The crims held up the shop assistant at knifepoint and stole cash from the till. The exercise was monitored by training and safety officers. Fortunately though, it was only a training exercise. They were last seen heading in a north westerly direction into the Eynesbury Grey Box Forest. The Victoria Police, Critical Incident Response Team and the Dog Squad members that used the forest for an imaginary scenario in which two baddies entered with Eynesbury Grocery Store with evil on their minds. The location for the exercise was suggested by a local resident who is also a police officer. As a safety measure, the police officers that were being trained were armed with plastic replica firearms. According to the locals who watched from afar, the stars of this show were Maxx and Aragon (the all black), both very talented German Shepherd dogs. The CIRT has thanked the Eynesbury Community and the Woodhouse Pastoral Company for allowing them to utilise the forest for the exercise. MARKET DAY Koalas are a herbivorous marsupial, usually weighing around 9 kilos, who receives over 90% of its hydration from eucalyptus leaves and only drinks ground water when there’s not enough moisture in the foliage - which was obviously the case during our recent extreme heat spell. So, while it’s lovely to see this little guy out and about at Eynesbury - and great to leave some fresh water out on extremely hot days - please don’t approach or try and touch him. Enjoying his company from a safe distance is the best way to encourage our local koala population and protect this beautiful species. 1 Pulled Pork Sliders in Brioche Buns with Apple Slaw, Beetroot and Zucchini Crisps from Lachlan Hudson I chose this recipe because it is very simple to do and never fails to impress. Sliders are very fashionable at the moment as is pulled pork. The apple salad cuts the richness of the pork perfectly and the crisps are a great alternative to potato not to mention they are good for you. I generally make every thing from scratch which may seem like a lot of work but given the time it takes to do the pork and the crisps it is all very easy and stress free, just a little time consuming. Feel free to buy buns if you don’t want to make them. Perfectly suited to hot or cold weather and well suited to entertaining. Pulled pork Pork shoulder approx. 2.5kg Brown sugar 1 cup Worcestershire sauce 1 cup Dried onions 2 tbs Chilli powder 2 tsp Dry ground ginger 1 tsp Dry ground garlic 1 tsp Ground mustard seed 1 tsp Salt 1 tsp • Clean the pork shoulder by removing the rind and trimming off any large bits of fat. • Mix everything together and rub over the pork. • Cook in a cast iron pot in the oven on 115°C for about 5 hours or in a slow cooker for 8 hours. • Use two forks to shred the pork. Remove any bones and gristle then leave the pulled pork in the juice to keep it moist and flavoursome. Apple slaw Granny Smith apples 2 Fennel medium size Celery 3 sticks Red wine vinegar 1 tbs Olive oil 1 tbs Sea salt 1 pinch • Slice the apple into a julienne (matchsticks), slice the fennel and celery as thin as you can. Only slice the white part of the fennel but reserve the stringy tops to chop roughly and mix through for colour. • Combine everything in a bowl and mix. Beetroot and Zucchini crisps Fresh Beetroot 2 Zucchini 1 medium • Slice the zucchini and beetroot very thin and lay on a baking tray/s on baking paper. • Brush with olive oil or use olive oil spray then bake at 115°C for 1.5 – 2 hours or until crisp, then season lightly. If they are not perfectly crisp they will crisp further as they cool. Brioche buns Plain flour 2 cups Warm milk ½ cup Sugar ¼ cup Melted butter 80g Whole egg 1 small (55g) Sugar 1 tsp Dry yeast 1 sachet (7g) • Combine the yeast and ¼ cup of milk with 1 tsp sugar. Let sit for 5 mins. • Combine the yeast mixture with the flour, egg, melted butter and salt. Mix while gradually adding the remaining milk. • Work the dough until it forms a smooth elastic consistency. Place in a lightly oiled bowl and cover with a damp cloth or plastic wrap and place somewhere warm until it doubles in size. • Divide the dough into 12 equal portions. Knead lightly and roll into balls. • Place on a baking tray evenly spaced apart and cover again loosely. • Brush with a little beaten egg mixed with milk or just some sugary water. • Bake at 180°C for 25 mins or until golden. To serve the slider just slice the buns, place some of the pulled pork, top it with a little of the apple slaw and close it up. Accompany with the crisps. Even better, place everything in the middle and let your guests assemble their own. This may seem complicated, but it really is easy! People will appreciate the love you put into it. Very impressive end result for not much effort at all, just some time. Start off by doing the pork then the slaw. Then in the last two hours make the brioche dough, followed by the crisps. When the crisps and pork are done at the same time turn the oven up a little and put the buns in. While the buns are in pull the pork to shreds and it should all come together on time. 2 Letter from the CFA Dear residents, It is with immense enthusiasm that I would like to congratulate and thank the Volunteer members of the Eynesbury Fire Brigade for their efforts over the 4 Day hot period. These dedicated Volunteer members gave up their valuable time (some members even took two days off from their employment ) to fight fires not only in Eynesbury, but also as members of a strike team where they were assisting local Brigades when fires broke out in Craigieburn, Corio, Eltham and Little River. Since the 1st of December 2013 our Brigade has responded to 20 calls (The Brigade only responded to 78 calls in a 12 Month period last year). I would also like to thank our residents for their kind words of appreciation and the Choc Banana Muffins donated by the Davis Family and drinks and muesli bars that were brought down to our little (temporary) Fire Shed. COMMUNITY ASSOCIATION NEWS No summer rain and too much heat! What a negative effect these extremes have had on our green streets and gardens. A big thank you goes to those residents that have realised that Eynesbury is drying out and have regularly watered their gardens and nature strips. The green that your efforts have put into the township is