There are several areas that are key to success and while all these areas are important any one is not the end all and be all to a successful formula. I’m sure you can think that local chain that has the worst pizza in town and yet you see their delivery vehicles everywhere you go. My own personal mystery was a pizza place in Brooklyn that was run by a guy with no personality that I am sure inspired the soup Nazi years later with his disrespect and rudeness to his customers. Aside from the pizza makers smoking while they made pizza, he would tell you to eat the unburnt part of the pie if you dared to complain. How about the places that are so far off the beaten path you need a guide to find them or better yet they have no name on the joint? You can’t make this stuff up but it gives one hope that there is room for all of us to succeed. I want to qualify this as my own personal opinion from working with, knowing and visiting with hundreds of pizza men and women all over the country. By no means is this THE BIBLE OF PIZZA or to be taken as law but it will give you a pretty good idea of what to concern yourself with if your new to the game, stale or in deep trouble. 1. Location, Location, Location. The best way is to be the only game in town Mandeville Beer Garden focuses on the details Sarasota - Florida’s first-ever beer garden focuses on the beer and lets the ELAN control system manage all the audio, video, lighting, security, surveillance cameras and HVAC. Launching a restaurant is often a sink-or-swim moment. It’s stressful, exciting and demanding, so any help keeping things organized and flowing smoothly is essential. Just ask Rebekah Gelvin, the proud owner and operator of the new Mandeville Beer Garden in Sarasota, Florida. With 30 draught beers, 150 bottles and a classic beer garden-style food menu, the last thing the staff wants is to have to remember tricky procedures for operating TVs, stereos and other utilities on site. As the citys first-ever beer garden, Gelvin knew it might be popular, but was pleasantly surprised at the community’s overwhelming response. Luckily, she thought ahead and outfitted the establishment with advanced technologies designed to lighten the load for her and the staff, centered around an ELAN control system that automates the audio, video, lighting, surveillance cameras and HVAC. “It’s nice not to worry about turning things on and off,” Gelvin said. “It might seem like a little detail, but there are hundreds of little details that we need to nail every day, so See BEER GARDEN page 5 or be in a tourist location where there are no other options available or the ones available are of no consequence due to being very expensive or a different and specialized category like a fish house. If you are making a really top notch product people will find you and not only that, people will talk. Word of mouth is the best advertising it has been said. The reason for this is that people will trust the opinion of friends and family over silly unfounded claims of the best pizza in town and such advertised in the local paper. 3. Be unique. Examples of this are everywhere but they may not seem apparent. Like making a Chicago pie where there never was one, having a wood burning brick oven, using insects as a topping or having a pizza drive through like OL Jose’s in Pineville West Virginia where they are using a revolving brick oven. 4. Be a social maniac. Take pride in being part of your community. Before there was social media, there were social men and women. These wonderful people actually cared about the people they met and considered customers as friends to share joys and sorrows with. One very moving example of this is when people would come to Goodfella’s Pizza in Staten Island on their way home from work in the days after 911 just to get out of the house and be with people who cared in a friendly and safe environment. There are many examples I can think of; like the guy who coaches the local little league, the girl who hosts local heroes with pizza parties, the place that supports boy scouts, the place that sponsors Special Olympics or the guys that collect donations for slices to feed the homeless. There are so many ways to build good will in a community and give back while earning respect and loyalty that I could write a book about it but you get the idea. 5. Service. Run a tight ship that gives service and shows genuine care for the customer’s experience. I don’t know about you but when I am ignored, the host is not pleasant, the server acts like he is doing me a favor, the table is dirty when I am seated or my unfamiliarity with ordering and the menu is treated with impatience, you have lost me, and more importantly, any future income my patronage may have brought. This may seem like a given but if you are not on top of this and setting a good example for your crew it will never happen. A little thing like a smile or help and directions can go a long way in building a relationship with your customers. Facebook, Twitter, LinkedIn and Instagram are essential components to fully utilizing and profiting from Social Media Marketing. Even if you don’t fully understand how to use the above, you should try to use them and learn on your own; the ins and outs of what can help your business. I have been using them for years and I still find little hidden nuggets of gold every day. How should you use Social Media? How do you do the gathering? In a restaurant, the wait staff is the front line to prospecting for these gold nuggets of data. You as the owner or manager have the duty to provide each table with cards to be filled out to capture your customer’s Name, Email ◆ Today’s Restaurant Publisher Address, Birthday, Anniversary and any other information you feel will benefit your sales effort. You must train your staff to make it part of their greeting to remind guests to fill out the cards and you may want to offer them a free item on their next visit for doing so. Once you start gathering the information, you should create a spreadsheet to enter items in the proper columns. If you don’t know how to do this ask for help or contact me at [email protected] and I’ll send you a sample. As you enter the data you will see trends start to emerge like the age of your customers or if your customers are over forty or under forty, for example. This will lead to the type of promotion you may want to present to them. I use data that I have collected over the years to create special offers at different times of the year. In fact if you receive emails from me on a regular schedule you will notice that the email is sent to you only twice a day, once in the morning and the other in the afternoon. If you have never opened one of my emails you should! We send you only information that will be of benefit to you in running your restaurant. We do not send you offers for Viagra or to Meet Russian Women, the emails we send you are from companies that manufacture or supply goods and services you can use. The next time you see an email from [email protected] open it and let me know if this isn’t valuable information for you. I understand the old “Bathrooms are for paying customers” routine but sometimes being human and having discretion can earn you a great deal of loyalty. In other words, if it isn’t costing you anything to be kind-always be kind. Believe it or not but this also includes salesmen wasting your time. Those salesmen are not only people but potential customers with family and friends that also eat. While no list will guarantee your success, if you follow these points your odds will greatly be increased and if you earnestly follow point 5 you will contribute to a better world by treating your fellow citizens with courtesy. As far as grand openings go, ours has been wildly successful, but that does mean that the staff can sometimes be racing around to keep every customer happy. In that environment, giving the bartenders the ability to change TV channels or turn up the music from their personal smartphones is a big help. It saves time and frustration, and even attracts the customers’ attention when they ask how we did that.” Automating the utilities of the beer garden was a core consideration during construction, according to Mark van den Broek, owner of the Sarasotabased electronics integration firm Smarthouse Integration. Technology is basically a given for a modern bar or restaurant, and Rebekah knew that going in,” van den Broek said. “But where legacy owners might see TVs and speakers as the end-all beall, she recognized that more could be done to simplify operations and free up staff to attend to customers quicker and more effectively. In addition, the energy savings can be considerable. For instance, the beer garden’s lights, TVs and speakers all automatically turn on 30 minutes before opening and off 30 minutes and after closing. This eliminates the need for a worker to be responsible for these duties, and ensures that it always happens. Even if someone did turn on a light after closing, Rebekah can see that and turn it off using the ELAN mobile app on her smartphone or tablet.” In addition to the automated on/off settings, van den Broek worked closely with Gelvin to create a smart lighting timeline that self-adjusts the lighting levels throughout the day to match ambient light. Combine that with an intelligent HVAC schedule, an integrated security system, 10 IP surveillance cameras and three separate zones of audio and video, and it’s clear the ELAN control system plays an essential role in the beer garden’s operations.
