Commodore’s Letter Gerald Lalonde The year 2015 was one of many accomplishments and we cannot help but feel the energy and optimism that comes with a growing membership. The themes for 2015 and 2016 center around “Connections”. We are building on our relationships with our long-term members, forming bonds and integrating new families into our activities, as well as reaching out to prospective new members. that you will be invited to join one or more tables and make new connections with fellow members. We have extended Wednesday night dining thru the winter months, so there are even more opportunities to take advantage of your membership. At the Annual Meeting we described the Taste of Sagamore outreach to connect with prospective new members. While we always encourage members to bring friends down to the club to see what SYC has to offer, “Taste of Sagamore” is a slightly more formal process where anyone interested in membership can make a one-time reservation to dine at SYC on a limited availability basis. Richard Denby Treasurer While no one enjoys additional expenses after the holidays, Sagamore dues are fair and very reasonable compared to the majority of private clubs in the New York metropolitan area. This is attributable both to the efforts of your board to monitor and control expenses, and volunteer participation in every facet of club operations. The hard work and dedication of our members helps the Club keep expenses down yet offer a great variety of activities and events. Thanks to all who work tirelessly to make Sagamore a great Club! The $50 minimum monthly food service requirement has not been increased for 2016. Come often and enjoy the terrific food prepared by our own Chef Rosario. JANUARY, 2016 SYC EMPLOYEE SPOTLIGHT: A Monthly Column by Kerriann Brosky ROSARIO GAMBINO – SYC Executive Chef Chef Rosario Gambino has been married for 33 years and lives in Bethpage with his wife Michelle. They have three grown children – two daughters and a son. Kerriann – How long have you been working at Sagamore? Rosario – A year-and-a-half. I started June 1st, on my birthday. And it was supposed to be for only one day – Sunday. Kerriann – Where did you go to school? Rosario – Culinary Institute for a few years, and then I finished up in Syosset at the Culinary Academy of Long Island. Kerriann – What were some of your previous jobs? Rosario – Before here I was working for the Marriott Residence Inn in Plainview. I worked for the Hilton in Plainview, and I was the executive chef for the Holiday Inn in Carle Place. I also had a business for 15 years in Brooklyn. I lived in Queens. It was an Italian restaurant in Canarsie, Brooklyn. I was there from 1985 – 2000, then I sold it, bought a house and moved over here. Kerriann – What was the name of the restaurant? Rosario – It was named J & S. Kerriann – What do you do work-wise besides Sagamore? Rosario – Sometimes I do private chef, or I work at friends of mine delis if they need help. I keep myself busy on my days off. Kerriann – Do you cook at home? Rosario – Yes, all the time. 6 Kerriann – Does your wife do any cooking? Rosario – Yes, my wife cooks too. Kerriann – What is your favorite food and your least favorite food? Rosario – Indian food is the least, and my favorite food is Italian. Pasta is my FAVORITE! Kerriann – What are some of your interests? What do you do for fun? Rosario – I enjoy a good cognac and a cigar. I do that for fun. I fix the house – honey-do this, honeydo that. There’s a lot of honey-do. If I have time I watch sports on TV. I’m into sports. Kerriann – What do you like best about working at Sagamore? Rosario – The people. I think the people are very nice, and I get to know what they want. So I try to please them all. I don’t like to work in a place where it’s hard to communicate with people. That’s why I got out of the hotel business. Kerriann – Besides cooking here, what are some of the other tasks you do? What does your job entail? Rosario – Well, my job is to run a restaurant. Besides cooking, it’s getting everything together for the dinner, set up the dining room, clean the dining room, get the staff, shop, labor control, food control, and be ready for the event – have the place ready when it’s supposed to, and dealing with the workers and training staff. Kerriann – What is the most challenging part of your job here? Rosario – Wednesday nights in the summer when the sailors come back, and make sure everybody gets to eat. Kerriann – What would you say your specialty is? Rosario – Zeppole is one of my most popular. People like that, and most of my specials. They like all the specials, but we need to put the zeppole on top. Kerriann – What is the best thing about being a part of