relocated to San Francisco with her banker husband and two children, will
be at the show to greet friends and customers over champagne and hors
d’oeuvres. The first 10 customers will receive a special discount.

Two-star Michelin chef Pino Lavarra has created a decadent six-course menu
featuring a selection of sustainable premium caviar, meaning the fish are farmed
under natural and ecologically compatible conditions to prevent wild sturgeon
from going extinct. Safe in this knowledge, diners can sit back and enjoy the
spectacular views at Tosca, while enjoying Lavarra’s exquisite creations. Each
dish is presented like artwork on a plate and, more impressively, tastes even
better than it looks. Potatoes focaccia with mimosa egg and white sturgeon
caviar is surprisingly light and tasty [pictured]; sea tiramisu with Mediterranean
red prawns carpaccio and rice crackers with Adriatic caviar is a skilful
combination of flavours and textures – our favourite dish of the evening. Other
courses are equally outstanding – spaghetti with caviar, chives and seaweed
may appear simple yet the tastes are distinctive, and the last savoury course of
poached lobster tail complements Oscietra caviar particularly well. We finish
with two desserts: cherrie cake with raspberry coulis and pistachio cream sauce,
followed by a chocolate box of truffles. The wine pairing is another highlight of
the evening, thanks to the restaurant’s expert sommelier team.
Available until December 23 at Tosca, 102/F, The Ritz-Carlton Hong Kong,ICC,
1 Austin Road West, Kowloon. For reservations, call 2263 2270 or email
