CHOCOLATE ARTISAN COURSE
Our longest running and most popular course! It is an
interesting and information packed course designed
specifically for anyone wishing to start a small chocolate
business.
This is an ideal follow on course, from our Essential
Skills For Working With Chocolate Course, for those
people wishing to add an individual feel to their chocolate
range.
After an introduction including the process of chocolate
production and the history of chocolate, you will learn the
different ways to temper chocolate and how to correctly
handle and work with chocolate.
This course allows you to experiment creating daring
and unusual flavour combinations and taste sensations
- not usually associated with chocolate. Ingredients used
include: balsamic vinegar, basil, speciality teas and
cheeses.
As well as covering chocolate dipped items and some
work on moulded figures, the course, through
demonstration and hands-on work will teach you how to:

Another very popular course! Currently we take more
orders for chocolate cakes than traditional iced styles
and the popularity of this style of cake shows no signs
of slowing down! With the demand so high for chocolate
cakes, it is important to possess the skills to be able to
create these stunning designs.
This course covers many aspects of creating chocolate
cakes that can be used for weddings and celebrations.
You will learn how to create a coating sauce and the
correct way to coat a cake as well as the following styles
of decoration:
• Chocolate curls and “cigarillos”
• Chocolate fans and ruffles
• Coloured chocolate pieces
You will also learn how to create coloured cocoa butter
and how this can be used in decorations. The day
finishes with the chance to experiment with all the
techniques you have learned and create your own unique
and personalised cake. With the skills gained on this
course you will be able to alter and adapt the designs
to create your own range of exciting and unique chocolate

Following on, from our one day chocolate wedding and
celebration cakes course, or for the more confident
student, this course introduces you to the more advanced
techniques in chocolate work. This will include coloured
cocoa butter spraying, chocolate spraying and creating
shaped decorative chocolate pieces - such as patterned
and textures shards.
A further follow on from our two day essential skills
course.
An advanced specialist chocolate course allowing you
the opportunity to experiment, design and create your
own individual showpiece, using the most challenging
techniques, including:
This course will show you how to deal with the non
traditional chocolate designs such as cone shaped
cakes and very modern designs.
The latter part of the day is spent creating your own
wedding cake, using the techniques you have learned
during the day and a coned shape cake. The design
of the cake is totally up to you, but the tutor will be on
hand throughout to offer advice and help.
This course does not cover tempering in full, so it is
advisable that you have previous knowledge of this
skill.
Increase your knowledge of working with chocolate with
this course, which is packed with ideas for different
types of chocolates and novelties.
On this course you will learn how to make the following;
Rochas, knackerli, marzipan pretzels, piped truffles,
dipped novelties, filled cups and lollipops as well as
bars and blocks and many other ranges of chocolates.

introductions in our shop in recent months. During this
six hour workshop you will learn how to create and
decorate these popular items. You will use moulds to
create the shoes and learn a variety of techniques to
decorate them including piping, use of colour and lustre
effects. You will be able to make two complete pairs of
ladies shoes, to give as gifts… or keep for yourself!

enjoyable day, where you get to make a full range of
moulded chocolates, with a variety of fillings and create

The Essential
Slattery Chocolate Experience
We have received lots and lots of requests for more in-depth
chocolate courses and so here it is… The Essential Chocolate
Experience - a 5 day course of nothing but working with
chocolate!
This course will ideally suit the person with little or no
experience of working with chocolate, as it will start from the
very basics. You will learn how to correctly temper the
chocolate using a variety of different methods. You will
become familiar with the ways to handle and work with
chocolate as well as receiving ‘Tips & Hints’ on quicker, tried
and tested methods that the professionals use.
The course will allow you to gain hands on experience of
working with moulds in order to create small moulded
chocolates as well as larger chocolate figurines and decoration
pieces. You will create a range of fillings including ganaches
and fondants as well as pralines etc.
The course will cover making a large variety of hand-finished
chocolates including truffles, rochas, pretzels, knackerli and
hand dipped pralines, which are all quick and easy to produce
- when you know how!
You will refine your skills and learn about creating chocolates
using more delicate and unusual flavours. Imagine being
able to use herbs and spices to create exotic tasting chocolates
including coriander, lavender, cardamom, juniper and even
curry.
One of the most important things you will learn is how to
create individual and personalised chocolates - a must if you
intend to set up in a professional business.
We will devote a good amount of time to the cutting, shaping
and creation of chocolate cakes and decoration pieces.
You will learn how to coat cakes with chocolate and coating
sauces that could be used for birthdays, weddings or simply
as an extravagant dessert. By the end of the course you will
be able to create chocolate “cigarillo” curls, ruffles, shards
and fans – all of which can be used to create elaborately
decorative cakes or can be used as simpler decorations on
tortes and gateaux. By learning how to colour cocoa butter
and spray chocolate you will be able to achieve highly unusual
and striking effects.
Some time will be devoted to the fundamentals of running
a successful chocolate business. This will cover packaging
ideas and sources, legal requirements for labelling and selling
products as well as getting the most from your products by
learning effective display methods.
By covering elements from all our popular chocolate courses
you will take away a rounded working knowledge of chocolate.
You will also learn techniques and receive information on
ideas that are not covered on any of our other courses – so
this really is the course for anyone who is serious about
working with chocolate...

