WELCOME TO MIMAGAZINE
MARKYATE AND FLAMSTEAD
This magazine includes the end of season
Cricket Awards at MCC, which I couldn’t
attend, but looking at the photos, taken by my
husband, it looks like everyone was in the mood
for celebrating. Our reporter Michelle Pratt,
also went out with the children of Flamstead
Pre-School to give harvest festival gifts to the
elderly people of Flamstead.
November brings with it, short days and long
nights but the gloom is lifted as children,
giddy with excitement, enjoy Fireworks Night.
This year, the fireworks night in Markyate
is 7th November at the village school and in
Flamstead on 8th November at the village
school - so have fun and be safe. There are
also Remembrance Sunday parades on 9th
November in both parishes and the poignancy
is heightened this year, with the WW1
centenary.
The two locals who have hit our headlines
are Jack Moule who is an amazing jet-ski
professional and has gone down under to
Brisbane to work for a display team and Ben
Johnson who was mascot for the day for
Saracens’ rugby team. I was struggling to
decide which one of these two young men
should be the front cover, but it was an
impossible choice so we tossed a coin in the
office – heads for Ben and tails for Jack – and
heads it was!

Feeling under par?
Detox naturally
If you live a toxic lifestyle—maybe you smoke,
drink frequently, or eat a lot of fast food—there
is no doubt that you will eventually start to be
weighed down by the damage done. However,
you can detoxify (or cleanse) the body using
certain foods to help counteract the toxins.
So regardless of weight loss, younger looking
skin, better digestion, or just more energy is
your goal, here are ten of the most effective
foods you can eat to help detox and cleanse your
body.
1. Artichokes - Steamed artichoke
leaves will get your body back to
optimal function.
2. Berries - boost your berry intake
if you want to improve digestion, make your
skin and hair brighter, and regulate your bowel
movements.
3. Lemons - a slice of lemon in your morning
tea or glass of water will brighten your skin,
improve immunity, and help ward off
disease-forming free-radicals.
4. Watercress - Similar to
rhubarb, watercress is a natural
diuretic, which naturally eliminates
toxins from the body.
5. Flax - Ground flaxseeds are
the ideal detox food. Mix ground
flaxseeds into your cereal or fruit
smoothie.
6. Apples - Packed with essential
nutrients a daily apple encourages
bile production, helping the liver get
rid of those nasty toxins like metals,
food additives, and pesticide residues.
7. Brown rice - Whole grains, like brown rice,
repair much of the damage we’ve done care of
the fast food drive thru.
8. Ginger - Ginger curbs
nausea, encourages digestion,
soothes bloating and gas pain, and
strengthens immunity all in one root.
9. Cabbage - cabbage is an excellent
detoxifying food that can help with
weight loss.
10. Garlic - Garlic is naturally
antiviral, antibacterial, and
antibiotic. Best eaten raw (and
alone) you can add fresh garlic to a
sandwich, soup, stew, or salad.

Penning’s Progress
Here we summarise the key issues
and activities of local
MP Mike Penning this month
Mike Penning’s Markyate Coffee
Morning
Mike had one of his surgeries at the Markyate
Café on Saturday 27th September 2014 at 1011.30am.
Café proprietor Toni Maynard said, “Mike was
really nice and people liked him. He was very
busy and I have heard that he got back to people
very promptly with answers or updates to their
questions. I was very busy with the café but the
feedback is that his visit went down well.”
“Thank you to Toni Maynard for her help and assistance,” said Mike.
The next Drop-In Coffee Morning is planned for
Flamstead on 22nd November.
Mike said:
“Stoptober is a great campaign and a great
opportunity for anyone who wants help to kick
the habit. It is well recognised that if you can
stop smoking for just 28 days you are five times
more likely to stop altogether.”
Chief Medical Officer Dame Sally Davies
said:
“Far from making you more depressed, stressed or
anxious, there is evidence to suggest that you are
likely to feel more happy and relaxed in the long
term by quitting smoking. We are asking anyone
who has considered quitting to join the thousands of
others and take up the challenge and give Stoptober
a go – stop smoking and start smiling.”
Smoking remains the largest cause of
preventable illness and premature death
The 2013 campaign saw 250,000 people
take part and 65% of those who took part
successfully quit for 28 days. Stoptober provides
smokers with a range of free support including
a new stop smoking pack, a mobile phone
Mike Penning urges smokers to
join the Stoptober Challenge
Mike Penning is backing the ‘Stoptober
Challenge’ campaign run by Public Health
England. The campaign challenges people to quit
smoking for 28 days in October.

