Kadar Board of Directors’ President and Owner Representative [email protected] Piñon Pointe - 2013 - Issue 1 A Message From Your Resort Manager Employee Spotlight Robert Bedwell - 2012 Employee of the Year Dear Valued Owners, In 2012, the Piñon Pointe management team oversaw the completion of several reserve projects that will enhance the quality of your resort. These projects included replacing all of the patio furniture in our Phase 1 units, as well as the replacement of pots, pans, china, and glassware in Buildings One through Seven. In the Activities Center, the pool was re-plastered and we upgraded the TV’s in the Fitness Center to flat screens. Operations also replaced seven golf carts for the Engineering staff, which will now allow us to assist you more efficiently. We have another busy year ahead of us. The Board has approved the following reserve projects for 2013: • Replace the server network, PBX and voicemail systems When SuddenLink informed us that they would not be able to support the hardware and infrastructure of our network (due to age), the Board approved the improvements necessary to provide all of our owners and guests with a better internet and television experience. This project is now complete and I hope that during your next stay with us, you will enjoy the increased speed and quality of our new system. Surrounded by his fellow staff members, Robert Bedwell, from Engineering, was named Employee of the Year at a special luncheon held on February 21st. His willingness to assist in any way positively impacts both our owners and his co-workers and makes him an integral member of our team, All of our engineers work very hard behind the scenes to keep our property in tip-top shape. They can repair anything from A to Z. From clearing the snow and ice off the walks in the early dawn before you arise in the winter to keeping the roof top air conditioners working during the hottest months. With 207 rooms full of appliances and electronics, you can imagine how much knowledge and expertise is required of our Engineer and Rob does it all with a cheerful attitude and a strong work ethic. He is an enthusiastic member of our Employee Engagement committee and takes great pride in our property and his role in Hyatt Residence Club. Visit the Hyatt Piñon Pointe Concierge desk, where you can pick up the Sedona Hiking postcard. On the postcard, you will find a a QR code to download the free Sedona Hiking app to your smart phone. The Sedona Hiking app provides descriptions, trail maps and GPS tracking with offline maps. You don’t need a cellular or network connection once you are on the trail. You’ll get directions to the trail head, hike difficulty ratings, points of interest and descriptions of what you can experience on each trail. The Sedona Hiking app makes it literally as easy as 1...2...3! After browsing the hike list page and deciding on the pieces of Sedona you’d like to experience, start the Sedona Hiking App and... Step 1 Download the hike with the Download Hikes button. Step 2 With the Select Hike button, select from the hike(s) downloaded. Step 3 Hit the trail by selecting the Take a Hike! Button, (don’t forget to bring water). While staying at Piñon Pointe, some of our guests have come across a family of unusual local creatures. Our resident javelina family might cross your path or be sighted from your balcony. They normally come out in the evenings and early mornings to forage for food. When they see a javelina for the first time, most people think they are seeing a wild boar. A javelina is actually a collared peccary. The Spanish explorers gave them the name javelina because of their sharp tusks, (jabaline is the Spanish word for javelin). Javelina can get as large as 60 pounds and stand about 2 feet tall. They have poor eyesight but good hearing. They mate year round and give birth to 1 to 3 babies once a year. They have a strong odor and are often referred to as skunk pigs. They can often be smelled before they are seen. Horses often detect their odor and are known to spook when they sense javelinas are nearby. The northern range of this animal starts in the desert regions of Texas, New Mexico and Arizona. The southern range is in Central America and northern Argentina. They live in desert areas rich in 1-800-GO-HYATT vegetation or areas with canyons and cliffs where water is nearby. In the United States, their main source of food is the prickly pear cactus and agaves. With our resort’s large number of prickly pear cactus, the local javelina family can be found enjoying our fruit in late summer along with roots, bugs, berries, and grass. Although you may see javelinas while you’re exploring the shops around town, take caution. As with any wild animal they can be aggressive, so be sure to keep your distance. Similar to the popular “Cows on Parade” in Chicago, Sedona area businesses were invited to sponsor a pair of the javelinas, and decorate them in whatever theme they preferred. The colorful “Javelinas on Parade” statues, a mother javelina named Mabel and her baby, Oscar, have been in place since 2005. Piñon Pointe - 2013 - Issue 1 Featured Recipe The Ultimate Barbecued Chicken Ingredients Brine: • 2 quarts water • 2 tablespoons kosher salt • 1/4 cup brown sugar • 2 garlic cloves, smashed with the side of a large knife • 4 sprigs fresh thyme • 6 chicken legs and thighs, still connected, bone in, skin on, about 10 ounces each The Ultimate Barbecue Sauce: • 1 slice bacon • 1 bunch fresh thyme • Extra-virgin olive oil • 1/2 onion, chopped • 2 garlic cloves, chopped • 2 cups ketchup • 1/4 cup brown sugar • 1/4 cup molasses • 2 tablespoons red or white wine vinegar • 1 tablespoon dry mustard • 1 teaspoon ground cumin • 1 teaspoon paprika or smoked paprika if available • Freshly ground black pepper Directions For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (minimum time: 15 minutes) to allow the salt and seasonings to penetrate the chicken. Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme bundle and cook slowly for 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly (be careful not to burn) for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving alongside the chicken at the table. The rest of the barbecue sauce will be used for basting the legs. Preheat oven 375˚ degrees F. Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Oil the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry with paper towels. Arrange the chicken pieces on the preheated grill and cook for 5 minutes, turn, and cook for www.hyattresidenceclub.com another 5 minutes (total cool time is 10 minutes). Transfer the grill-marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes at 375˚ degrees. Remove it from the oven and then brush liberally, coating every inch of the legs, with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce on the side. 4 servings.
