and run by Dominique Lafon of the acclaimed and historic Domaine de Comtes
Lafon in Burgundy. The wine is made from cinsault vines that are over forty years old and were taken
as cuttings from Chateauneuf du Pape. I love the old fashioned qualities of this wine – from the
retro label to the style of the wine which is unmistakably French Mediterranean – soft, juicy, sundrenched but not over-blown, not over alcoholic and not in the least tannic. Effortlessly quaffable
but with elegance thanks to the estate being owned by such a talented wine-maker.
Pinot Noir. The Crusher. 2012.
Clarksburg, USA. 13.5%
Rich, velvety pinot with long finish. Clarksburg lies just outside the Napa region so the wines
command a far more modest price. This wine is made with natural yeast fermentation and 6% petit
sirah adds depth and opulence.
“R” Ripasso Valpolicella. 2010. Alpha Zeta.
Veneto, Italy. 13.5%
Made by a New Zealand wine-maker, Matt Thomson. Concentrated perfume of red and black
cherries, with the ripasso adding a dried cherry intensity. Full-bodied with opulent cherry-pie
character and supple tannins and a mouth-watering bitter-cherry twist on the finish.

ALBARINO
1
Albarino Gran Bazan. 2013. Etiqueta Ambar. Rias Baixas. 12.5%
45.00
Made from 30 year old vines and ranked number one Albarino by the New York Times, this
92 Parker point wine is ideal with shellfish and seafood. The grapes are cold macerated with
gravity fed extraction of the free run juice. Fermentation is at low temperature in stainless
steel and the wine is left on the lees for 5 months to add richness and texture.
ALIGOTE
4
Bouzeron, 2009. Domaine A & P de Villaine. Burgundy (Organic) 12.5%
45.00
Domaine Villaine in Bouzeron, grow their aligoté exclusively on the slopes of the limestonerich hillocks of this region and significantly they use Aligoté Doré rather than Aligoté Vert
variety to produce their wine which results in greater aromatic character and finesse.

Dao Branco. 2012. Julia Kemper. Portugal. (Bio-dynamic). 13.5%

Two wine tasting trips to Portugal in the last few years has convinced me that this country is
going from strength to strength and there are now foreign wine makers moving in to
capitalise on its great climate, topography and unique grape varieties.
Julia Kemper, lawyer by trade has restored the fortunes of her family estate at Quinta do
Cruzerio (last famous for its wine back in 1903, winning a prize at the Berlin Exhibition that
year) and is making three wines, two red and one white. I had assumed that as this is the
Dao region, long famous for red wines that the reds would be my choice but it was the white
that stood out for me. Subsequently I have found out that it is Jancis Robinson’s preference
too and it is one of Tom Cannavan’s top fifty wines.
The grape varieties used are Encruzado and Malvasia Fino; the vineyard is at 450 metres
above sea level with the wines grown on granite. Harvesting is by hand and the wine is
fermented partly in stainless steel and partly in oak barrels. It is a full bodied, dry wine with
generous fruit and nice acidity. There’s enough weight to match rich food but the wine is
elegant with it.

Made Norrel Robertson M.W. a Scottish wine-maker from old white garnacha vines in the
north east of Spain. Skilled wine-making with judicious barrel ageing and on-lees ageing has
produced a fairly full bodied, dry wine with a long finish. The tasting notes on the back label
says “orange blossom, acacia and peach”. I get don’t get the first two but I do get the peach
– flat, white peach actually and also lemon and almond.

Somló is a small wine region in Hungary with the vineyards planted around
a large basalt capped volcanic hill that rises 1,200 feet from the north-western
Hungarian plane. There are 830 hectares of vines in this small appellation
and the slopes of basalt soils here are unique and give a distinctive character
to the wines. I have tasted nothing quite like this wine before.