app, text messages, quitting advice and tips
for coping, as well as the encouragement and
support from thousands of people quitting
together through Stoptober social media
channels.

great opportunity to do so. Sign up to the

Mike, who backed the campaign to save the
ice rink, said:
“I am delighted that the ice rink is to be refurbished
and saved at Jarman Park. This is a great outcome
and I congratulate the owners Tesco Pension Fund,
the Borough Council and Planet Ice on securing a
successful outcome which will be a great benefit for
our town. This is great news.”

Mike Penning welcomes launch
of Dacortium
Mike Penning has welcomed the launch of
Dacortium Limited. Dacortium is a consortium
of providers of public services in Dacorum
and will enable smaller charities and social
enterprises to collaborate to bid for public
tenders.
Mike said:
“This is a great initiative. We have a wide range
of excellent service providers in Dacorum some
large, but many are small or medium sized and
co-operation of this nature will mean they can work
together to bid for tenders to provide local public
services. I fully support this innovative approach
and will help out in any way I can.”

A final few lines for the cricket
season from Carl Smith…
photos by Mick Mitchell and Sammi Lewis
Back row, Steve Phillips, Lewis Boodle, Wally Greensmith, Carl Smith, Paul Skinner, Steve Stott, Ryan McQueen and
Nathan Pitts. Front row, Craig Mortimer and Kev Lo
Markyate Cricket Club gave new captains a
chance to run the final games of the season so
they could gain some experience for the future.
Wally Greensmith captained on 31st August,
against Kensworth. Batting first, MCC made
140 all out, with Lewis Boodle scoring his
third half century of the season and Kev Locke
scoring his first real runs with a fine looking
20. KCC always looked like they were in control,
chasing a modest total and they recorded their
first win against us this season winning by 3
wickets. Wally really enjoyed the captain’s
armband and he bowled really well with figures
of 3 for 30; Smith 2 for 21.
Our last game of the season saw Lilley CC visit
the rec for the first time on another lovely
sunny day. It was Tom Burton’s turn to skipper
and we managed to finish the season on a high.
Winning the toss, Burton chose to bat, and after
some tinkering with the batting line up, he sent
his troops out. One by one, they came back to
the tune of 20 for 7; a hat trick was taken as
well. Lee Carter was offering some resistance,
Smith walked in at 24 for 8 with some of the
Lilley players showing a bit of disrespect with
a few choice words being exchanged between
Smith and their players! Play resumed, and

HERE ARE THE WINNERS OF THE SEASON:
Left to right, Ang Allen, Julie Walker and
Sophie Carter
Carter hit a lovely 4 then get out the very next
ball, but he still showed some real fight and
character for his 20 odd. In came our overseas
player, Steve Stott (from Scotland!) and Smith
decided if we’re going to go down we might
as well go down fighting. He proceeded to set
about the Lilley attack, smashing his way to 50
off just 22 balls to the delight of the faithful
supporters in the clubhouse. Smith and Stott
put on a 60 run partnership with Smith finally
getting out on 55 and Stott 1 not out; a great
supporting role for our Scottish international.
MCC finished on 94 all out, and it was only
2.30pm and tea was not ready. So out we came
to bowl; Burton sounded the war cry to the
troops but it seemed to have little effect as Lilley
raced to 60 without loss of 9 overs. The ball
seemed to be doing nothing so after a discussion
it was arranged that the next time the ball went
in the hedge we would not be able to find it and
so the spare ball was called for. WOW 60 for

