ISSUE 2| 2014 GIVING BACK TO THE COMMUNITY HAWAII CULINARY EDUCATION FOUNDATION Chef Michael J. Imada, Sales Manager – Food Service Division of Tropic Fish Hawaii has been donating his time to participate in culinary training programs for future chefs in Hawaii. The HCEF coordinated the participation of 24 Oahu, Hawaii, and Maui high schools in the Chef Mentoring Program reaching over 800 students. This was the inaugural year for the program with 38 chefs and educators gathering in June to review and collaborate on future classes. The purpose of the HCEF program is to connect high school culinary educators with chefs to provide "real world" experiences. OBAMA ADMINISTRATION: THREAT TO CLOSE REMOTE PACIFIC ISLANDS TO FISHING On June 17th, a serious issue has been raised by the Obama administration’s recent attempt to expand the boundaries of Pacific Remote Islands Marine National Monuments (PRIMNM) from 80+ thousand square miles to 780+ thousand square miles. President Obama announced he intends to create the world's largest marine sanctuary in the south-central Pacific Ocean. In other words, he is threatening to close the entire Exclusive Economic Zone (EEZ) of the remote Pacific Islands to fishing. The EEZ around Johnson and Palmyra atolls/islands are VERY IMPORTANT to Hawaii’s fishing industry. This could mean that the fishing fleet may not be able to fish in these waters and would result in a loss of at least 15% of its catch. This expansion will have an extreme negative effect on the Hawaii longline fishing industry. Briefly, if this attempt is successful, it would severely restrict longline tuna fishing in the waters off the United States’ Pacific Island territories and ultimately lead to less fish on the tables of local restaurants, supermarkets, and families. Because the stakes are so high, the fishing industry is asking for an important, engaged intervention into official government attempts to legitimize the proposed expansion. The culinary team at Tropic Fish Hawaii included Chef Eddie M. Mizuno, Culinary Business Development Manager - Food Service Division, Chef Michael J. Imada and Toby Arakawa, Vice President of Export Sales. A donation of $45,000.00 was made to the Foundation. Visit our websites at: www.hilofish.com www.konafish.com www.tropicfishhawaii.com www.tropicfishmaui.com www.tropicfishkauai.com CHEF ISAAC BANCACO OF KA’ANA KITCHEN AT HYATT ANDAZ, MAUI PROJECT KOKUA FOR HAWAII ISLAND Tropic Fish Maui donated seafood to the Project Kokua for Hawaii Island—a Maui-based fundraising effort organized by Hilo-born chef, Lyndon Honda, to support the communities of Hawaii Island affected by Hurricane Iselle. The goal was to raise $20,000.00 and was held on September 7, 2014 at the Maui Tropical Plantation. Twenty three elite chefs from Maui participated. “Hamajang” Kona Kampachi & Coconut Poke Serves 4 Locals or 10 Wailea Housewives Prep time: 30 min 2# Kona Kampachi fillet 1ea Maui onion 5 cloves garlic 1T coconut oil 1c coconut milk 2oz Adoboloco “Hamajang” hot sauce 3 limes, juice only 1T fish sauce 10 leaves Mint, torn 10 leaves Thai Basil, torn Hawaiian Salt to taste Dice Kampachi into desired sized cubes, cover with plastic and reserve under refrigeration. Roast Maui onion, husk on in the oven for 25 minutes at 350 degrees. Remove onion from the oven, cool to room temperature then remove outer skin and stem. Place in the blender and puree. Place garlic in cold water and bring to a boil, discard water. Repeat process 3 times then blend with a splash of water until smooth and wet sand like. Remove Kampachi from the refrigerator, season with Hawaiian salt, add onion puree, garlic puree and all other ingredients except the lime juice. Let sit for 5 minutes to marinate and then add the lime juice. Chef’s Note: It’s important to add the lime juice last to ensure flavor penetrating through the fish prior to the acid in the lime juice cooking and closing off the pores of the fish. Think of the acid as sealing the flavor within the Kampachi as opposed to keeping it out. Imada visited the YMCA Honolulu with Executive Chef Darryl Shinogi of Roy’s Ko Olina for the “Ewa Weed and Seed” Annual Culinary Arts Summer Program. Tropic Fish Hawaii was a sponsor and donated fish for the students. Chef Imada conducted a lecture on Hawaii hotel food service. Weed and Seed is a program sponsored by the Honolulu Police Department and was established by the Federal government to strengthen local communities by “weeding” out criminal activity and “seeding” the community with crime-prevention and neighborhood-restoration actions. One area of operation is Ewa Beach, where residents established “EWAlution,” a community partnership involving 54 public, private, and non-profit service providers, plus businesses and other organizations to plan regular community activities. So far, they have established a food distribution program, quarterly movies, and an ocean sports day every quarter for local youth. In addition, the program established a summer program in culinary arts for area teens. His prior experience includes a Fleet Service Operator at AAA Hawaii where he assisted customers with vehicle issues. This position was very customer service driven as it was surveyed and scrutinized by the corporate headquarters. He also served as the Purchasing Agent at the Hawaii Prince Hotel in which he learned the importance of receiving product on a timely base, handling perishable items and meeting deadlines. He was also employed by Fedex for ten years and handled delivery of numerous items including seafood. Working daily with demanding customers instilled Terry with the importance of excellent customer service and delivering the product in a timely manner. Terry was born in Hawaii and grew up in Kaneohe. He spent half of his life in California and attended the San Jose State University. In his rare but spare time, he is an avid golfer and a sports enthusiast as he declares the San Francisco 49’ers, San Francisco Giants and San Jose Sharks (hockey) his favorite teams.