noticed, and appreciated, by all who see it. This dry weather has reduced the amount of grass on the river valley and forest floor. In addition to the resident kangaroos, wallabies are coming up from the valley into the township in search of food in the forest, grassland, nature strips and reserves. These animals are crossing Eynesbury Road and internal streets in ever increasing numbers. Drivers, please be vigilant, keep below the 50kph speed limit, and give yourselves and the wildlife the best possible chance of missing each other. Congratulations to everyone involved with the ongoing removal of the Indian Myna pest invasion. The construction team from McMahons is bringing the area up to a more user friendly standard by sowing grass, pruning overgrown plants and removing trees that were obstructing the sprinkler system. While the street construction work has paused in the new areas, gates have been installed on Haul Road. This has allowed the Woodhouse Pastoral Company to put cattle Thank you to our residents who purchased Christmas Trees from our brigade. We will also be selling Hot Cross Buns to raise much needed funds to support our local brigade. Please look out for an order form that will be delivered to your home soon. Please remember that all of our Brigade members are residents of the Eynesbury community and without their dedicated time and support we would not have a Fire Brigade. Keys to unlock the gates have been distributed to the Eynesbury, Wyndham, Parwan and Bacchus Marsh CFA brigades, Woodhouse staff, McMahons workers and staff stationed at the Homestead. The gates will be unlocked in the event of an emergency, or increased risk of fire. Information has been received that Melton Council Local Laws Officers are embarking on a new strategy for Eynesbury. There will be more visits, some even ‘out of hours’ and on weekends, to enforce the strategy. They will be targeting building sites, illegally parked cars and large vehicles, animal control, and rubbish bins left out in the streets and lanes. Be warned, and ensure that your building sites are secure and clean, your cars are off the nature strips, your bins are off the street and out of view, your dogs are under control and registered, and cats are permanently removed from Eynesbury. Attention to these matters will make Eynesbury an even better place to live. Ian Matthews Community Association Officer Wedding planner ties her own knot It was a fairytale wedding with all the trimmings at Eynesbury Homestead. Local wedding planner Candice Schurkat, owner of Mackenzi Weddings, said she’d been planning her own wedding for many years. “When I was 4 years old, my kinder teacher announced she was getting married and I just had to go. That day I fell deeply in love with weddings and knew I would become a wedding planner in later life.” The big day for Candice and new husband Alex started with a traditional church ceremony on a hot, 36°C day. After arriving at the Homestead, guests were ushered through the elaborately decorated gardens to view the picture tree, with frames containing images of the couple’s family and friends, and along the wisteria walk where a beautiful dressing table inspired feelings of welcome and warmth. In the event marquee where they were entertained by dancers dressed up as the characters from “Beauty and the Beast”. “We wanted everyone to feel as though they were being swept up into our fairytale day,” Candice explained. The marquee was decorated with pink-toned floral arrangements, with a white acrylic dance floor in the centre of the room, all arranged by a team of florists who had been working since early morning. Italian pearls were draped from the roof and tiffany chairs were brought in especially for the day. “This was a beautifully designed wedding, which was complimented perfectly with the elegance of the Homestead,” said Wedding Coordinator Deanne Jenkins. “Having worked with Candice before, we knew her wedding day would be amazing and she was a wonderful bride to work with. “We’re just so thrilled that all her dreams came true.” The team at Eynesbury wish Candice and Alex a long and happy life together! Exford Primary Bursts into the New Year From Principal Lisa Campo with class sizes between 19 -23 across the school. The staff at Exford Primary School has been very busy over the holiday period getting ready for our 325 students, including our 62 new Preps. Our 3 Prep classes have started school so confidently and they have enjoyed their two days of school, especially Ms Graham’s class because, as one little boy told me, they went on a Bear Hunt and there was a bear who was “6 years tall and he said GRRR”. In all four new classrooms have been prepared, a new playground was installed (the Fundraising Team raised $26,000 in one year) and our staff have worked so hard to get their classrooms in order for the arrival of our kids. We have 15 classes this year from Prep to Year 6, We look forward to a wonderful year with our children and all the special things we’ll do – starting with an 8 week Gymnastics program beginning in February. 3 Young Groovers put on Dance Spectacular The Eynesbury dance concert celebrated and showcased the progress made by students during last year … it was clear they had all put in a lot of hard work. The gala performance took place at the Essendon Keilor College in East Keilor. More than 200 audience members were entertained and dazzled by colour, costumes, music and movement. The dancers grooved and moved to some funky beats and clearly enjoyed the thrill of dancing on a big stage. More than 300 people came down to the Stage One oval for this year’s festivities and perfect weather conditions for a change greeted the residents. There was a mixture of the old and the new with the rock climbing wall being a great hit with the teenagers, yet the old fashioned spud and spoon race proved captivating for the younger residents, which makes a change from ipods and Xboxs. It was great for new families to mix with those who are now Eynesbury regulars and the growing population is seeing more people come and enjoy these events. There was a wide range of food on offer with pizza, ice cream and pop corn available and with liquids a little more refreshing being consumed by those over the age of 18 on a balmy evening.