0 became 77 for 7. Could we pull off another
miracle like the first game of the season? Alas,
no we could not but we gave it a damn good
go and Lilley were a lot more respectful, Smith
being the pick of the bowlers picking up 4
wickets, with Burton and Boodle sharing the
rest. So that was it, we lost our last 2 games,
but the experience the boys gained will stand us
in good stead for next season. For our second
season back we had a really good result: playing
17, winning 10 and losing 5. We only lost 2 to
the weather so all in all, a really good season
was had, and it was played in the right spirit.
The new, the old and the inexperienced players
acquitted themselves really well and it was a
pleasure to be part of it.
Our end of season awards night took place on
the 13th September at the clubhouse. DJ,
Robson was on the decks playing the music, we
had a fines’ kitty of almost £100 to get through,
and a hog roast to tuck in to. The speeches went
on a bit but there were a lot of people to thank,
especially Taff Tibbs for getting us a pitch to
play on in some difficult situations.
Many thanks go to Mimag Markyate and
Flamstead and Markyate Monthly for following
our progress this season.

higher staff ratio than is recommended, giving the children extra attention and care. Your child can be with us from birth
until 12 years, taking advantage first of our baby room followed by stay and play in our toddler room and then government
funding in our pre-school! What’s more we offer school drop offs and pick-ups and then an afterschool club. This gives your
child routine, structure, great learning, healthy home cooked meals and the benefit of building a relationship with their
regular carers. What’s more all nappies, wipes, formula, meals, snacks and sun cream are included!
If you are looking for a home from home feel with brilliant learning and preparation for school, then please get in touch to
arrange a viewing. Spaces for September are already very limited, so do get in touch soonest. Sessions start from just £10.

Flamstead Harvest Festival
By Michelle Pratt
On Friday 10th October, the children from Flamstead Pre-School delivered their Harvest Festival
food parcels around the village to some of the elderly residents. They also paid a visit to St
Leonard’s Church to see the Harvest Festival display. This is the second year that the pre-school has
put together small food packages, and with the help of parents, they make a list of elderly in the
village who benefit from a package. It was a beautiful morning when I met the children and walked
around the village delivering the boxes. The children thoroughly enjoyed it and were delighted
when someone answered their door to receive a parcel! Many thanks to Pre-School Manager, Sarah;
Committee Members, Nichol and Nancy and helpers, Rose and Jackie.

