Welcome to the 17th edition of re:action.
I was delighted when asked to write the foreword of this edition of Hospitality
Action’s magazine as it gives me the opportunity to tell you how I have recently
become more involved with our industry’s benevolent charity.
When I became a patron of Hospitality Action I wanted to do something more
than just be a name on the letterhead. Together with my fellow chefs and patrons
Nigel Haworth and Paul Heathcote, we devised a series of three dinners to be
hosted by us all at our respective restaurants in Manchester, Longridge and
Langho to raise vital funds for the charity. See page 6 for an update on the first of
these events, a fabulous fundraising evening that took place at my own restaurant
at ABode Manchester.
In addition I have launched an appeal for restaurants and hotels to raise money
by asking customers to donate £1 per bill to Hospitality Action. Initially to be
launched in May 2012 for HA Week I hope this appeal, called ‘At your discretion’,
will grow from strength to strength – see page 7.
I take great pride in being a two star Michelin chef in this wonderful industry and
being recognised by my peers but life is not always easy for our colleagues and
many face adversity and hardship, through no fault of their own, at some point in
their careers.
Hospitality Action strives to help individuals experiencing life crisis and help
to rebuild their lives. I hope that you will continue to support the charity and help
them to continue their great work.

at the Lancaster
The wonderful Lancaster London hotel was the
venue for suppliers to meet buyers to discuss
business opportunities and raise much-needed
funds for Hospitality Action.
Suppliers of all different categories, from
biscuits to tableware, water to cleaning
solutions had the opportunity to meet senior
buyers from all sectors of the hospitality
industry.
After a hard day of business everyone agreed
that the best deal struck was the £18,000
raised for the charity!

London to Paris
Extreme Cycle
Challenge
The South West Region
Supporters of
Hospitality Action
with a taste for
adventure are
taking part in a cycle ride from
London to Paris this summer.
The charity hopes that this
challenge of a lifetime will raise
£20,000 for those in need.
Travelling between two of
the world’s most fascinating
cities, participants will leave
London on 29th June and
will pass through the idyllic
English countryside before
crossing over the Channel.
Once in France they’ll enjoy
the stunning French scenery
until finally arriving in Paris on
the 1st July.
The route is considered
to be one of the best cycling
routes in Europe and two
leading chefs have signed
up to take part. Michelinstarred chef Alan Murchison
of BBC 2’s The Great British
Menu and Hayden Groves,
BaxterStorey’s executive chef
at Barclays, are both keen
cyclists and are eager to take
on the challenge. They will
be joined by Michael Cross,
Hospitality Action Board
Member and winner of the
2011 “HA’s Heroes” award,
together with 20 other
cyclists.
The team’s motto is: 3 days,
2 wheels, 1 reason.

innovative fundraising appeal
that asks diners to add an
extra £1 to their bill in support
of Hospitality Action.

£80,000 raised at The Big Event!
The hospitality industry was out in
force earlier this year to celebrate
the work of Hospitality Action and
The Springboard Charity at The Big
Event. The official Hotelympia event
took place at Westminster Park
Plaza and raised £80,000, which
was shared between both charities.
Over 850 guests were greeted
with a Champagne reception
followed by a sumptuous meal, that
included a pressed terrine starter
prepared by John Campbell and
sponsored by BaxterStorey. For
the main course guests enjoyed
confit pork belly created by Jason
Atherton and sponsored by
Compass Group. The delicious
black forest entremets dessert,
created by leading chocolatier
William Curley and sponsored
by Elior UK, was followed by an
assortment of petit fours sponsored
by Town and Country Fine Foods.
A selection of fine cheeses from Bel
UK and Milk Link rounded off the
evening’s culinary delights.
Throughout the evening guests
were entertained by top
impressionist Rory Bremner, a
spectacular version of one of the
most successful West End theatre
shows of all time and music by the
seven-piece Chance Band, as well
as a gripping charity auction hosted
by celebrity chef Brian Turner.

climb to new heights
A group of 44 key industry players
embarked upon the challenge of a
lifetime last September in support
of Hospitality Action. The charity
partnered with Nestlé Professional to
coordinate a Three Peaks Challenge,
with participants scaling England,
Scotland and Wales’ highest points.
Each team of 4 people was tasked
with raising £5,000 in a bid to raise
£50,000 for the charity. In spite of
‘atrocious conditions’, with driving
rain, little visibility and fierce winds, the
teams all completed the challenge.