Sagamore? Rosario – Communication. Being able to talk with everybody. I get to know people and people get to know me. My best part is at the end of the night when I get my glass of wine and I sit down with the members, and some offer me a glass of wine. After serving food every night, it relaxes me after working all day. And sometimes I get cigars too. 7 ! JANUARY, 2016 CONNECTIONS TO THE PAST Skeet shooting has been a long-time part of the winter life of Sagamore. If you look in the trophy case in the clubhouse, you will find ‘Top Gun’ trophies from the early ‘60s. Checking old Scuttlebutts, I have found many references over the years to the meets with various local clubs including Bayville Sportsmen’s, Mill River Rod and Gun and the Peconic River Sportsmen in Suffolk County. Although they called themselves ‘sportsmen’, you will notice from the photo taken in the ‘70s that there were a good many women in the group as there are today. Can you pick out a younger TJ Johnson who earned Top Gun in the Women’s Division of the Commodore’s Cup meet in 1991? Mary LoRusso who came in second is also in the picture. In that same year there is a headline in Scuttlebutt which reads “Skeet Shooting at Sagamore. Will It Survive?” There was much environmental pressure to stop the use of lead shot and in September 1991, “After many hours of soul searching”… ”shooting was terminated because of the law and the potential liability to the club.” After a period of downtime, the Sportsmen rose again using steel shot. And on it goes today. Check the time and days in Scuttlebutt and come down to see what goes on and perhaps try your hand at shooting. And you can enjoy Chef’s creations as well. Happy New Year. JANUARY, 2016 Sagmore Yacht Club Annual Bake-Off Contest The Sagamore Yacht Club annual bake-off contest was held during the holiday party on Sunday, December 6th. Members Bill and Santa Burke coordinated the event, and judges were Georgia Gehrling, staff member Meghan Rottkamp, and Marion Yeager. Third place went to Ginny Johnson for her pecan pie. Second place went to Joan Greene for her apple strudel. First place went to Ryan Brosky for his chocolate cream pie. Congratulations to all our winners! Here’s Doug McMillen, everyone’s favorite SYC bartender. His photo was missing from his interview last month due to an error. We rely heavily on email notices to keep members informed about upcoming events, so it is important that we have your current email addresses on file, and yes you can provide us with more than one; send updates of email addresses to Secretary Alan Schaub at “[email protected]”. Another important communication tool we use is the Scuttlebutt, which includes information about activities at the club, and who to call for details of each event. You should also be familiar with our website at www.sagamoreyc.com; there you will find a calendar of upcoming events, current and past issues of the Scuttlebutt, and much more. I plan to come down to dine - what do I do? Check the weekly email from Dining Chair Lindsay Thornton for hours and specials, and then go the website to make your reservation on-line; you can also enter and save this link to avoid a few keystrokes each time: www.sagamoreyc.com/dining/. Food & Bar – who should I tip, and when? You should reward our employees who provide excellent service, just as you would in any restaurant. Food servers are tipped separately from the bartenders, and each will have a cash tip jar for that purpose; we are not set up to allow tips to be put on credit cards or charged to house accounts. (The only exceptions are: 1) special club events where tax and tips are included for the food servers, but not the bartenders, and 2) private party events, where all tips are included.) What about tips for launch drivers? Regular members acknowledge our professional launch drivers in the manner of their choice; some will tip on each trip, some will tip annually at the holiday season. I am thinking of having a party at the club - where do I start? You start by contacting our Private Party Chair Jeanne Lafiteau. They should contact our Membership Chair Kevin Curry by email at “[email protected]” or phone at 917-881-3933. I have a question about my monthly bill or statement - who do I call? Our bookkeeper, Shelly Fishman, is in the office Mondays and Thursdays; he can be reached by email at [email protected] or call the office on Mondays and Thursdays at 516-922-0555. Why do I have to handwrite and mail a check each month? You do not. Many members have found that the most convenient way to pay bills is to take advantage of their banks free on-line bill paying, and they have added Sagamore Yacht Club as a payee. Paying bills on-line through