Are You Ready
for Winter?
By Melanie Wooding-Jones,
Redbourn Auto Solutions
Caring for you and your car
The AA report that the majority of accidents happen over the winter months
with a steep rise in reported breakdowns. But why do our cars suddenly
become unreliable? What makes Winter different from other seasons?
The cold weather conditions
affect many parts of a car – the
oil becomes thicker (like honey
left in a fridge), fuel doesn’t
burn as effectively, pipes burst,
engines seize, batteries don’t
charge as efficiently and there
is more drain on the system.
As well as the doors freezing
shut and wipers stuck to the
windscreen!
As with all things mechanical/
electrical, if you look after
them they perform better.
After all, you wouldn’t put your
electric heater in the freezer
and expect it to work would
you?! So, with this in mind,
here are a few helpful tips to
keep you safe this winter.
page 22-24.indd 22
Battery
Let’s start with the major cause
of winter breakdowns….. the
car battery!
When the car is turned on,
there is a chemical reaction
that produces electrons. These
supply the battery’s current.
At normal temperatures they’ll
produce enough current to
keep the battery power full
and working well. The more
you drive, the more the battery
charges. In colder weather it
becomes harder for the battery
to produce enough current to
stay at maximum potential,
therefore the reserves drop.
There has to be enough charge
in the battery to ‘turn over’ the
engine so that it can produce
more energy. In cold weather
the power available, even when
fully charged, is only half what
it would be in warm weather.
The good news is that you can
take steps to reduce the chance
of your battery letting you
down.
 During a routine service,
your garage will check the
clamps and connections to
the battery are secure and
corrosion free.
 The life of a battery is
usually around 5 years, so if it
is older and there are signs of
struggling to start the car, best
to get it replaced.
 When you park, remove
any extra drain on the battery
10/14/2014 4:40:50 PM
Page 23
by turning off anything
electrical - wipers, heater,
lights, radio, etc. When
you come back to the car,
the charge goes directly to
the starter motor therefore
optimum ability to ‘turn over’
and recharge.
 On a manual car, dip the
clutch to prevent the car from
trying to start the gearbox
also.
Antifreeze/Coolant
The radiator in your vehicle
cools your engine and
needs a mixture of water
and Antifreeze to function.
Antifreeze prevents corrosion,
freezing and overheating of the
radiator, engine, water pump,
etc. Starting a car with a
frozen water pump could strip
the teeth off the timing belt
leading to expensive internal
damage, so it is vital to keep
this at the right mix and level.
Other issues you may
encounter could be:
Frozen screen washers –
Remember to use a screen
wash additive all year round.
Undiluted in winter works
best, but read the bottle first.
Frozen wipers - Trying to
operate windscreen wipers
stuck solid to the glass can lead
to blown fuses affecting other
more vital systems. Make sure
automatic windscreen wipers
are turned off – so they don't
try to operate when you turn
the ignition on.
Make sure the
wipers aren't
stuck to the
glass, before
setting off too!
Frozen door
locks and door
seals - A squirt
of WD40 in
the locks will
help as will a
light smear
of Vaseline or
silicone polish
on the door
seals (applied by
cloth to avoid
getting it on the
paintwork!). If
snow falls, clear
it regularly to
prevent the car
turning into a
block of ice.
Frozen
ignition locks
Anything
electrical can
become affected
by damp weather. The key here
is to keep the interior as dry
as possible – don’t leave snow
covered wellies or clothes in
the car overnight.
Windows frozen to their
frame - Best to leave the car
until it is warmed up and the
ice is melted. Windows can
detach from the mechanism
if you try to activate them, or
burn out the motor.
Frozen rear drum brakes
and handbrake cables Keeping your car clean through
the winter to remove corrosive
road salt is good, but try not to
use the hose or presser washer
to prevent the water getting
into the brake cables or drums
when.
Garage - Some people go to
the extreme and take their
battery inside, but our advice
would be to use your
garage if you are able,
which will keep the
vehicle dry and as
warm as possible.
Fuel - Be prepared for
untimely delays and
keep at least ¼ tank
of fuel in the car.

Winter Tyres
Winter tyres increase your
stopping distance by 11m in
temperatures below -7°C. It is
worth considering them if you
do a lot of driving! They are
made from a special compound
and tread design providing
drivers with excellent grip and
control in low temperatures.
The MET office statistics show
that the average temperature
last year remained below 7°C
for 6 months, making cold
weather tyres suitable for use
from October to
March.
If this is your
preferred tyre
this winter, it is
worth getting
them ordered
soon as demand
is expected to be
high.
At Redbourn Auto Solutions we put a high
emphasis on the safety of our customers,
therefore a Full Winter Check is a
complimentary service. To book call us on
01582 679300.
For more information on winter driving or
what to carry in your boot over the winter,
take a look at our website
www.RedbournAutoSolutions.com
Make sure you
and your family remain safe
this winter and don’t leave
anything to chance.
If you’d rather not have the
hassle of checking over the car
yourself, talk to a professional.