Golf Day
triumph!
Very many thanks to 3663 & Bidvest Logistics
for donating the proceeds of their recent annual
Golf Day to the charity. Teams from Cable &
Wireless, Fujitsu and Daisy Group plc took part
in the event which was held at Brockett Hall and
raised a staggering £14,300! Plans are already
in place to hold the Golf Day again on Thursday
20th September 2012, so be sure to save the

Hospitality Action: The Facts
Hospitality Action supports people suffering from serious illnesses such as cancer,
lung disease, Multiple Sclerosis and Parkinson’s, as well as helping people who are
experiencing poverty, domestic violence and bereavement. We also assist families with
sick and disabled children.

● A staggering 77% of our beneficiaries were under the age of 60.
● 39% of the charity’s beneficiaries needed assistance after a life-changing

Case Study re:action
David Giles – Catering
Equipment Engineer, Aramark
David Giles lives with his wife and
six year old son. For 15 years
David worked for Aramark but
at the age of 38 he developed
degenerative disc disease and
osteoarthritis in his lower spine.
Due to his lack of mobility
and constant pain David was
forced to give up the job he
loved. David’s wife suffers from
ME meaning she is also unable
to work and the family often go
without essential items. With a
young child, the family struggled
to live on state benefits.
David became extremely
frustrated with his inability to help
his wife and access community
facilities which would allow them
to enjoy family activities together.
The restrictions affected his
feeling of self-worth – he couldn’t
even take his son to school.
Following an assessment
David was told the use of a
mobility scooter would give him
back some of his much needed
independence and he would be
able to go with his son to school
once more. But with limited funds,
David simply couldn’t afford one.
Hospitality Action was able
to help and paid for the scooter,
enabling the family to enjoy quality
time together once more.

to be there for other industry
families in need.

Family Members Lunches
Family Members lunches help us to build
better relationships with our Family Members,
all of whom have dedicated many years to the
industry. The lunches offer our Family Members
the opportunity to meet new friends in their area
or catch up with old ones and reminisce about
past times. Since our last edition of re:action we
have been able to host some fantastic events
where all our Family Members were made to
feel extra special.
Family Members were treated to our first ever
lunch in Cumbria at the Linthwaite House Hotel
in Windermere (1).
Friendships continued when Cumberland
Lodge held its second lunch in October 2011
(2).
New friendships were formed at the ABode in
Manchester (3) & the ABode Chester 2012 (4).
Malmaison, Liverpool spoilt our Family
Members with a second lunch in November
2011 (5).
The Beefeater, Walston Castle in Cardiff
raised the roof with its third Christmas lunch
(6) and Holiday Inn, Mayfair hosted its fifth
Christmas lunch (7).
2012 has started with an amazing line up of
25 lunches and afternoon teas donated all over
the UK, enabling 600 Family Members to be
invited throughout the year.
Warwick Conferences wowed our Family
Members with our first lunch of 2012 in the
Coventry area (8). Malmaison have once again
donated a fabulous eight lunches, with the first
hosted in Glasgow on Easter Monday (9).
We have over 1,100 Family Members
across the UK and are always looking for
extra lunches or afternoon teas. If you could

