Aged for up to six months in recharred, American oak barrels, Wahaka Mezcal Reposado con
Gusano is the epitome of smooth with its light golden color and lustorous flavor. Our Reposado con
Gusano is enhanced with the addition of the agave worm, an age-old, proven method for clarifying
the radicals of the barrel while enhancing its overall flavor with notes of earth and salt.

A wise man once said that the aroma of Madre Cuishe reminded him of the smell of fresh fallen
rain. As part of our Signature Line, this unique mezcal is distilled using one of the most rare agaves,
the Madre Cuishe. Perfectly un-aged, our Madre Cuishe celebrates the agave’s natural environment
of volcanic terrain, dry conditions and warm temperatures.
Our Madre Cuishe slowly and delicately evolves in your mouth, exposing its earth, mineral and citrus tones, first on the tip of your tongue, and then journeying to the roof of your mouth and nose.
The Madre Cuishe’s finish is long and should be enjoyed, making it a mezcal that you won’t soon be

The King of Mezcales
Our master distiller, Maestro Alberto “Beto” Morales, calls the Tobalá one of the most difficult
agaves to work with, noting that it “will treat you the same way that you treat it.” Found exclusively
on high mountain cliffs and peaks, this wild agave is not only much smaller than other agaves, its
also the most difficult to find and harvest. One taste of our delicious Tobalá and you’ll immediately know that this is mother nature’s way of telling you that the best things in life come from hard
work.
No other agave produces the variety of aromas and flavors as the Tobalá, giving this mezcal an
immediately distinguishable aroma and explosive taste enriched with sweet floral and herbaceous
notes. The warm feeling of this mezcal is felt throughout the mouth, which reamins with you as
a hint of numbness. Mezcal lovers usually keep a special bottle of Tobalá hidden away for special

WAHAKA® MEZCAL JOVEN ENSAMBLE
A Symphony of Perfection
Perhaps one of the most unique members of our line-up, Wahaka Mezcal Joven Ensamble is a pure
blend of Espadín (50%), Madre Cuishe (25%), and Tobalá (25%) agaves that are cooked, fermented,
and distilled together. Our Ensamble is a magical mezcal that is un-aged, allowing the flavors, aroma and character of each agave to clearly present themselves.
This full-bodied mezcal inherits the distinctive floral aroma of the Tobalá. At first sip, our Ensamble continues to take on the characteristics of the Tobalá, which then quickly transform into the
earth, mineral and citrus notes found in the Madre Cuishe. Throughout the experience, the noble
Espadín adds mezcal’s traditional structure of smoke balanced with sweet.

WAHAKA® MEZCAL ESPADÍN MANZANITA
In the Garden of Eden
The Wahaka Mezcal Espadin Manzanita is a “pechuga” made with organic heirloom apples.
Maestro Mezcallero Beto Morales eschews meat in his “pechugas” preferring fruits or herbs. This
heirloom apple endemic to Oaxaca is placed in the copper stills during the second distillation. The
not-too-sweet-not-too-tart apples add to the classic notes of earth, smoke and subtle sweetness
converting this Espadín mezcal into an explosion of flavor.
With the fruit’s characteristics ever present in the nose, the taste mostly fades from the mouth
leaving a slight acidity. This tremendously complex finish lasts for more than a minute replete with
“Hoja Santa” aroma and other very characteristic Oaxacan notes. With a majestic elegance and a
slightly acidic aroma, it’s not an easily forgotten mezcal.
WAHAKA® MEZCAL ESPADÍN BOTANIKO
The Mezcal Gin
Our Wahaka Mezcal Espadin Botaniko is made by adding a bag of herbs to the copper still during
the second distillation. The herbs are collected from nearby fields around San Dionisio Ocotepec.
The process creates a clean mezcal, white with a hint of green. Juniper, cardammom, vainilla, cilantro seeds, lemon tea, stevia and lavender all combine to offer a touch of freshess on the nose.
Slightly exotic, stylish and very florally expressive. This very elegant mezcal has an incredibly good
balance and brings you to Mezcal’s next level. With this vegan “pechuga,” master distiller Alberto
Morales moves his brand to the avant-garde creating a new generation of artisanal mezcales!

OUR PROCESS: TRANSFORMING AGAVE INTO MEZCAL
The agave for our Joven Espadín and Reposado con Gusano is sustainably farmed on our estate in San Dionisio Ocopetec, located in
the Central Valleys of Oaxaca, Mexico at 1,670 meters above sea level. Wahaka Mezcal is one of the only mezcal brands whose agave
fields are exclusively owned by our partners and shareholders, a sharp contrast to many other brands that often outsource the production of their product. Because our estate-farmed Espadín agave is harvested after ten years of maturity, our spirits are truly a labor of
love and patience, as we planted the agave used to produce our current vintage almost a decade ago.
During harvesting season, our experienced team of life-long cortadores painstakingly head into the Oaxacan lowlands to collect the
Madre Cuishe agave. Because of its finnicky nature and inability to be cultivated, only small amounts of this agave are harvested every
year to ensure the plant’s longevity, and many more years of Madre Cuishe based mezcal. Our cortadores also gather the Tobalá agave
from its natural environment of Oaxacan cliffsides and high mountain peaks. Unlike the Madre Cuishe, this agave flourishes in shaded
areas with exposure to water, giving it its signature flavor. Both the Tobalá and Madre Cuishe agaves are harevested only after they reach
a minimum of twelve years of maturation, ensuring the perfect expression of each agave in each and every batch of Wahaka Mezcal.
Crafting Wahaka Mezcal’s unique spirits is a ritual lasting an average of twenty-five days for one batch of 1,000 liters of mezcal. Our
agave is harvested after at least ten years of maturity, and the process begins by cooking the agave hearts for up to five days in an
earthen pit using ocote (pine) wood. The cooked hearts are crushed in a tahona (circular millstone on an axel), turned by Pacquiau, our
estate’s mare. The agave is then fermented naturally in large wooden vats using indigenous, natural yeast. Finally, it is twice distilled in
our estate alambiques (copper stilled) where it transforms into the perfect mezcal.
Mezcal should taste like the agave from which it is distilled. With the exception of the Wahaka Mezcal Reposado con Gusano, which is
aged for 4 to 6 months in American oak barrels, all Wahaka Mezcal Joven products are bottled straight after distillation – allowing the
flavors to settle into the bottle without the interference of wood or any other agents.
