We learned to make this chorizo from our family in the outskirts of Ucacha, a small town about 60 miles east of Rio Cuarto, in the heart of the Humid Pampas. We use free-range grass-fed beef and %100 vegetable diet fed pork. IL Our handcrafted sausages are made with local Virginia BODEGA BOGATI wine, fresh herbs, and are stuffed into natural hog casings from fine cuts of beef chuck and pork shoulder.