8 to 16. During these fun yet informative
chocolate workshops, the children will learn
how to handle chocolate and create a large

HUMAN FIGURE MODELLING
2 Day Course
This 2 day session offers an in depth introduction to
creating 'caricature' and 'moulded' human figures. Your
expert cake decorator will take you through creating all
different styles of human figures. You will learn how to
create seated figures, standing figures and creating
realistically posed figures too. If you have tried, you will
know that it is quite difficult to make your figures look
the correct age. This course will take you through
creating babies, toddlers, children and adults of various
ages, showing you the tricks used to age them
accordingly.
You will be shown how to give your characters poses
and expressions and how to add life to your figures by
creating realistic looking clothing.
This is a great course to really allow you to practice
creating figures while getting lots of tips and advice
from our expert cake decorator. You will leave this
course feeling confident that you will be able to create
realistic figures for your customer’s cakes.

This course provides a great introduction to the
techniques and methods for sugar paste modelling.
Learn how to correctly handle sugar modelling paste,
use brushes to successfully blend and assemble your
models and how to use modelling tools to add details
to them.
You will create several popular children’s character
models and learn how to improve the look of your
characters by placing them in a “scene” and adding the
detail that “brings them to life”. A great introductory
course into working and using sugar paste.

carving and layering your sponge cake. We will show

Welcome to the world of sugar flowers. Let our expert
cake decorator teach you how to make sugar roses,
carnations and blossoms with plungers and
cutters. During this introduction to wired flowers and

3.5 Hour Course
This one-day course provides a simple introduction to
cake decoration. The course will start with how to handle
sugar paste, how to cover a cake with it and crimping
techniques to add simple decoration. The tutor will
demonstrate the technique for coating a cake with royal
icing. The course will then move onto decorative piping
and writing and lettering techniques - including plenty
of time for practise!
This introduction to simple cake decorating and finishing
would make the perfect gift for a keen home-baker.
You will learn how to fill, layer and cover your pre made
sponge cake with sugar paste. Then, using crimpers,
cutters and embossers you will be taught a variety of
decorative techniques. To complete your finished design
you will make a simple sugar model. Take home your
completed masterpiece and wow your family and friends
with your newly learned skills!
You will then learn how to make sugar roses and sugar
garret frills to decorate your cakes with. The day will
culminate in putting all your new skills into practise and
creating your own beautifully decorated cake to take
home with you.

a delicious hot supper – what could be more relaxing!!
Come and join us and our wine expert for an informative
yet light-hearted look at wines. The wine expert will
take you through at least 10 different wines from the
chosen country, telling you about each one, the vineyard
that produces it and their recommendations for how
to best serve and enjoy that wine. They will also give
you a background of the producing country and the
qualities of the wines from its different regions. While
enjoying your hot supper you will be able to choose
your favourite wine of the evening to accompany your
meal.

A chocolate workshop is a super way to reward a team for a ‘job well done’ or to bond a new
group of people. During our tailor made chocolate days, your team can simply have fun
creating chocolate items or have a more challenging time, thinking about each other while
engaging in friendly competition. Standard sessions are 3 and half hours, however we can
create longer or shorter sessions to suit your needs.
The chocolate session can be built into a full day with us, which can include using our conference
room for a meeting or a private lunch. We are very flexible so if you have specific needs or

These hands-on 2-hour practical courses are for students from schools or colleges
accompanied by teachers. We offer either a chocolate making workshop where students
will produce simple chocolate truffles and novelties. Alternatively we can offer a simple
introduction to cake decorating. Working with sugar paste, the students will learn how to
create a simple moulded figure, crimping techniques, some piping and embossing.
These sessions have been incredibly popular this year as they are good value for money
and provide students with an informative yet enjoyable introduction to chocolate and cake
decorating.

How To Book Your Place
Please call 0161 767 7766 to check availability on your selected course and to reserve
your place.
We require a non-refundable deposit of £25 per person, per course to secure a booking.
Preferably this is to be paid by credit or debit card over the phone at the time of booking.
Alternatively a cheque can be sent in the post. If booking in person, any payment method
is acceptable. If the course fee is £25 or less, the whole amount is to be paid on booking.
Once we have received your deposit, we will send you a letter confirming your booking
and detailing all the information you need to know about your chosen course.
The balance of the course is payable at least 2 weeks prior to the course commencement
date. We will not send you a reminder for the final balance (the date will be shown on the
course information letter though).
Courses will run subject to a minimum number of participants. We therefore may, with
notice, cancel any courses if the minimum numbers are not met. If this is the case, we
will refund your deposit or transfer it onto another course for you.
SAVE ON BLOCK BOOKINGS... Book any two consecutive full
courses and save £10 on the total price of the two courses.