Scheme
Are you or a member of your staff
team looking forward to a well-earned
retirement but worried about staying
connected to the hospitality industry?
When people retire they hope for a
more relaxed lifestyle, yet for some
retiring from the hospitality industry
it can be a daunting process where
for many years their life has been
filled with lots of people and
vibrancy.
Our Family Members Scheme is a
contact scheme for people who have
worked within the hospitality industry
and are now retired. It is a free scheme
and is open to anyone who is over
pension age and has worked within
the hospitality industry in the UK for at
least seven years. The scheme keeps
people connected to the industry and
aims to offer a little something to all
retirees.
The scheme consists of:
● A bi-monthly newsletter full of useful
information and facts
● A birthday card and small gift
sponsored by Cadburys
● A Christmas card and gift from the
team at Head Office
● Local regional lunches, offering
the opportunity for a day out and
the ability to meet up and make new
friends.
Where possible we also have
volunteer visitors who stop by on
a regular basis for a cup of tea
and friendly catch up or telephone
befrienders who call on a monthly
basis.
What the scheme means to our
Family Members...

contact, we only have each other. All
our people are not alive anymore and
the few people we know are not close
to us. That’s why we think of you as our
family, you are so lovely.”

The Ark Foundation
The Ark is a branch of Hospitality Action, set up to educate the
hospitality industry’s students, employees and management
as to the dangers of alcohol dependency and other drug
misuse. The Ark receives no government funding and relies
on the generosity of those within the industry. Our thanks
go out to all those who have recently supported The Ark. If

Rising stars shine brightly at Grand Charity Banquet
Very many thanks to South Downs College who
raised over £11,000 for Hospitality Action and The
Ark Foundation at their third Grand Charity Banquet.
Six former students, all rising stars within the industry,
combined their exceptional talents for this special
fundraising evening.
Gerry Shurman, Head of Catering, Hospitality and
South Downs College staff and students
Travel at South Downs College explains: “Since the
College has produced many outstanding chefs over the
years, we decided to invite back six former students
to put on an outstanding gastronomic experience for
guests. They’ve all done extremely well since graduating,
with both ourselves and industry experts recognising
that they’re incredibly talented and real rising stars.”
Our thanks go to Gemma Powell, Allen Sorrell, Oscar
Holgado, Rob Mcleary, Shaun Searley and Farokh Talati
for their fantastic efforts and also to the Front of House
team under the direction of Natalie Byne and Ryan
Humphrey. Special mention goes to the service students
who, under the direction of Bummi Okolosi, Maitre
D’hotel at Heston Blumenthal’s Dinner, worked hard to
present the range of signature dishes on offer. Thanks
finally to the evening’s sponsors, including Kenwood,
Nestle UK and City and Guilds, who made the event
possible.

The Ark for Business
at Hotelympia 2012
The Ark for Business offered
confidential and free consultations at
the 2012 Hotelympia, held at Excel.
With drug and alcohol misuse a
serious problem across the industry,
this was a perfect opportunity for
businesses to be assessed free of
charge.
The Ark for Business aims to
uncover and assist with drug
and alcohol excess which are
often disguised by individuals or
unrecognised by managers. As well
as the human costs, the effects on
a business can be profound as it
impacts on customer experience,
profitability, morale, safety and
company reputation.
Ken Crosland of The Ark for
Business says: “In hospitality
problems originate in many ways:
employees partying hard after work;
a stressed manager increasingly
reliant on the bottle at the end
of another hard day; the lonely
individual, far from home and family.
The Ark for Business aims to help
employers become aware of these
issues and offers guidelines on how
to handle them.
“It was great to meet so many
individuals at Hotelympia and
discuss their issues; it was also
a fantastic opportunity to raise
awareness of the work we do
and how we can help in their
businesses.

The Master Innholders has
presented £5,000 each to industry
charities Hospitality Action and
The Springboard Charity. The
donation was raised at the recent
Master Innholders Annual General
Managers’ Conference held at
London Hilton on Park Lane.
Speakers provided invaluable
insight to attendees, with standout
sessions including a presentation by
Lord Coe about the impact of the
Olympics.
Philip Howard, chef and coowner of The Square, interviewed
by Mark Lewis, Editor of Caterer
and Hotelkeeper, was inspirational,
reflecting on his past drug and
alcohol abuse and the importance of
the work of The Ark for Business.
