Following years in Michelinstarred kitchens, Steve followed his passion for local, sustainable, organic food in acclaimed restaurants in Europe and his native Scotland. During your time with us, you’ll work with vegetables and fruits straight from our market garden, including rare heritage varieties chosen for their unique flavours, and have the chance to take a leisurely stroll around our market garden to see firsthand where your food is coming from. Our creamery, just next door, offers celebrated organic cheeses as well as milk, cream, butter and yoghurts. Our bakery team craft artisan organic breads and pastries every morning and our range of organic meat includes everything from our celebrated venison to our native breeds of lamb and beef. Our seasonal, organic vegetables will be used to maximum effect to prepare effortless, delicious nibbles that would be perfect for any occasion. On this course we will look at the finer details of what makes those dishes so timeless and show you all the techniques to make them perfect every time. We’ll cover a range of dishes from the classic pork pie to Lancashire hotpot plus regional treats like Welsh Rarebit or Scotch egg using fresh, organic and seasonal ingredients. Begin the day with a Hatha Yoga class in our beautiful Haybarn yoga studio. Then come to The Cookery School where we’ll cook a nourishing yet tasty lunch. You will get hands on with the preparation of a number of dishes designed to reflect the holistic, pure approach to organic food we have at Daylesford. CREATE SIMPLE, FL AVOURSOME DISHES USING THE BEST SEASONAL PRODUCE QUICK, SIMPLE, SEASONAL SUPPERS 20 Full day - £175 If you are short on time but don’t want to compromise on great organic food, this is the course for you. We will be using the best seasonal produce from our organic farm to create wonderful dishes that you will look forward to preparing – no matter how busy your day has been. Focusing on accessible, simple dishes, this course will give you a repertoire that is easy, nutritious and satisfying. COOK A T RULY UNFORGE T TA BLE CUT WITH CAREFUL HANGING & BUTCHERING BUTCHERY & COOKING: NOSE TO TAIL Full day - £175 The passion and respect we have for our animals is paramount in developing their award-winning organic meat. This course will allow you to follow and understand this journey, as well as gaining practical tips and techniques from our expert chefs and butchers. Our farm butcher will get you hands on with the butchery and demonstrate where the various cuts come from. Over the course of the day we’ll cook a number of recipes highlighting a range of techniques from braising to roasting, leaving you confident cooking from nose to tail. THE PERFECT SUMMER BARBECUE Full day - £175 Being in control of the barbecue can often be a daunting task, especially if you have exhausted your repertoire of burgers and chicken skewers! This course aims to fill you with inspiration, confidence and ideas to go forth and become the envy of your friends and neighbours. As well as advice on choosing the perfect cuts of meat and fish to pop on the grill, we will also cover a number of marinades, salads and accompaniments to make sure that the only thing that you can’t control is the weather. FISH & SHELLFISH 22 Full day - £175 Fish and shellfish are often a firm favourite of many, although the preparation and flavour combinations are sometimes tricky to master. In this course, we will focus on how to select, prepare and cook an incredible array of fish and shellfish and leave students both competent and confident. USE THE SEASON’S FRESHEST INGREDIENTS FROM OUR FARM FIELD TO FORK Full day - £175 The provenance of our organic ingredients is key to the team here at The Cookery School. What better way to understand this journey and apply some of it to your own vegetable patch than beginning the day with a tour around our 25-acre organic Market Garden with one of our expert gardeners and all-round growing heroes. After collecting our ingredients, we will make our way back to The Cookery School to prepare a number of simple and delicious dishes that make the vegetables the hero and reflect our natural approach to cooking. GAME, WILD FOOD & FORAGING 24 Full day - £175 Here we spend the morning walking the Daylesford estate foraging for our lunch. The estate has a bountiful wild larder from game birds to crayfish and wild garlic to meadowsweet. You’ll be guided by Tim, our resident forager in the morning, after which our Cookery School chefs will help you turn your bounty in to a series of exciting and delicious dishes. Expect dishes such as Daylesford Surf and Turf: crayfish and rabbit risotto, and for pudding, blackberry fool. WE CAN CATER FOR GROUPS OF 6 TO 60, JUST ASK US IF YOU'D LIKE TO CURATE A BESPOKE EXPERIENCE 26 FROM BEGINNERS TO CONFIDENT BAKERS, MASTER AGE-OLD ARTISAN METHODS ARTISAN BREAD MAKING 28 Full day - £175 Learn how to make delicious bread using traditional artisan methods with purely organic ingredients. Special attention to ingredients, process, and a return to the fundamentals of the age-old bread-making tradition set artisan bread apart from preservative-laden commercial breads. Students will learn how to make a variety of breads including sourdough, multi-grains, and traditional tin loaves, as well as learning how to create and nurture a traditional starter culture. Any questions that you may have relating to your own baking will be answered, and you will be given some starter dough to take home with you, aiming to inspire the start of your home-baking journey. CREATE A VARIET Y OF RECIPES, FROM TRIUMPHANT DINNER PARTY FINALES TO COMFORTING AFTERNOON TREATS AFTERNOON TEA Half day - £90 This course is essential for those who wish to master baking and pastrymaking to produce their own traditional, afternoon tea delights such as tarts, cakes and biscuits. Our Cookery School team will guide you through a number of delicious organic recipes to ensure that you are the envy of your friends. At the end of the day, you will have plenty of treats to take away, so that others can enjoy your new found skills. CAKES & BREAKS 30 Full day - £175 With baking growing in popularity on our screens, this course celebrates all things baked. From savoury snacks to sweet treats, Cakes & Breaks will arm you with the knowledge, tips and techniques to create divine bakes for any occasion. We will cover many of Daylesford’s favourites such as lemon drizzle cake and our famous chocolate brownies, as well as some traditional English tea-time cakes. GIVE THEM THE SKILLS TO LAST A LIFETIME CHILDREN'S COOKERY Half day - £50 Guaranteed to be fun and inspiring for children, this course focuses on teaching the connection between the farm and food. After harvesting their own organic vegetables from the market garden, children will learn how to make their own delicious meals from simple pasta to refreshing fruit juices. TEENS' COOKERY Half day - £75 Perfect for budding chefs, this course gives young people between 12 and 17 years old, the opportunity to get hands on and cook for themselves. After harvesting their own organic vegetables and fruit from the market garden, they will be shown how to make a range of simple, tasty dishes. Expect dishes like Welsh Rarebit, casseroles and homemade ice cream. SKILLS FOR STUDENT LIFE 32 Three day course - £395 With leaving for college or university often proving such a crucial time in life, the skill of cooking for yourself can often be overlooked. This 3-day course aims to give students a relaxed yet informative understanding of a vast number of simple and effective principles that will allow you to cook with confidence.