Ben Johnson from Markyate is
Saracen’s Good Luck Mascot for the Day
Nine year old Ben Johnson goes to Markyate school and plays rugby at
Harpenden Rugby Club for the under 10s. He was lucky enough to be
Saracen’s Team Mascot for a day so here are his words on this thrilling
experience.
How did you get selected for team mascot?
I was selected to be Sarries’ mascot because my
dad asked! Dad said, “If you don't ask then you
don't get.” So thanks dad for asking!
What did you have to do?
We got to Allianz Park early and met with a chap
called Tom who is a Saracens’ Pioneer who took
me through the things that I had to do. When it
came to it, I waited by the changing rooms and
when the captain (for the day was Brad Barritt)
came out, he took my hand and together we led
the Saracens out onto the pitch in front of 8,000
fans! I had a couple of photos taken and then I
had to run off the pitch (whilst waving to some
of my team mates and coaches from HRFC) as
the game gets going quite quickly.
How did it make you feel?
I was nervous but really amazing.
Did the captain or any of the players talk to
you about anything?
Yes, the captain asked me how I was doing at
rugby and what age group I was in. I am in the
under 10s so 2nd year of full contact rugby.
Who were they playing and did they win?
Saracens were playing Sale Sharks and Saracens
won 40-19.
How good at rugby are you?
Very good!
Are you hoping to be a professional player
one day?
Yes.
What was the best bit of the day?
When I ran out onto the pitch and had my
photos taken.
Do you get to keep anything as a memento?
Yes, I had the photos sent to me and I have my
new Saracens home shirt to keep.
Were you nervous?
Very nervous, but very happy.
Have you got any rubgy goals for the next few
years?
I want to get better at tackling, but I love
rucking and 'clearing' people out.

BOOKS
in the Belfry is back
After the success of Flamstead's first ever book festival in June, author
and broadcaster Barry Norman will headline a special evening session in
the historic setting of St.Leonard's Church on Friday 28th November.
Norman is one of the nation's
most popular and enduring
broadcasters, best known for
fronting the BBC's flagship
Film Programme for more than
25 years in a career which has
seen him meet some of the
world's biggest movie stars and
directors from George Clooney
to Martin Scorsese.
He will also talk about his
moving memoir See You In
The Morning, published in
paperback earlier this year.
Prompted by the death of his
wife Diana in 2011, this candid
and witty account of his life is
a heartfelt reflection on love,
marriage and loss.

Festival co-organiser Vikki
Orvice said: "Barry, who lives
in Hertfordshire, was keen
to get involved with us when
he heard about Books in the
Belfry this summer and has
kindly agreed to do this one-off
evening session.
"It should be a wonderful way
to spend a winter evening
in the beautiful setting of
Flamstead's medieval church as
well as picking up the perfect
Christmas present for family
and friends with copies of the
book available for sale on the
night. You will also be able to
meet Barry afterwards and get
books signed."
Proceeds from the evening will

St.Leonard's (FOSL) to raise
funds for vital repair work to
safeguard the unique medieval
wall paintings in the village
church.
Tickets are priced at £10

GOVERNOR VACANCY
Flamstead Village School has a vacancy for a
Governor. In order to maintain a healthy balance
of Governors who are not directly involved
in the School as a parent or on the staff, we
would welcome a new member from the wider
community; especially if you have a background in
either Finance or HR.
The role of a Governor is to provide strategic
oversight and act as a critical friend to the
leadership team in the School. The School achieved
“Good” in its recent OFSTED inspection, and
“outstanding” in some areas. You would be joining
a small and cohesive Governing body which is
committed to continuing this progress.

