innisbrook pipeline
Dear Members,
We’re in the heart of fall at Innisbrook and we have lots of fun events and
activities for all ages.
October is full of spooky and not-so-spooky fun for the entire family. Adults
in the Halloween spirit can head to the Osprey Bar for a costume contest
and our bartenders’ ghoulish “Witches Brew.” Our younger members will
shriek with delight at our Halloween weekend activities at the Loch Ness
Pool, including a Haunted Hallows maze and a candy corn carnival.
Don’t forget to stop by the Indaba Spa for autumn-inspired treatments that
are sure to rejuvenate as the weather begins to turn. Indaba’s treatments,
such as the eminence pumpkin & yam enzyme peel and the pumpkin spice
manicure & pedicure, incorporate ingredients akin to the fall season.
For more information on member activities or specials, please contact your
membership office.
Our public relations team has also been hard at work getting the coverage
for Innisbrook and our sister properties. We are excited to share these
great stories about our properties:

October Practice
Course Closings
From the Desk
of the Director of Golf:
Valued Members,
After a long, wet summer, the Copperhead Restoration project is nearing completion. The entire
course and practice facilities have all been sprigged or sodded, leaving the next two months
dedicated for grow in. The grounds crew will remain focused on growing the establishing sprigs
and getting the course ready to open later this year. We had originally planned on the course
opening on November 1, 2015 but due to over 36 inches of rain that fell between July and early
August, we’ve had to adjust the opening date to Friday, November 27, 2015. Although we’re
disappointed that the opening day had to be moved, we are confident that this new date will
ensure a healthy golf course for years to come.
pipeline | 4
I’m happy to report that our new golf carts have arrived! All three facilities have brand new
Club Car Carts. We stayed with our current color scheme of Black at the Copperhead, Green
at the Island and Beige at the North and South. I’d also like to personally invite you to our new and improved Member Guest Tournament being
held January 28-30, 2016. Every aspect of the event has been enhanced to give you and your
guest an incredible experience that you won’t soon forget. All rounds will be played on the
newly restored Copperhead Course with an exciting new format coupled with amazing cuisine
throughout the three days. Space is limited to the first 60 members so don’t delay if you would
like to attend. If anyone has questions about any of the work that was done to the Copperhead
this summer or about the new and improved Member Guest event, please email me at bobby.
[email protected] and I’ll be happy to answer any questions that you have.

Table Talk with Chef Andrew Coniglio
German Spaetzle
One of my favorite side dishes from Germany is a boiled dumpling called Spaetzle. I learned this recipe
while working in a kitchen that was owned by Germans and Austrians, so I had to make sure it was
perfect during my daily preparation of this. Spaetzle translates to “little sparrow” and is perfect to
serve with Schnitzel, Sauerbraten or even great on its own tossed in a little Parsley Butter. Preparation
of this dish gets a little messy when making the dough because you need to fold everything together
by hand and it gets very sticky. This dough needs to be cooked right away when made but once you
boil them they can be kept in the refrigerator and will be easy to reheat.
Yield: 4-6 portions
• 2 Cups All-Purpose Flour
• 2 Teaspoons Salt
• 1 Teaspoon White Pepper
• 2 Teaspoons Ground Nutmeg
• 4 Whole Eggs (lightly beaten)
• 8 Cups Water
• ½ Cup Vegetable Oil
Method of Procedure
1 Bring stock pot of salted water to boil.
2 In bowl, mix all dry ingredients.
3 Add beaten eggs to mixture and slowly add the water until a thick batter consistency
(add more or less water if needed).
4 Add oil and mix by hand only until all ingredients are incorporated (do not over mix or
your Spaetzle will be tough).
6 Once the noodles start to float on the top, turn off heat and remove Spaetzle.
7 To finish off, sauté in parsley butter and adjust seasoning to taste.
pipeline | 21
5 Press dough through large holed sieve (colander) directly over the boiling water
(if water is not at a hard boil the dough will sink to the bottom and not cook properly).

Fall banding dates at the Hammocks are Oct. 4, 16, 25 and Nov.1.

Birds from the north are winging their way southward each day by the millions for their winter
homes. From Canada they only need to refuel just a couple times before reaching South America.
At the Dunedin Hammocks city park we have been banding migratory birds for five years. Each
spring and fall we record the birds coming and going. The station is lead by Jim McGinity and
his group of volunteers from Audubon. Each bird we net is examined for weight, age, sex,
fat, wear and tear and banded for future ID. Occasionally we do recapture banded birds,
which provide valuable information. This small city park is a magnate for hungry birds on the
wing. Come and join us on Sunday mornings during migration. You can even release a small
bird back into the wild. My bird blog site will have more details at Davebrd05.wordpress.com
