Citrus Lollipops with Toasted Pecans
The zippy citrus flavor is the perfect accent to the sweet and savory lollipops.
Prep Time: 15 minutes
Cook Time: 10 minutes
Yield: 4 servings
1 tablespoon extra virgin olive oil
1/4 cup diced onion
1 teaspoon minced garlic
1/4 teaspoon kosher salt
8 ounces Lollipops, ends trimmed
2 tablespoons water
1 teaspoon balsamic vinegar
1/2 teaspoon grapefruit zest
2 tablespoons feta cheese, crumbled
2 tablespoons finely chopped pecans, toasted
1. Heat oil in large skillet over medium heat. Add onion, garlic and salt; cook 2 minutes,
stirring occasionally.
2. Add Lollipops, water, balsamic vinegar and grapefruit zest to skillet. Quickly stir
ingredients and cover pan with a lid and cook 3-5 minutes or until the lollipops are tender.
3. Garnish with feta cheese and pecans.
Cook’s Note: To toast pecans spread on an ungreased cookie sheet. Bake in a preheated 350
degree oven for 5 to 7 minutes or until slightly browned.