P
rofessional stunt and World Exhibition
Jet Skier, Jack Moule has secured himself
the ‘golden ticket’, quite literally.
Local lad Jack, 20, who has lived in Markyate
most of his life, first hit the headlines aged
just 14 for his outstanding achievements
in becoming the youngest ever winner of
the UK National Championships. He has
gone on to win many more British titles and
championships, and he has been given the
amazing opportunity of heading down under
to The Gold Coast of Brisbane, Australia to
page 30-31.indd 30
perform Jet ski stunt shows in SeaWorld
Australia. Jack will be part of The Jet Stunt
Extreme Team under the watchful eye of Aussie
owner Jon Cooke. Jon selected Jack to join
him and his team in Oz and couldn’t be happier
saying, “I select the elite, best Jet skiers from
all around the world to perform here with me
in Sea World and I know that Jack is at the top
of his game and a true professional; he was
the obvious choice for me and it wasn’t hard
making the decision. I’m really looking forward
to him joining me and the Team, he is going to
be great and he’ll love it!”
10/14/2014 4:45:20 PM
Page 31
Jack is no stranger to performing in front
of large audiences as he does so at many top
events. He has had a successful year travelling
all around the UK and Europe with the Offshore
PowerBoat Championship, entertaining
the crowds in between their racing. His
jaw dropping tricks, including his awesome
combination of back flip, after back flip, and
no-handed barrel rolls, are always so very well
received. He said, ‘Everyone always seems to
enjoy and appreciate my shows which is nice”.
Jack has made many TV appearances on his
Rickter carbon JetSki and Dasa 1200cc engine
and he has skied for a host of celebrities and
sport stars on many occasions over the years.
He said, “I have been really lucky and had
great fun since becoming a professional skier
and I really enjoy it. I have had the pleasure of
meeting so many famous faces and nice people
and visited so many amazing places, but to
be given this opportunity to join Jon and his
team in Sea World Australia really is the best.
It’s going to be an awesome experience and I
am so pleased Jon asked me. I can’t wait to get
started!”
Jack’s mum and dad are equally as excited for
him and extremely proud of his success.
page 30-31.indd 31
His mum Suzan
said, “Ian and I
are absolutely
delighted
for Jack. He
deserves it
as he really
is amazing
at what he
does and
has worked
hard. What
a fantastic
opportunity
for him
and I’m sure he will have the best time
ever. We are a very close family and will miss
him terribly whilst he is away but we are already
planning our first visit to go and see him!”
Super talented, all round extreme stuntman
Jack spends most of his time upside down on
his ski, which may come in more useful than he
first thought now he’s heading down under!
Good Luck to Jack and you can follow his
progress @JackMoule

HomeStyle Property Solutions
Mimagazine’s Janet Brown asked Stephen Phillips from HomeStyle
Property Solutions to tell us about the business
How long have you
been established?
HomeStyle Solutions was
established in 2006 and
originally operated in the East
Anglia region.
Describe the type of
work you undertake
We specialise in property
refurbishments, comprising
of redecoration, updating or
replacement of kitchens and
bathrooms. A typical project
would involve planning and
designing a new look and feel
to a property, for example
investment properties for the
lettings market. In these cases,
we would redecorate, to the
latest style and look, along
with new carpets or wood
laminate dependent on the
client’s choice and then finish
page 37.indd 37
the property with professional
cleaning, ready to be marketed
on the lettings market.
In other projects, we look at
the look and style that the
client is looking to create and
implement this through our
team to effectively “bring their
ideas to life”.
We have completed projects
involving loft conversions,
new extensions to refurbishing
offices in a manufacturing
plant for Heatrae Sadia. Some
of clients we have done work
for include: Tesco, Barclays,
HSBC, The Salvation Army,
Heatrae Sadia, William H
Brown and many private
clients.
What areas do you cover?
Bedfordshire. Recently we
have completed projects in the
West End of London, Taplow
in Buckinghamshire and
Belgravia, London.
What is the most unusual
job you have been asked
to do?
We were once asked to supply a
new bed for a boathouse on the
Broads, which may not sound
too out of the ordinary, except
that the bedroom was a cabin!
It required a special sized bed
which was a little tricky to get
inside, especially as we were
working in sub-zero weather
conditions - with snow!
Happily, it all worked out well
in the end.
We cover all of Hertfordshire,
Buckinghamshire and