This wine also has a little marsanne, grenache blanc and viognier – all individually
fermented in new oak prior to ageing on the lees in oak for 8 months. The wine has

full bodied and finishes with good acidity and a brisk, lemon taste. This and bin 30

Biodynamic wine making
I’ve lifted some text below from the website of the biodynamic wine-makers Richmond
Plains as I think it makes a pretty good explanation of the subject.
Why go biodynamic?
Richmond Plains has always been certified organic so managing their vineyard biodynamically
was a natural progression. We were inspired by wines made by Millton Estate, biodynamic
pioneers who make fantastic wine, and other internationally renowned producers like Cullen in
Australia and Zind Humbrecht and Chapoutier in France.
The concept of Biodynamics was introduced to the world in 1924 by Austrian, Rudolf Steiner, a
philosopher and educator. Decades of industrial farming techniques had resulted in declining
land fertility and livestock health. To revive farm fertility Steiner advocated use of preparations
and composting to increase microbial life, structure and nutrient availability in the soil.
How does it work?
Biodynamics is a natural extension of organics that takes a wider holistic approach. Biodynamics
sees the vineyard as a whole living ecosystem which is influenced by the earth’s natural rhythms.
These natural rhythms are influenced by moon and sun in relation to the earth. This is why
compost and horn manure, (prep 500), is spread in the vineyard during a descending moon when
the lunar effects promote root growth and soil activity. Conversely foliar sprays, such as horn
silica, (prep 501) and compost teas etc. are applied during an ascending moon when the lunar
effects increase vitality and vigour of the vine shoots, fruit and leaves. We can produce better
wines using natural products such as compost, fish oil and seaweed to develop strong, healthy,
vibrant plants which compete in a natural ecosystem.
Biodynamics is often described as not about giving your land aspirin once it has a headache, it’s
about preventing the stresses that cause the headache in the first place.
Pesticides, fungicides and herbicides all mess with nature and do not allow it to find a natural
balance. Thus the vines become more susceptible to disease and pests and become more
dependent on these synthetic chemicals. By allowing the vineyard to find its own natural balance,
the soil and vines will be healthier and stronger. This natural approach where vines compete for
success makes them fight harder producing deeper flavours and, consequently, more interesting
wines. The concept of looking after your soil is not biodynamic, it's just good farming.

Bruwer Raats – one of the most talented and down to earth wine-makers I’ve met.
His Cabernet Franc has been awarded five stars at the Platter Guide for South African wine
for 2015 which puts it in the top 80 wines out of over 7,400 wines tasted.
The wine is complex but very closed until it has a chance to breathe. To be honest it needs a
few years in bottle to really develop but when decanted shows well, given half an hour or so.
The nose is richly perfumed with aniseed, tarragon and dark fruits. On the palate there is
more dark fruit, cedar, cinnamon and chocolate. The finish is long, full and dry. I think this
makes a great alternative to a Bordeaux or Napa cabernet sauvignon but it has a style of its
own.

“The fist”. An unfiltered, uncompromisingly robust, full bodied wine made in a remote
corner of Spain by a Scotsman who has trained in viticulture in both hemispheres. Old vine
garnacha grown at 1,000 metres on clay schist. Beautifully integrated fruit and tannin and
displaying a unique terroir.

Chateauneuf du Pape “Vielles Vignes”. 1999. Domaine de la Janasse. 14% 125.00
I have been a fan of the Sabon family’s wines since first tasting them in the late 1990’s.
Their Chateauneuf is 80% Grenache backed up mostly by mouvedre. The vines were
planted in 1920 and 1965. Yields are very low. The estate is leaning towards organic
and unlike some wines from this commune the wines are driven by balance and acidity
rather than weight or power.

Truly old vines planted high (250 metres) in the garrigues up-land have produced a class act
Cotes de Rhone. Gilles Ferran is the wine-maker at this estate at Rasteau. The utterly
unpronounceable name of the domaine comes from the nickname given by the people of
Rasteau to the black penitents in the 17th century who wore long black coats and owned
the farm at the time - Escaravaille means beetle. Chemical use by Ferran is minimal and the
harvest is done manually.

Trapat is a native grape variety to this region; the grapes are grown in an organically run
vineyard and hand harvest late in October at optimum ripeness. Fermentation is in stainless
steel; there’s partial oak ageing. Rosemary and pepper bouquet, cherry fruit; a fresh, juicy
little number that makes an interesting alternative to a Valpolicella or a Saumur Champigny.
