Raw Superfood Ice Cream Recipes You Can Make in a VitaMix by Raw Food Chef Colleen Cackowski www.BestRawChef.com RawFood4Me@a.net Phone: 720.352.1754 Superfood Ice Creams People have been asking me for the past year to make an ice cream recipe book, using superfoods and tonic herbs, with low glycemic sweeteners and NO dairy. In my work as a health coach and a raw food chef, I o!en make recipes like these for clients and they are always a winner! These recipes are just a star#ng point for you to experiment and make your own favorite combina#ons of flavor. Once you get the base recipe down, the sky is the limit as far as what new recipes you will be able to create from your imagina#on. Making dairy-free, sugar-free, creamy, delicious ice creams in your blender is easy and fun! What could be beer than enjoying the delicious sweet and decadent ice cream, but without any guilt! NOTE: I made these recipes in a VitaMix blender. I think it’s important to use a high-performance blender to get the creamiest end product. I imagine if you have a regular blender, if the motor is strong enough, and if you start with crushed ice, you will be able to approximate the same thing, but please note that I have never tried these recipes in a regular blender and cannot vouch for how the final product will turn out. These ice cream recipes are made with superfoods and tonic herbs. They are low glycemic and super-packed with nutri#on. They could even be used as meal replacements! In making these recipes, I purposely did not use sugar because so many people are dealing with blood sugar issues, whether it comes from dealing with a health challenge such as candida or diabetes, or even something more serious. Instead, I used stevia and xylitol for sweeteners. If you have a sensi#vity to one or the other of these ingredients, it’s fine to replace them with something else, but most people will be able to enjoy these op#ons and will benefit from the low glycemic sweetness. www.BestRawChef.com RawFood4Me@a.net Phone: 720.352.1754 General Instructions This base recipe for making ice cream is the star!ng point for any flavor you can think of. If you start with this recipe, you will create a neutral – slightly toffee flavor blend which can be adapted according to your taste. I include this recipe so you can play in the kitchen with adding your own fruits and flavorings and s!ll come out with a great consistency. The trick to successful ice creams is to split the ice in half. Put half of the ice in the boom of the blender, add your flavorings and ingredients next, and sandwich these in between the second half of the ice. For these recipes I used 6-7 regular sized ice cubes in each half of the recipe. If you don’t have a VitaMix blender, I would recommend star!ng with crushed ice to make it easier to blend. Even if you have a VitaMix, you will need to use some elbow power and the tamper to mix everything completely and make a creamy product. If you add any liquid to this mixture, you may end up with something more like a smoothie than an ice cream. If this happens, you can always pour the mixture into a container and freeze it un!l it is solid enough to scoop. Base Ice Cream Recipe 2 cups ice (split into 2 por!ons: 6-7 large ice cubes each por!on) 3 heaping TBS Tocotrienols 1 TBS Mesquite 1 TBS Maca 1 TBS Raw Almond Buer 1 TBS Xylitol Stevia – to taste (Plain, Vanilla, English Toffee and Chocolate are my favorites) www.BestRawChef.com RawFood4Me@a.net Phone: 720.352.1754 Mint Chocolate Chip Ingredients: 2 cups ice 3 heaping TBS Tocotrienols 1 TBS Mesquite 1 TBS Maca 1 TBS Raw Almond Buer 1 TBS Xylitol 1 TBS Vitality Greens by Body Ecology (or your favorite green superfood powder) 2 tsp Barley Green powder 1 dropper Peppermint (Herb Pharm) or a couple drops food grade essen!al oil 1/2 dropper each: Chocolate, Vanilla, English Toffee liquid stevia Blend according to General Instruc!ons, above. I used 2 squares of Flora Raspberry Acai Omega Truffles for this batch of ice cream pictured. You could also add your favorite kind of frozen berries. This ice cream is great for building the healthy bacteria in the body which helps improve diges!on and immunity. They strengthen the organs and increase energy, among other benefits. These herbs are safe for anyone to take on a regular basis. The photo shows the ice cream topped with a warm carob fudge sauce. www.BestRawChef.com RawFood4Me@a.net Phone: 720.352.1754 Coconut Caramel Swirl Ingredients: Coconut water, frozen into 1 full tray of ice cubes Fresh or frozen meat from one young coconut 3 heaping TBS Tocotrienols 2 TBS Xylitol 1 TBS Maca 1 TBS Raw Almond Buer 1 TBS Lucuma 8-10 drops Medicine Flower Coconut Essence Vanilla stevia to taste Blend all ingredients above according to the General Instruc!ons, then hand mix in a small scoop of unsweetened shredded coconut. Gently add raw Coconut Nectar (Coconut Secret) and s!r lightly to swirl so that it looks like a caramel ripple throughout the ice cream. Either serve immediately or freeze a lile longer un!l you can scoop the ice cream and it holds its shape. Top with more shredded coconut and coconut nectar if desired. Yum! Use immediately. Pour any extra sauce into a glass jar and refrigerate. This will keep well in the fridge for several days.