Run for

claus this
Christmas!
Page 25
The annual festive fundraiser the Jingle Bell Jog & Reindeer
Run returns on Sunday 7 December, and hundreds of local
residents are preparing to fill the streets of St Albans dressed
as Santas and reindeer.
For the past seven years, the fun run has raised much-needed sponsorship for Rennie Grove Hospice
Care, a charity which offers support to patients with cancer and other life-limiting illnesses across
Herts and Bucks. Last year, it attracted 400 people and raised a fantastic £10,000 – enough to fund
500 hours of nursing care. It’s hoped that next month’s event will raise even more to support its
services which are provided both at Grove House and in patients’ homes.
The 1.5km Reindeer Run
The run will begin at 11.00am and is perfect for younger children to run, walk or toddle. It costs £10 to
take part, which will include reindeer antlers, a flashing nose and a medal at the finish line.
The longer 5km Jingle Bell Jog
The jog is open to over 10s – starts at 11.30am and sees participants racing
around St Albans in their Santa suits complete with beards, which are
included in the £17 entry fee along with a medal.
Participants will meet at Waterend Barn, St Albans where there will be
special guest appearances by stars from the Alban Arena pantomime ‘Jack
and the Beanstalk’ and music provided by Heart Radio DJs to set them
off on their chosen route.
For more information and to register for the Jingle Bell Jog &
Reindeer Run, please visit www.renniegrove.org/jinglebelljog
or call the team on 01442 820740.

BONFIRE NIGHT
Family friendly bonfire recipes to warm you up after an evening
spent watching the sky light up
Sticky hot dog jackets
Homemade toffee apples
INGREDIENTS:
4 baking potatoes, each weighing about 225g/8oz
Olive oil for brushing
For the sausages and glaze
2 tbsp maple syrup or clear honey
1 tbsp balsamic vinegar
2 tsp wholegrain mustard
1 tsp tomato purée
8 pork sausages
For the mayo
8 tbsp mayonnaise
2 tsp wholegrain mustard
3 tbsp snipped chives or finely chopped spring onion
INGREDIENTS:
8 Granny Smith apples
400g golden caster sugar
1 tsp vinegar
4 tbsp golden syrup
METHOD:
1. Rub the potatoes with a little oil, then sprinkle
generously with salt (preferably flakes) and black
pepper. Wrap each one in double-thickness foil
and cook on the barbecue for one hour, turning
frequently, until cooked. Or bake unwrapped in the
oven at fan 180C/ conventional 200C/gas 6 for the
same amount of time.
2. Mix the maple syrup, vinegar, mustard and tomato
purée to make a glaze. Brush over the sausages and
cook on the barbecue, turning and basting often, for
10 minutes until cooked and sticky. Meanwhile, mix
the mayo ingredients in a small bowl.
3. Unwrap the potatoes and split down the middle.
Add mayo and sausages (like a hot dog). Serve with a
leafy salad.
page 50.indd 50
METHOD:
1. Place the apples in a large bowl, then cover with
boiling water. This will remove the waxy coating and
help the caramel to stick. Dry thoroughly and twist
off any stalks. Push a wooden skewer or lolly stick
into the stalk end of each apple.
2. Lay out a sheet of baking parchment and place the
apples on this, close to your stovetop. Tip the sugar
into a pan along with 100ml water and set over a
medium heat. Cook for five minutes until the sugar
dissolves, then stir in the vinegar and syrup. Set a
sugar thermometer in the pan and boil to 140C or
'hard crack' stage. If you don’t have a thermometer
you can test the toffee by pouring a little into a bowl
of cold water. It should harden instantly and, when
removed, be brittle and easy to break. If you can still
squish the toffee, continue to boil it.
3. Working quickly and carefully, dip and twist each
apple in the hot toffee until covered, let any excess
drip away, then place on the baking parchment to
harden. You may have to heat the toffee a little if
the temperature drops and it starts to feel thick and
viscous. Leave the toffee to cool before eating. Can be
made up to two days in advance and stored in a dry
place.