your banks highly secure systems is free, safe, easy, saves you the cost of postage, and you do not need the clubs bank account information to set up on-line bill payment. (Some banks also offer free or low-cost ach payments, and if you prefer that form of payment, we can accept ach transfers as well; email Treasurer Rich Denby at [email protected] and he will provide you the clubs bank account information.) I lost my key fob or it has stopped working, how do I get a replacement? Occasionally the key fobs will get “de-magnetized” and no longer function. Our Treasurer, Rich Denby, is also our Security Chair. He can be reached by email at [email protected]. I have an idea, a comment or a question - who do I contact? Officers and their Committee Chairs are listed in the Roster and on the Officers Board in the front hall. If you are not sure which Officer or Committee Chair to ask, you can always contact Commodore Jerry Lalonde by email at [email protected] or phone at 516-297-7773. 14 ! JANUARY, 2016 Monthly Dining Minimum Effective January, 2015 Effective January 2015, there is a $50 per month Dining Service minimum spend requirement, as discussed at our Annual Meeting in November. Some frequently asked questions and answers: Will I still get billed $250 annually for “Food Chits”? No, you will see a reduction in your annual billing, as we will no longer charge for “Food Chits”. How does the minimum billing work? Each time you dine, you simply sign, it’s our “Dine and Sign” policy. If you spend more than $50 in a given month, that is the amount you will be billed at the end of the month, plus tax. If you spend exactly $50 in a given month – that is the amount you will be billed at the end of the month, plus tax. If you spend less than $50 in a given month, you will be billed $50, plus tax, that is where the monthly minimum comes into play. You will receive the bill in the mail, which can be paid by check only, no credit cards. What about tips? Tips are not included in regular dining bills, bar bills, or monthly minimum bills, and you are asked to tip your waiters and bartenders in cash each time you dine, except for Special Events. How do tips work for Special Events? Pricing for all Special Events will include Tips, and Sales Tax as well. Do Special Events count towards the monthly minimum? No, they do not. Do bar purchases count towards the monthly minimum? No, they do not. If I bring guests and I sign for their meals, does it count toward the monthly minimum? Yes. Can I “carry-over” unused minimums and make up for it in subsequent months? No, that would not provide the club the benefit of the monthly minimum policy. Why did we change to Monthly Minimums? The new Dining Service offered in 2014 was so well received, we wanted to continue offering it in 2015. After considering numerous options, we implemented the new policy to offer weekend service in the off-season, which allows us to be prepared for ramping up to expanded service in-season. Full-year service involves a cost commitment, and the monthly minimum allows us to cover those costs without increasing dues. What about the bar? There is no minimum monthly spend requirement for bar purchases. You can either settle your bar bill with a credit card each visit, or simply sign. If you sign, the bar purchases will be added to your monthly dining service bill, plus tax. Bar tips are not included in bar bills, and you are asked to tip your server in cash each visit. Also effective for 2015, we will allow members to bring their own bottles of wine to regular dining service, not Special Events, subject to a $20 per bottle corkage fee. Board of Trustees 15 JANUARY, 2016 To All Members Please remember that the Club is for us all to enjoy with fellow members, and the occasional guests, whether friends or family. If you are planning to come to the Club with a total group of 12 or more members/friends/family, you must contact our events coordinator Jeanne Lafiteau ([email protected]) to ensure there are no conflicts with scheduled events. For larger groups, the Club is available to Members for private parties, and Jeanne can assist you with making those arrangements. Within the above guidelines, you are welcome to bring your own food only when food service is not being offered; and you may BYOB only when the bar is not open. Please clean-up and place all trash in the trash receptacles or recycling bins. Parents of young children, for the safety and enjoyment of all, please note that there is no running in the Clubhouse or on the upstairs deck. Pet owners, please note that pets must always be leashed and are never allowed in the Clubhouse. There is no smoking (including E-cigs) in the Clubhouse or while on a launch.
