Neil Waring, who is knowledgeable about many topics in and
around Guernsey will share some of those facts with us in his
presentation. Neil is a published author whose main interests are
geology and history.
Everyone is welcome to attend!

Oct. 4—AMAZING APPLES
It’s Happley Appley time with everyone
joining in the fun of bobbing for apples and
listening to some great apple stories. We’ll do
a fun apple craft and receive a yummy caramel
apple treat.
Oct. 11—POPCORN HARVEST
It’s all about popcorn today!!
We’ll be enjoying popcorn
games and listening to
some fun popcorn stories.
Everyone will join in doing popcorn art
and then enjoy a popcorn treat from
our own popcorn machine!
Oct. 18—SPIDERS SPIN A STORY
A live tarantula will visit
our library today. We’ll
participate in action
poems and rhymes about
spiders and hear spider
stories. Treats will be
some cute and tasty spider themed snacks.
Oct. 25—PUMPKIN
HARVEST
Everyone will bring a pumpkin
and use their imagination to
decorate it creatively. There’ll
be several pumpkin stories to

Borscht
This looks like a great
way to use up late harvest
garden vegetables.
Ingredients
2 lb. uncooked beetroot, peeled
2 carrots, peeled
2 celery sticks
3 tbsp. butter
2 onions, sliced
2 garlic cloves, crushed
4 tomatoes, peeled, seeded and chopped
1 bay leaf
1 large parsley sprig
2 whole cloves
4 whole peppercorns
5 cups beef or chicken stock
2/3 cup beetroot kvas (the liquid form pickled beetroot)
(Cook’s Tip: Beetroot kvas, fermented beetroot juice, adds
an intense color and a slight tartness. If unavailable, peel
and grate 1 beetroot, add 2/3 cup stock and 2 tsp lemon
juice. Bring to the boil, cover and leave for 30 minutes.
Strain before using)
Salt and freshly ground black pepper
Sour cream, garnished with snipped fresh chives or sprigs
of dill.

Cut the beetroot, carrots and celery into fairly thick
strips. Melt the butter in a large saucepan and cook
the onions over a low heat for 5 minutes, stirring occasionally.
2. Add the beetroot, carrots and celery and cook for a
further 5 minutes, stirring occasionally.
3. Add the garlic and chopped tomatoes to the pan and
cook, stirring for 2 more minutes.
4. Place the bay leaf, parsley, cloves and peppercorns in a
piece of muslin and tie with string.
5. Add the muslin bag to the pan with the stock. Bring to
the boil, reduce the heat, cover and simmer for 1 1/4
hours, or until the vegetables are very tender.
Discard the bag. Stir in the beetroot kvas and season. Bring
to the boil. Ladle into bowls and serve with sour cream garnished with chives or dill.

$5 off your registration fee.
Guernsey Branch Library Summer Reading Program
Winners
Thank you to V.F.W. Post #4471 for annually donating a girls and a boys bike for the Guernsey
Branch Library’s Summer Reading Program, and the
Platte County Library System for 2 new Dragon
brand Tablets.
V.F.W. members presented Summer Reading awards on Fri. Sept. 9th
during an Elementary Pep Assembly at Guernsey-Sunrise High School Gym.
Aylianna Hollin won the Girl’s Bike, and Charlie Hollin won a Dragon Tablet
(Daughter & Son of Connie Hollin).
The Boys Bike winner was Marcus Swingholm (Son of Doug and Toni
Swingholm), Tablet winner was Kaydence Rodriguez (Daughter of Jamie &
Daniel Rodriguez), Julian Rodriguez, William Knowlton, & Riley Jones, Not
pictured are Matthew Swingholm, and Braden Stenson.
